Gorton's Classic Grilled Shrimp w/ Smart One's Three Cheese Macaroni
Dinner Tonight: Gorton's Classic Grilled Shrimp w/ Smart One's Three Cheese Macaroni
Well I don't think you can make an easier meal than this! I had Gorton's Classic Grilled Shrimp w/ Smart One's Macaroni & Cheese. To prepare the Gorton's Shrimp preheat the oven to 425 degrees and bake for 10 - 11 minutes. That should be your only pan to clean also, a big plus! While the Shrimp is baking you can prepare the Smart One's Mac & Cheeese. Just peel back the corner of the plastic covering and microwave on high for 2 minutes. Remove and stir the Mac and Cheese, recover and microwave for an addtional 1 minute. It comes in a microwavable plate so you can top with your Shrimp and enjoy dinner! The carbs are a bit high on the Mac & Cheese so I only had a half serving, I saved the other half for lunch tomorrow. These 2 make a great combination for an easy hearty meal. For dessert tonight a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some fresh Blueberries.
Gorton's Classic Grilled Shrimp

Baked Shrimp w/ Tofu Mac & Cheese
Today's Menu: Baked Shrimp w/ Tofu Mac & Cheese and Whole Grain Bread
Shrimp with Mac & Cheese a great combo. Shrimp with Mac & Cheese under 400 calories a fantastic combo! I used Gorton's Homestyle Shrimp. They come in breaded seasoning and baked at 425 degrees for 18 minutes. These are the best tasting boxed and frozen Shrimp I think I've ever had. Delicious and good size Shrimp.
Now for the Mac & Cheese, this is where it gets good! I used TOFU SHIRATAKI (Yam Noodle with Tofu) MACARONI SHAPE which is only 20 calories and 3 carbs! I added a half a serving of Velveeta 2% Cheese, 1 slice Sargento Ultra Thin Swiss Cheese, and 1/4 teaspoon Kraft Shredded Parmesan Cheese. Seasoned with Sea Salt and Ground Black Pepper. Mix it all together and microwave on high for 1 minute and 40 seconds. After the first minute stop it to stir and continue with 40 seconds, this time can vary according to your microwave. This came was the first time I tried this and it came out delicious! I'm starting to really like using Tofu as noodle substitute. Huge difference in calories and carbs between the two also. A thank you to Hungry Girl for the ideal. I left the recipe and the link to the Housefoods Tofu at the end of the post. I also had Healthy Life Whole Grain Bread. For dessert later something new a Yoplait Chocolate Banana Smoothie. i seen these on Biggest Loser and they looked so good I had to try it out and glad I did! Easy to make and a nice thick and tasty Smoothie. Only 130 calories and 18 carbs! I'll leave the write up and nutrition on the post below.
Cheesy Tofu Shirataki Mac
Ingredients:
1 bag House Foods Tofu Shirataki Macaroni Shaped Noodle Substitute
1/2 Serving Velveeta 2% Cheese
1 slice Sargento Ultra Thin Swiss Cheese
1 tsp.Kraft Shredded Parmesan Cheese
Dash each Parsley, Sea Salt and Black Pepper, or more to taste
Directions:
Use a strainer to rinse and drain noodles well. Pat dry. In a microwave-safe bowl, microwave noodles for 1 minute.
*Drain excess liquid. Dry thoroughly with paper towels.
*Add cheese wedge and cheese slice, breaking both into pieces as you add them. Microwave for 1 minute. Stop and stir, mixing well, and continue microwaving for an additional 40 seconds.
*Add remaining ingredients and stir very well.

Surf and Turf Bison Style!
Dinner Tonight: Surf & Turf - Bison Sirloin & Sauteed Mushrooms w/ Shrimp, Baked Potato, and Whole Wheat Bread
There are meals and then there is this. I had a Bison Sirloin Steak (Turf), Gorton's Homestyle Shrimp (Surf), Baked Potato, and Healthy Life Whole Grain Bread. I seasoned the Bison with McCormick Grinder Steakhouse Seasoning and pan fried it in Extra Virgin Olive Oil about 4 minutes per side, to medium rare. Topped it with Sauteed Baby Bella Mushrooms that I seasoned with Ground Smoked Cumin, Parsley, and Sea Salt. Sauteed in Extra Virgin Olive Oil and a pat of I Can't Believe It's Not Butter.
The Turf part of the dinner I used Gorton's Home Style Shrimp, a 1/2 serving. Easily made baked at 425 degrees for 16 minutes. I had posted before this is the best boxed Shrimp around. I also had a baked Potato that I topped with I Can't Believe It's Not Butter, a dab of Reduced Fat Sour Cream, McCormick Grinder Sea Salt and Black Peppercorn. For dessert later a Jello Sugar Free Chocolate Pudding topped with Cool Whip Free.

Surf and Turf Night!
Today's Menu: Surf and Turf w/ Baked Potato and French Bread
I had a Surf and Turf dinner tonight. The Surf was Gorton's Grilled Shrimp that I baked and the Turf was the leftover Flat Iron Steak from the Grilled Steak, Portobello and Green Bean Salad dinner from the other night. Just a reminder that marinade from that dinner is incredible! You can find the recipe for it from that dinner post from earlier this week. back to the Shrimp I used Gorton’s Classic Grilled Shrimp with Herbs and Spices. Easily fixed, bake at 425 degrees for 10 – 11 minutes and you have Shrimp! There’s 8 Shrimp per serving and it’s only 110 calories and 5 carbs. As I said the Steak was leftover from the other night. I had a medium sized Baked Potato and French Bread as sides. The French Bread was something new I tried, Pillsbury Simply Rustic French Bread. I normally try to stick to Whole Grain and Low carb Breads but this looked so good I had to give it a try. It was as good as it looked! Just open up the can and bake it at 350 degrees for 23 minutes and you have a delicious loaf of piping hot bread. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Baked Tilapia w/ Long Grain & Wild Rice and Mago/Pineapple Salsa
Dinner Tonight: Baked Tilapia w/ Long Grain & Wild Rice, Mango/Pineapple Salsa, and Whole Grain Bread.

Tried Gorton's Skillet Crisp Tilapia and loved it! Easy to fix, baked at 425 degrees for 21 minutes, and very tasty. I believe there are two different Tilapia Fillets, I tried the Garlic and Herb Seasoning and plan on trying the other. Along with the Tilapia I had Uncle Ben's Long Grain and Wild Rice and a Mango & Pineapple Salsa (Check my previous posts for the Salsa Recipe). Also had a slice of Healthy Life Whole Grain Bread.
