Dinner Tonight: Baked Battered Halibut Sandwich w/ Baked Herbed Fingerling Potato Wedges






60 degrees around here and in this part of March, We'll take it! Rain is coming but it beats cold and snow. While at Jungle Jim's Market i picked up a box of one my favorite frozen Fish, Trident PubHouse ® Oven Ready Battered Halibut. They have about 3 or 4 of different kinds of frozen Fish and they are all excellent! It's tough finding Trident Brand though, Jungle Jim's Market is the only one I've found that carries it.



So for dinner tonight I prepared a  Baked Battered Halibut Sandwich w/ Baked Herbed Fingerling Potato Wedges. As I said the Fish is frozen, I just baked it at 425 degrees for 15 minutes, turning it once. The Fish came out moist and delicious and the batter makes a delicious crust on it. I think it's on of the better frozen Fish on the market. I served it on an Aunt Millie's Light Whole Grain Bun and topped it with a bit of Heinz Premium Tarter Sauce.



I cut the Fingerling Potatoes into wedges and seasoned them with a bit of Extra Virgin Olive Oil, McCormick Grinder Sea Salt and Black Peppercorn, Basil, and Thyme. I then baked them at 400 degrees until they were fork tender, about 25 minutes. I love fresh Potato dishes and the combination of the Herbs and Sea Salt made these a winner! For a dessert/snack later tonight a 100 Calorie Mini Bag of Jolly Time Pop Corn.



Trident PubHouse ® Oven Ready Battered Halibut

Preparation and Cooking Instructions
Keep frozen until ready to use. Cook product to 145 degrees F internal temperature. Cooking times vary with equipment, adjust as needed.

Deep fryer – preheat oil to 350 degrees F. Fry for 3½ to 5 minutes or until product is golden brown. Shake baskets occasionally to prevent from adhering.
Convection oven – preheat to 400 degrees F. Place product on baking sheet and cook for 14 to 16 minutes or until product is crisp. Turn product halfway through bake time for best results.
Conventional oven – preheat to 425 degrees F. Place product on baking sheet and cook for 15 to 18 minutes or until product is crisp. Turn product halfway through bake time for best results.
