Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

For breakfast I reheated some leftover Pioneer Peppered White Gravy and toasted a couple of slices of Healthy Life Whole Grain Bread, love gravy on everything! It was another night of heavy rain that continued through the day. One of those rainy days to stay in and kick back. Which is what I did for most of the day, I'm in a huge Slug Mode. For dinner tonight I wanted a major comfort food so tonight it's Crock Pot 3 Bean Buffalo Chili w/ Cornbread.

I got my last container of my Crock Pot 3 Bean Buffalo Chili out of the freezer and let it thaw overnight in the fridge. Which also means I'll be making another batch before too long! I'll leave full details on how to make it.

It’s loaded with nothing but good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is
the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (16 oz.) Bush’s Chili Beans (Red Beans), 1 Can (16 oz.) Bush’s chili Beans ( Kidney Beans), 1 Can (16 oz.) Bush’s Chili Beans (Great Northern Beans) drained and rinsed, Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 4 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 2 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!).

To prepare it I start by browning both packages of the Wild Idea Ground Buffalo. Using a large skillet
sprayed with Pam Cooking Spray and 1 tablespoon of Extra Virgin Olive Oil. Preheat the skillet on medium heat. When heated I add the Ground Buffalo and all the seasonings and Tomato Paste, stirring often. When the Buffalo has browned I add from the skillet to the liner lined Crock Pot. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then the serious eats begin, comfort food with Chili! With the sweetness of the Buffalo combined

with all those spices and beans, it’s just hard to beat! This may have been my best batch of Chili yet, You can serve it many ways; in a bowl or mug and
top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made a Mini Cast Iron Skillet of Cornbread. I used Martha White Corn Meal Mix. For me Chili and Cornbread are the perfect pairing! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Crock Pot 3 Bean Buffalo Chili w/ Cornbread

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread

I had a Simple Truth Breakfast Sandwich to start the day, Egg White and Canadian Bacon. After

Breakfast I went out and started the car and let it warm up a bit. Another cold one out there at 9 degrees! Had to get out for a while today, I had a bad case of Cabin Fever! Felt great to get out. Stopped for gas, then the bank, and on to Kroger. I picked up a Birthday Cake for my Mom, her Birthday is tomorrow. Mom will be 88 Friday! Moms my best friend, cherish every day she's around. Tonight I prepared my Crock Pot 3 Bean Buffalo Chili w/ Mini Skillet of Cornbread.

What better than a big bowl of Chili on a cold Winter's Day! I’ve been out of Chili for a while now,
so it's high time to solve that problem! Plus I’ve been wanting some for a while now so it's time. It’s loaded with nothing but good things. 3 Bean Buffalo Chili and Cheese Fries

Dinner tonight: 3 Bean Buffalo Chili and Cheese Fries

Happy New Year everyone! Hope everyone had a safe New Years. Mine was a quiet one, a bowl of Pop Corn and watching the old 30's and 40's Thin Man Movies on TCM. Love them old movies!

My first Breakfast of the year was French Toast and Turkey Sausage. For the French Toast I used
Healthy Life Whole Grain Bread. Then for coating I used Egg Beater's seasoned with McCormick Ground Cinnamon and Ground Nutmeg. Mixed the Spices with the egg Beater's and dipped the Bread into it and grilled the slices on a stove griddle pan. For the Sausage I used Eckrich Smoky Turkey Breakfast Sausage. I topped the French Bread with Maple Grove Farms Sugar Free Maple Low Calorie Syrup and I Can't Believe I's Not Butter. Great start to 2016! Nothing going on today, just relaxed and watched a lot of Football! For dinner tonight a Supreme Comfort Food, 3 Bean Buffalo Chili and Cheese Fries.

For the Chili I used my favorite Chili, Crock Pot 3 Bean Buffalo Chili. I had 1 container of it left in the freezer so I sit it in the fridge to thaw overnight. To reheat it I took a sauce pan, sprayed with Pam, and put half of the Chili container in it. Added a few shakes of Frank's Red Hot Sauce to it. Heated it on medium, stirring often until it was heated through. The Chili reheats perfectly and tastes just as good as it did when it was first made! The recipe for the Chili is at the end of the post.

As the Chili was reheating I preheated the oven to 425 degrees. I used a small baking sheet that I
lined with foil and sprayed the foil with Pam Cooking Spray. I'm using Ore Ida Waffle Fries, which I haven't used in quite a while. The Waffle Fries are a little higher in calories than the Crinkle Fries I normally prepare. But the waffle Fries are perfect Fries to use when using a topping like Chili. So I lined the Fries on the baking sheet, seasoned them with Sea Salt and Ground Black Pepper, and baked them for about 17 minutes (until a light golden brown). These are so good just plain, but add the Chili and Cheese and you have something special!

To serve; I made a bed of the Fries in a bowl and topped them with the 3 Bean Buffalo Chili and
Sargento Reduced Fat Shredded Sharp Cheddar Cheese. I was in Comfort Food Heaven! The Fries are just flat out delicious and then you add the Chili and Cheese and it's kicked up another 5 notches! Really a good hardy dish, especially on cold day and evening. For dessert later a Skinny Cow Chocolate Truffle Ice Cream Bar.

Crock Pot 3 Bean Buffalo Chili

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili

After a light Breakfast I went to Walmart to finish up some Christmas Shopping done. And what a warm morning to start, about 60 degrees! We had a high near 70 but cloudy with light showers. Better than 20 degrees and snow! Did manage to get the cart out for a while in between showers. Early today I got a Crock Pot full of 3 Bean Buffalo Chili on! Couldn't wait for dinner tonight!

I love this stuff! Made with Wild Idea Buffalo Ground Round 99% Lean Buffalo, 3 different Beans, and a load of Spices. I enjoy this with Cornbread, Johnny Cakes, or just a big bowl of it with a sprinkle of Sargento Reduced Fat Shredded Cheddar or Shredded Smoked Gouda and a teaspoon of Daisy Reduced Fat Sour Cream. Due to limited freezer space around the Holidays I hadn't had or made any in a while. But I just got an order of Wild Idea Buffalo Products I had ordered, made room in the freezer and made a big batch of it. Hope you love it as much as I do!

As I said I’ve been out of Chili for a while now so I'm ready! It’s loaded with nothing but good
things. I use 2 lbs. of Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 Red Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Chopped Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. After about 3 hours in the Crock Pot the kitchen is filled with an incredible aroma of Chili!

* A note on the Beans I used. I normally use Bush Beans and used Bush Beans this time but i used the new Bush's Chili Beans (Red Beans) in Mild Chili Sauce, Bush's Chili Beans (Kidney Beans) in Mild Chili Sauce, and then my usual Bush's Cannellini Beans (White Kidney Beans). The new Bush's Beans in Chili Sauce work great, the Beans are bit bigger, excellent flavor, and a hint of heat.

When ready let Chili Fest begin! With the sweetness of the Buffalo combined with all those spices
and beans, it’s just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I'll even use some of the Chili to make a Chili and Cheese Omelet in the morning for Breakfast! Anyway you want to have it will work. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Started my morning with a bowl of Cheerios Honey Nut Medley Crunch, my favorite Cheerios Cereal. After my morning workout I did some light housekeeping. It's one beautiful day in the neighborhood outside today! Still a light cool breeze bu t a high in the 60's and sunny. Ran an errand for Mom, stopped  by the bank, and the post office and back home. For dinner tonight one of my favorites, Crock Pot 3 Bean Buffalo Chili.

Well I'm using my last container of the Crock Pot 3 Bean Buffalo Chili I had in the freezer, time for another batch soon! I sat in the fridge overnight to thaw. To reheat it I just got the amount I wanted and put it in a small sauce pan and reheated it on medium low heat, till heated through. I love this Chili!

Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

It's been a rainy and cloudy morning, with a 100% chance of 3 Bean Buffalo Chili for the day! Started off with some Jennie - O Turkey Bacon, a Scrambled Egg, and Thomas Light English Muffins. Then an extended workout this morning, and it's off to a good day! Did a light load of laundry and that was about it. Got my Chili in the Crock Pot and ready for some NFL Football. 3 Bean Buffalo Chili Loaded Spud and Baked Sourdough Bread

Today's Menu: 3 Bean Buffalo Chili Loaded Spud and Baked Sourdough Bread

A very cool, cloudy, and windy Fall day out. Had rain on and off and it barley hit 50 degrees. Mom went with her Church today over to a place in Indiana for lunch today. So I caught up on laundry, house cleaning, and taking care of Dad today. She needed the break! Tonight I prepared a 3 Bean Buffalo Chili Loaded Spud and baked Sourdough Bread.

For dinner tonight I prepared a Buffalo Chili Loaded Spud. It just sounded like a fantastic Comfort Food Meal. For the Chili I used the Crock Pot 3 Bean Buffalo Chili that I had in the freezer. I sat a container out in the fridge to thaw overnight. To make it, couldn't be easier. I used a large Russet Potato, McCormick Grinder Sea Salt and Black Peppercorn, 3 Bean Buffalo Chili, fresh grated Dutch Gouda Cheese, and a few slices of Jalapeno Pepper. The recipe for the 3 Bean Buffalo Chili is at the end of the post.

I preheated the oven on 400 degrees. Then, on the stove I heated up some of the Chili in a Cast Iron Skillet on medium heat for about 12 minutes. Removed it from the heat and topped it with the grated Dutch Goda Cheese and Jalapeno Slices. Put it in the oven and let it until the Cheese was melted. It looks good enough to eat right now! As I put the Chili in the oven I microwaved my Potato for 7 minutes and 15 seconds, came out piping hot. I slit the Potato in half and seasoned it with the Sea Salt and Black Peppercorn. As the Potato was coming out of microwave I also removed the Chili from the oven. I then topped the Potato with Chili, Cheese, and Jalapeno mix. And dinner was ready! Everything just mixed together into one incredible meal. I really packed the Spud with Chili, more than enough for a meal. Plus the Dutch Gouda gave it added flavor and creaminess and the Jalapeno slices gave it just the right amount of heat. Jalapeno added to any dish makes it better! I also baked a small California Sourdough Mini Boule. This would be a good one to hollow out and put Chili in it, future meal. Well for dessert/snack later some Ritz Whole Grain Crackers topped with slices of Cracker Barrel 2% Sharp Cheddar and slices of Hormel Turkey Pepperoni.

Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Cornbread Ears

Autumn is in full swing here in west Chester. The trees are turning and the air is crisp and cool. I love the fall, my favorite time of the year! I got in the closet and moved up my flannel shirts and fleece sweat shirts, time to get comfortable! So for dinner tonight I wanted a hot and hearty meal tonight so what better than my Crock Pot 3 Bean Buffalo Chili! absolutely love this stuff! I've even got Mom hooked on this Chili now.

I've been wanting some of this Chili for quite sometime now. I usually have a few containers in the freezer but have been out of it for a while now, too long. It’s loaded with nothing bu good things. I use Wild Idea Buffalo Ground Round (99% Lean) which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. For my spices I use 1 Packet McCormick Chili Mix, 2 Cans (6 oz.) Hunt’s Tomato Paste, 1 Tbs Ground Cocoa Chili Blend (McCormick), 1/2 Tsp Ground Chipotle Chili Pepper (McCormick), 1 Tbs. Ground Roasted Cumin (McCormick), 2 tbsp Ground Cinnamon (McCormick), 1 Tbs of Cilantro Leaves (McCormick), and 5 Dashes of Frank’s Hot Sauce or to taste (I usually add a lot more dashes!). Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours.

Then you have yourself some good, comfort food Chili! With the sweetness of the Buffalo combined with all those spices, it's just hard to beat! You can serve it many ways; in a bowl or mug and top it with your favorite Cheese or Chopped Green Onions with a side of Oyster Crackers. Another way to have it is served on top of a Johnny Cake (Cornbread) or have a side of Cornbread with it. I made the Cornbread Ears. It’s normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

3 Bean Buffalo Chili Spaghettii w/ Shredded Sharp Cheddar and Oyster Crackers

Dinner Tonight: 3 Bean Buffalo Chili Spaghetti w/ Shredded Sharp Cheddar and Oyster Crackers

I started fasting last night at 10:00 till my doctors appointment at 10:00 this morning, nothing but water. Had a check-up and they took blood work to check my sugar, cholesterol, and such. I'll get the results in 4 days or so. Another chilly day out there, sunny but breezy and only a high of 32 degrees. Warmer starting tomorrow but a lot rain coming with it. For dinner tonight another comfort food classic, 3 Bean Buffalo Chili w/ Shredded Sharp Cheddar and Oyster Crackers!

I had some of the delicious 3 Bean Buffalo Chili leftover so I heated that up for my Chili topping. The Chili contains; Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found, the 3 Beans I use are 1 Can (15 oz.) Chili Beans, 1 Can (15 oz.) Kidney Beans (rinsed), and 1 Can (15 oz.) Great Northern Beans (rinsed). Then I mix in 1 White Onion (medium Chopped or Minced), 1 Jalapeno Pepper (Unseeded and Chopped), and 3 Cloves Minced Garlic. Throw in a 1/2 cup of Water and put the lid on the Crock Pot and set on low for 5-6 hours. Then you have yourself some good, comfort food Chili!

For the Pasta I used Ronzoni Healthy Harvest Whole Wheat Spaghetti, my favorite Pasta. The best tasting Whole Wheat Pasta I've found, and tried a few of them. It's 180 calories and 35 net carbs per serving. After boiling I served it up and topped it with the perfect topping, 3 Bean Buffalo Chili and Sargento Reduced Fat Shredded Sharp Cheddar Cheese! This was too good! Served with a side of Skyline Chili Oyster Crackers. This is what's called a 4 Way around this area; Spaghetti, Chili, Beans, and Cheese. You can add Chopped Onions to make it a 5 Way. Anyway you choose to make it it's Delicious! For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

Ronzoni Healthy Harvest Spaghetti

Here’s something to absorb: One serving of RONZONI HEALTHY HARVEST pasta has over 20% of your daily recommended fiber intake – but did you know that fiber is good for you in more ways than just digestion?

People with diets high in fiber have a lower risk for weight gain, obesity, development of insulin resistance and diabetes. Fiber also prevents constipation, hemorrhoids and diverticulosis, but it also helps reduce the risk of certain chronic diseases like colon and breast cancer. Fiber may help lower LDL (bad) cholesterol and total cholesterol, therefore reducing the risk of heart disease. It can also help lower blood sugar to better manage diabetes.

Dietary fiber is the edible part of plants, primarily carbohydrates that are resistant to digestion and absorption in the small intestine. Fiber may be digested by fermentation in the large intestine. By eating high fiber foods you feel fuller, eat less, with fewer absorbed calories.

Fiber comes in two basic forms – soluble and insoluble. Soluble fiber is found in fruits, vegetables, seeds, brown rice, oats and barley. It prevents or reduces the absorption of certain substances into the bloodstream. Insoluble fiber is found mainly in whole grains and on the outside of seeds, fruits, legumes, and other foods. It is like a sponge that swells within the intestine to promote more efficient elimination and alleviate some digestive disorders.

Fiber is found only in plant foods and passes through the digestive tract without being completely broken down. Being indigestible, fiber provides no nutrients to the body, which is why for many years it was removed from processed foods like white bread. But, nutritionists have since discovered that fiber performs valuable functions precisely because it is not digested, and it is essential to good health.

Well we avoided the morning snow they said we could get, still chilly out only about 22 degrees out this morning. Crock Pot 3 Bean Buffalo Chili w/ Johnny Cakes

Dinner Tonight: Crock Pot 3 Bean Buffalo Chili w/ Johnny Cakes

Ended up with only a 3/4" of new snow today, but it was about 30 degrees out before cooling back down. Not a thing going on today so it was me and the remote today! For dinner tonight, possibly my favorite dish, Crock Pot 3 Bean Buffalo Chili w/ Johnny Cakes!

I had a container of the Chili in the freezer so I sit in the fridge overnight to thaw. To warm it up I put in a small sauce pan and heated in on medium heat till it heated throughout. I absolutely love this Chili! When it was heated up and ready to eat I hit with a couple of shakes of Frank's Red Hot Sauce and topped it with a sprinkle of fresh grated Dutch Gouda. A perfect dish anytime but it especially hits the spot on a cold Winter's Day!

It's loaded with nothing bu good things. I use Wild Idea Buffalo’s Ground Buffalo which is the best tasting Ground Buffalo that I’ve found. The 3 Beans I use are 1 Can (15 oz.) To prepare Johnny Cakes all you’ll need is: Pam w/ Olive Oil Non – Stick Spray, 1/4 cup Extra Virgin Olive Oil, 1 3/4 cups Buttermilk, and 2 cups Martha White Self Rising Enriched White Corn Meal Mix. Just mix all your ingredients in a large bowl. Spray your Pam on a Flat Top Griddle or large Skillet and preheat on medium low, I use the Flat Top Griddle. When the Griddle is heated add your batter. You can make the Cakes any size you want from half-dollar size to regular pancake size cakes. After the bottom side turns golden brown flip over and let the other side get golden brown. To serve I placed mine on a plate and topped it with my 3 Bean Buffalo Chili and Shredded Cheese. And now it’s Comfort Food Heaven! The Chili is a perfect pairing with Cornbread no matter how you prepare your Cornbread. For dessert later a 100 Calorie Mini Bag of Jolly Time Pop Corn.
