Beefy Potato Salad with Green Beans w/ Sourdough Baked Bread

Dinner Tonight: Beefy Potato Salad with Green Beans w/ Sourdough Baked Bread

A very long day. We had to admit my Dad into the hospital again, pneumonia again. Plus they informed us that after getting rid of the pneumonia he'll have to go into rehab for a while to build his strength back up. So for dinner I wanted to make a good hot meal for my Mom after she got back from being at the hospital all day. So I prepared a new recipe for dinner Beefy Potato Salad with Green Beans along with baking a California Sourdough Bread Loaf.

I came across this recipe on one of my email newsletters from Potato Goodness web site, which is full of
some great recipes. I did make a change in the recipe, I didn't have a Vinaigrette Dressing so I used a Ken's Steakhouse Lite Northern Italian With Basil and Romano Dressing and Marinade. It worked out great as the marinade! Fantastic flavor and only 45 calories and 1 carb per serving. I also used Canola Oil instead of Vegetable Oil. I used a Walmart Top Sirloin 1 1/2 lb Steak that I trimmed and sliced into thin strips. I then put it in a Hefty Zip Bag and added my Ken's Marinade and then refrigerated it for about 2 hours or so. To prepare it I needed 1 pound beef top sirloin, cut 3/4 to 1 inch thick, 1/2 cup prepared vinaigrette dressing with Parmesan cheese (Ken's Lite), divided, 2 tablespoons vegetable oil (Canola Oil), divided, 3 cups frozen cut green beans, and 1 package (1-1/4 pound) refrigerated prepared potato wedges.

Then to prepare it I heated 1 tablespoon oil in large nonstick skillet over medium-high heat until hot. Added green beans; stir-fry 5 minutes. Added remaining 1 tablespoon oil and potatoes; continue stir-frying 4 to 6 minutes or until the potatoes and green beans are heated through and starting to brown. Remove from skillet; kept warm. Then heated the same skillet over medium-high heat until hot. Add 1/2 of beef; stir-fry 1 to 3 minutes or until outside surface of beef is no longer pink. (Do not overcook.) Remove from skillet; add to vegetable mixture. Repeat with remaining beef. Add remaining 1/4 cup dressing to beef and vegetables; toss to coat thoroughly. Season with salt and pepper, as desired. Serve warm or at room temperature. This makes on delicious and light meal! My Mom really enjoyed it after her long day at the hospital with my Dad. I also heated up a California Sourdough Loaf of Bread, that I had purchased from Kroger bakery. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.

Dinner Tonight: Top Sirloin Steak & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread

A chilly morning around here today, 26 degrees with a wind chill of 19 degrees. I believe winter is very close. I'm just cooking for 2 tonight, my Mom and myself. My Dad is in the hospital. He fell the other day and he's having severe pain in the rib and back areas. Scans and x-rays show no breaks but there is something causing the pain.

I spent some of the day at the hospital but Mom was up there all day so I wanted to make sure I prepared her a good and hearty meal. So I prepare a couple of Top Sirloin Steaks & Sauteed Mushrooms w/ Baked Potato, Green Beans, and Whole Grain Bread. I used a couple of the Costco Top Sirloin Steaks. Which reminds me I have to go to Costco next week, they have their Holiday Prime Rib in stores now and I want to put one away for Christmas. I Really like Costco Meats, for price and freshness. These Steaks have such good flavor the only seasoning needed is a little Sea Salt and Ground Black Pepper. I pan fried them in Canola Oil. I had to fry them a little longer than normal because of the thickness of them. I had to fry the larger of the 2 about 10 minutes total, 5 minutes per side. This one's for Mom, she likes her Steak Well Done. The other Steak was on for about 9 minutes, 4 1/2 minutes per side. They came out perfect! One tender Well done and the other a moist and juicy Medium Rare. I just love the flavor of these Costco Steaks!

For sides I had a couple of Baked Potatoes, Cut Green Beans, and Healthy Life Whole Grain Bread. I always just microwave my Baked Potatoes anymore, Easier, quicker, and just as good as baking them. Just scrub your Potatoes with water removing any dirt and with a sharp knife puncture the Potato about 3 times on each side. This helps the Potato to cook completely inside. For the Green Beans I used my favorite , besides home canned Green Beans, Del Monte Cut Green Beans and we had Healthy Life Whole Grain Bread. For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Today's Menu: Grilled Top Sirloin Steak w/  Baked Crouton Coated Mushroom Crisps and Baked Potato

Beautiful day outside about 70 degrees and Sunny! Which means it's a beautiful day to fire the grill up. I grilled a Top Sirloin Steak, my last one I had in the freezer from Costco. I have a feeling I'll be making a trip to Costco shortly! I put a light rub of Extra Virgin Olive Oil on it and then seasoned it with McCormick Grinder Sea salt and Black Peppercorn. The Olive Oil not only helps brown the Steak but keeps it from sticking to the grill also. I grilled it 4 minutes per side to medium rare.  If you haven't tried Costco's Meats you have to give them a try. We've had their Pork Chops and Top Sirloin Steak and they've been unbelievable. This one was pink and moist in the center with a nice char and grill marks on the outside!

For side dishes I had Baked Crouton Coated Mushroom Crisps and a Baked Potato. The Mushrooms were a new one I tried, Crunchtables  Crouton Coated Mushroom Crisps. They are easily prepared; they come frozen, just bake at 450 degrees for 11 minutes turning them over once after about 6 minutes.. The only thing wrong with these are they are too good! The Crouton Coating is a great pairing with Portabella Mushrooms. Their 140 calories and 19 carbs. I left the product description and web site link at the bottom of the post. I also had a Baked Potato that I seasoned with McCormick Grinder Sea Salt and Black Peppercorn and topped with I Can't Believe It's Not Butter. Nothing like a Steak and Potato Dinner! For dessert later a bowl of Blue Bunny Chocolate/Vanilla Swirl Frozen Yogurt.

Today's Menu:  Grilled Top Sirloin Steak and Sauteed Portobella Mushrooms w/ Yellow Carrots, Sugar Snow Peas, and Whole Grain Bread

Wow I don't know where to begin on this dinner!  Grilled Top Sirloin Steak and Sauteed Portobella Mushrooms w/ Yellow Carrots, Sugar Snow Peas, and Whole Grain Bread. Started the day by going to Costco, first time there. I just joined last week. A friend of mine had always told me how great Costco was so I tried it out today. I was really impressed! Great selections and some fantastic prices, some cheaper than Sam's. I was hoping that they carried Bison but they didn't. I ended up purchasing quite a few items and one being a package of Top Sirloin Steaks and am I happy I did!

I grilled 3 of them for myself and my parents and we all agreed that not only were these the most tender but also the best tasting Steaks we had ever had! I rubbed a light amount of Extra Virgin Olive Oil all over the Steaks then  seasoned them with McCormick Grinder Sea Salt and Black Peppercorn. These were very thick Steaks so it took extra grilling time to get them to medium rare. I grilled them for 4 minutes and flipped them over for another 5 minutes. Then I continued to grill them another 2 minutes flipping them back and forth. They came out perfect! A nice char and grill marks on the outside and pink and moist in the center. The taste was just incredible. As I've said before I love Bison, it's my favorite, but this Costco Top Sirloin could change my mind.

Along with the Grilled Top Sirloin I prepared Sauteed Portobella Mushrooms, Boiled Yellow Mini Carrots, Sugar Snow Peas. I don't know if it was something in the air or what but everything tasted incredible. I sauteed a package of Sliced Portobella Mushrooms seasoning them with Sea Salt, Parsley and Roasted Ground Cumin. It was the first time I had Yellow Carrots I believe and I'll be having these again. They cook like the regular Orange Carrots but they are a lot sweeter tasting, they taste almost like Sweet Corn. Anyway they were delicious. I also had purchased a package of Steamable Sugar Sow Peas. These too were awesome! They were the biggest and best tasting Sugar Snow Peas we had ever had. Very easy to prepare; just puncture the bag in several places and microwave for 2 minutes and you have some crisp and fantastic tasting Snow Peas! Everything came together to make one incredible dinner! For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Meat and Potatoes!

Today's Menu: Meat and Potatoes w/ 7 Grain Bread

Dinner was basic but flat -out delicious! Meat, Potatoes, Mushrooms, and Bread pretty basic. I normally have Bison when I have Steak but I couldn't pass these Top Sirloin slab of meat up when at Jungle Jim's Market the other day. They age and cut all their own meats there and it's some of the finest around. This was one huge Top Sirloin. I cut in half and could have cut it into thirds and still had plenty. After slicing it into 2 pieces I rubbed Extra Virgin Olive Oil on to both pieces and seasoned them with McCormick Grinder Sea salt and Black Peppercorn. I pan fried the steaks in Extra Virgin Olive Oil on medium. I had to fry the steaks way longer than normal because of how thick they were. I fried them about 5 1/2 minutes per side and flipped them on to their sides for about 1 minute each. They came out incredible! A beautiful crust on the outside and a pink moist center on the inside. I only had half of the steak so I'll be having the other half in the morning with some of the leftover Roasted Red Potatoes and a Sunny Side Up Egg for breakfast! Plus I still have the second steak left and I'll be making some sandwiches or hogies with that. This steak has paid for itself!

For sides I prepared Sauteed Mushrooms, Roasted Red Potatoes, and 7 Grain Loaf Bread. I left the recipe for the Roasted Red Potatoes at the end of the post. If your looking for a good recipe for potatoes give this one a try! For dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn. Pop Corn's perfect for tonight while laid back in the easy chair watching my beloved Cincinnati Reds and then watching one of my all - time favorite Westerns "Silverado" Good Night All!

Today's Menu: Top Sirloin w/ Sauteed Mushrooms, Sliced New Potatoes, and Whole Grain Bread

When I have a Steak it's usually a Bison Sirloin Steak and when it's not it's usually a (Beef) Top Sirloin. I had a nice looking Top Sirloin that I seasoned with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 4 minutes per side. It came out a juicy and beautiful medium rare. For sides I had sauteed Mushrooms, Sliced New Potatoes, and Healthy Life Whole Grain Bread. I lightly sauteed the Mini Portabella Mushrooms in Extra Virgin Olive Oil and seasoned them with Ground Thyme, Smoked Cumin, Parsley Flakes, and Sea Salt. I boiled the New Potato slices. For desert later a Jello 60 Calorie Sugarless Chocolate Pudding.

Top Sirloin Steak and Sauteed Mushrooms w/ 4 Cheese Mashed Potatoes and...

Today's Menu: Top Sirloin Steak and Sauteed Mushrooms w/ 4 Cheese Mashed Potatoes and Harvest Grain Bread

Normally when I have Steak it's a Bison Sirloin but while at the store they had some beautiful Top Sirloin Beef Steaks so that's what I went with for a change. I seasoned it with JB's Fat Boy Steak Rub and pan fried it about 5 minutes per side in Extra Virgin Olive Oil. Topped it with Sauteed Mushrooms that were seasoned with Ground Smoked Cumin, Parsley, Thyme, Ground Pepper, and Sea Salt. Sauteed in Extra Virgin Olive Oil for about 4 minutes. As sides tried a new product I ran across, Idahoan Four Cheese Mashed Potatoes. I really liked these! Easy to fix (Microwavable) it comes in a microwavable cup. Just open the cup up and add water to the top line of the cup. Microwave for 1 1/2 minutes and then stir and mix well and you have Mashed Potatoes! If you get a chance give them a try. They are 110 calories and 20 carbs. I also had Kroger Bakery Harvest Grain Bread. For dessert later a Yoplait Delight Chocolate Eclair Low Fat Yogurt, 100 calories and 19 carbs and very tasty!

Top Sirloin and Sauteed Mushrooms w/ Green Beans and...

Dinner Tonight: Top Sirloin and Sauteed Mushrooms w/ Green Beans and Boiled New Potatoes

I had a Top Sirloin Steak that I seasoned with JB's Fat Boy Premium Steak Rub. I would've liked to grill it but the heat index outside is 110 and the humidity is smothering so I pan fried it in Extra Virgin Olive Oil about 4 1/2 minutes a side, it was a thick cut. Turned out a beautiful medium rare and topped it with sauteed Mushrooms that I seasoned with Smoked Cumin, Sea Salt, Pepper, Parsley, and Thyme. As sides I used some leftover Boiled New Potatoes and leftover Green Beans. Dessert later Breyer's Carb Smart Vanilla Ice Cream topped with some fresh Blueberries.

Top Sirloin and Sauteed Mushrooms w/ Baked Potato and...

Today's Menu: Top Sirloin and Sauteed Mushrooms w/ Baked Potato and Whole Grain Bread

I had Beef instead of Bison for dinner tonight. First time in a whille I've had Beef but the other day at Kroger I seen this cut of Top Sirloin and it looked too good to pass by. I seasoned the Sirloin with Sea Salt and McCormick Grinder Black Pepper. I was going to grill it but it was just too hot and humid really to be out so I pan fried it in Extra Virgin Olive Oil. It was a thick cut so I fried it about 5 minutes per side. For the Mushrooms I lightly Sauteed them in Extra Virgin Olive Oil and I Can't Believe It's Not Butter and seasoned them with Ground Roasted Cumin, Thyme, Minced Garlic, Sea Salt and Pepper. As sides i had a Baked Potato along with healthy Life Whole grain Bread. For dessert later on I made a pan of Pillsbury Sugarless  Fudge Brownies so I'll have a half serving of that with a couple of scoops of Breyer's Carb Smart Vanilla ice Cream.
