Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans

Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans



To start my morning off I prepared French Toast and Sausage. For the French Toast I used Aunt Millie’s Light Whole Grain Bread, Egg Beater’s, Ground Nutmeg, and Ground Cinnamon. For the

Sausage I used Johnsonville Turkey Sausage Links. I also had my morning cup of Bigelow Decaf
Green Tea. Rain almost all day on and off, 46 degrees. Good day to stay in, which I needed. Up most of the night battling the Phantom Pains. They started about 9:00 last night and didn't let up until about 11:00 this morning. It was one long night! So after the Phantom Pains stopped I caught up on some much needed sleep. For Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, and Mixed Chili Beans.





On my last visit to Meijer I picked up a Bone – In Pork Loin Chop and had it in the freezer. I grabbed the Chop from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need;
The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150, turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!


To go with the Chop I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes
and serve, just as good as homemade, if not better. I Love the combination of Mashed Potatoes and Beans!












For a 2nd side I prepared a can of Bush’s Mixed Chili Beans – Kidney and Pinto Beans in Mild Chili Sauce. For me you just can’t beat Bush’s Beans. I’ve prepared these several times now and really
love them, nice combo using the Kidney and Pinto Beans. To prepare them just empty the Beans into a small sauce pan. Cover and heat to a simmer. Done! The only store I have found them is Meijer so far. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.











Pork Facts….

Cumin Spiced Monster Pork Chop w/ Mashed Potatoes, Cut Green Beans, Baked Corn Muffins

Dinner Tonight: Cumin Spiced Monster Pork Chop w/ Mashed Potatoes, Cut Green Beans, Baked Corn Muffins





We set a record for the coldest morning on this date, 18 degrees! But the sun came out and it was around 45 degrees. Our temperatures are to get warmer as the week goes on, at last! Got out side and was able to clean the some of the outside windows, and they needed it. Then went and had my car washed and the inside cleaned. Back home for some NCAA Basketball for the rest of the afternoon. For dinner tonight it's a Cumin Spiced Monster Pork Chop w/ Mashed Potatoes, Cut Green Beans, Baked Corn Muffins.





I picked up a huge package of Pork Chops on my last visit to at Costco and had them in the freezer. Costco has some of the finest meats around and the Pork Chops are right there with some of the best! The good thing about these Chops are They are so big that there’s plenty leftover for my Breakfast the next morning! I got one of the Chops from the freezer and let it thaw overnight in the fridge. To prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. I had to increase the cooking time due to the size of the Chop. Start by heating the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning both sides. From the stove to the oven and bake at 400° for 25 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!






For one side dish I heated up some Bob Evan’s Mashed Potatoes, just microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I heated up a small can of Del Monte Cut Green Beans. Also I baked some Corn Muffins. I used a box of Jiffy Corn Muffin Mix. Easy to prepare and so delicious, been a long time since I've had these! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Carefully remove from microwave, pull back film, and stir. 5. Continue heating for an additional 2 to 3 minutes and stir. 6. Let stand for 2 minutes prior to serving. Stove Top (Time and temperature settings may vary due to differences in your particular stove or microwave. Always cook this product to 160 degrees F prior to serving.): 1. Remove board overwrap and film. 2. Empty contents of tray into sauce pan. 3. Place on stove top over medium heat. 4. Heat and stir until hot. 5. Carefully remove from cooktop and serve.

It's been one of those lazy Sunday afternoon's around here today! Nothing, and I mean nothing going on today. Did a bit of cleaning then it was Sofa City with the remote in hand. We have a couple of Crabapple Trees in the front yard and they are full of Robins. Every year we seem to be a layover for their treks back North, they're a bit early this year. Could it be a sign of an early Spring? For dinner tonight I prepared a Cumin Spiced Pork Chop w/ Sauteed Mushrooms and Baked Potato.
 




Picked my Chops up while at Meijer the other day, on sale! To prepare my Chops I’ll need; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 11 minutes or until a thermometer registers 155° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Chop! Fantastic combo of Spices, which made one incredible Crust on the Chop with the inside being tender and moist! By far my favorite Pork recipe anymore!





For one side I prepared some Sauteed Mushrooms. Using Baby Bella Mushrooms, I quartered the Mushrooms. I seasoned them with Dried Thyme, Ground Smoked Cumin, Dried Parsley, and Sea Salt. Pan fried them in Extra Virgin Olive Oil and a pat of Blue Bonnet Light Butter. Then I also had a Baked Potato, seasoned this with McCormick Grinder Sea Salt and Black Peppercorn. For dessert later tonight a Healthy Choice Dark Fudge Swirl Frozen Yogurt
