One of America's Favorites - Country Captain

Country Captain is a curried chicken and rice dish, which is popular in the Southern United States. It was introduced to the U.S. through Charleston, Savannah, New York and Philadelphia, but has origins in India. The dish was once included in the United States military Meal, Ready-to-Eat packs, in honor of it being a favorite dish of George S. Patton.

It has also appeared on television shows in both the United States and in the United Kingdom, with chefs Bobby Flay, Atul Kochhar and Cyrus Todiwala all cooking the dish. Todiwala served his version to Queen Elizabeth II as part of her Diamond Jubilee celebrations.
Country Captain

In its basic form, country captain is a mild stew made with browned chicken pieces, onions, and curry powder. Almonds and golden raisins or zante currants are usually added. Many versions also call for tomatoes, garlic, and bell peppers. The dish is served over white rice. With the exception of the rice, it is meant to be cooked all in the same pot. Chef Mamrej Khan has referred to the dish as one of the first fusion dishes to be developed, making it part of the Anglo-Indian cuisine.

Country captain originated in India as a simple spatchcock poultry or game recipe involving onions and curry and possibly enjoyed by British officers. One theory is that an early 19th-century British sea captain, possibly from the East India Company, working in the spice trade introduced it to the American South via the port of Savannah. The dish remains popular amongst the communities in Mumbai, India. The "country" part of the dish's name dates from when the term referred to things of Indian origin instead of British, and so the term "country captain" would have meant a captain of Indian origin, a trader along the coasts of India. Others claim that the word "captain" in the title is simply a corruption of the word "capon".

In 1991, New York Times columnist Molly O’Neill researched the origin of the dish known as country captain, which had been a steady feature in southern cookbooks since the 1950s. Working with Cecily Brownstone, they discovered that the dish originally published in the United States in the pages of Miss Leslie’s New Cookery Book published in Philadelphia in 1857.[8] The recipe required a "fine full-grown fowl". It also appeared in the kitchens of Alessandro Filippini, who was a chef with a restaurant on Wall Street in the 18th century.

Fans of the dish have included Franklin D. Roosevelt, who introduced it to George S. Patton. It was Patton's love for the dish which subsequently resulted in it being added in his honor to the U.S. Army's Meal, Ready-to-Eat field rations in 2000. A variety of Southern chefs have recipes for the dish, including Paul Prudhomme, Paula Deen and Emeril Lagasse. The dish was featured on an episode of Throwdown! with Bobby Flay in season 6 guest-starring Matt and Ted Lee. It also appeared on the BBC One cooking show, Saturday Kitchen, with chef Atul Kochhar cooking the regular chicken and rice version of the dish.

Chef Cyrus Todiwala cooked a variation of country captain on Saturday Kitchen. His version was similar to Shepherd's Pie, in that the meat was baked under a layer of potato. He had previously cooked the dish for Queen Elizabeth II and the Duke of Edinburgh at Kirishna Avanti school in Harrow as part of the Queen's Diamond Jubilee celebrations in 2012. That version of the dish used rare breed lamb from the Orkney Islands which had been fed on seaweed. The dish is also now on the menu of Todiwala's London restaurant, Café Spice Namasté.

Casablanca Chicken Stew
Recipe Ingredients:
1 1/2 pounds chicken thighs, boneless and skinless, cut into 1-inch pieces
1 1/2 tablespoons olive oil
1 onion, chopped
1 red bell pepper, sliced thin
2 cloves garlic, minced
1/2 teaspoon black pepper
1/2 teaspoon ground cinnamon
1/4 teaspoon ground cumin
1 teaspoon ground ginger
1 (15-ounce) can garbanzo beans, drained
3/4 cup golden raisins
1 (14-ounce) can chicken broth
1 tablespoon all-purpose flour, mixed with 2 tablespoons water
1/4 cup fresh parsley, chopped
1/2 cup fresh cilantro, chopped
1 tablespoon lemon juice

Cooking Directions:
1 - In large sauté pan over medium high heat, warm olive oil. Add chicken pieces and cook, stirring often, until chicken pieces are browned, about 10 minutes. Remove chicken from pan and set aside.
2 - To same sauté pan, add onions and red bell pepper; cook until almost tender, about 6 minutes. Add garlic, black pepper, cinnamon, cumin and ginger. Stir and cook until spices are fragrant, about 45 seconds. Add garbanzo beans, raisins, chicken broth and cooked chicken. Bring mixture to a simmer; reduce heat to low, cover and cook 15 minutes.
3 - Bring sauce in pan to a simmer, pour in flour/ water mixture and stir well. Simmer 5 minutes until sauce is slightly thickened. Remove from heat; stir in parsley, cilantro and lemon juice.
4 - Serve over rice or couscous.
Makes 6 servings.

Moroccan Peppers with Turkey Sausage
Tired of eating peppers that AREN’T stuffed full of savory Moroccan flavor? We know the feeling. Take your dinner on a Middle Eastern excursion with lean turkey sausage, mint, fresh zucchini and garlic.

INGREDIENTS
8 bell peppers, any color combination
1 tablespoon olive oil
1 (19.5-ounce) package JENNIE-O® Lean Turkey Bratwurst
½ cup diced red onion
2 small or 1 large zucchini, cut into ¼-inch dice
1½ teaspoons minced garlic
1½ cups chicken broth
¼ teaspoon powdered saffron or turmeric
¼ teaspoon ground cumin
¼ teaspoon cayenne pepper
½ teaspoon salt
⅛ teaspoon ground cinnamon
1 cup uncooked couscous
2 tablespoons chopped fresh mint or basil
½ cup currants or raisins
½ cup toasted almonds

DIRECTIONS
1) Heat oven to 375ºF. Cut peppers lengthwise through stems keeping stem halves intact to hold stuffing. Discard seeds and veins. Place in 9 x 13-inch baking dish. In large deep skillet over medium heat add oil and turkey; Add onions and saute until turkey is well-done, 165°F as measured by a meat thermometer.
2) Add zucchini and garlic; continue cooking 2 minutes. Add broth, saffron, cumin, cayenne pepper, salt and cinnamon; bring to a boil. Stir in couscous. Cover; turn off heat under skillet. Let stand covered 5 minutes or until liquid is absorbed. Stir in mint, currants and almonds; spoon into bell peppers. Cover with aluminum foil; bake 20 minutes or until peppers are tender and filling is hot.
* Always cook to an internal temperature of 165°F.

CHOCOLATE BRIDGE MIX

BUFFALO PICADILLO
This recipe makes eating well super easy.  A favorite Cuban and Spanish "comfort food" dish, that has many variations. I tried a couple, with a hybrid of the two in mind, which is exactly where I landed. Traditionally served with rice, but served on butternut squash spirals it is phenomenal! Adjust spices to your liking - but you are going to love this dish!

Ingredients: (serves 6)

1 - pound Wild Idea Ground Buffalo
2 - tablespoons olive oil
1 - onion, chopped
1 - tablespoon ground cumin
1 - teaspoon oregano
½ - teaspoon cardamom
¼ - teaspoon paprika
¼ - teaspoon cayenne pepper
½ - teaspoon allspice
½ - teaspoon cinnamon
1 - teaspoon salt
1 - teaspoon pepper
1 - green bell pepper, chopped
5 - garlic cloves, chopped
1 - cup of white wine
2 - cups crushed tomatoes
2 - bay leaves
1 - cup of stuffed Spanish olives, cut in half
1 - cup of raisins
chopped cilantro
butternut squash spirals

Preparation:

1 - In a sauté pan over medium high heat, heat 1 tablespoon of the olive oil. Add the onions and all of the dried spices. Stir to incorporate and sauté for about 5 minutes.
2 - Add the remaining tablespoon of olive oil and crumble in the ground buffalo. Using a spoon, break up the meat a bit more as it cooks. Cook for 5 minutes before adding the peppers (reserving ¼ of the chopped peppers to add later) and the garlic and stir to incorporate. Cook for an additional 5 minutes, or until meat is nicely browned.
3 - Add the wine, crushed tomatoes and bay leaves and stir to incorporate. Bring to full heat.
4 - Add the olives and the raisins, and stir to incorporate. Reduce heat to low, cover and simmer for 15 minutes.
5 - Remove cover and add remaining chopped bell peppers. Stir to incorporate and cook for 5 minutes.
6 - Serve over sautéed butternut squash spirals and garnish with chopped cilantro.
Note: I reserve some of the peppers, adding them toward the end, for texture and color, but it isn’t necessary.

Turkey and Rice Pilaf

INGREDIENTS

1 (7-ounce) package rice pilaf mix
1 cup sliced carrots
⅓ cup raisins
¼ cup chopped green onion
1 clove garlic, minced
1 tablespoon butter
⅔ cup low-sodium chicken broth
2 teaspoons cornstarch

DIRECTIONS

1 - Prepare rice pilaf mix according to package directions.
2 - In large skillet, cook carrots, raisins, green onion and garlic in butter until tender. Combine broth and cornstarch in small bowl; add to vegetables. Heat to boiling. Gently stir in turkey; heat until hot. Serve turkey mixture over pilaf.

GINGERED ACORN SQUASH

Ingredients

2 acorn squash (about 3/4 pound each)
8-ounce can pineapple tidbits in their own juice, drained
3 tablespoons raisins (optional)
2 tablespoons light brown sugar
1 tablespoon light margarine, melted
1 teaspoon freshly grated gingerroot

Directions

1 - Preheat oven to 400 degrees F. Lightly spray a 13x9x2-inch baking dish with vegetable oil spray.
2 - Cut squash in half. Scoop out and discard seeds. Put squash halves cut side up in baking dish.
3 - In a small bowl, combine remaining ingredients. Spoon mixture into each squash cavity. Carefully pour a small amount of water around each squash. Bake, uncovered, for 45 minutes.

Miniature Apple Muffins

With the right amount of spice and a sprinkling of raisins, these bite-size muffins have the flavor of an old-fashioned apple cake.

Ingredients

3/4 cup Splenda No Calorie Sweetener, Granulated
1 cup butter, softened
2 teaspoons molasses
2 large eggs
1/3 cup apple juice concentrate, thawed
2 teaspoons grated fresh lemon peel
2 cups all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
1 teaspoon baking soda
1/2 teaspoon salt
1 cup peeled, shredded fresh apple
2/3 cup old-fashioned oats
1/2 cup raisins
Directions

Preheat oven to 400 degrees F. Lightly spray miniature muffin pans with vegetable cooking spray; set aside.
Beat Splenda Granulated Sweetener, butter, and molasses at medium speed of an electric mixer 1 minute or until blended. Add eggs, one at a time, beating until blended after each addition; add apple juice concentrate and lemon peel, beating until blended.
Combine flour, cinnamon, nutmeg, soda, and salt; add to Splenda Granulated Sweetener mixture, beating on low speed just until blended. Stir in apple, oats, and raisins.
Spoon batter into prepared pans; filling three-fourths full. Bake until edges are lightly browned, 12 minutes. Remove to wire racks to cool.

Royal Raisins

Raisins will last for several months if they are wrapped tightly in plastic wrap or in a plastic bag and kept at room temperature. They will last even longer, up to a year, if you place the plastic bag in the fridge.

The Saturday Evening Dessert - Peanut Butter Granola Bites

For this week's Saturday Evening Dessert its Peanut Butter Granola Bites. A high fiber cookie that has; Chunky peanut butter, cornflakes, oats, raisins , honey, and Equal. You can find this recipe on several sites but I'm going with the one on the CooksRecipes. Peanut Butter Granola Bites

A hearty cookie filled with lots of fiber and good flavor. Chunky peanut butter, cornflakes, oats and raisins provide the fiber; a hint of honey and cinnamon the other great flavors.

Recipe Ingredients:

2 cups cornflakes
1 cup quick oats, uncooked
2/3 cup seedless raisins
1/2 cup chunky peanut butter
1/2 cup egg substitute or 4 large egg whites
1 cup Equal® Spoonful*
1 tablespoon honey
2 teaspoons vanilla extract
1 teaspoon ground cinnamon

Cooking Directions:

1 - Combine cornflakes, oats and raisins in large bowl.
2 - Combine peanut butter and egg substitute in medium bowl. Stir in Equal®, honey, vanilla and cinnamon until well blended. Spoon over cereal mixture. Toss gently to combine. Let stand 5 minutes.
3 - Preheat oven to 350°F (175°C).
4 - Shape mixture into 1-inch balls. Place on lightly sprayed baking sheet.
5 - Bake 8 to 10 minutes or until light golden and dough is set. Remove from baking sheet and cool completely on wire rack.
6 - Store in airtight containers at room temperature.
Makes 30 servings.

*May substitute 24 packets Equal sweetener
