Wild Idea Buffalo Recipe of the Week - JILL'S ROAST HERITAGE CHICKEN

This week's Wild Idea Buffalo Recipe of the Week is - JILL'S ROAST HERITAGE CHICKEN. That's right Chicken not Buffalo! Wild Idea also sells Heritage Chicken from Emmer and Co. Which is this week's recipe, JILL'S ROAST HERITAGE CHICKEN. The recipe and the Emmer & Co. HERITAGE CHICKEN along with all the other Wild Idea Products are all on the Wild Idea Buffalo website. So Enjoy and Eat Healthy in 2018 and the upcoming New Year!  https://wildideabuffalo.com/

JILL'S ROAST HERITAGE CHICKEN
After testing a few methods of roasting a Heritage Chicken, this method was hands down the winner. Although the flavor was always very good with other methods, I was looking for the method that would keep the meat juicy, but also get it close to fall off the bone tender.

Ingredients:

1 - 3# Emmer & Co. Heritage Chicken

1 - tablespoon + 1 teaspoon salt

1 - tablespoon baking powder (a tip from Emmer & Co.)

4 - tablespoons salted butter

1 - teaspoon black pepper

1 - teaspoon thyme leaves

1 - onion, orange, apple, or other sweet or savory food to fill the cavity

4 - stalks celery, halved

1 - onion, sliced

salt & pepper

1½ - cups water

Enameled Dutch Oven

Preparation:

1 - Rinse chicken and remove neck from cavity. (Reserve neck, adding to the pot for additional flavor or give to your favorite pet!) Blot the chicken dry with paper towels.
2 - Mix salt and baking powder together and gently rub all over the chicken. Refrigerate uncovered for 4 to 24 hours.
3 - Position top oven rack in the middle of the oven and preheat to 500°.
4 - Remove chicken from the refrigerator. Melt butter and add pepper, thyme and remaining teaspoon salt. Rub seasoned butter into the chicken skin and cavity. *The butter will adhere to the cold chicken without running off.
5 - Fill the cavity of the chicken with coarse chopped onion or orange halves, or other savory or sweet foods. This adds additional flavor and helps chicken cook more evenly.
6 - Place celery and onions in the bottom of the Dutch oven and place chicken breast side up on top of vegetables. Place the chicken in the oven and roast for 15 minutes.
7 - Add the water to the pot and cover and continue to cook at 500° for another 10 minutes. *Optional: Before continuing with this step you can also turn your chicken over after initial roasting, so the breast is facing down. For the best browning, pile your vegetables to the center or add a few more to keep the breast out of the liquid.
8 - After 10 minutes, shut your oven off and leave the chicken in the oven for two hours. Do not open the door during this time.
9 - Remove chicken from the oven and transfer to a platter or cutting board. Chicken segments will release fairly easily or carve as desired. Season with a little salt and pepper.
10 - Strain juices from the pot and serve with the chicken or thicken to your liking for gravy.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For Breakfast it was a bowl of Cheerio's Cereal along with the morning cup of Bigelow Decaf Green
Tea. After Breakfast I started a load of laundry for Mom and then headed out to the local Kroger for Mom. She just needed a few items so I did the shopping for her. Then on the way back I stopped at McDonald's and picked up Breakfast for her. Back home did a little yard work before the heat and humidity set in for the day. Done with all the major chores so just did a few things around the house that needed done. After Lunch headed up to the hospital to see Dad. He turns 95 today! We thought he was going to get to come home today but he had a bad night last night, sick to his stomach and didn't sleep all night. So he'll be there till next week. For Dinner tonight it's Beans and Smoked Turkey Sausage (Beans and Weenies).

So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood
Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients
except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let it simmer. Another set it and forget recipe! After I got the Beans started I fried up 1 1/2 Butterball Hardwood Smoked Turkey Sausages. I first sliced them up into bite size pieces then fried them on medium until they started to brown and removed them from the heat and put them in a small bowl and set aside.

Then using the same skillet I fried the Sausage in I fried 3 slices of Jennie – O Turkey Bacon,
actually I fried 5 slices actually. Always remember when preparing Bacon to always add 2 extra slices. Because you know you’ll grab a couple of slices, it’s called the Bacon Factor or Bacon Math. I fried it up nice and crisp and when done crumbled it up into small pieces and added it to the Beans. Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

I love dishes that you can set low and let them simmer, to me it seems to give food a much richer and
deeper flavor. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food favorite! Another plus is the cleanup, just one dutch Oven and 1 skillet to clean. For dessert later a Weight Watcher's Cookies and Cream Ice Cream Bar.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

For breakfast it was a couple of Eggo Waffles and a cup of Bigelow Decaf Green Tea. After breakfast I went to the local Kroger for a few items and to order a cake for Mom and Dad's 68th Wedding Anniversary coming this Sunday. Long time 68 years! I'm having them a little surprise party over at the rehab center where Dad is at. They told us yesterday that Dad would be released on June 28th, barring any setbacks. So good news there! Spent the day at home and got caught up on some little jobs around the house. For dinner tonight a personal favorite and comfort food. I prepared Beans and Smoked Turkey Sausage (Beans and Weenies).

While growing up I would live on Campbell’s Beans and Weenies! So tonight it’s Beans and
Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon (Fried and Crumbled), 1 can of Bush’s White Chili Beans, 1 can Bush’s Vegetarian Reduced Sodium Baked Beans, 1/4 cup of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

Sausage, Bacon, and Beans are such a natural combo, Bacon gives it that wonderful smoky flavor.

You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan
and get done even quicker. Myself love dishes that you can set low and let them simmer. After a couple of hours I added the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. Kept the heat on low until it was time for dinner. A good Hearty Meal tonight. Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

After Breakfast and my morning workout I got a few things done around the house and then off to
Kroger. And good news, the Honey Crisp Apples are back in stock! Just love those Apples! Back home was on the phone with Hoveround Mobility Chairs for over an hour!! Trying to cut through all the red tape to get my Hoveround Chair repaired. Because of the Obama Care what used to take a few minutes to get work scheduled now takes up to 3 weeks or more, just not right what they've done to Health Care. Anyway for dinner tonight I prepared Beans and Smoked Turkey Sausage (Beans and Weenies).

While growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies! So tonight it’s Beans and Weenies, but I kicked this version up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into thin bite size pieces), 3 slices of Jennie – O Turkey Bacon, 1 can of Bush's Cannellini Beans, 1 can Joan of Arc Spicy Chili Beans, 3 tablespoons of Red Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 teaspoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and 2 cups of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

Plus it's another one of those delicious one pot meals. I used a small size Dutch Oven that I had
sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! I then increased the heat to medium for about another 1/2 hour and then reduced it back down to medium low until it was time for dinner. A good Hearty Meal tonight. I just love all the flavors, a real comfort food favorite of mine! Another plus is the cleanup, just one dutch Oven to clean. I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a bowl of Del Monte Sliced Peaches.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)

Brrr, it was downright cold this morning! About 3:00 this morning I had to get up and turn the heat up. It was in the 30's. it looks as though it's going to be another Chilly and Rainy Night for all the Trick or Treaters around here. The last 3 Halloweens have been this way. Possible snow flurries coming Saturday morning, our first sign of snow of this season. Spent the day cleaning the spare room back where my computer is at, much needed cleaning! Well to counter the cool day I made a pot of Beans and Smoked Turkey Sausage (Beans and Weenies).

Growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies! I hadn't made it in a while and sounded perfect for dinner tonight. So it's Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 3 slices of Jennie - O Turkey Bacon, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 1 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).

Another one of those delicious and easily prepared meals. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! After I got the Beans started I fried up 3 slices of Jennie - O Turkey Bacon. I fried it up nice and crisp and when done crumbled it up into small pieces  and added it to the Beans. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. I then increased the heat to medium for about another 1/2 hour and then reduced it back down to medium low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food! For dessert/snack tonight I heated up some Hormel Snackers Chili and Cheese Dip along with some Tostios Multi Grain Scoops. Love the Dip, a good way to end the day!

Beans and Smoked Turkey Sausage with a slice of French Bread.

Dinner Tonight: Beans and Smoked Turkey Sausage with a slice of French Bread

Not a bad day out, considering the weather we've been having. Partly sunny and it got up to around 28 degrees. Had a little skiff of snow this morning so I cleared that off around the door walk and ramp and my neighbor blew the rest off with a snow blower. Spent the day cleaning the computer and the disaster around it! Scanned and uninstalled some old programs and then cleaned the computer desk and around that. Amazing how much junk one person can accumulate! Wanted something different for dinner so tonight I prepared Beans and Smoked Turkey Sausage with a slice of French Bread.

Growing up who didn't like the old-fashioned Campbell's Beans and Weenies, that and Spaghetti-O's! Well I wanted some Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush's Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Splenda Brown Sugar, a couple of shakes (or more) of Frank's Red Hot Sauce, and a 1/3 cup of Jack Daniel's Honey Smokehouse BBQ Sauce (or to taste).

To prepare everything, it can't be much easier. I started simmering everything around 1 pm this afternoon. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I like dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausage and added it to the Beans. I then increased the heat to medium for about another hour and then reduced it back down to medium low until it was time for dinner.

I had leftover Pillsbury Rustic French Bread from last night's dinner that I warmed up to serve with the Beans and Sausage. The Beans/Sausage came out delicious! It had a good Smokey Flavor to it and the Jack Daniel's BBQ Sauce is perfect for Beans and the Turkey Sausage. Then I had a slice of the French Bread to mop up all the Sauce. A good Hearty Meal tonight. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Spicy Pop Pulled Pork Sandwich w/ Twice-Baked New Potatoes

Dinner Tonight: Spicy Pop Pulled Pork Sandwich w/ Twice-Baked New Potatoes

Ending 2012 with a bang for dinner! Prepared a couple of new recipes for dinner, Spicy Pop Pulled Pork Sandwich w/ Twice-Baked New Potatoes. Sounds good, tasted even better! Both recipes are based on recipes from The Food Networks Ree Drummond (Pioneer Woman). If your looking for two delicious recipes look no further!

I made substitutions from the original recipes where I could to cut calories and carbs. For the Spicy Pop Pulled Pork I used Diet Dr. Pepper, Splenda Brown Sugar, and also added Garlic to the recipe. Then on the Twice-Baked New Potatoes I used Extra Virgin Olive Oil to coat the Potatoes with, Philly Fat Free Cream Cheese, and Daisy Reduced Fat Sour Cream.

I put the Pork in the oven about 11:00 am and by 2:00 pm the aroma had filled the kitchen! Interesting recipe. You have your Pork Shoulder (Boston Butt), Onions, Garlic, Diet Dr. Pepper, 1 can Chipotle Peppers in Adobo Sauce, Splenda Brown Sugar, and Sea Salt and Pepper. Is that a combination of Ingredients or not! But it all works, It tasted incredible! The flavor was spot on. You had heat from the Chipotle Peppers in Adobo Sauce and then the sweetness of Brown Sugar and Diet Dr. Pepper. After 6 hours I removed the Pork Shoulder, it was very tender, and used 2 forks to shred it and then put it back in it's own juices until we were ready to make our sandwiches. Served them on a Healthy Life Whole Grain Bun.

Ready to bake for a second time

Now for the Twice-Baked New Potatoes. I purchased some medium sized New Potatoes at Kroger early this morning. I first preheated the oven to 375 degrees F. I then drizzled the Potatoes with the Extra Virgin Olive Oil and tossed them to coat. Roasted them until the potatoes were tender and the skin was slightly crisp, about 20 to 25 minutes. Then using a spoon to remove the insides, leaving a small margin of potato intact. To the scooped out potatoes, add the Monterey Jack, cream cheese, sour cream, chives, garlic, and salt and pepper to taste. Mashed until the mixture was totally smooth. Give it a taste and add more salt if necessary. I then scooped the mixture into the potato shells. At this point you can cover and refrigerate them until dinnertime. Before rebaking I topped each one with Shredded Monterey Jack Cheese then when you're ready, bake the potatoes in the oven until golden brown on top. The potatoes came out creamy and delicious! The Pork along with these Potatoes makes one delicious dinner! For dessert much later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Just added the Chipotle Peppers in Adobo Sauce

Spicy Pop Pulled Pork

Ingredients:

1 Onions, peeled and quartered
4 Cloves of Garlic
1 - 2 1/2 lb. Pork Butt (pork shoulder roast)
Sea Salt and freshly Gound Black Peppercorn
One 11-ounce can Chipotle Peppers in Adobo Sauce
2 cans Pop (I use Diet Dr Pepper)
4 packed tablespoons Brown Sugar or 2 Tbls Splenda Brown Sugar

Directions:

Preheat the oven to 300 degrees F.

Start by placing the onion quarters and garlic cloves in the bottom of a Dutch Oven. Sprinkle the pork with salt and pepper, and then place on top of the onions. Pour the chipotle peppers over the top, and then crack open the cans of pop and pour them over the whole thing. Add the brown sugar to the liquid and stir.

Cover the Dutch Oven, put in the oven and cook for at least 6 hours, flipping the roast 2 or 3 times during the cooking process. When it's done, the pork will be dark and weird and wonderful. It'll also be fork-tender. That's when you know it's done.

Remove the meat from the Dutch Oven and shred completely. Then return the meat to the Dutch Oven and keep in the juice until you need it. Divine!

Chicken Breast w/ Rice A Roni, Mushrooms, Sugar Snap Peas, and Mini Carrots.

Dinner Tonight: Chicken Breast w/ Rice A Roni, Mushrooms, Sugar Snap Peas, and Mini Carrots.

Sometimes just some very basic ingredients, herbs, and a Dutch Oven can result in a very delicious and hearty meal. I got to put my new Dutch Oven into use tonight to prepare dinner. For dinner tonight I prepared Browned Chicken Breasts w/  Rice A Roni, Mushrooms, and Mini Carrots.

So I preheated up my Dutch Oven on medium with a couple of tablespoons of Canola Oil. For my Chicken Breast I seasoned them with Sea Salt, Ground Black Pepper, Dried Rosemary, and Dried Thyme. First time I used a Dutch Oven and I was real happy the way it heated up and retained it's heat. The Chicken Breast browned up beautifully. The added Rosemary and Thyme gave a wonderful taste to the Chicken.

As my Chicken was browning I boiled my Mini carrots and sliced up the Baby Bella Mushrooms. i removed the Chicken from the Dutch Oven when it was done and I deglazed the pan with a 1/4 cup of Swanson Chicken Stock. Took a wooden spoon and got all the great Chicken remains and crust mixed in with the stock and added my Mushrooms. Just added a couple of shakes of Sea Salt and in about 5 minutes the Mushrooms were done. I then took two Rice  A Roni Microwavable Single Servings and heated them up in the microwave for 4 minutes each. When done added both to a bowl and stirred in the Mushrooms. To finish the meal preparation I microwaved a bag of the Market Side (Walmart) Sugar Snap Peas.

To serve I put a bed of the Rice A Roni/Mushrooms on a plate and topped it with one of the Chicken Breasts and added the Mini Carrots and Sugar Snap Peas as sides. This meal turned out fabulous! I'm so glad Rice A Roni has come out with these easy to fix single servings Of microwavable Rice a Roni! Plus adding Mushrooms to it makes it even better. The meal just looked good, you got the Orange of the Carrots, the bright Green of the Sugar Snap Peas, along with yellow and brown of the Rice and Chicken. Delicious meal! For dessert later a Jello Sugar Free Dark Chocolate Pudding.
