Grilled Bison Sirloin & Sauteed Mushrooms w/ Grilled Asparagus, Roasted Red Potatoes...


Dinner Tonight: Grilled Bison Sirloin & Sauteed Mushrooms w/ Grilled Asparagus, Roasted Red Potatoes, and Whole Grain Bread



Fired the grill up for a beautiful Bison Sirloin! What a great pairing, a grill and Bison Sirloin. I seasoned the Sirloin with McCormick Grinder Sea Salt and Black Peppercorn. Grilled for about 4 minutes per side, medium rare. The char of the grill combined with the incredible taste of the Bison can't be beat! Topped it with some Sauteed Bably Bella Mushrooms that I sliced and  seasoned with Ground Smoked Cumin, Ground Thyme, Parsley, and Minced Garlic. Sauteed in Extra Virgin Olive Oil and a pat of I Can't Believe It's Not Butter. The Mushrooms are not shown in the picture.

For sides I had Griiled Asparagus that I seasoned with Garlic Salt and Ground Black Pepper. i also prepared some Roasted Red Potatoes. I love this Potato Dish! Red Potatoes, Turkey Bacon, and the seasoning, what's not to like! I left the recipe for the Potatoes at the end of the post. I also had a couple of slices of Healthy Life Whole Grain Bread and a Diet Dr. Pepper to top everything off. For dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with some Hot Cinnamon Apples, nice way to end the day!



Roasted Red Potatoes

Ingredients:

Small Gourmet Red Potatoes, quartered
Oscar Mayer Turkey Bacon
Extra Virgin Olive Oil
McCormick Grinder Sea Salt and Black Peppercorn, Parsley and Dried Dill, to taste

Directions:

*HEAT oven to 400ºF. Cook Turkey Bacon in large skillet on medium heat until crisp. Remove bacon from skillet, reserving 1 Tbsp. drippings in skillet. Drain bacon on paper towels.

*ADD quartered potatoes to reserved drippings; cook 5 min., season while stirring occasionally. Remove from heat. Crumble bacon. Add to potatoes; mix lightly. Spoon into 13×9-inch baking dish.

*BAKE 20-30 min. or until potatoes are tender and done. Top with cheese and parsley, optional.
