This week's Wild Idea Buffalo Recipe of the Week is -SAVORY GRAIN RECIPES TABBOULEH. Made using Wild Idea Buffalo GREEN KALE and KAMUT KHORASAN WHEAT SAVORY GRAINS. You'll also need Cherry Tomatoes, Red Onion, Parsley, Mint, and Spices. A perfect dish on its own or with any of the Wild Idea Buffalo products! You can find this recipe or purchase the GREEN KALE and KAMUT KHORASAN WHEAT SAVORY GRAINS or any of the Wild Idea Products all at the Wild Idea Buffalo website. Well, Enjoy and Eat Healthy in 2018!  https://wildideabuffalo.com/

SAVORY GRAIN RECIPES -  TABBOULEH
The trio of grains add an additional layer of textures and flavor. Feel free to switch out the mint with basil or dill, based on your taste. You can also sprinkle some crumbled feta on top right before serving, or better yet, serve with warm pita’s smeared with goat cheese and topped with Kalamata olives! Great as a meal itself, or use as a side dish. Next time I will make my grandfather’s recipe for Kibbeh and serve together!

Ingredients: (Recipe can easily be doubled.)
½ - prepared Kale and Kamut, about 1½ cup
½ - cup cherry tomatoes, chopped
½ - cup red onion, finely chopped
¾ - cup parsley, chopped
2 to 3 – tablespoons mint, julienned
¼ - cup lemon juice
¼ - cup olive oil
½ - teaspoon cracked pepper
pinch of chili flake – to taste
pinch of salt – to taste

Preparation:

1 - Prepare the Kale & Kamut Savory grains per direction, adding only ¾ cup water. Divide the prepared grains in half, reserving the other for later use, or use all to make a double batch for a larger group.
2 - Add the grains and vegetable to a bowl and toss to incorporate.
3 - Drizzle with the lemon and the olive oil and season to taste.
4 - Serve at room temperature or store in the refrigerator until needed, pulling an hour or so

Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

Dinner Tonight: Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots

I had a Scrambled Egg and a cup of Bigelow Decaf Green Tea for Breakfast. I had to be at the Dentist at 8:45 yesterday morning. I dread going to a Dentist more than anything but I've got a bad tooth and later I need more work done. I also had to go back to the family Doctor the day before and he increased my Metformin from 1 to 2 pills daily. So much stress lately he wanted me to increase for 3 months. After that we'll do the checks again. He thinks that it's all the stress I've been having for my elevated blood work. Another wait and see. Didn't do much after getting back home from the Dentist. For Dinner tonight I prepared Baked Salmon Fillets w/ Multi-Grain Medley and Sliced Carrots.

I purchased a package of North Atlantic Salmon from Meijer and had it in the freezer. To make it I’ll need the Salmon, McCormick Grinder Sea Salt and Peppercorn Medley, Dried Parsley, Dried Chive, and Extra Light Olive Oil.

To prepare it; I preheated the oven on 400 degrees. I then got a small baking pan and sprayed it with Pam Cooking Spray. I washed the Fillet off in cold water and patted dry with a paper towel. Next I put a light coat of the Extra Light Olive Oil on the Fillet and then seasoned. Lined the Fillet in the pan and baked. I baked it for 8 minutes, and done. Excellent Salmon!

I really enjoy the combo of Rice or Grain and Carrots with Salmon   For one side to go with the
Salmon I prepared a packet of the Minute Rice – Multi-Grain Medley.First time I’ve prepared this in a while. It has Brown Rice, Thai red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! The box contains 4 – 2 Serving Packets and easy to prepare. Combine water and the contents of one bag in medium saucepan and stir. Add oil if desired. Or, if desired, to add more flavor, substitute broth, fruit or vegetable juice for water. Bring to a boil, reduce heat, cover and simmer 10 MINUTES or until water is absorbed. Remove from heat. Fluff with fork and serve! Easy to prepare and makes one excellent side dish.

I also heated up a can of Del Monte Sliced Carrots. Just empty the contents into a small sauce pan,
bring it to a boil, reduce the heat and simmer until heated through. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Atlantic Salmon
The Atlantic salmon is a species of ray-finned fish in the family Salmonidae. It is found in the northern Atlantic Ocean, in rivers that flow into the north Atlantic and, due to human introduction, in the north Pacific Ocean. - Wiki

It's Nuts I tell you...........ORGANIC QUINOA

This week off the nuts.com website (https://nuts.com/) its ORGANIC QUINOA. Quinoa is a light and edible seed similar to grains and contains nearly twice as much dietary fiber as other grains. Quinoa is just one of the grains and organic items you can find at the Nuts site (https://nuts.com/) They have a great variety of items like; NUTS, DRIED FRUIT, CHOCOLATES and SWEETS, SNACKS, COFFEE and TEA, COOKING and BAKING, and GIFTS. Plus there's FREE shipping on orders over $59, see for details. Now more on the ORGANIC QUINOA. So Enjoy and Eat Healthy in 2018! https://nuts.com/

ORGANIC QUINOA
Quinoa (pronounced keen-wah) is a light, fluffy, edible seed that feels and tastes more like a grain.
Our organic quinoa is pre-rinsed so it is ready for cooking! Thanks to its mild, somewhat nutty and irresistible flavor, organic quinoa is an immensely popular food. But this “mother grain” is also valued for its tremendous nutritional content.

How to Cook Quinoa
To cook quinoa, just combine one part of our quinoa with two parts water or broth, bring the mixture to a boil, reduce the heat and simmer for 15 to 20 minutes. Fluff it with a fork, and it's delicious and ready to serve as-is or with your choice of seasonings.

Quinoa Nutrition
This power-packed nutritional combo helped give quinoa the name "Gold of the Incas" when it was cultivated thousands of years ago in the Andes; Incan warriors highly valued the crop for the energy and stamina it gave them.

Among the wholesome attributes that make the organic quinoa grain special are:

1) Quinoa is considered a complete protein because it contains all 9 essential amino acids. A one-cup serving of cooked organic quinoa contains 12-18% Daily Value (DV) for protein, which is more than any grain. In particular, organic quinoa contains lysine, an amino acid that most grains lack. Lysine helps the body absorb calcium and reduces stress-induced anxiety.

2) According to the USDA, quinoa contains nearly twice as much dietary fiber as other grains. A serving of organic quinoa has about 20% DV for dietary fiber, which supports a healthy digestive system by speeding up the passage of food and waste. It also keeps you feeling full longer to prevent overeating and promote weight loss.

3) Organic quinoa is a good source of minerals like phosphorous, magnesium and iron. Phosphorous is important for bone formation, kidney health, and muscle strength. Magnesium controls blood glucose levels, aids the absorption of calcium, and regulates blood pressure. Iron helps deliver oxygen-rich blood cells throughout the body..........

Kitchen Hint of the Day!

Some helpful tips when cooking Grains, from the Old Farmer's Almanac. Love this sight!

Cooking Tips for Grains:

* Remember to use a heavy saucepan with a tight-fitting lid.
* Rinse the grains thoroughly.
* Bring the water to a boil, add the grain, and return to a boil.
* Reduce the heat, cover, and simmer for the indicated time.
* Once all the water is absorbed, fluff the grain with a fork, replace the cover, remove from the heat, and let sit for about 15 minutes.
* When cooking grains for salads, reduce the cooking times slightly so they retain a chewy texture.

Teriyaki Chicken Thighs and Multi Grain Medley

Dinner Tonight: Teriyaki Chicken Thighs and Multi Grain Medley

Well not too bad out there today, sunny but still cold. Better weather days are moving in for the rest of the week they say. A lot of sunshine and highs in the 40's, sure beats a wind chill below zero! Stayed up late watching The Ohio State Buckeyes win the National Title, on the cell with best friend out in Arizona for most of it! Did a load of laundry and tidy up around the place. For dinner tonight a new recipe, Teriyaki Chicken Thighs and Multi Grain Medley.

Another recipe from the Simple and Delicious - Taste of Home Magazine. The latest issue had quite a few recipes I want to try. So tonight it's Teriyaki Chicken Thighs and Multi Grain Medley. To prep it I'll need the following; 3 pounds boneless skinless chicken thighs, 1/4 cup and 2 Tbsp Splenda Sugar, 34 cup reduced-sodium soy sauce, 1/3 cup cider vinegar, 1 garlic clove (minced), 3/4 teaspoon ground ginger, 1/4 teaspoon pepper, 4 teaspoons cornstarch, and 4 teaspoons cold water. I was just cooking for myself tonight so I only used 1/4 of the amount of the ingredients, I made 2 Chicken Thighs.

Place the  chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic,
ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender. Remove the chicken to a serving platter; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring cooking juices to a boil. In a small bowl, mix cornstarch and cold water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. Serve with chicken. Winner, Winner Chicken Dinner! This turned out absolutely delicious! The Chicken Thighs were moist and tender and just bursting with that Teriyaki and spices flavor! Great addition by boiling the cooking juices and thickening it to a sauce for the Chicken. A "Keeper Recipe", for sure! Served it on a bed of Minute Multi Grain Medley. I love the Multi Grain, It has Brown Rice, Thai Red Rice, Wild Rice, and Quinoa. Now that’s a good combo of Grains! Plus it's only 160 calories and 31 net carbs per serving, which isn't bad for a Grain Dish. For dessert later a Jello Sugar Free Dark Chocolate Pudding.

Teriyaki Chicken Thighs Recipe

Ingredients
3 pounds boneless skinless chicken thighs
  3/4 cup sugar
  3/4 cup reduced-sodium soy sauce
  1/3 cup cider vinegar
  1 garlic clove, minced
  3/4 teaspoon ground ginger
  1/4 teaspoon pepper
  4 teaspoons cornstarch
  4 teaspoons cold water
  Hot cooked rice, optional

Directions
Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender.
Remove chicken to a serving platter; keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring cooking juices to a boil. In a small bowl, mix cornstarch and cold water until smooth; stir into cooking juices. Return to a boil; cook and stir 1-2 minutes or until thickened. Serve with chicken and, if desired, rice. Yield: 8 servings.

One of America's Favorites - Granola

A bowl of granola.

Granola is a breakfast food and snack food, popular in the Americas, consisting of rolled oats, nuts, honey, and sometimes puffed rice, that is usually baked until crisp. During the baking process the mixture is stirred to maintain a loose, breakfast cereal-type consistency. Dried fruits, such as raisins and dates, are sometimes added.

Besides serving as food for breakfast and/or snacks, granola is also often eaten by those who are hiking, camping, or backpacking because it is lightweight, high in calories, and easy to store; these properties make it similar to trail mix and muesli. It is often combined into a bar form. Granola is often eaten in combination with yogurt, honey, strawberries, bananas, milk, blueberries and/or other forms of cereal. It can also serve as a topping for various types of pastries and/or desserts. Granola, particularly recipes that include flax seeds, is often used to improve digestion.

The names Granula and Granola were registered trademarks in the late 19th century United States for foods consisting of whole grain products crumbled and then baked until crisp; in contrast with the sort of contemporary (about 1900) invention, muesli, which is traditionally not baked or sweetened. The name is now a trademark only in Australia and New Zealand, but is commonly referred to as muesli. The trademark is owned by the Australian Health & Nutrition Association Ltd.'s Sanitarium Health Food Company in Australia and Australasian Conference Association Limited in New Zealand.

Granula was invented in Dansville, NY, by Dr. Connor Lacey at the Jackson Sanitarium in 1863. The Jackson Sanitarium was a prominent health spa that operated into the early 20th century on the hillside overlooking Dansville. It was also known as Our Home on the Hillside; thus the company formed to sell Jackson's cereal was known as the Our Home Granula Company. Granula was composed of Graham flour and was similar to an oversized form of Grape-Nuts.

In 1951, Willie Pelzer moved from Germany to Lethbridge, Alberta, Canada, to work the sugar beet fields. After noticing the lack of variety rolled oats was used for in food, he began experimenting to find a better and more appetizing way of enjoying rolled oats. Ultimately, Pelzer came up with granola and in the 1970s started his own family-owned business by the name of Sunny Crunch Foods Ltd. Working as the CEO and President, Pelzer's company specialized in granola cereals, granola and protein bars, fibre products, meal replacement products, and health food items. Sunny Crunch Foods Ltd. grew to have worldwide distribution and became one of Canada's most respected health foods manufacturer. Pelzer is now known as the founder of "crunch granola."

A similar cereal was developed by John Harvey Kellogg. It too was initially known as Granula, but the name was changed to Granola to avoid legal problems with Jackson.

The food and name were revived in the 1960s, and fruits and nuts were added to it to make it a health food that was popular with the hippie movement. At the time, several people claim to have revived or re-invented granola. A major promoter was Layton Gentry, profiled in Time as "Johnny Granola-Seed". In 1964, Gentry sold the rights to a granola recipe using oats, which he claimed to have invented himself, to Sovex Natural Foods for $3,000. The company was founded in 1953 in Holly, Michigan by the Hurlinger family with the main purpose of producing a concentrated paste of brewers yeast and soy sauce known as "Sovex". Earlier in 1964, it had been bought by John Goodbrad and moved to Collegedale, Tennessee. In 1967, Gentry bought back the rights for west of the Rockies for $1,500 and then sold the west coast rights to Wayne Schlotthauer of Lassen Foods in Chico, California, for $18,000. Lassen was founded from a health food bakery run by Schlotthauer's father-in-law. The Hurlingers, Goodbrads, and Schlotthauers were all Adventists, and it is possible that Gentry was a lapsed Adventist who was familiar with the earlier granola.

In 1972, an executive at Pet Milk (later Pet Incorporated) of St. Louis, Missouri, introduced Heartland Natural Cereal, the first major commercial granola. At almost the same time, Quaker introduced Quaker 100% Natural Granola. Within a year, Kellogg's had introduced its "Country Morning" granola cereal and General Mills had introduced its "Nature Valley".

In 1974, McKee Baking (later McKee Foods), makers of Little Debbie snack cakes, purchased Sovex. In 1998, the company also acquired the Heartland brand and moved its manufacturing to Collegedale. In 2004, Sovex's name was changed to "Blue Planet Foods".

Granola bars are usually identical to the normal form of granola in composition, but differ vastly in shape: Instead of a loose, breakfast cereal consistency, granola bars are pressed and baked into a bar shape, resulting in the production of a more convenient snack. The product is most popular in the United States and Canada, parts of southern Europe, Brazil, Israel, South Africa and Japan. Recently, granola has begun to expand its market into India and other southeast Asian countries.

A variety of the granola bar is the "chewy granola bar." In this form, the time during which the oats are baked is either shortened or cut out altogether; this gives the bar a texture that is chewier than that of a traditional granola bar. Some manufacturers, such as Kellogg's, have been shown to prefer usage of the terms "cereal bar" and "snack bar" to refer to them. The difference between a candy bar and a granola or snack bar is largely marketing, rather than any actual difference in nutritional content. The most popular flavors are chocolate, caramel, and fudge.
