Dinner Tonight: Chicken Breast Strips w/ Oven Baked Scalloped Potatoes








It sure doesn't feel like Spring out there today! A very cold wind blowing all day and I'm not sure it even reached 32 degrees. We did miss the snow as that went South and East of us. It will be in the 50's the rest of the week they say. I was scheduled for my 6 month check-up for Sugar, Cholesterol and such but with all the meds I've been taking the last week or so I had to reschedule it for next week to get a better reading on everything. Not real hungry tonight so it was a light dinner. So tonight I prepared Chicken Breast Strips w/ Oven Baked Scalloped Potatoes.








I used Pilgrim’s Southern Style Breast Strips, first time in quite a while. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. Chicken is served! It's some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.








Then for my only side I prepared some Bob Evan's Oven Baked Scalloped Potatoes. This one also comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. A delicious Meal without much effort or cleanup involved! For dessert later a Skinny Cow Chocolate Truffle Ice Cream bar.

Cooking Instructions:

Oven: Preheat oven to 350° F. Arrange frozen chicken breast fritters in a single layer on an ungreased baking sheet. Fryer: Heat oil to 350° F. Fry frozen chicken breast fritters for 6 minutes or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Due to variations in equipment, heating times and/or temperature may require adjustment. DO NOT MICROWAVE.

Directions
Keep refrigerated. Microwave (time and temperature settings may vary due to differences in your particular microwave oven. Always cook this product to 160 degrees F prior to serving): 1. Remove board overwrap and film. 2. Microwave on High power for 5 to 6 minutes until bubbly around edges. 3. Let stand 1 to 2 minutes prior to serving. Preheat oven to 350 degrees F. 2. Remove board overwrap and film. 3. Place container on baking tray and heat in oven for 10 to 12 minutes or until bubbly around edges. 4. Let stand 1 to 2 minutes prior to serving.
