Kitchen Hint of the Day!

Why let meat rest before slicing.........

* The juices get redistributed and reabsorbed. Your meat will be jucier.
* The fibers relax. Your meat will be more tender.
* The meat finishes cooking.

Kitchen Hint of the Day! SATURDAY

When using skewers...........

Use two skewers instead of one when grilling or roasting to prevent your food from spinning.

Kitchen Hint of the Day!

Know the safe temperatures..............

Use a grill thermometer to ensure your food reaches ideal cook temperatures for best taste and avoiding foodborne illnesses. Here are the minimum internal temperatures for safe food consumption, according to the USDA:

Beef, Pork, Veal and Lamb: 145 °F

Poultry: 165 °F

Fish and Shellfish: 145 °F

Kitchen Hint of the Day!

Don’t cook meat from fridge-cold.......

Take meat out of the fridge at least half an hour to an hour beforehand. Steak, for instance, ought to be getting towards room temperature before hitting the grill; and the bigger the cut, the longer it should be out of the fridge. Meat is a muscle and needs to relax. This also means you’ll need less fuel, because you won’t be fighting a cold inside.

Kitchen Hint of the Day!

Freeze..............

To slice meat into thin strips partially freeze and it will slice easily. I tried this when making a slced Roast Buffalo Hoagie and it worked out perfect!

Kitchen Hint of the Day!

For an Even Roast.......

Be sure to rotate pans or trays in the oven: All ovens have hot spots, so spin your trays around halfway through their cooking time—and alternate racks, if you have multiple trays cooking.

Kitchen Hint of the Day!

Fire up the grill.........

Oil the Food, Not the Grate.......

Oil prevents food from sticking and it adds flavor and moisture, too. Lightly brushing or spraying the food with oil works better than brushing the grate.

Kitchen Hint of the Day!

No Over Crowding........

Whether you’re baking or pan frying, it’s important to avoid crowding the pan. Similarly to when vegetables or proteins are cooked while moist, when they’re crammed into a pan they’ll steam instead of brown, which is never good.

Kitchen Hint of the Day!

Simmer that Homemade Soup........

Once soup has come to a boil, reduce to a simmer and make sure that it stays there. Boil things too vigorously, and the vegetables will get mushy, the meat will toughen, and the noodles will start to break down.

Kitchen Hint of the Day!

Don't slice that yet............

If you slice into meat right after it finishes cooking, precious juices will escape. Wait 5 minutes before biting into burgers or grilled chicken, 7 minutes before cutting into steaks, and 15 minutes before carving a large roast.

Kitchen Hint of the Day!

When making Stir-fry in your Wok........

Cook the meat first and take it out of the pan, to be added again at the end. This will allow you to cook the vegetables without overcooking the meat. Cook thicker and harder vegetables first, since they take longer. For example, tomatoes or thin slices of garlic will burn while sturdy carrots and broccoli are taking their time getting tender.

Kitchen Hint of the Day!

Hand me those tongs.........

You will want to have a couple of sets of tongs to use on your grill to turn your meat or ribs over with. You don't want to use a fork as this will let some of the flavor escape.
