Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes

Dinner Tonight: Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes

They say we have another beautiful week of weather ahead, bit warmer during the days but no humidity. It was 55 degrees this morning and sunny. Had a light Breakfast, Healthy Life Whole Grain English Muffin topped with Smucker's Sugarless Blackberry Jam. My Dad is doing better, barring any setbacks he should be home sometime this week. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Nothing easier and more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

For one side I heated up a can of Del Monte Cut green Beans. Then I also prepared some Then I heated up some Bob Evans Mashed Potatoes, just microwave and done. I also had a slice of Healthy Life Whole Grain Bread that I buttered with I Can’t Believe It’s Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Dinner Tonight: Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes

It makes for such a long day when you spend it at the hospital. Visited my Dad most of the afternoon at the hospital. He's doing a lot better today. He got a full nights sleep and ate a good breakfast and lunch. His speech is better and had good coloring to his face, yesterday the speech was slurred and he was pale white. He's a trooper! Mom had dinner with Dad at the hospital. So for my dinner I wanted a hot meal but I wanted one that was easy to prepare. So for dinner tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Turkey Sliders and Baked Fries

Dinner Tonight: Turkey Sliders and Baked Fries

A windy and cool Spring Day out there today. Rain and only in the 50's or 60. When something needs repaired in the house it seems like it's just never one thing, it all breaks down in bunches! Went to the hardware store and picked up everything needed and have someone coming over tomorrow to install them for me. Just another disadvantage of being in a wheelchair, some things you just have to have help. For dinner tonight it's Turkey Sliders and Baked Fries.

Walmart had some Pepperidge Farm Wheat Slider Buns on sale, so it seemed like a perfect time for some sliders! I used Jennie - O Extra Lean Ground Turkey Breast for my Burgers. If you're having Sliders they might as well be healthy Sliders. The Jennie - O Turkey is only 120 calories with the Buns being 100 calories. To prepare them I formed the Ground Turkey into Slider Bun size patties. Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn with just a pinch of Sage in each. I pan fried them in Canola Oil. Served them on the Pepperidge Farm Wheat Slider Buns and topped with a quarter slice of Cracker Barrel Sharp Cheddar, and just a dab of JB's Stick Stuff BBQ Sauce. Love these Turkey Sliders!

For one side I baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries and had a Side Salad. For dessert/snack later some Turkey Spam and Ritz Whole Grain Crackers.

Pulled Buffalo BBQ Sandwich w/ Green Beans and Fried Apples

Dinner Tonight: Pulled Buffalo BBQ Sandwich w/ Green Beans and Fried Apples

Cooler out again today, with a cool wind. Went to Meijer early this morning to pick up some Jennie - O Turkey items, Breakfast Sausage, Sausage Links, and Ground Turkey Breast. Fully stocked now! For dinner tonight it's a Pulled Buffalo BBQ Sandwich w/ Green Beans and Fried Apples.

A light and healthy dinner tonight. I used Wild Idea Buffalo Pulled Buffalo, in a 1 lb. package. A great item to have in the freezer, just thaw and heat it up! It comes already seasoned with a blend of spices. After heating it up I served it on a Aunt Millie's Reduced Calorie Whole Grain Bun and topped it with JB’s Fat Boy Chipotle BBQ Sauce. I love BBQ Sandwich’s but using Pulled Buffalo makes it that much more delicious! The Pulled Buffalo is so moist and flavorful, not to mention healthier than Beef.

Then for sides i heated a can of Del Monte Cut Green Beans, probably my favorite veggie. Then I had another side of Fried Apples. Easy to prepare, all you need is Granny Smith Apples, a tbs. of Extra Virgin Olive Oil, and Splenda Sugar. I always use a Cast Iron Skillet to fry them in. I usually have these for Breakfast, but just sounded good for Dinner to go with the Pulled Buffalo and Green Beans. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Wild Idea Buffalo Pulled Buffalo Chuck Roast

Pulled Buffalo Meat – Our pulled Buffalo Chuck Roast is rubbed with our own blend of Mexican seasonings and then slowly braised to fall apart tender. We’ve done the work for you, so all you need to do is heat and eat! Use in all of your favorite Mexican dishes, like tacos, enchiladas and quesadillas. Or use for B.B.Q. sandwiches!

1 lb. package.

Dinner Tonight: Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes

Rain and more rain today and in the future forecast! A little cooler out also, high in the 60's.     Went for my Cancer Checkup and every thing is looking normal! Really blessed on having one of the finest Oncology Doctors around, but I was informed today that he was going to retire in June. Very sad, I'm losing a Doctor that I trust more than any other and a friend at the same time.  Wanted an easy meal to prepare for Dinner tonight So tonight its Breaded Chicken Breast Strips w/ Cut Green Beans and Mashed Potatoes.

Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans

Dinner Tonight: Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans

More heavy rain overnight but a sunny afternoon, more rain coming this evening though. Finally drying out tomorrow and 70 degrees by Thursday! Took Dad for a follow up check-up at his doctors. He's still having more and more problems with breathing, a lot congestion. For dinner tonight I prepared a Roasted Mesquite Marinated Pork Sirloin w/ Mashed Potatoes and Cut Green Beans.

I used a Smithfield  Mesquite  Marinated Pork Sirloin. First time I believe I used that. It wasn't a very big one, only 1.39 lbs. But more than enough for me, Mom and Dad went out to eat. The instructions said to roast it 20 minutes for every lb. at 425 degrees. Preheated the oven and put the Sirloin in a small baking pan that i sprayed with Pam Cooking Spray. I also added just a bit of McCormick Grinder Sea salt and Black Peppercorn. Then I Brushed it with JB's Fat Boy Haug Waush BBQ Sauce. Put in the oven and let it roast! Checked the temperature after about 24 minutes, wasn't quite done so roasted it an additional 3 minutes. Rechecked it and it was 148 degrees, removed it from the oven and let it rest and finish cooking. It came out beautiful and delicious, very tender. The Mesquite Marinade with the JB's BBQ Glaze worked perfect.

I also prepared some Bob Evans Mashed Potatoes, microwave a total of 6 minutes and their done and just as good as anyone’s homemade Mashed Potatoes. Then I also heated up a small can of Del Monte Cut Green Beans and had a slice of Klosterman Wheat Bread. To drink an ice-cold Diet Dr. Pepper that I had let set in the freezer for about 15 minutes. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Baked Pork Chops w/ Mashed Potatoes and Cut Green Beans

Dinner Tonight: Baked Pork Chops w/Mashed Potatoes and Cut Green Beans

Plenty of sunshine all day today, but had a light cool breeze and in the 40's. They say it will hit close to 70 degrees tomorrow and sunny! Hope they're right for tomorrow is Holiday here in the Cincinnati area, it's Opening Day! The Red's first game of the year and a positive sign Spring is here. Pulled my 4 wheel mobility cart out of the shed and charged it up and cleaned it up a bit. Went to Kroger for Mom and picked up a few things for her and home. For dinner tonight it's a Baked Pork Chops w/ Mashed Potatoes and Cut Green Beans

Had this Chop froze so i laid it out overnight in the fridge to thaw. It's one of Pork Chops I had bought at Costco a while back. Costco has some of the finest meats around and the Pork Chops are right there with some of the best! I started by marinating them in J B’s Fat Boy’s Haugwash Barbecue Sauce. Just the name Fat Boy’s Haugwash makes my mouth water! If you’ve never tried any of their Rubs or Sauces you got to give them a try! The best I’ve ever had, bar none. Wish it was a little lower in calories and carbs but it’s worth cutting back on other things to fit this in the dinner. Anyway I marinated the Chops in the Sauce and refrigerated it for 4 hours. I removed the chops from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I then pan fried the Chops in a Cast Iron Skillet, browning both sides then baked the Chops at 400 degrees for 20 minutes flipping the Chops over after 10 minutes, internal temperature was at 150 degrees. They came out moist, tender, and delicious!

For one side dish I heated up some Bob Evan's Mashed Potatoes, just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I heated up a small can of Del Monte Cut Green Beans. Also had a slice of Klosterman Wheat Bread and an ice-cold Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Dinner Tonight: Chicken Breast Strips w/ Oven Baked Scalloped Potatoes

It sure doesn't feel like Spring out there today! A very cold wind blowing all day and I'm not sure it even reached 32 degrees. We did miss the snow as that went South and East of us. It will be in the 50's the rest of the week they say. I was scheduled for my 6 month check-up for Sugar, Cholesterol and such but with all the meds I've been taking the last week or so I had to reschedule it for next week to get a better reading on everything. Not real hungry tonight so it was a light dinner. So tonight I prepared Chicken Breast Strips w/ Oven Baked Scalloped Potatoes.

I used Pilgrim’s Southern Style Breast Strips, first time in quite a while. It's some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

Then for my only side I prepared some Bob Evan's Oven Baked Scalloped Potatoes. This one also comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. A delicious Meal without much effort or cleanup involved! For dessert later a Skinny Cow Chocolate Truffle Ice Cream bar.

Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and....

Dinner Tonight: Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels

Another beautiful day out again, clouding up as the day went on though. Possible snow in the morning but with our recent run of sun and higher temps, it shouldn't stick or cause problems. Don't forget to move your clocks up an hour tonight before you go to bed, "Spring Forward". I don't like moving the clocks up, I'm an early riser so that means it will still be dark out when I get up. I received my order from Wild Idea Buffalo late yesterday afternoon and wasted no time on using one of the items right away! Tonight I prepared Crock Pot Buffalo Back Ribs w/ Applewood Smoked Bacon Potato Casserole and Steam Crisp Sweet Corn Kernels.

First time using the Wild Idea Buffalo - Buffalo Back Ribs. These were Monster size Ribs with plenty of meat! I used the recipe that I use when I make the Pork Back Ribs. Last night before I went to bed I cut the Ribs in half, so they’ll fit in the Crock Pot, and put each half in a Hefty Gallon Plastic Bag then covered the Ribs in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Got the Ribs out of the fridge and the bags, discarded the Hefty Bags, and put them in the Crock Pot where I let them cook and simmer, on low, for about 8 hours.

Long up in the afternoon you can start smelling the aroma of the Ribs, intoxicating! After the 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. Ribs are incredible anytime, but the Wild Idea Buffalo Back Ribs take it to another level! Very meaty with that delicious Sweet and Wild Buffalo taste! I'll have to get some more and grill them later this Spring. As usual I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side I prepared Idahoan Applewood Smoked Bacon Homestyle Casserole. Second time I tried the Idahoan Applewood Smoked Bacon Homestyle Casserole. Like the other Idahoan dishes their a breeze to prepare and a delicious Potato Dish. And like the others this turned out fantastic! Very well seasoned, and you can taste that Applewood bacon flavor. Then I also heated up a can of Green Giant Steam Crisp Super Sweet Yellow and White Whole Kernel Corn. To me it's one of the best canned Corn there is. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.

Wild Idea Buffalo 2.5 lbs. BBQ Back Ribs

Buffalo back ribs are simple, delicious and great for the grill. 2 BBQ Racks / 2.5 lbs.

http://buy.wildideabuffalo.com/collections/a-la-carte/products/2-5-lbs-bbq-back-ribs

Idahoan Applewood Smoked Bacon Homestyle Casserole

The saying is “everything is better with bacon” and we couldn’t agree more. That’s why we incorporated Applewood Smoked Bacon in with our rich cheesy sauce for this homestyle casserole that is sure to become a family favorite.

Oven Preparation
Preheat oven to 450°F. Combine potatoes and sauce mix in 1 1⁄2-quart baking dish.
Stir in 1 1/2 cups boiling water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter with whisk.
Bake uncovered for 25 minutes or until top is golden brown and potatoes are tender (sauce will thicken slightly when cooling). Remove from oven and let stand a few minutes before serving.
Baking Notes: To prepare 2 casseroles at once, double all ingredients, increase baking dish size accordingly, and bake about 30 min.
Stove Top Preparation
Heat potatoes and sauce mix, 1 1/2 cups hot water, 1/2 cup milk, and 1 1/2 Tbsp. margarine or butter to boil in 2-quart saucepan over high heat, stirring occasionally. Watch carefully to avoid boilover.
Reduce heat, then cover and simmer 15 minutes, stirring occasionally, until potatoes are tender and sauce reaches desired consistency (sauce will thicken slightly when cooling).
Remove from heat and let stand a few minutes before serving.

Crock Pot Pork Back Ribs w/ Mashed Potatoes, Mini Ears of Sweet Corn, and ...

Dinner Tonight: Crock Pot Pork Back Ribs w/ Mashed Potatoes, Mini Ears of Sweet Corn, and 3 Bean Salad

The temps weren't too bad this morning when I ventured out to fetch the paper, above zero at least and little to no wind. But as the day went on it gradually got colder and it's supposed to keep dropping, minus 10 by Tuesday morning! Everyone wanted Ribs for dinner so I cut the rack of ribs up and let them marinate overnight in the fridge. Dinner tonight, i prepared Crock Pot Pork Back Ribs w/ Mashed Potatoes, Mini Ears of Sweet Corn, and 3 Bean Salad.

Ready for the Crock Pot

I purchased the Ribs from Kroger the other day. They always have some of the best top quality Pork, too bad their Beef isn’t as good! After 8 hours their ready and now for the hard part of cooking them, getting them out whole without breaking them up! Their that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For all of us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs are incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot no clean-up. Just wipe it down and store it for the next time.

For one side I heated up some Bob Evan's Mashed Potatoes, just microwave for a total of 6 minutes and their ready. Then I boiled some Green Giant Mini Ears of Sweet Corn. A great replacement, and sometimes better, for fresh Corn on the Cob. Then I opened up a can of Read 3 Bean Salad. A delicious Sunday Dinner! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Pork Ribs

Pork ribs are a cut of pork popular in North American and Asian cuisines. The ribcage of a domestic pig, meat and bones together, is cut into usable pieces, prepared by smoking, grilling, or baking – usually with a sauce, often barbecue – and then served.

Several different types of ribs are available, depending on the section of rib cage from which they are cut. Variation in the thickness of the meat and bone, as well as levels of fat in each cut, can alter the flavor and texture of the prepared dish. The inner surface of the rib cage is covered by a layer of connective tissue (pleura) that is difficult to cook tender; it is usually removed before marinating or cooking.

BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread

Dinner Tonight: BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread

Another very cold day outside again. It's in the low 20's but feels a lot colder with the wind chill, buts of sunshine to brighten it up a bit. I can't believe another year has gone by! I just want to thank each and everyone of you for all your views and comments throughout the year! So for dinner tonight i prepared a BBQ Marinated Pork Chop w/ Cut Green Beans, Mashed Potatoes, and Wheat Bread.

I had the Pork Chop in the freezer so I let it thaw overnight in the fridge. About noon I added some JB's Fat Boy Haug Waush BBQ Sauce to a Hefty Zip Bag and added the Chop and let it marinate the rest of the day. When ready to prepare it I took it out of the bag, shaking off the excess. I then seasoned it with McCormick Grinder Sea Salt and Black Peppercorn. i heated up a Cast Iron Skillet, sprayed with a little Pam Cooking Spray and added Canola Oil. When the Skillet and Oil was heated up I added my Chop to it. I fried it about 4 minutes or so per side, till the internal temperature reached 155 degrees. Nice size Chop and it came out moist with a fantastic flavor, love the JB's Fat Boy Sauce!

For one side dish I heated up a can of Del Monte Cut Green Beans, my favorite canned Green Bean. Then I also heated up some Idahoan Mashed Potatoes. They come in a microwavable container; just add water and microwave for 1 1/2 minutes. They come out perfect every time! I also had a slice of Klosterman Wheat Bread. For dessert later a Jello Double Chocolate Pudding topped with Cool Whip Free.

Thank you again for a lot of fun throughout the year, have a fun and safe New Years Eve!

Pulled Buffalo Sliders w/ Baked Fries

Dinner Tonight: Pulled Buffalo Sliders w/ Baked Fries

It was Kitchen Drawer cleaning day today, a long over due one at that. Cleaned the Utensil, Spice, Dish Towels, and Junk drawers out today. Didn't realize how cutting knives we had buried in the drawer. Only had to throw out a couple of Spice Bottles, expired. Then the Junk Drawer, which was full of odds and useless ends. For dinner tonight it's Slider Night and Baked Fries!

I made a few different types of Sliders for everyone for dinner. My Mom had made some Egg Salad the other day and I made a couple of Sliders out of what remained. Then another type was a Ham and Swiss one. I used Kroger Private Selection Rosemary Ham and Sargento Ultra Thin Swiss Cheese. And the last two were, my favorites, made with Wild Idea Buffalo Pulled Buffalo. I made two different types, one I added JB's Fat Boy Chipotle BBQ Sauce to the Pulled Buffalo and the other was I just seasoned the Pulled Buffalo with a little Sea Salt and added a fresh slice of Mozzarella Cheese.

The Wild Idea Pulled Buffalo comes rubbed with a blend of Mexican seasonings and then slowly braised till it's fall apart tender.Wild Idea Buffalo done all the work so all you need to do is heat and eat it! It's perfectly seasoned and so tender it melts in your mouth! The ones I added Mozzarella Cheese to, I used a fresh Murray's Mozzarella Cheese Roll that I sliced into pieces. Found a real good buy on the Cheese at Kroger Deli and Cheese, $3.99 for a little over a pound of fresh Mozzarella Cheese. I used Pepperidge Farm Slider Whole Wheat Buns. I also baked some Ore Ida Simply Cracked Black Pepper and Sea Salt Country Style Fries. For dessert later a Del Monte No Sugar Added Peach Chunk Cup.

Wild Idea Buffalo Pulled Buffalo Chuck Roast

Not much going on at all today! Did come cleaning and that is it. For dinner tonight I prepared Crock Pot Pork Back Ribs w/  Parmesan and Herb Red Potatoes and Green Beans.

For one side dish I prepared Idahoan Premium Parmesan and Herb Red Potatoes. As all the Idahoan Potato Products the Parmesan and Herb Red Potatoes are easy to fix and a delicious Potato Dish. The box contains the Potatoes, Sauce, and Topping. I added 2 Tbsp. of Butter, 1/2 cup 2% Milk, and Water. Just mix all the ingredients, pre-heat the oven to 450 degrees, and bake uncovered for about 25 minutes. Let it set for 5 minutes before serving, that lets the Sauce thicken up. I also heated up some Del Monte Cut Green Beans and I baked a loaf of Pillsbury Simply French Bread for Mom and Dad, I passed on the Bread to save on the carbs and calories. One fine meal that everyone enjoyed! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Cast Iron Skillet Baked Pork Chop w/ Fried Apples, German Potato Salad, and...

Dinner Tonight: Cast Iron Skillet Baked Pork Chop w/ Fried Apples, German Potato Salad, and Green Beans

It started out a rainy morning and the a sunny and a bit humid afternoon and then some heavy late afternoon and evening showers. Just a lazy day of being a Couch Potato watching some College Football! For dinner a comfort food Heaven; Cast Iron Skillet Baked Pork Chop w/ Fried Apples, German Potato Salad, and Green Beans.

I had picked up some beautiful, good size, Pork Loin Center Cut Chops. I marinated the Chop in JB's Fat Boy Haug Waush BBQ Sauce for 4 hours in the fridge. To prepare it I broke out the Cast Iron Skillet, just something about the Cast Iron Skillets that I love using them. Added about 1/2 tablespoon of Canola Oil to the Skillet and browned both sides I then moved to the oven, which I had preheated on 400 degrees. I then baked it for about 22 minutes. I pulled it out when it hit 150 degrees (internal temperature) and let it set for 5 minutes to let it finish cooking. I love Chops and this one was delicious! The JB's BBQ Sauce is the perfect marinade for any Pork.

One side dish was some Fried Apples. My Mom taught me how to make these a long time ago and I still fry them that way except now I use Splenda instead of Sugar. To prepare them I used Macintosh Apples that I peeled and sliced into smaller slices. I used a cast Iron Skillet for these also. To fry them I used a 1 tablespoon of Extra Virgin Olive Oil, heated the Skillet up on High and added the Apples. I fried them, while stirring, for about 5 minutes and as they started to soften up I added about 3 tablespoons of Splenda Sugar Blend, maybe a tad less. Then stirred until well mixed and the Apples were soft. My Grandmother made Fried Apples this way, my Mom learned from her, and now I continue making them. Good Fried Apples!

Another side dish was Read German Potato Salad. First time I had tried canned German Potato Salad, I had tried the Read 3 Bean Salad and it was very good so I thought I would give this a try. I heated it up about 10 minutes in a small sauce pan and it was ready. It had a real good taste with plenty of Potatoes and nice Bacon size pieces. It does have a little strong Vinegar taste but I liked it, plus it's only 120 calories and 20 net carbs per serving. I also heated up a small can of Del Monte Reduced Sodium Cut Green Beans. One nice Comfort Food Dinner! For dessert/snack later a 110 Calorie Mini Bag of Jolly Time Pop Corn.

Crock Pot Pork Back Ribs w/ Mashed Potatoes and Asparagus

Dinner Tonight: Crock Pot Pork Back Ribs w/ Mashed Potatoes and Asparagus

A beautiful day out after a night of some heavy rain. Looks like we got a lot of rain coming our way on and off all week. Have to be up early and at the hospital for my yearly scans, for my upcoming Melanoma Cancer check up. It's always a tough time when I have these, the test is easy but it stirs up a lot of bad memories of my past fights against Melanoma. I just have to think positive, I'll get the results in about 2 weeks when I go for my check-up. On to dinner! Mom had a hankering for my Crock Pot Ribs, so guess what we had! I prepared Crock Pot Pork Back Ribs w/ Mashed Potatoes and Asparagus. Also boiled some Corn on the Cob for Mom and Dad.

Last night before I went to bed I cut the Ribs in half, so they'll fit in the Crock Pot, and put each half in a JB's Fat Boy Hawg Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold's Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray. Tender, moist and just full of flavor! For all of us JB's Fat Boy Sauces and Rubs can't be beat. The Ribs were incredible.
Hefty Gallon Plastic Bag then rubbed and covered the Ribs in

For side dishes I prepared boiled Asparagus, Mashed Potatoes, and Corn on the Cob (for my Parents). To prepare the Asparagus was very easy I just brought about 1 inch salted water to a boil in a large skillet. Added my Asparagus in one layer. Cooked until tender, about 5 minutes  Drained, and transferred to a serving platter. Sprinkled with Sea Salt and Black Pepper, and topped with a pat of butter (Blue Bonnet Light Stick Butter). Very good and easy recipe for Asparagus. I also heated up some Bob Evan's Mashed Potatoes and boiled a couple of Green Giant Mini ears of Sweet Corn. I think I satisfied my Mom's Hankering for Ribs! For dessert later, I baked a loaf of Pillsbury Nut Quick Bread. A slice of that topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.
