Turkey Bacon and Potato Soup

Turkey Bacon and Potato Soup

This easy slow cooker recipe lets you enjoy thick and creamy potato soup, featuring crisp JENNIE-O® Turkey Bacon, even on the busiest of weeknights. Simply prep it the night before, start in the morning, and return to a delicious, ready-to-eat dinner.

INGREDIENTS

4 cups low-sodium chicken broth
3 medium potatoes, peeled, diced
1½ cups chopped cabbage
1 leek, diced
1 onion, chopped
2 carrots, diced
¼ cup chopped fresh parsley
1 teaspoon salt, if desired
½ teaspoon black pepper
½ teaspoon caraway seeds
1 bay leaf
½ cup sour cream
1 (12-ounce) package JENNIE-O® Turkey Bacon
DIRECTIONS

1) In Slow Cooker combine broth, potatoes, cabbage, leek, onion, carrots and parsley. Stir in salt, pepper, caraway seeds and bay leaf. Cover; cook on LOW 8 to 10 hours or on HIGH 4 to 5 hours.
2) Remove and discard bay leaf. In small bowl, combine ¼ cup hot liquid from slow cooker with sour cream; mix. Add mixture to slow cooker; stir.
3) Cook turkey bacon as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Chop bacon. Top soup bowl with turkey bacon.
* Always cook to an internal temperature of 165°F.

Rustic Turkey Stew

Rustic Turkey Stew
INGREDIENTS

3 tablespoons flour
½ teaspoon salt, if desired
½ teaspoon freshly ground black pepper
2 cups cooked, chopped JENNIE-O® Premium Basted Bone-In Young Turkey Breast
4 slices JENNIE-O® Turkey Bacon, cooked according to package directions and chopped
2 teaspoons minced garlic
2 (14-ounce) cans chicken broth
⅓ cup red wine, if desired
2 teaspoons dried thyme leaves
1¼ pounds small red potatoes, halved
2 cups baby carrots
1 cup sliced celery
1 cup small boiling onions, peeled
2 cups cremini or button mushrooms, halved

DIRECTIONS

1) Mist Dutch oven with cooking spray. In plastic bag, combine flour, salt and pepper. Add turkey, shaking to coat. Add turkey mixture to Dutch oven; cook 2 minutes, stirring occasionally. Transfer to bowl with bacon. Add garlic to Dutch oven; cook 1 minute.
2) Add broth, wine, and thyme leaves; bring to a boil. Stir in potatoes, carrots, celery, and onions; return to a boil. Reduce heat; cover and simmer 20 to 25 minutes or until vegetables are almost tender. Add mushrooms, turkey mixture, and bacon. Simmer 10 minutes or until thoroughly heated. Always cook to well-done, 165°F as measured by a meat thermometer.
* Always cook to an internal temperature of 165°F.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries





No Breakfast this morning, but had Brunch. Mom slept late and I went and got us both Panera Breakfast Sandwiches. I also had a cup of Bigelow Decaf Green Tea. Beautiful Fall day out there today! Sunny and a high of 68 degrees. Got the leaf blower out and cleaned off the deck and driveway areas. Then got the cart out of the shed and got some yard work done then when done took a spin around the neighborhood. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.






I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!





For the Buffalo Burger I used my favorite, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual.
Their meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Non Stick Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Peppercorn Medley. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side. After flipping the Burger I added a slice of Kraft Deluxe Sharp Cheddar Cheese, with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. I love a good Buffalo Burger!



To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Sweet Chili Turkey Pizza
Sweet mother of pizza! A Sweet Chili Turkey Pizza will deliver on taste in ways delivery can't.  Try this easy, homemade pizza recipe for a pizza night that pleases everybody! It's a little sweet, a little spicy and a lot of flavor.

INGREDIENTS
2 ounces JENNIE-O® Turkey Bacon
8 ounces JENNIE-O® Slow Roasted Dark Turkey
¼ cup diced green bell peppers
1 (12-inch) pre-baked pizza crust
8 ounce sweet chili sauce
2 cups mozzarella Cheese
½ cup Cheddar cheese
½ cup Parmesan cheese

DIRECTIONS
1) Cook turkey bacon as specifed on the package. Always cook to well-done, 165°F as measured by a meat thermometer. Dice; set aside.
2) Shred turkey pot roast, set aside.
3) Spread pizza crust with sweet chili sauce. Add cheeses. Top cheese with shredded turkey, green peppers and bacon bits. Bake 10 to 12 minutes, or until cheese is melted and crust is golden brown.
* Always cook to an internal temperature of 165°F.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries






For Breakfast this morning I toasted 2 slices of Aunt Millie's Light Whole Grain Bread, Fried 2 Johnsonville Turkey Breakfast Sausage Links, prepared a Sunnyside Up Egg, and a cup of Bigelow
Decaf Green Tea. After some warmer temps it's back down to 23 degrees this morning. Had a high of 35 degrees and cloudy out. After Breakfast I headed to McDonald's and picked up Breakfast for Mom and Dad. Then headed back out to the local Kroger and stopped by the bank before heading home. They finally broke ground for the new Kroger about 2 miles up the road. The Kroger around here is an older and small Kroger and the new one is going to be one of their Super Stores. It should be nice when they get it built. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.




I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and
Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it!

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries




To start my morning off I had Steak and Egg.  I had another of the SayersBrook 4 oz. Bison Filet
Mignon. I had it in the freezer, I laid it in the fridge overnight to thaw. I fried it like last time. I just seasoned it with some McCormick Grinder Sea Salt and Peppercorn Medley. I then grabbed a small skillet, sprayed it with Pam Cooking Spray, and added a 1/2 tablespoon of Extra Light Olive Oil. Heated it on medium heat. Fried the first side 3 minutes and flipped it over and cooked it another 2 minutes. And like last time it came out a perfect medium rare! It was so tender and juicy. That was my last one, I’m going to have to order more of these! Then I also fried up a Sunny Side Egg and toasted a couple of slices of Healthy Life Whole Grain Bread. Sure tough to beat a Steak and Egg Breakfast! Also, as usual, my morning cup of Bigelow Decaf Green Tea.



Rain, wind, storms and 60 degrees out. But a cold front came rolling in later in day causing the high
winds and heavy rain. Only a high of 36 tomorrow. It was house cleaning today, vacuum and dusted. Had everything done after Lunch and settled in to watch some College Football the rest of the day. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

Bacon and Cheese Buffalo Burger

Rain and 73 degrees out. Mom went to Church and I stayed home keeping an eye on Dad. After
Breakfast I did a couple of loads of laundry for Mom. Then I started cleaning the house, ran the vacuum and dusted. Caught up on everything so I stretched out and watched a few shows I had recorded. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

For Breakfast this morning I toasted a Healthy Life Whole Grain English Muffin and topped it with Smucker's Sugarless Blackberry Jam. Then I also had my morning cup of Bigelow Decaf Green Tea.
Partly sunny, 85 degrees and humid out today. Parts of the area got rain showers. My hearing is finally back in both ears. Sure glad, I've always had excellent hearing. I got the leaf blower out and cleaned off the deck and driveway areas. Trees are turning colors and leaves are falling around here. We had to have Dad at the doctor's at 1:30 this afternoon for a checkup. For Dinner tonight I satisfy my Buffalo Burger craving. I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries. For Breakfast this morning I made a 2 Egg Cheese Omelet along with 2 Jennie - O Turkey Breakfast Patties, toasted a slice of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow Decaf Green Tea. Delicious way to start my day! Outside it's in the mid 80's, humid, and a showers around the area. I needed a few things from the store so I went to Meijer. As I was coming out to the car, just as I put the bags in the back seat it started pouring the rain. It came down hard for about 15 minutes, I was drenched by the time I got into the car. Back home just cleaned up around the house. For Dinner tonight I satisfy my Buffalo Burger craving. I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.



I'm way over due for a Wild Idea Buffalo Burger! I just love these Buffalo Burgers! I made this one combining my two favorites, Wild idea Buffalo and Jennie – O Turkey! I used Jennie – O Turkey Bacon for my Burger topping. Heated up a medium size skillet on medium high heat and fried the
Bacon until it was crisp. Removed it from the skillet to a Paper Towel lined plate, and set aside. Always remember when frying Bacon use Bacon Math. Just decide how many slices you’ll need and double it. Because, at least when I fry Bacon, you end up eating as much as you fix as you’re preparing it! For the Buffalo Burger I used my favorite Buffalo, the Wild Idea Buffalo 1/3-Lb Buffalo Burgers as usual. Just love these Buffalo Burgers; meaty, juicy and just flat out delicious! Preheated up a small skillet that I sprayed with Pam Cooking Spray, seasoned my Burger with McCormick Grinder Sea Salt and Black Peppercorn. I then pan fried it, in Extra Light Olive Oil, about 3 1/2 minutes per side, after flipping the Burger I added my slice of Cheese, Kraft Deluxe Sharp Cheddar with about 1 minute of cooking time left. Topped it with the Turkey Bacon and served it on a Aunt Millie’s Reduced Calorie Hamburger Bun. Love a good Burger and love these Wild Idea Buffalo Burgers, and topped with the Jennie – O Turkey Bacon it just adds to the goodness!



To go with my Burger I baked some Alexia Organic Yukon Select Fries. Seasoned them with
McCormick Grinder Sea Salt and Peppercorn Medley. Baked them at 425 degrees for 16 minutes. They bake up beautifully and seasoned just right, excellent Fry! Plus they are only 120 calories and 15 net carbs. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn and a Diet Peach Snapple to drink.

Bacon and Cheese Buffalo Burger w/ Baked Fries

Dinner Tonight: Bacon and Cheese Buffalo Burger w/ Baked Fries





I wanted something a little different for Breakfast this morning  so I went with a Breakfast Burrito for Breakfast this morning. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.



Another hot and humid day out there! Did some cleaning outside early to avoid the heat and

humidity. Not a whole lot to do today, all caught up on everything. Did some work on the computer, ran the scans, deleted some old files and such. For Dinner tonight I prepared a Bacon and Cheese Buffalo Burger w/ Baked Fries.

I had a Breakfast Burrito for Breakfast this morning. Can't get enough of these Breakfast Burritos lately. You can prepare them so many different ingredients. For this one I used 2 medium size Eggs (Scrambled), Jennie – O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 – Inch Flour Tortillas. Eggs and Bacon are just a natural pairing and the  Ortega Smoked Chipotle Taco Sauce can’t be beat. It just gives everything an unbelievable flavor, nice heat but not over powering.

For a side I baked some Ore Ida Crinkle Fries, with a side of Hunt’s Ketchup for the Fries. For
dessert/snack later a 100 Calorie Mini Bag of Jolly Time Pop Corn.

Had a peaceful night of sleep finally, had a rough night on Monday into Tuesday with Phantom Pains. I had a Breakfast Burrito for Breakfast this morning. I used 2 medium size Eggs (Scrambled), Jennie - O Turkey Bacon (Crumbled), sliced Black and Green Olives, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Ortega Smoked Chipotle Taco Sauce, and Old El Paso 6 - Inch Flour Tortillas. Nothing not to like in this Burrito! Best Breakfast I've had in a while. Eggs and Bacon are just a natural pairing. The Ortega Smoked Chipotle Taco Sauce can't be beat. It just gives everything an unbelievable taste, nice heat but not over powering.




So after that delicious Breakfast I did a load of laundry for Mom. I then finished up some light house keeping. After Lunch I headed out to go see Dad at the rehab center. He had a blood transfusion yesterday and he's still sort of weak from it. He's got a ways to go before coming home. Headed back home and stopped for gas and got the car washed and vacuumed the inside. Took a quick power nap before dinner. Then for dinner tonight it's Bacon and Cheese Buffalo Burger w/ Baked Crinkle Fries.
