Dinner Tonight: Catfish Nuggets w/ Mac and Cheese




For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with I Can't Believe It's Not Butter. And as always my morning cup of Bigelow Decaf Green Tea. Out side another beautiful Fall like day. Started out at 49 degrees and had a high of 75 degrees, and mostly sunny! This was our coolest August that I can ever remember, we had 2 days where it hit 91 degrees. Right after Breakfast went to see Dad. The doctor told us his lungs and heart have about had it. We'll just have to wait and see if we can ever get him home again. Back home got the cart out and did some yard work. For Dinner tonight Catfish Nuggets w/ Mac and Cheese.



Picked up the Catfish Nuggets at Meijer and had it in the freezer. Set the bag in the fridge overnight to thaw. To prepare them I rinsed the Catfish Nuggets off in cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.



To go with my Catfish I made a single cup serving of Annie's Real Aged Cheddar Microwavable Mac and Cheese Cup. I picked a cup of this for free last week at Kroger on their Free Friday Give Away. I believe it's the first time I've tried this. I've had several of the Annie Products before but not this one until today. It comes in a microwavable, single serving cup. Just remove the lid and take out the Cheese Sauce Packet. Add cool water to the fill line in the cup and microwave on high for 2 minutes. Remove the cup from the microwave and stir in the Cheese Packet. It's ready! It makes a good cup of Mac and Cheese. Pasta was good and plenty of Cheese. I'll have to get more of these. For Dessert/Snack alter a bowl of Skinny - Pop Pop Corn and Diet Dr. Pepper to drink.
