Apple and White Chocolate Cheesecake

Apple pie has met its match in this delectable cheesecake, marrying cinnamon apples with melted white chocolate.

INGREDIENTS

1½ cups finely ground vanilla wafer cookies
⅓ cup sugar
½ cup butter, melted
2 (8-ounce) packages cream cheese, softened
3 eggs
1 (14-ounce) can sweetened condensed milk
1½ cups whipping cream, divided
2 (4.4-ounce) packages white chocolate bars, melted and cooled
2 (21-ounce) packages HORMEL® COUNTRY CROCK® Cinnamon Apples, heated


DIRECTIONS

1) Heat oven to 325°F. Grease 10-inch springform pan; line with parchment paper. In bowl, combine cookie crumbs, sugar and butter; mix well. Press mixture into base of pan with flat-bottomed glass. Place pan on baking sheet. Bake 15 minutes; cool.
2) To make filling, in large bowl, beat together cream cheese, eggs, sweetened condensed milk and ½ cup cream with electric mixer 3 to 4 minutes or until smooth. Do not overbeat. Add white chocolate; beat 1 to 2 minutes longer or until combined. Pour filling into crust. Bake 1 hour or until almost set. Filling will fully set while cooling. Refrigerate 8 hours or overnight.
3) In clean bowl, beat remaining 1 cup cream until soft peaks form. Serve whipped cream and warm cinnamon apples alongside cheesecake.

Apple Carrot Cupcakes

Moist carrot cake infused with applesauce and topped with cream cheese frosting.


Ingredients
1 (21.41-ounce) package carrot cake mix
1 (16-ounce) container cream cheese frosting
½ cup HORMEL® COUNTRY CROCK® cinnamon apples
½ cup chopped pecans, toasted


Directions
1 - Heat oven to 350°F. Line 24 muffin cups with paper liners. Prepare cake mix according to package directions. Fill muffin cups with batter.

2 - Bake according to package directions. Cool. Frost tops with cream cheese frosting. Place apple slices on frosting. Sprinkle tops with chopped pecans.

Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas,...


Today's Menu: Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas, and Mashed Potatoes




Tried one of the Pork Loin Chops I purchased at Costco the other day. So now I know along with the tender Top Sirloin Steak they have they also have some mighty tender and delicious Pork Loin Chops! The Chops grilled up beautifully. I rubbed a light coating of Extra Virgin Olive Oil and seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them 4 1/2 minutes per side. As I said earlier they came out moist and tender and love those grill marks! I topped the Chops with a tablespoon of the Counry Crock Cinnamon Apples leftover from the other night.

For sides it was leftover Heaven! I warmed up all the leftovers from the past day or so; Country Crock Cinnamon Apples Sugar Snow Peas, Yellow Carrots, and Bob Evans Mashed Potatoes. Great variety and all were just as good as the first time around. For dessert later a Jello Sugar Free Chocolate Pudding topped with Coll Whip Free.

Veal Cubed Steak & Brown Mushroom Gravy w/ Green Beans....


Dinner Tonight: Veal Cubed Steak & Brown Mushroom Gravy w/ Green Beans, Mashed Potatoes, Cinnamon Apples, and Whole Grain Bread



After slacking yesterday I was ready to hit the kitchen and make a full healthy dinner! I prepared a beautiful lean Cubed Veal Steak. I seasoned them with Morton's Salt Substitute and Ground Black Pepper and then rolled them in italian Style Bread Crumbs. I then fried them in Canola Oil about 4 minutes per side. They came out a beautiful crusted brown and very tender. I need to get Veal more often tender, great tasting and only 120 calories and 0 carbs per Cubed Steak. I topped it with a Heinz Mushroom Gravy that I added extra Mushrooms to and also used the Gravy for my Mashed Potatoes also.

For sides I had Idahoan Mashed Potatoes that as I said before were topped with Brown Mushroom Gravy. I also had Green Beans and a half serving of Cinnamon Apples. The meal was very low in calories and carbs that's why I was able to add on the Cinnamon Apples, which really made the meal giving everything that added flavor boost! For dessert/snack  later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Baked Pork Chop w/ Harvest Vegetables, Cinnamon Apples, and...

Today’s Menu: Baked Pork Chop w/ Harvest Vegetables, Cinnamon Apples, and Whole Grain Bread



Had one of Meijer's large Center Cut Pork Loin Chop. I marinated it in J B’s Fat Boy’s Haugwaush Barbcue Sauce and refrigerated it for 3 hours. I removed the chop from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn and then applied a light rub of McCormick Grillmate’s Applewood Rub. I then pan browned the Chop on both sides then baked the Chops at 350 degrees for 35 minutes and then flipping the Chops over and baking another 30 minutes until the temperature read 165 degrees. I love these Big Chops moist and tender and perfect for baking. And because they are so big it also makes some great leftovers for breakfast the next morning.

For sides I had  Pictsweet Steam’ables Lightly Sauced Harvest Vegetables w/ Roasted Potatoes and a Garlic Herb Sauce. It contains Sugar Snap Peas, Carrots and Roasted Red Potatoes.  Easy to fix and only 90 calories and 17 carbs per serving! I also had a 1/2 serving of Country Crock Cinnamon Apples and Healthy Life Whole Grain Bread. For dessert a Yoplait Delight 100 Calorie Chocolate Eclair Parfait.

For dinner tonight I had a large Center Cut Pork Loin Chop that I marinated it in J B’s Fat Boy’s Haugwash Bar b cue Sauce and refrigerated it for 3 hours. It was leftovers for dinner tonight. I warmed up the Chicken and Flat Dumplings from the other night. For a sides I boiled some Mini Carrots and had a couple of slices of Healthy Life Whole Grain Bread. For dessert later I'm going to heat up some Country Crock Cinnamon Apples and serve them over a serving of Breyer's Carb Smart Vanilla Ice Cream.

Bleu Cheese Turkey Burger w/ Cinnamon Apples

Dinner Tonight: Bleu Cheese Turkey Burger  w/ Cinnamon Apples


Had a Ground Turkey Burger seasoned with Sea Salt and Black Pepper. Topped with Mayfield Crumbled Bleu Cheese and served on a Healthy Life Whole Grain Bun. As a side I had Country Crock Cinnamon Apples. Dessert later Walmart Bakery Sugar Free Angel Food Cake.
