Hint #1 - When choosing artichokes; choose from compact, tightly closed heads with green, clean, looking leaves. Avoid ones that have brown leaves or show signs of mold.
Hint #2 - Be sure to wash the artichokes well, since dirt tends to hide between the leaves.
