Soup Special of the Day!........White Bean Soup

This week's Soup Special of the Day is a White Bean Soup. Loaded with Vegetables and Seasoning, Enjoy and Eat Healthy in 2017!

White Bean Soup

Ingredients
1 tablespoon olive oil
2 Cloves Garlic, crushed
1 Yellow Onion, chopped
1 large Carrot, chopped
1 (10 ounce) can Golden Corn, drained
Sea Salt and Pepper to taste
5 cups Reduced Sodium Chicken Broth
1 (15.5 ounce) can White Beans
1 cup diced fresh Tomatoes
1 teaspoon Dried Thyme
1 teaspoon Dried Summer Savory
1 teaspoon Dried Parsley
Crumbled Jennie - O Turkey Bacon (Optional Garnish)


Directions
1 - Heat oil in a large stock pot over medium-high heat. Saute garlic and onion until tender, approximately 5 minutes. Stir in carrot and corn, season with salt and pepper, and cook another 2 to 3 minutes. Pour in chicken broth, beans, tomatoes, thyme, savory, and parsley, and bring to a low boil. Reduce to a simmer, cover, and cook approximately one hour.
2 - Separate soup into 2 equal portions, and allow to cool to room temperature. Once cooled, puree half of the batch in a blender or food processor until smooth. Return both batches to the stockpot, and heat until warmed through. Adjust seasoning with salt and pepper as needed. Garnish the soup with the bacon and serve. Serve hot.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries







I wanted something different for Breakfast so I had a Breakfast Burrito for Breakfast this morning. I
used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. First Breakfast Burrito I’ve had in a while. Eggs and Bacon are just a natural pairing. The Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable taste, nice heat but not over powering.






Not a lot going on today, pouring the rain out! And it's a cold rain too, temperatures in the 40's. Did some housework and gave Mom a hand in the Kitchen. She made her should be world famous Buckeyes Candy and her Walnut Chocolate Fudge today. The Chocolate aroma was incredible! After that I watched a Movie I had recorded a while back. So for Dinner tonight its a Burger, Buffalo Burger! I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.






Time to satisfy my Burger hankering! Love these Buffalo Burgers and I'm combining my two
favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. For the Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burger Patty, as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious!








Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with
McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, I'm using Kraft Sliced Sharp Cheddar, with about 1 minute of cooking time left. Topped it with the cooked Turkey Bacon and Boston Bib Lettuce served it on a Healthy Life Whole Grain Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon just adds to the goodness!








I had some Alexia Organic Yukon Select Fries leftover so I prepared them to go with my
Burger.Seasoned them with McCormick Grinder Sea Salt and Black Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Shoestring Fry! Plus they are only 120 calories and 15 net carbs. For dessert later a Weight watchers Cookies and Cream Ice Cream Bar.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Started my day off with a Chili and Cheese Omelet. I used the last of the 3 Bean Turkey Chili,
Sargento Reduced Calorie Shredded Sharp Cheddar Cheese, Egg Beater's Egg Whites, and Healthy Life Whole Grain Bread. I love making Omelets using Egg Beater's, taste great and only 25 calories per serving! You could go 2 or 3 servings and still have less calories than Eggs. Also had my morning cup of Bigelow Decaf Green Tea. Cleaned up inside the house and outside I got the leaf blower out and cleaned the deck and driveway. It seems our house is a magnet for leaves and debris, it always ends up here it seems! For dinner tonight my favorite Burger, Wild Idea Buffalo Burger! I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.





One delicious Buffalo Burger combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 31/2 minutes per side, after flipping the Burger I added my slice of Cheese with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie's Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon kicks up one more notch!







For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For
dessert later a Jello Sugar Free Double Chocolate Pudding topped with Cool Whip Free.

Cumin Spiced Pork Tenderloin w/ Roasted Potatoes and Sugar Snap Peas

Dinner Tonight: Cumin Spiced Pork Tenderloin w/ Roasted Potatoes and Sugar Snap Peas




Not a good day out there today. Had the 3 H's going on- Hazy, Hot, and Humid!  It's about 94 degrees out and very humid. They are warning people with breathing problems to stay in today. Had a light Breakfast and my morning workout. Cleaned and straightened the pantry and then sorted out our spice drawer, had to pitch a couple that had expired. For dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Potatoes and Sugar Snap Peas.





Most of the time when I'm preparing Pork I use the Cumin Spiced Rub, as I did tonight. I had the
Simple Truth Pork Tenderloin in the freezer, I sat it in the fridge overnight to thaw. To prepare it I’ll need; 1 Simple Truth Pork Tenderloin, For the Rub: 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add Pork to pan; cook 4 minutes, browning on all sides. Bake at 375° for 15 minutes or until a thermometer registers 145° (slightly pink), turning after 7 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe!




I make a Potato Dish quite often, tried this new Roasted Potato Dish that uses Turkey Bacon with the
Potatoes. To make the Potato Dish I'll need; 2 Slices of Jennie - O Turkey Bacon, Sea Salt Ground Black Pepper, 1/2 tablespoon Extra Virgin Olive Oil, and quartered Small red Potatoes. Heat a cast-iron skillet over medium-high heat. Add Turkey Bacon to pan; cook 5 minutes or until crisp. Remove Bacon from pan; crumble. Add Potatoes to drippings in pan; cook 4 minutes or until lightly browned, turning once. Then bake at 375° for 12 minutes or until Potatoes are fork tender. Sprinkle Bacon and Parsley over Potatoes; serve with pork. Excellent Potato Dish. Fantastic side with Pork.




Then I also prepared some Sauteed Sugar Snap Peas. To prepare them I heated 1/2 tablespoon of
Extra Olive Oil in a large saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender. Another favorite Side Dish of mine. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

After a few days of sunshine and 70 degree weather, it cooled down today to in the 60's and cloudy all day. Had a light Breakfast, Healthy Life Whole Grain English Muffin topped with some Smucker's Sugar Free Blackberry Jam. Went to Kroger after Breakfast and picked up a few items and stopped by my bank before coming back home. Got everything put away and did a few things around the house. For dinner tonight it's a Turkey Bacon and Sharp Cheddar Cheese Buffalo Burger w/ Steak Fries




One delicious Buffalo Burger combining my two favorites, Wild idea Buffalo and Jennie - O Turkey! I used Jennie - O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Virgin Olive Oil, about 3 minutes per side, and done! I topped it with the Turkey Bacon and a slice of Kraft Sharp Cheddar Cheese, served it on a Kroger Lite Hamburger Wheat Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie - O Turkey Bacon kicks up one more notch! For a side I baked some Ore Ida Steak Fries, with a side of Hunt’s Ketchup for the Fries. For dessert later a slice of Pillsbury Nut Quick Bread.

The Sunday Pizza - Turkey BLT Pizza

Turkey BLT Pizza

Ingredients
12 slices JENNIE-O® Turkey Bacon
½ cup fat-free mayonnaise
1 (12-inch) pre-baked pizza crust
1 roma tomato, thinly sliced
1 cup shredded lettuce

Directions
* Heat oven to 450°F. Cook turkey bacon as specified on the package.

* Spread mayonnaise on pizza crust. Top crust with roma tomato and bacon. Place on baking sheet.

* Bake 8 to 10 minutes or until hot. Sprinkle with lettuce. Cut into wedges.

Beans and Smoked Turkey Sausage (Beans and Weenies)

Dinner Tonight: Beans and Smoked Turkey Sausage (Beans and Weenies)






Brrr, it was downright cold this morning! About 3:00 this morning I had to get up and turn the heat up. It was in the 30's. it looks as though it's going to be another Chilly and Rainy Night for all the Trick or Treaters around here. The last 3 Halloweens have been this way. Possible snow flurries coming Saturday morning, our first sign of snow of this season. Spent the day cleaning the spare room back where my computer is at, much needed cleaning! Well to counter the cool day I made a pot of Beans and Smoked Turkey Sausage (Beans and Weenies).






Growing up who didn’t like the old-fashioned Campbell’s Beans and Weenies! I hadn't made it in a while and sounded perfect for dinner tonight. So it's Beans and Weenies but I jazzed it up a bit. I used 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size pieces), 3 slices of Jennie - O Turkey Bacon, 1 can of Joan of Arc Spicy Chili Beans, 1 can of Bush’s Reduced Sodium Black Beans (drained and rinsed), 1/4 of a medium-sized White Onion (Chopped), 1 teaspoon Ground Cinnamon, 1 tablespoon Ground Mustard, 1 tablespoon Splenda Brown Sugar, Liquid Smoke (Optional and to taste), a couple of shakes (or more) of Frank’s Red Hot Sauce, and a 1 cup of Jack Daniel’s Honey Smokehouse BBQ Sauce (or to taste).







Another one of those delicious and easily prepared meals. I used a small size Dutch Oven that I had sprayed with Pam Cooking Spray. Added all the ingredients except for the Turkey Smoked Sausage to the Dutch Oven, and stirred until well mixed. I turned the stove on medium low, covered the pot and just let simmer. Another set it and forget recipe! After I got the Beans started I fried up 3 slices of Jennie - O Turkey Bacon. I fried it up nice and crisp and when done crumbled it up into small pieces  and added it to the Beans. You could make this in a crock pot on low and let it go all day or by using a medium size sauce pan and get done even quicker. I love dishes that you can set low and let them simmer. After a couple of hours I sliced up one of the Butterball Hardwood Smoked Turkey Sausages and added it to the Beans. I then increased the heat to medium for about another 1/2 hour and then reduced it back down to medium low until it was time for dinner. A good Hearty Meal tonight. You have the smokiness of the Bacon and Liquid Smoke, the Sweetness and Tang of the BBQ Sauce, the Spices, along with the Smoked Turkey Sausage and Beans. I just love all the flavors, a real comfort food! For dessert/snack tonight I heated up some Hormel Snackers Chili and Cheese Dip along with some Tostios Multi Grain Scoops. Love the Dip, a good way to end the day!

Chicken Bacon Ranch Pasta w/ Baked Sourdough Mini Boule

Today's Menu: Chicken Bacon Ranch Pasta w/ Baked Sourdough Mini Boule







A chill in the air this morning, about 38 degrees. Tried a new item for Breakfast this morning, Egg Beater's Egg Whites. Scrambled a serving of it up and served it on a Healthy Choice Whole Grain English Muffin with a couple of Johnsonville Turkey Breakfast Sausage Links.Love the Egg Whites! Ran a couple of errands for Mom and stopped by Kroger for her. For dinner tonight it's a Chicken Bacon Ranch Pasta w/ Baked Sourdough Mini Boule.







Found this recipe on a Pillsbury recipe email the other day. Another one of those can't wait to make it recipes! The original version is very high in calories and carbs so I had to reduce both. So I used Ronzoni Smart Taste Rotini, Kroger Deli Rotisserie Whole Chicken, Kraft Lite Classic Ranch Dressing, Jennie - O Turkey Bacon, and Sargento Shredded Reduced Fat 4 Cheese Italian. The original recipe and ingredients is at the end of the post.






To prepare it start by preheating the oven on 400 degrees. The recipe calls to microwave the dish but I prefer to bake it instead. Cook and drain the pasta as directed on package. Then in a large bowl, mix pasta and remaining ingredients. Put everything in a casserole dish and bake until heated throughout the mix. Then get ready to enjoy! I love my Pasta and I love my Chicken so this dish was perfect for me! Any dish with Bacon in it has to be good and the Cheese and ranch Dressing worked perfect with the other ingredients. Plus I saved a lot of the calories and carbs from the original recipe. I also baked a Mini Boule of Sourdough Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.








Make-Ahead Chicken Bacon Ranch Pasta
Need to cook from the pantry tonight? This pasta gets dinner on the table in less than 30 minutes and is packed with flavors your family will love.


Ingredients

1 lb uncooked rotini pasta
3 cups shredded or pulled deli rotisserie chicken
1 bottle (16 oz) ranch dressing
1 cup crisply cooked and crumbled bacon (9 to 11 slices)
2 cups shredded Italian cheese blend (8 oz)


Steps
1 - Cook and drain pasta as directed on package.
2 -In large microwavable bowl, mix pasta and remaining ingredients.
3 - Microwave uncovered on High 1 to 2 minutes or until cheese is melted and mixture is hot and steaming.
4 - To freeze: Spray 2 (8-inch) disposable foil cake pans with cooking spray. Cook and drain pasta as directed on package. In large bowl, mix pasta, chicken, dressing and bacon. Divide mixture between pans. Top with cheese. Spray pieces of foil large enough to cover pans with cooking spray. Cover pans with foil, sprayed side down. Place foil-covered pans in gallon-size resealable freezer plastic bags, or wrap in double layer of plastic wrap. Label and freeze. To bake: Thaw pan(s) overnight in refrigerator. Heat oven to 350°F. Remove from plastic, and place foil-covered pan(s) on cookie sheet. Bake 40 to 50 minutes or until instant-read thermometer inserted in center of mixture reads 165°F. If baking from frozen, bake 60 to 75 minutes.

Pancakes and Turkey Bacon this Morning!


It has been way, way, too long since I've had some Pancakes! The other day I bought a box of Bisquick Heart Smart. It's a Low Fat and 0 Cholesterol pancake mix. There are 190 calories and 32 net carbs per serving, 3 Pancakes per serving. I used Egg Beater's instead of 1 Egg to prepare the mix with. I used my flat top griddle to cook them on, along with my Jennie - O Turkey Bacon. For the Pancakes I topped them with I Can't Believe It's Not Butter and Joseph's Maple Sugar Free Syrup.






The pancakes came out nice and fluffy, they hit the spot! And if you have Diabetes 2, like myself, you have to try this Joseph's Sugar Free Maple Syrup! No difference in taste from regular Syrup and it's only 35 calories, 0 fat, and 9 carbs per serving. Everything hit the spot, It won't be so long in between Pancakes!

Bacon-Wrapped Blackberry Pork Roast w/ Green Beans & Potatoes and Boiled Carrots

Dinner Tonight: Bacon-Wrapped Blackberry Pork Roast w/ Green Beans & Potatoes and Boiled Carrots








The weather is something around here! In some places we have 4-5 inches still on the ground, then this morning it was pouring the rain along with thunder and lightening. Then as the afternoon hit, the sun came out briefly and it warmed up to the mid 50's. Then tonight some heavy rain and wind coming through, welcome to Southwest Ohio! Hopefully Spring Weather is coming soon! Well for dinner tonight another new recipe, Bacon-Wrapped Blackberry Pork Roast w/ Green Beans & Potatoes and Boiled Carrots.








Came across this recipe from the Food Network Magazine and it looked and sounded too good not to give it a try! Come on Pork Roast marinated in Blackberry Preserves, sounded good to me. To prepare it I needed; 2 tablespoons Dijon mustard, 2 teaspoons chopped fresh thyme, Kosher salt and freshly ground pepper, 1 4 -to-5-pound boneless center-cut pork loin, trimmed, 1 clove garlic (smashed), 2 red onions, quartered, and 8 slices turkey bacon. Sounding good now doesn't it! I used Polaner Sugar Free Blackberry Preserves, only 10 calories and 2 net carbs per serving, and for the bacon I used Jennie - O Turkey Bacon which is only 30 calories and 0 carbs per slice. I also used a smaller Pork Loin than what the recipe called for.







Then to prepare it was very easy. I combined the preserves, with 1 tablespoon vinegar, the mustard, thyme and 1/2 teaspoon each salt and pepper in a small bowl. Poked the pork in a few spots with a paring knife, then rubbed with the garlic; seasoned with salt and pepper. Then rubbed the pork all over with the preserves mixture, then transferred to a large Hefty  resealable bag and refrigerated overnight.







Then today, about 20 minutes before roasting, I removed the pork from the refrigerator and preheat the oven to 325 degrees F. Put the red onions in a metal roasting pan and set a rack on top. Wrap the pork with the bacon, then set on the rack. Roasted until the bacon was crisp and a thermometer inserted into the center of the pork registered 145 degrees F, about 1 1/2 hours. Let it rest 10 minutes before serving. It called for making a gravy out of the drippings but I decided not to make the gravy. The Pork came out with just an incredible flavor! The sweetness of the Blackberry Preserves along with the smokiness that the Turkey Bacon provided along with all the other ingredients worked perfect with Pork. Everyone enjoyed this one, another keeper recipe! If your a fan of Pork Roasts you have to try this one. I've left the original recipe along with it's web link at the bottom of the post.







Then for the side dishes it was the Big 3 of Vegetables, Green Beans, Potatoes, and Carrots. I heated up a can of the Del Monte Cut Green Beans & Potatoes. Then I boiled some whole Mini Carrots. Also had a slice of Klosterman Wheat Bread. For dessert later a bowl of Del Monte No Sugar Added Peach Chunks.








Bacon-Wrapped Blackberry Pork Roast

Ingredients
1/4 cup blackberry preserves
3 tablespoons white wine vinegar or champagne vinegar
2 tablespoons dijon mustard
2 teaspoons chopped fresh thyme
Kosher salt and freshly ground pepper

2 tablespoons instant flour (such as Wondra)
3 cups low-sodium chicken broth

Directions
Combine the preserves, 1 tablespoon vinegar, the mustard, thyme and 1/2 teaspoon each salt and pepper in a small bowl. Poke the pork in a few spots with a paring knife, then rub with the garlic; season with salt and pepper. Rub the pork all over with the preserves mixture, then transfer to a large resealable bag and refrigerate at least 2 hours or overnight.

About 20 minutes before roasting, remove the pork from the refrigerator and preheat the oven to 325 degrees F. Put the red onions in a metal roasting pan and set a rack on top. Wrap the pork with the bacon (see below), then set on the rack. Roast until the bacon is crisp and a thermometer inserted into the center of the pork registers 145 degrees F, about 1 1/2 hours. Transfer the pork to a cutting board; let rest 10 minutes.

Meanwhile, make the gravy: Discard all but 2 tablespoons of the drippings from the pan. Place the roasting pan over 2 burners over medium-low heat and whisk in the flour until incorporated. Add the chicken broth and whisk until thickened, about 5 minutes. Add the remaining 2 tablespoons vinegar and season with salt and pepper.

Serve with the onions and gravy

A Beautiful Morning!

Sunny and 62 degrees is a great way to start the morning! While at Walmart yesterday I came across Pillsbury Grand Jrs Biscuits! Their 100 calories and 14 carbs per Serving (1 Biscuit). I purchased a small can that contained 5 Biscuits. So for Breakfast I baked the Biscuits, they came up full and fluffy. I cut in half and topped it with a 1 Egg Scrambled Egg, 1 slice of Jennie - O Turkey Bacon, and a slice of Sargento Ultra Thin Swiss Cheese. Along with my usual morning cup of Bigelow Decaf Green Tea and the Morning Papers I was ready to go! Have a good morning everyone!
