Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

Dinner Tonight: Cincinnati Style 4 Way – Spaghetti, Turkey Chiliw/ Beans, and Cheese

It heated up outside today! Sunny and a high around 87 degrees, and as usual with the heat comes the
humidity. A very good day to have the Central Air going. Tried a new product for Breakfast, and I've come across a winner! I found this at Kroger yesterday, Smithfield Anytime Hickory Smoked Boneless Sliced Ham. The Ham is precooked so it's a breeze to prepare. Heat it up in a skillet on medium high heat for just 30 seconds a side, or until heated through. I cooked it 30 seconds and it was heated. Lean, flavorful, and delicious. I've got a great new Breakfast Item. Had a Sunnyside Egg and Wheat Toast with it, and my morning cup of Bigelow Decaf Green Tea. Did some laundry for Mom  and while her and Dad was out cleaned the house. For dinner tonight it's Comfort Food Extreme! I prepared a Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese

Being from and living in the Cincinnati area all my life I’ve been around and prepared the local cuisine, and love it! Sausages, Goetta, and the Chili are just endless in varieties around here. And tonight I’m preparing one of my favorites, Cincinnati Style 4 Way – Spaghetti, Turkey Chili w/ Beans, and Cheese. For the Spaghetti I’ll be using my regular Pasta that I use, the Ronzoni Healthy Harvest Whole Grain Spaghetti. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta.

For the Chili I went with Hormel Turkey Chili with Beans. It’s my favorite canned Chili hands down.
It’s a nice thick Chili made with Turkey and seasoned just right with plenty of Beans. It’s also a perfect Chili for making Chili and Cheese Nachos. Then for my Cheese I used Sargento Reduced Fat Shredded Sharp Cheddar. I boiled the Spaghetti according to the box instructions and in a sauce pan I heated 1 can of the Hormel Turkey Chili w/ Beans. I added a few shakes of the Frank's Red Hot Sauce to the Chili. To serve I used a bowl and made a bed of Spaghetti, topped it with the Turkey Chili with Beans, and topped everything with Sargento Cheese. Some mighty fine food! Some people like adding fine diced Onions also, which makes it a 5 Way. So the 4 Way – Spaghetti, Chili, Beans, and Cheese and there you have it! Wow I almost forgot one of the most important parts, Oyster Crackers! Chili Spaghetti is always served with a bowl of Oyster Crackers, why who knows they go great with pasta and chili. I used Skyline Chili Oyster Crackers with a side of Frank’s Red Hot Sauce. To properly eat an Oyster Cracker you have to put a couple of drops of Hot Sauce on it!

As the Spaghetti was finishing up I seen we had a 1/4 loaf of Pillsbury Rustic French Bread Loaf
leftover from the other night. I preheated the oven to 400 degrees. I sliced the loaf into 5 thin slices, added some fresh sliced Mozzarella Cheese, and topped it with McCormick Grinder Italian Seasoning. Placed it on a small cookie sheet and baked it until the Cheese was melted. Made a perfect side with Spaghetti. For dessert later a bowl of Del Monte Sugarless Peach Slices.

Hormel Turkey Chili with Beans

Hormel Chili, Turkey with Beans, 99% Fat Free Always easy and always delicious, Hormel® chili is made with carefully selected beef, red beans, tomatoes and a special combination of spices. Our choice ingredients are blended and simmered, resulting in a rich and hearty flavor—perfect for dips, baked potatoes, hamburgers, casseroles, nachos, hot dogs, French fries and so much more. Hormel® chili now comes in 10 varieties and sizes, including a less sodium variety. Dinner Tonight: Crock Pot 3 Bean Buffalo Chili

Started my morning with a bowl of Cheerios Honey Nut Medley Crunch, my favorite Cheerios Cereal. After my morning workout I did some light housekeeping. It's one beautiful day in the neighborhood outside today! Still a light cool breeze bu t a high in the 60's and sunny. Ran an errand for Mom, stopped  by the bank, and the post office and back home. For dinner tonight one of my favorites, Crock Pot 3 Bean Buffalo Chili.

Well I'm using my last container of the Crock Pot 3 Bean Buffalo Chili I had in the freezer, time for another batch soon! I sat in the fridge overnight to thaw. To reheat it I just got the amount I wanted and put it in a small sauce pan and reheated it on medium low heat, till heated through. I love this Chili!

To make this Chili Comfort Food I needed; 2 lbs. Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Then I mix in 1 Red Onion (medium Chopped), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 Tbs Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low and let this baby simmer for 5-6 hours. Then get ready to enjoy some serious Buffalo Chili! You can top it with Cheese or Diced Onions. Then you can serve it by itself, with Cornbread, or topping a Johnny Cake, over Spaghetti, Hot Dog topping, I even use it to make a Chili and Cheese Omelets. I had tonight's with a topping of Cheese and Oyster Crackers, Cincinnati Style! I've left the recipe at the end of the post. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Jennie – O Turkey Frank Cincinnati Style Cheese Coneys

Today’s Menu: Jennie – O Turkey Frank Cincinnati Style Cheese Coneys

Wow what a gorgeous Fall day out there today, sunny and about 70 degrees! Did a little housework, worked out, and hit the outdoors! Got the cart out and worked on our drainage problem, toured the neighborhood a bit, spent some time down at the lake and just enjoyed the beautiful day. I had planned to grill out but the tank was empty, bad mistake on my part. So it was cooking indoors and I prepared, Jennie – O Turkey Frank Cincinnati Style Cheese Coneys.

I used the Jennie – O Turkey Franks. I boiled them, it took about 5 minutes and they were ready, plump and delicious. I opened up a can of Skyline Original Chili and heated that up for my Chili Topping. I served everything on a Healthy Life Whole Grain Hot Dog Bun. Then for my toppings I used the Skyline Chili, French’s Yellow Mustard, Frank's Hot Sauce, and Sargento Reduced Fat Sharp Cheddar Shredded Cheese. Put it altogether and you have a prime example of the World Famous Cincinnati Style Cheese Coney! Had a small side of some Skyline Oyster Crackers along with a Diet Dr. Pepper that I had let chill in the freezer for about 10 minutes. Love Dr. Pepper when it sits in the freezer and ice just starts forming on the top. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

One of America's Favorites - Oyster Crackers

An individual serving package of oyster crackers

A must have food staple in all the Cincinnati Chili Resturaunts, the Oyster Cracker! Here in Cincinnati we top our Chili Spaghetti and Cheese Coneys with them or just eat them with a drop of hot sauce on them. We love our Oyster Crackers around here!

Oyster crackers are small, salted crackers, typically rounds about 0.59 in (15 mm) in diameter, although a slightly smaller hexagonal variety is also prevalent. They are served with oyster stew, but oyster crackers do not contain oysters. They are similar to saltine crackers.

Oyster crackers are popular in the northeastern United States, where they are served as an accompaniment to soup, and in the Cincinnati area, where they are frequently served with the city's distinctive chili. In New England, oyster crackers are served in oyster stew and chowders. Additionally, plain oyster crackers are sometimes seasoned with spices. They usually have a taste similar to saltine crackers, but far less salty. In other areas of the United States, they are among the choices for crackers with soup. They are often available in single serving packages for restaurant use.

Many different companies produce oyster crackers with different combinations of shortenings and other ingredients, but retaining the same general shape and size.

The origin of the term "oyster cracker" is unclear, but it may be that they were originally served with oyster stew or clam chowder or merely that they look like an oyster in its shell. According to the web site of the still-extant bakery discussed below, the crackers were so named because they were commonly served with oyster stew and other oyster dishes (at least on their early packages). Other names include "water cracker," "Philadelphia cracker," and "Trenton cracker".

The Westminster Cracker Company of Rutland, Vermont, has been making oyster crackers since 1828. But Adam Exton is credited for inventing the oyster cracker.

Adam Exton, the baker of Trenton, New Jersey, emigrated to America from Lancashire, England, in 1842. In Trenton, Exton opened a cake and cracker bakery with his brother-in-law, Richard Aspden, in 1846. Although Aspden died the following year, Exton continued with the bakery (the "Exton Cracker Bakery" or "Adam Exton & Co."). He invented a machine that rolled and docked pastry and solved the sanitary problems of hand-rolling crackers.

The history of the oyster cracker was related by Exton's nephew, also named Adam Exton, in the Trenton Evening Times Newspaper on May 31, 1917:

Even a cracker has a history. The past, present and future of the little disc of baked dough with "Exton" stamped across the face of it was discussed by Rotarian Adam Exton, of the Exton Cracker Company, at the weekly meeting of Trenton Rotary Club held this afternoon at Hildebrecht's... Manufacture of the Exton oyster cracker was started in Trenton, in the same location now occupied by the company's factory of Center Street, in 1877. Adam Exton, uncle of the speaker, was the originator of the oyster cracker. At the outset the factory had an output of 100 pounds of crackers a day, 36 of them to a pound, making a daily capacity of 3,600 crackers.

Oyster crackers became popular and around 1848, one can find the first advertisements of merchants selling oyster crackers.

Ronzoni Healthy Harvest Spaghetti

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

74 degrees and sunny yesterday and 30 degrees with blowing snow and a possible 1"-2" of snow by later tonight! This weather is really getting old. Not feeling much better today, Sinus Infection. Keeping it short so I can lay back down and rest. Wanted something easy to prepare so for dinner its Skyline Chili and Spaghetti – 3 Way w/ Oyster Crackers.

I used my favorite, the Skyline 3 Way – Chili, Spaghetti. They sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with Skyline Chili. I added a few dashes of Frank’s Red Hot Sauce and Cheese to make it a 3 Way and used Sargento Reduced Fat Shredded Sharp Cheese. The Chili Spaghetti is 270 calories and 20 net carbs. I also had a side of Skyline Oyster Crackers. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Dinner Tonight: Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Oh the Winter just keeps going on. It started snowing here about 6 pm. and from what they say we'll end up with about another 4"-6" of new snow. I can deal with the snow and cold but the freezing rain I hate! Along with our snow they a possible 1/4" of the nasty stuff. So once again it's not wheelchair friendly weather outside. Plus our friend the Groundhog didn't help things out with his prediction of 6 more weeks of Winter. Just smile and go on. For dinner a cold winter’s day warmer, Skyline Chili and Spaghetti – 3 Way w/ Oyster Crackers. What better way to heat it up a bit.

Crock Pot 3 Bean Buffalo Chili!

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili

A bit chilly this morning, 31 degrees! Had a light frost on the roof tops also. Cleaned the house early and then time for some Football! For dinner it's a Classic Comfort Food, Crock Pot 3 Bean Buffalo Chili. Chilly on the outside and Chili on the inside! (Sorry about that one)

I had some of the Crock Pot 3 Bean Buffalo Chili in the freezer so I set a container of in the fridge overnight to thaw. I Love Chili especially this one that I make. I use Wild Idea Buffalo's Ground Buffalo which is the best tasting Ground Buffalo that I've found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed),  and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), 3 Cloves Minced Garlic, and 2 tablespoons of Jiff Reduced Fat Creamy Peanut Butter. First time I added Peanut Butter, a friend of mine that enters a lot of Chili Competitions told me to give it a try. It does give your Chili a rich flavor.  For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food, Chili! You can serve it in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. Anyway you have it it's delicious! For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

* With the Chili leftover I'm thinking a Chili and Cheese Omelet in the morning for Breakfast!

Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

Today’s Menu; Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers

What a day! I attempted to make a Soft Pretzel recipe I came across the other day. What a disaster!! It looked to be a fairly easy recipe but everything went wrong. I followed the recipe and got to the part where you had to put everything in a bowl and using the kneading mixer attachments, this is where it got interesting to say the least. I was let it knead on medium for 10 minutes but after about 5 minutes is where it turned into a "I Love Lucy" episode! I was catching up on doing some dishes and as I turned around the mixer started throwing dough everywhere, and I mean everywhere! So for a half hour or MORE I was cleaning up dough from all parts of the kitchen. It will be a while if ever I try this recipe again. If I crave a Soft Pretzel I'll buy some!

After cleaning and everything I wanted something real easy to make! So I went with the microwave and the Skyline 3 Way – Chili, Spaghetti, Cheese w/ Side of Oyster Crackers! They now sell it packaged for the microwave, a bit smaller size than what you get at a Skyline but just right for those still watching calories and carbs. It comes with Spaghetti topped with that wonderful Skyline Chili. You add the Cheese to make it a 3 Way. I grated a block of Kraft 2% Sharp Cheese for a topping for my Chili and also had a half serving of Skyline Oyster Crackers. Overall it's just over 400 calories and 33 carbs. For dessert later a Jello Sugar Free Chocolate Pudding.

Cincinnati Style Chili Cheese Coneys!

Dinner Tonight: Cincinnati Style Cheese Coneys

Oh yeah it's Coney night around the old homestead tonight! I used Ball Park White Smoked Turkey Franks, 1 Can of Skyline Chili, French's Mustard, Kraft 2% Shredded Sharp Cheese, and Healthy Life Hot Dog Buns. Put it all together and you have the Cincinnati Style Chili Cheese Coney. Had a few Oyster Crackers also, which is a must when having any type of chili. You can also add diced Onions to your Coneys if you like. All together makes a one fine dinner!

A little history of Cincinnati's Skyline Chili:
Skyline Chili is a chain of chili restaurants based in Cincinnati, Ohio. Founded in 1949 by Greek immigrant Nicholas Lambrinides, Skyline Chili is named for the view of Cincinnati's skyline that Lambrinides could see from his first restaurant (which has since been demolished), opened in the section of town now known as Price Hill.

Skyline Chili is unique in that it is not chili con carne, the meat dish that originated in (and is the state dish of) Texas. Instead, Cincinnati-style chili is a sauce usually used over spaghetti or hot dogs, containing a unique spice blend that gives it a very distinct taste. Officially, the recipe for Skyline Chili is a well-kept family secret among Lambrinides' surviving children. However, many Skyline patrons and Cincinnatians believe that the unique taste of Skyline Chili comes from chocolate and cinnamon, spices common in Greek cuisine's meat dishes. The general recipe is not unique to Skyline — "Cincinnati-style" chili is sold by several chili parlors in the area including Empress, Dixie, Gold Star Chili, Camp Washington, and other chili parlors.

Skyline's menu includes their signature dishes: cheese coneys (a hot dog topped with Skyline Chili, mustard, onions, and cheese), and 3-ways (spaghetti topped with Skyline Chili and cheese; 4-ways (choice of beans or onions added), and 5-ways (beans and onions both added). Additional menu items include burritos made with Skyline Chili, classic and Greek-style salads, french fries, and baked potatoes topped with Skyline Chili. To accommodate patrons who follow a low carbohydrate diet, Skyline has recently offered low-carb options such as a "coney bowl"—a cheese coney without the bun, and also now serves vegetarian options, using beans and rice in place of chili in many of its dishes.
