Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans

Dinner Tonight: Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans

For Breakfast this morning I Scrambled a couple of medium sized Eggs, made some Simply Potatoes
Hash Browns, fried a couple of Jennie - O Turkey Breakfast Sausage Links, and a slice of toasted Healthy Life Whole Grain Bread. A full size Breakfast for a huge appetite this morning! This way more than I usually have for Breakfast. So after Breakfast I did a load of laundry. As that was going I swept and cleaned outside. I wanted to get that done before it was too humid to do anything! Heat index of about 100 degrees today and the humidity was real bad. Finished up laundry and did some house cleaning. Dusted and vacuumed then straightened up the pantry. Full day today! For Dinner tonight i prepared a Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans.

I grabbed a Pork Chop from the freezer, that I had purchased from Meijer, and let it thaw overnight in
the fridge.

Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2
teaspoons Dried Oregano, and 1/2 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready.

Then I also heated up a can of Allens Cut Italian Green Beans. I also reheated a couple of Breadsticks
leftover from last night's Dinner. For Dessert later a bowl of Del Monte Sliced Peaches.

Baked Pork Chops w/ Herb Seasoned Red Potatoes and Cut Green Beans

Dinner Tonight: Baked Pork Chops w/ Herb Seasoned Red Potatoes and Cut Green Beans

You might know I'm missing being outside on 2 of our warmest days of the year so far. Still battling a Sinus infection, so it was another day of the Bed and Remote! Gorgeous day out though, sunny and low 60's. But starting tonight a cold front is moving in and by Thursday Morning a low in the teens and a high of 35. Warming up again by Friday though. My Dad is still in the hospital with pneumonia, somewhat better today though. So for dinner it was just me and Mom and I prepared us a Baked Pork Chops w/ Herb Seasoned Red Potatoes and Cut Green Beans.

While at Costco yesterday I picked up a package of their Pork Loin Chops. Costco has some of the finest meats around and the Pork Chops are right there with some of the best! I started by marinating them in J B’s Fat Boy’s Haugwash Barbcue Sauce. Just the name Fat Boy’s Haugwash makes my mouth water! If you’ve never tried any of their Rubs or Sauces you got to give them a try! The best I’ve ever had, bar none. Wish it was a little lower in calories and carbs but it’s worth cutting back on other things to fit this in the dinner. Anyway I marinated the Chops in the Sauce and refrigerated it for 4 hours. I removed the chops from the fridge and shook off any excess of the sauce and then seasoned it with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I then pan fried the Chops in a Cast Iron Skillet, browning both sides then baked the Chops at 400 degrees for 20 minutes flipping the Chops over after 10 minutes, internal temperature was at 150 degrees. They came out moist, tender, and delicious!

For the Red Potatoes I needed 1 tablespoon Extra Virgin Olive Oil, 1 tablespoon minced fresh or Dried Rosemary, 1 tablespoon Dried Thyme, 1/2 teaspoon Sea Salt, and 1/4 teaspoon Ground Black Pepper. I combined all ingredients in a large bowl and tossed to coat potatoes. Transfer potatoes to a shallow roasting pan. Roasted for about 30 minutes, until tender and golden. I baked them at 400 degrees, same as the Pork Chops so I was able to bake them with the Chops at the same time. I also heated up a can of Del Monte Cut Green Beans along with a slice of Klosterman Wheat Bread. For dessert/snack later, slices of Cracker Barrel 2% Sharp Cheddar Cheese and Ritz Whole Grain Crackers.

Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas,...

Today's Menu: Grilled Pork Chop w/ Cinnamon Apples, Yellow Carrots & Sugar Snow Peas, and Mashed Potatoes

Tried one of the Pork Loin Chops I purchased at Costco the other day. So now I know along with the tender Top Sirloin Steak they have they also have some mighty tender and delicious Pork Loin Chops! The Chops grilled up beautifully. I rubbed a light coating of Extra Virgin Olive Oil and seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. I grilled them 4 1/2 minutes per side. As I said earlier they came out moist and tender and love those grill marks! I topped the Chops with a tablespoon of the Counry Crock Cinnamon Apples leftover from the other night.

For sides it was leftover Heaven! I warmed up all the leftovers from the past day or so; Country Crock Cinnamon Apples Sugar Snow Peas, Yellow Carrots, and Bob Evans Mashed Potatoes. Great variety and all were just as good as the first time around. For dessert later a Jello Sugar Free Chocolate Pudding topped with Coll Whip Free.

Pan Fried Pork Chop w/ Shellie Beans, Mashed Potatoes, and 9 Grain Baked Bread

Today's Menu: Pan Fried Pork Chop w/ Shellie Beans, Mashed Potatoes, and 9 Grain Baked Bread

For dinner this evening I pan fried a Center Cut Pork Loin Chop that I lightly rolled in flour and seasoned with McCormick Grinder Sea Salt and Black Peppercorn. I fried it on medium heat in Canola Oil about 4 1/2 minutes per side. The Chop came out perfect! Nice brown crust, moist and delicious. I topped it with Bronco Bob's Tangy Apricot Chipotle Sauce, what a great combination of flavors! I still love my JB's Fat Boy Sauces but Bronco Bob's are giving them a run for their money. This sauce is perfect for Pork. You get the fresh and cool taste of the Apricot and then a hint of heat from the Chipotle. Perfect combo! If you get a chance try Bronco Bob's Sauces. I'll leave the product info at the end of the post.

For sides I heated up a can of Libby's Shellie Beans, Bob Evan's Mashed Potatoes, and I baked the other half of the loaf of Walmart Bakery 9 Grain Bread. I really like this bread! For dessert later a bowl of the mixed No Sugar Added Sliced Fruits; Peaches, Pears, and Pineapples.

Baked Pork Chop w/ Mashed Potatoes, Mushroom Brown Gravy, ...

Today's Menu: Baked Pork Chop w/ Mashed Potatoes & Mushroom Brown Gravy, Green Beans, and Whole Grain Bread

Chops, Taters, and Beans Oh My! Makes a mighty tasty dinner. I had a Pork Loin Chop that I marinated in
J B's Fat Boy HaugWaush Barbque Sauce for about 3 hours in the fridge. I then seasoned it with McCormick Grinder Sea Salt and McCormick Grillmates Applewood Rub and baked at 350 degrees for 35 minutes and then flipping it over and baked another 20 minutes,  or until it's at 165 degrees. The baking time will vary according to how thick your chop is. Comes out moist and tender bursting with great flavor! J B's Fat Boy Sauces and Rubs are the best on the market as far as I'm concerned.

For sides I had Mashed Potatoes topped with Heinz Mushroom Brown Gravy, Green Beans, and Healthy Life Whole Grain Bread. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free Whip Cream.
