One of America's Favorites - Orange Juice

Orange juice is the liquid extract of the fruit of the orange tree, extracted by squeezing oranges.
A glass of pulp-free orange juice

Commercial orange juice with a long shelf life is made by drying and later re-hydrating the juice, or by concentrating the juice and later adding water to the concentrate. Prior to drying, the juice may also be pasteurized and oxygen removed from it, necessitating the later addition of a flavor pack, generally made from orange products. Orange juice is known for its health benefits, particularly its high concentration of vitamin C. It comes in several different varieties, including blood orange. In American English, the beverage name may be abbreviated as "OJ".

Due to the importance of oranges to the economy of the state of Florida, "the juice obtained from mature oranges of the species Citrus sinensis and hybrids thereof" was adopted as the official beverage of Florida in 1967. Orange juice (along with grapefruit juice) is offered to every visitor at each of the state's five Florida Welcome Centers.

A cup serving of raw, fresh orange juice, amounting to 248 grams or 8 ounces, has 124 mg of vitamin
Nutritional value per 248 g (1 cup)
C (>100% RDI). It has 20.8 g of sugars and has 112 Calories. It also supplies potassium, thiamin, and folate.

Citrus juices contain flavonoids (especially in the pulp) that may have health benefits. Orange juice is also a source of the antioxidant hesperidin. Because of its citric acid content, orange juice is acidic, with a typical pH of around 3.5.

Commercial squeezed orange juice is pasteurized and filtered before being evaporated under vacuum and heat. After removal of most of the water, this concentrated juice, about 65% sugar by weight, is then stored at about 10 °F (−12 °C). Essences, Vitamin C, and oils extracted during the vacuum concentration process may be added back to restore flavor and nutrition (see below).

When water is added to freshly thawed concentrated orange juice, it is said to be reconstituted.

The product was developed in 1948 at the University of Florida's Citrus Research and Education Center. Since, it has emerged as a commodity product, and futures contracts have traded in New York since 1966. Options on FCOJ were introduced in 1985. From the late 1950s to the mid-1980s, the product had the greatest orange juice market share, but not-from-concentrate juices surpassed FCOJ in the 1980s.

Orange juice that is pasteurized and then sold to consumers without having been concentrated is labeled as "not from concentrate". Just as "from concentrate" processing, most "not from concentrate" processing reduces the natural flavor from the juice. The largest producers of "not from concentrate" use a production process where the juice is placed in aseptic storage, with the oxygen stripped from it, for up to a year.

Removing the oxygen also strips out flavor-providing compounds, and so manufactures add a flavor pack in the final step, which Cooks Illustrated magazine describes as containing "highly engineered additives." Flavor pack formulas vary by region, because consumers in different parts of the world have different preferences related to sweetness, freshness and acidity. According to the citrus industry, the Food and Drug Administration does not require the contents of flavor packs to be detailed on a product's packaging.

One common component of flavor packs is ethyl butyrate, a natural aroma that people associate with freshness, and which is removed from juice during pasteurization and storage. Cooks Illustrated sent juice samples to independent laboratories, and found that while fresh-squeezed juice naturally contained about 1.19 milligrams of ethyl butyrate per liter, juice that had been commercially processed had levels as high as 8.53 milligrams per liter.

A small fraction of fresh orange juice is canned. Canned orange juice retains Vitamin C much better than bottled juice. The canned product loses flavor, however, when stored at room temperature for more than 12 weeks. In the early years of canned orange juice, the acidity of the juice caused the juice to have a metallic taste. In 1931, Dr. Philip Phillips developed a flash pasteurization process that eliminated this problem and significantly increased the market for canned orange juice.

Fresh-squeezed, unpasteurized juice is the closest to consuming the orange itself. This version of the juice consists of oranges that are squeezed and then bottled without having any additives or flavor packs inserted. The juice is not subjected to pasteurization. Fresh squeezed orange juice has a typical shelf life of 12 days.

In the U.S., the major orange juice brand is Tropicana Products (owned by PepsiCo Inc.), which possesses nearly 65% of the market share. Tropicana also has a large presence in Latin America, Europe, and Central Asia. Competing products include Minute Maid (of The Coca-Cola Company) and Florida's Natural (a Florida-based agricultural cooperative that differentiates itself from the competition by being locally owned and using only Florida grown oranges; Tropicana and Simply Orange use a mixture of domestic and foreign stock). In Australia, Daily Juice (owned by National Foods) is a major brand of partially fresh, partially preserved, orange juice.

In the United Kingdom, major orange juice brands include Del Monte and Princes.

Common orange juice is made from the sweet orange. Different cultivars (e.g., Valencia, Hamlin)
A glass of blood orange juice
have different properties, and a producer may mix cultivar juices to get a desired taste. Orange juice usually varies between shades of orange and yellow, although some ruby red or blood orange varieties are a reddish-orange or even pinkish. This is due to different pigmentation in ruby red oranges.

The blood orange is a mutant of the sweet orange. Blood orange juice is popular in Italy, but may be hard to find elsewhere. The Mandarin orange and varieties clementine and tangerine, are good for juice, and are often used for sparkling juice drinks.

Recently, many brands of organic orange juices have become available on the market.

Baked Ginger Honey Glazed Salmon w/ Sugar Snap Peas and Sliced Carrots

Dinner Tonight: Baked Ginger Honey Glazed Salmon w/ Sugar Snap Peas and Sliced Carrots

For breakfast I toasted a Healthy Life Whole Grain English Muffin and had a cup of Bigelow Decaf Green Tea. Did the morning workout and showered. Then off to Meijer, they had a few items that went on a 2 day sale starting today. Pork Tenderloin Roasts, Buy 1 get one free. Along with some other items, good sale! Hot and very, very humid out. Man I can't stand this high humidity! Back home did a few chores around the house. For Dinner tonight I tried a new recipe, Ginger Honey Glazed Salmon. I prepared a Baked Ginger Honey Glazed Salmon w/ Sugar Snap Peas and Sliced Carrots.

I came across this recipe, Ginger Honey Glazed Salmon, on an McCormick Recipe email and couldn't wait to give it a try! I'll need the following to make the dish; 1/4 cup orange juice, 1/4 cup reduced sodium soy sauce, 2 tablespoons honey, 1 tablespoon McCormick® Ground Ginger, 1 teaspoon McCormick® Garlic Powder, 1 green onion (chopped), and 1 pound salmon fillets.

I purchased the Salmon at Meijer Seafood Department earlier today. To prepare the salmon I first rinsed it off under cold water and patted dry with paper towel and set aside. Next mixed the orange juice, soy sauce, honey, ginger, garlic powder and green onion in small bowl. Reserving 2 tablespoons of the marinade. Placed the salmon in large resealable plastic bag. Add remaining marinade; turn to coat well. Refrigerated for 30 minutes. Preheated the oven on 400 degrees. Removed the salmon from marinade. Discarded the remaining marinade.

Baked the salmon for 11 minutes, until fish flakes easily with a fork, basting the fillet 1/2 way through the baking time with the reserved marinade. The salmon came out perfect, and what flavor! The orange juice, soy sauce, and honey combine for a perfect marinade. Then you get the taste of the ginger and garlic powder, outstanding! A for sure Keeper Recipe! I baked my salmon where the original recipe calls for grilling it. The original recipe and web link are at the end of the post.

For one side dish I prepared some Sugar Snap Peas, I had picked these up at Kroger the day
before. They come packaged fresh. To prepare them I heated 1/2 tablespoon of Extra Olive Oil in a medium saute pan over medium-high heat. Added the Sugar Snap Peas, tossing occasionally for 5 to 6 minutes, until the Sugar Snap Peas were crisp tender.

Then for a second side I heated up a can of Del Monte Sliced Carrots. Another canned Vegetable
that’s as good as fresh. Just empty the can into a small sauce pan and heat to boiling, reduce heat and simmer until heated through. I also baked a can of Pillsbury Breadsticks. Still searching for a replacement for the Pillsbury Italian Loaf Bread in which Pillsbury no longer makes, why no clue it was their best! For dessert later a Weight Watcher's Cookie and Cream Ice Cream Bar.

Asian Chicken Thighs w/ Asian BBQ Beans

Dinner Tonight: Asian Chicken Thighs w/ Asian BBQ Beans

Cloudy all day again, a passing shower and cool out. Spent most of the day on line trying to get a
computer virus program repaired. Spent 70 minutes on hold, and still never had the issue resolved! Try again tomorrow, too frustrated to deal with it anymore today. So besides that not else much going on today. For dinner tonight a new recipe. I prepared Asian Chicken Thighs w/ Asian BBQ Beans.

I had come across a can of Bush's Asian BBQ Beans at the store the other day, they are making these for a limited time so I had to give them a try! I then got on-line and found a Asian Chicken Thighs Recipe from Taste of Home and dinner was set. I use Taste of Home quite often when looking for recipes, love their site.

So to start with the Asian Chicken Thighs I'll need; 3 teaspoons Extra Virgin Olive Oil, 5 boneless
and skinless Chicken Thighs (about 1-3/4 pounds), 1/3 cup Water, 2 tablespoons packed Splenda Brown Sugar, 2 tablespoons Orange Juice, 2 tablespoons Reduced-Sodium Soy Sauce, 2 tablespoons Hunt's Ketchup, 1 tablespoon White Vinegar, 4 garlic Cloves (minced), 1 dash Crushed Red Pepper Flakes, 1/4 teaspoon Chinese Five-Spice Powder, 2 teaspoons Cornstarch, 2 tablespoons cold Water, and sliced Green Onions. I made changes from the original recipe; less Oil, used Splenda Brown Sugar, and less Red Pepper Flakes. I've left the original recipe and web link at the end of the post.

Then to prepare them; In a large skillet, heat oil over medium heat. Add chicken; cook 8-10 minutes
on each side or until golden brown. In a small bowl, whisk water, brown sugar, orange juice, soy sauce, ketchup, vinegar, garlic, pepper flakes and five-spice powder. Pour over chicken. Bring to a boil. Reduce heat; simmer, uncovered, 30-35 minutes or until chicken is tender, turning chicken occasionally. Then in a small bowl, mix cornstarch and cold water until smooth; stir into pan. Bring to a boil; cook and stir 1 minute or until sauce is thickened. Sprinkle with green onions. If desired, serve with beans or rice. Last minute addition, also served it on a bed of Uncle Ben's White Rice. I was just going to have the Asian Beans but the parents wanted Rice also so I prepared a bag of Uncle Ben's White Ready Rice. Served the Chicken Thighs on a bed of Rice. Excellent Asian Chicken Thighs Recipe! The Sauce was perfect for Chicken. It made a nice thick and flavorful Sauce.

To prepare the Beans I just opened the can and emptied the Beans into a medium saucepan and heat to simmer. Heat and serve, that's one easy Bean Dish. First time I tried these and they were incredible! Red beans in an Asian-inspired BBQ sauce with a hint of ginger, a winner. Chicken and Beans on a Saturday! For dessert later a Healthy Choice Dark Fudge Frozen Greek Yogurt.
