Apple Carrot Cupcakes

Moist carrot cake infused with applesauce and topped with cream cheese frosting.


Ingredients
1 (21.41-ounce) package carrot cake mix
1 (16-ounce) container cream cheese frosting
½ cup HORMEL® COUNTRY CROCK® cinnamon apples
½ cup chopped pecans, toasted


Directions
1 - Heat oven to 350°F. Line 24 muffin cups with paper liners. Prepare cake mix according to package directions. Fill muffin cups with batter.

2 - Bake according to package directions. Cool. Frost tops with cream cheese frosting. Place apple slices on frosting. Sprinkle tops with chopped pecans.
