Bread Crumb Crusted Tilapia w/ Smashed New Potatoes, Seasoned Blackeye Peas, and...

Dinner Tonight: Bread Crumb Crusted Tilapia w/ Smashed New Potatoes, Seasoned Blackeye Peas, and Whole Grain Bread

For dinner I fried up some Tilapia fillets that I rolled in Italian Style Bread Crumbs that I had seasoned with Cayenne Pepper, Sea Salt, and Ground Black Pepper. I made sure that the fillets were well coated and fried them in Extra Virgin Olive Oil about 4 minutes per side. The fillets came out delicious. I love Tilapia! It fries up to a beautiful golden brown and has a fantastic mild taste. Plus it can be used and prepared many ways.

For sides I had a can of Margaret Holmes Seasoned Blackeye Peas, Smashed New Potatoes, and Healthy Life Whole Grain Bread. To make the Smashed Potatoes I used Green Giant Klondike Petite Gourmet Potatoes. I cut each Potato in quarters. Then after putting them in a bowl I added a tablespoon of Extra Virgin Olive Oil and then seasoned with McCormick Grinder Sea Salt, Black Peppercorn, Dill, and Parsley and mixed until all were coated. I then boiled them for 20 minutes. Then put them in a serving bowl and with a fork smashed them up. Added I Can’t Believe It’s Not Butter and 2 slices of crumbled Turkey Bacon  and continued to smash and mix. For dessert later a slice of Pillsbury Nut Quick Bread topped with a scoop of Breyer’s Carb Smart Vanilla Ice Cream.

Soy and Cola Pork Shoulder Sandwich w/ New Potatoes and Carrots

Today's Menu: Soy and Cola Pork Shoulder Sandwich w/ New Potatoes and Carrots

Leftover supreme! Warmed up the Soy and Cola Pork Shoulder from the other night and served it on an Healthy Life Whole Grain Bun. The Pork Shoulder was incredible! The flavor was over the top! The Pork had been marinating in the Sauce since the other night and it was just bursting with flavor. I'll be using this recipe quite often. As sides I had boiled Mini Carrots and 2 boiled New Potatoes. After boiling the New Potatoes I flattened them out a bit by taking a coffee cup and pressing down. I topped the Potatoes with McCormick Grinder Sea Salt, McCormick Grinder Black Peppercorn, and I Can't Believe It's Not Butter. If you would want the Pork Shoulder recipe you can find it from my posting on Sept. 18th. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Bison and Bleu Burger w/ Smashed Potatoes and...

Dinner Tonight: Ground Bison Sirloin Burger and Bleu Cheese w/ Smashed New Potatoes and Chili Beans.

What a delicious and easy to cook meal! Had a Ground Bison Sirloin Burger seasoned with McCormick Grinder Steakhouse Seasoning. Cooked medium rare and topped with Lighthouse Idaho Bleu Crumbled Bleu Cheese and served on a Healthy Life Whole grain Sandwich Bun. As sides I had Smashed New Potatoes and Chili Beans. I took 4 New Potatoes and quartered each one and coated them with a 1/2 tablespoon of Extra Virgin Olive Oil and seasoned with Sea Salt and Ground Pepper. Then put them in a microwave bowl and nuked for 5 minutes and then used a hand masher and partially mashed them. I used Chili Beans and added Jack Daniels Honey BBQ Sauce, 3 dashes of Frank's Red Hot Sauce, crumbled 2 pieces ofTurkey Bacon (Fixed Earlier), and seasoned with Cumin and Ground Cinnamon and heated. Later on for dessert I'll have a slice of Walmart Bakery's Sugar Free Angel Food Cake and top it with some Del Monte Sugarless Peaches!

*Only had 1 serving of Beans and Potatoes, picture was taken with 2 servings*
