desserts that our fans love. From pasta salad, fruit bars and deviled eggs to baked beans and blueberry cobbler, our recipes for a potluck are healthy, delicious additions to any BBQ, picnic or party.

Oven-Fried Chicken on a Stick
Here's a fun way to serve oven-fried chicken for a picnic: put it on a stick. It's fabulous served with this homemade Vidalia onion and honey-mustard sauce, but it's also great with barbecue sauce or Frank's hot sauce. This is an easy recipe to double if you're serving a crowd....

Pulled Pork with Caramelized Onions
Traditional pulled pork is barbecued, which gives it a smoky flavor. But the slow cooker happens to be the absolute easiest way to cook pulled pork--and you can get a hint of smoke by adding chipotle chile. Serve the pulled pork with potato salad, collard greens and grits. Or make it into a sandwich and serve it on a bun with coleslaw..........

8-Layer Taco Salad
This gorgeous and colorful 8-layer taco salad recipe is made healthier by using ground turkey in place of beef, adding Greek yogurt and bumping up the amount of vegetables. Serve this salad in a clear glass bowl and you'll have an eye-catching party-worthy dinner or potluck side in just 30 minutes...........

Turkey and Ham, w/ all the Trimmings - Happy Thanksgiving!

Dinner Tonight: Turkey and Ham, w/ all the Trimmings

I wish you all a "Happy Thanksgiving" today! To start my morning off I fried a couple of Jennie - O Turkey Breakfast Sausage Links, Scrambled some Egg Beater's Egg Whites, toasted a Healthy Life Whole Grain English Muffin, and my morning cup of Bigelow Decaf Green Tea. It's a cloudy Thanksgiving Day around here but had a high in the 50's. Spent most of the morning prepping dishes to prepare for our Thanksgiving Day Feast. For Dinner we are having Turkey and Ham with all the trimmings.

For the Turkey we are using a Jennie - O Oven Ready Boneless Turkey Breast. I'm saving the 13 lb. Turkey Jennie - O recently sent me for Christmas. With just Mom and Dad and myself the smaller Turkey Breast will be plenty along with a Ham we purchased. For side Dishes we'll be having; Del Monte Cut Green Beans, Green Giant Mini Ears of Sweet Corn, homemade Dressing, my Mom's World Famous Deviled Eggs, and I baked some Rolls for Mom and Dad. Along with the Turkey Breast I purchased a small Cumberland Gap Semi Boneless Ham.

As I said we are using the Jennie – O Oven Ready Skinless Boneless Turkey Breast. Such an easy way to have a moist and fantastic tasting Turkey, along with very little clean-up! Comes in a Jennie O Turkey Breast Oven Ready Bag, that you bake at 375 degrees for about 2 to 3 hour until it reads 165 degrees. It also now has a pop up inserted in the breast that pops up when done. The Turkey comes out moist, juicy and delicious, and browns up beautifully! Cooking for just myself and my parents, it’s just the right size (2-3 lbs.). Enough leftover for some great Turkey Leftover Recipes that I can't wait to try!

We baked the Cumberland Gap Ham last night so it was ready to go. Mom made the Deviled Eggs and Dressing and I made the rest of the side dishes and baked the Rolls. Everything turned out so good and the aromas coming from the kitchen was just incredible! Excellent Thanksgiving Day Dinner!

Mom also baked a Pumpkin Pie and my favorite an Apple Pie! The Apple Pie is made using Splenda. So my for my Dessert later tonight I'm having a slice of Apple Pie! Enjoy and Happy Thanksgiving everyone!

So say “yes” to all those invitations, whip up some of these fresh, healthy recipes and enjoy the best of the outdoors!

EatingWell Deviled Eggs
Deviled eggs are a perennial potluck favorite. Our recipe replaces some of the egg yolks with nonfat cottage cheese—keeping the filling velvety and rich while reducing some of the fat. No one will know the difference.....

Raspberry Bars
Tart raspberry filling is swirled into a low-fat cream filling in these beautiful bars. They're a festive treat for a summer picnic or party......

Almond Butter-Quinoa Blondies
People likely won’t even notice that these delicately nutty, just a little chocolaty, blondies are gluten-free. They use quinoa flour, which you can find in well-stocked supermarkets and natural-foods stores, in place of all-purpose flour. To make your own quinoa flour, grind raw quinoa into a powder in a clean coffee grinder. (Adapted from Quinoa Revolution by Patricia Green and Carolyn Hemming.)

Dinner Tonight: Thanksgiving Day Dinner!

Not a lot going on today. It was just me, Mom, and Dad for Thanksgiving Dinner with others stopping by later in the day and evening. Spent the day as Mom's souse chef, she wanted to make dinner. It couldn't be any easier to prepare the Turkey. It goes straight from the freezer into the oven. It

Fantastic flavor, fresh tasting, and it browns up perfectly in the heating bag. So thank you again to Jennie - O for our free Turkey! One of America's Favorites - Deviled Egg

Deviled eggs (US) or devilled eggs (UK) are hard-boiled eggs, shelled, cut in half, and filled with the
A plate of deviled eggs
hard-boiled egg's yolk mixed with other ingredients such as mayonnaise and mustard, but many other variants exist internationally. Deviled eggs are usually served cold. They are served as a side dish, appetizer or a main course, and are a common holiday or party food.

The term "deviled", in reference to food, was in use in the 18th century, with the first known print reference appearing in 1786. In the 19th century, it came to be used most often with spicy or zesty food, including eggs prepared with mustard, pepper or other ingredients stuffed in the yolk cavity.

In parts of the Southern and Midwestern United States, the terms "stuffed eggs", "salad eggs", "dressed eggs", or "angel eggs" are also used, particularly when served in connection with church functions, avoiding the name "Devil." The term "angel eggs" is also used in association with deviled eggs stuffed with "healthier" alternatives.

Cool hard-boiled eggs are peeled and halved lengthwise, and the yolks are removed. The yolks are then mashed and mixed with a variety of other ingredients, such as mayonnaise and mustard. Tartar sauce or Worcestershire sauce are also frequently used. Other common flavorings include: diced pickle or pickle relish, salt, ground black pepper, powdered cayenne pepper or chipotle chillies, turmeric, vinegar, green olives, pimentos, poppyseed, thyme, cilantro, minced onion, pickle brine, caviar, cream, capers, and sour cream. The yolk mixture is then scooped with a spoon and piped back into each egg "cup". Old Bay, paprika, curry powder, cayenne, chives, and dill may then be sprinkled on top as a garnish. It may be further decorated with dollops of caviar, anchovy, bacon, shrimp or herring. .

Contemporary versions of deviled eggs tend to include a wider range of seasonings and added foods, such as garlic, horseradish, wasabi, sliced jalapeños, cheese, chutney, capers, salsa, hot sauce, ham, mushrooms, spinach, sour cream, caviar, shrimp, smoked salmon or other seafood, and sardines.

The deviled egg can be seen in recipes as far back as ancient Rome, where they were traditionally served as a first course. It is still popular across the continent of Europe. In France it is called œuf
Deviled egg plate
mimosa; in Hungary, töltött tojás ("stuffed egg") or kaszinótojás ("casino egg"); in Romania, ouă umplute ("stuffed eggs"); in the Netherlands gevuld ei ("stuffed egg"); in Sweden fyllda ägg ("stuffed eggs"); in Malta it is called bajd mimli ("stuffed eggs"). In many European countries, especially Belgium, France, the Netherlands and Germany, a variation is served known as "Russian eggs". This consists of eggs cut in half, served with vegetable macédoine and garnished with mayonnaise, parsley and tomato. Contrary to what the name might suggest, the dish does not originate in Russia: its name derives from the fact that the eggs are served on a bed of macédoine, which is sometimes called Russian salad. In the Black Forest region of Germany, Russian eggs may be garnished with caviar. In Sweden, the deviled egg is a traditional dish on the Easter Smörgåsbord, where the yolk is mixed with caviar, cream or sour cream, optionally chopped red onion, and decorated with chopped chives or dill, perhaps with a piece of anchovy or pickled herring. Deviled eggs are a common dish in the United States. In the Midwestern and Southern U.S., they are commonly served as hors d'oeuvres before a full meal is served, often during the summer months. Deviled eggs are so popular in the United States that special carrying trays are sold for them. Prepared and packaged deviled eggs are now available in some U.S. supermarkets.

In French cuisine, the other ingredients are most likely to be pepper and parsley. In Hungarian cuisine the yolks are mashed and mixed with white bread soaked in milk, mustard and parsley, often served as an appetizer in mayonnaise or as a main course baked in the oven with Hungarian sour cream topping and served with French fries. Other common flavorings of the yolks in the German cuisine are anchovy, cheese and caper.

Thanksgiving Dinner

Today's Menu: Thanksgiving Dinner

Happy Thanksgiving Everyone! Hope you all had a wonderful day. Well I've been taking care of my parents the last few days, both have the flu that's been going around. Now, I have it! It was bound to happen and I rarely get the flu, but I have it now. All you can do is work through it! For Dinner Tonight, Thanksgiving Dinner.

Last month I had posted that Jennie -O had sent me a free 12 - 13 lb. Jennie - O Oven Ready Whole Turkey, and today we put that Bird to use! It goes straight from your freezer to the oven, no thawing needed! How easy is this! It comes sealed in a Fool Proof Cooking Bag. Start by preheating your oven to 375 degrees.  Just place it in a roasting pan, put 6 - 1/2" slits in the top of the bag, and let that Bird Roast. Roast the turkey until a meat thermometer inserted into the center of the breast reaches 170°F, it also has a Pop -Up  Thermometer inserted in it. When it was done I let the Turkey rest for 15 minutes.  What a Turkey! Seasoned perfectly, moist, and just bursting with flavor! Thanks again to Jennie - O Turkey!

For sides we used Bob Evan's Mashed Potatoes, Deviled Eggs, Baked Sweet Potatoes, home canned Green Beans, and I heated up some rolls for Mom and Dad. For dessert later Mom had baked an Apple Pie and also a Chocolate Pie, using Splenda Sugar. Again hope all of you had a fantastic Thanksgiving, take care!

Grilled Brats, Chips, and Deviled Eggs

Dinner Tonight: Grilled Brats, Chips, and Deviled Eggs

Third day in a row of beautiful weather! Sunny and the 70's again. Went to the store for Mom and back home for the day. Stopped by a neighbors for a while and got the cart out for the afternoon. For Breakfast I had Wheat Toast and Turkey Sausage, then for Lunch Tyson Smokey BBQ Chicken Wings, for Dinner I had no clue! One of those days where nothing sounded good. I settled on, Grilled Brats, Chips, and Deviled Eggs.

Mom and Dad wanted grilled Hot Dogs and Brats so I thought sounded good as anything. So I     fired up the grill and put some Hot Dogs and Brats on. I used Ball Park Hot Dogs, Mom's favorite, and Blue Grass Lean Bratwurst which are 100 calories and 4 carbs per Brat. Delicious and they cook up great! Served them all on Aunt Millie’s Reduced Calorie Hot Dog Buns and topped with French’s Spicy Brown Mustard. Grilled a couple extra Brats for lunch tomorrow.

Then Mom had made some Baked Beans and Deviled Eggs. I passed on the Baked Beans, too many calories in the way she made them, but had the Deviled Eggs and Mom makes the best! Nothing had sounded good, but it all came together for a great dinner! For dessert later a Healthy Choice Vanilla Bean Frozen Yogurt.

Prime Rib w/ Mashed Potatoes, Green Beans, and Baked Cheddar Bay Biscuits

Tonight's Christmas Dinner: Prime Rib w/ Mashed Potatoes, Green Beans, and Baked Cheddar Bay Biscuits

Let me start by saying "Merry Christmas" to everyone! In the past we always had a huge family gathering for Christmas Dinner but the today as the last couple of Christmas Dinner it's just been Mom and Dad and myself. It's been a quiet relaxing Christmas. Another cold one out but not as bad as yesterday, no wind today made the difference. For dinner it was a feast! I prepared a Prime Rib w/ Mashed Potatoes, Green Beans, and Baked Cheddar Bay Biscuits.

I had purchased a Seasoned Half Beef Rib eye for Prime Rib Roast at a local GFS Market in nearby Fairfield a while back and had it in the freezer. Laid it out in the fridge yesterday to thaw so it was ready for the oven today. Nice size one, 7.750 lbs. of nothing but Prime Rib! So easy to prepare, just preheated the oven at 250 degrees. Then placed the roast in a medium size roasting pan with a rack in it. Sprayed the rack with Pam Spray and added a 1/4" of water to the pan. Then placed the Roast on the rack and basted it in its own juices that were in the bag. Placed it in the oven for about 2 1/2 hours, til a thermometer read 120 degrees, perfect medium rare! As it was roasting I would baste it from time to time with the juice. We buy our Prime Rib from GFS every year and the quality is always spot on. Tender, moist, and just bursting with flavor! This one was so tender you could cut it with your fork. Plus always the good thing, lots of leftovers for some incredible Prime Rib Sandwiches!

Prime Rib as far as I'm concerned is a meal in it's self but Mom and Dad love the side dishes. So for one side I heated up our favorite Mashed Potatoes, Bob Evan's Mashed Potatoes. These are so good and saves so much time than having to peel, cook and mash potatoes! Then I also heated a jar of the Canned Green Beans we had Canned earlier this year. Nothing like fresh Green Beans in the Winter! As if that's not enough my dad wanted some Corn on the Cob so I boiled some Mini Ears of Green Giant Mini Ears of Sweet Corn. I used the juice of the Prime Rib when it was done for some Gravy and I baked some Red Lobster Cheddar Bay Biscuits. First time I had baked this one. Just mixed the Packet of Biscuit with water and grated Cheddar Cheese. Mixed it into a dough and made it into balls on to a baking sheet. Baked at 425 degrees for 16 minutes. When ready I basted them with a Garlic Butter Sauce while they were still hot. Tasted just like what you get at the Red Lobster! For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

GFS Seasoned Half Beef Rib eye for Prime Rib Roast

• A classic holiday choice for parties, banquets, and special events
•  Slowly oven-roasted for juicy,full flavor
• Carefully selected USDA Choice and Select beef options

Leftovers: Turkey Sandwich w/ Green Beans and Deviled Eggs

Dinner Tonight: Leftovers: Turkey Sandwich w/ Green Beans and Deviled Eggs

Very cold this morning. Went out and got the morning paper and it was around 13 degrees, Brrrr! Went to Kroger around 9 am this morning and it was a ghost town, everyone at the Malls and Walmart and such for their Black Friday shopping. I compared prices with the ads in the paper yesterday and checked on line and the prices were the same, and some even cheaper, and most with free shipping. Plus I could do it in the comfort and warmth of my home! Doesn't make much sense. For dinner tonight it was a lot of fantastic leftovers from yesterday! I prepared a Turkey Sandwich w/ Green Beans and Deviled Eggs.

The Turkey was from a Jennie – O Oven Ready Turkey Breast that we prepared yesterday. The leftover was just as good as it was for dinner last yesterday. I took some slices of the Turkey and put them on an Aunt Millie's Reduced Calorie Whole Grain Bun. i topped it with a little of the French's Yellow Mustard and Kraft Reduced Fat Mayo and it was set to go!

I also warmed up some of the Green Beans. The Beans were some of the Canned Green Beans that we canned earlier this year. I also had a couple of Deviled Eggs that my Mom had prepared. I've had many Deviled Eggs but non as good as Mom does! Then for dessert later  some more of the melt in your mouth Apple Pie. Mom made this also and used Splenda to make it with, you can't tell the difference between a Sugar made pie and the Splenda made pie that she made. I had a slice topped with a scoop of Breyer's Carb Smart Vanilla Ice Cream.

Our Thanksgiving Meal

Dinner Tonight: Our Thanksgiving Meal

Happy Thanksgiving Everyone! We had a quiet day and dinner, just Mom, Dad, and myself. There will be more later in the day and evening coming over. The wind that we've had has died down finally but it's only a high in the low 30's but it's sunny out. For dinner tonight; Our Thanksgiving Meal.

We had Turkey, Ham, Stuffing, and Beans with all the other trimmings in between! I prepared a Jennie – O Oven Ready Turkey Breast. This is the easiest Turkey Breast there is to prepare! Preheat your oven to 375 degrees and remove the frozen Turkey from the outer package. Keep the Turkey in it’s cooking bag and place it in a roasting pan. Roast it for 2 1/2 to 3 hours making sure the Turkey reads at least 170 degrees. You have your Thanksgiving Gobbler! Simple, easy, and delicious.

Apple Pie

For the Ham we used a Cook's Bone-In Ham (1/2 Ham). My Mom prepared that last night so it was ready for today's feast. Then for our side dishes we had; Mashed Potatoes, Brown Gravy, Green Beans  (a quart of the Greens Beans we canned earlier in the year), Home Made Stuffing (Mom prepared this), Deviled Eggs, and Baked Rolls. Plus for dessert my Mom baked a couple of pies, a Pumpkin Pie and a Apple Pie. Both were made by using Splenda. I'm not big on Pumpkin Pie but that Apple Pie won't stand a chance later this evening! For dessert later a slice of Apple Pie with a scoop of Breyer's Carb Smart Vanilla Ice Cream! Only one way to describe this, "It was a feast!" Once again Happy Thanksgiving to you all and say a prayer later for our Country and all Military Men and Women serving our country!

What to do with - Leftover Deviled Eggs

I love Deviled Eggs! And I hate to see the extra ones go to waste so here's one way to put them to good use. You can serve it as another appetizer by spooning them on to crackers. Chop and dice the white egg part and top with a caper, a black olive slice or a sprig of dill. Then below are a few more great ideas from http://www.ehow.com/

Egg Sandwich
The easiest way to use leftover deviled egg filling is to make a tray of sandwiches. The recipe for deviled egg filling is nearly identical to the recipe for egg salad. You may want to add more mayonnaise to make the filling smoother. You may also want to add other seasonings and chopped vegetables, such as cayenne pepper or chopped celery. Toast enough bread slices to make the number of sandwiches you want. Top a toasted slice with lettuce, a piece of fresh tomato, some deviled egg filling and the other slice of toast. If desired, you can make finger sandwiches using bread with the crust cut off and sliced into small rectangles.

Deviled Egg Dip
You can make a dip out of unused deviled egg filling. Place the filling into a large bowl and add anywhere from 1/2 cup to 1 cup of mayonnaise or sour cream, depending on the amount of filling you have. If you have less than 1 cup of filling, use more mayonnaise; if you have more than 1 cup of filling, use less mayonnaise. Stir this mixture thoroughly with a whisk or spoon. Add a package of ranch or French onion dip mix, if desired. For another idea, mix the deviled egg filling with prepared guacamole. Serve either recipe with chips, crackers or small vegetables.

Deviled Eggs Benedict
You can give the classic breakfast dish, eggs Benedict, an unique twist with this recipe. The normal recipe consists of a poached egg atop a slice of Canadian bacon on an English muffin covered in Hollandaise sauce (a rich, egg-based sauce). Substitute a scoop of deviled egg filling for the poached egg and you have a whole new dish: deviled eggs Benedict. Instead of attempting to make homemade Hollandaise sauce (which can be difficult), you can purchase Hollandaise sauce mix from grocery stores.

Deviled Egg Samosas
Samosas are an Indian appetizer traditionally consisting of pastry stuffed with a potato filling. They are easy to make, especially if you use ready-made ingredients. Purchase a package of frozen O'Brien or hash brown potatoes, a package of frozen peas and a package of refrigerated pie crust or won ton wrappers. Cook some of the frozen potatoes with the frozen peas and season with curry powder, ginger and cilantro. Stir your leftover deviled egg filling into the potato mixture. Fill pie crust rounds, circles or wontons with the potato-egg filling and fry them in batches. These are perfect for a large gathering, such as a movie night or a Super Bowl party.
