Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf

Dinner Tonight: Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf

To start my morning off I toasted a Thomas Light 100 Calorie Multigrain English Muffin that I topped with Smucker's Sugarfree Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Big change in the weather again. It's been in the 50's and 60's and it was 29 degrees this morning and a high of 37 degrees, mostly cloudy. After Breakfast I headed out to Meijer to do some grocery shopping. On the way back home I stopped and got gas and then by McDonald's to pick up Breakfast for Mom. Later on grabbed a broom and the leaf blower and cleaned off the deck and driveway areas. For Dinner tonight I prepared a Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf.

I had posted a while back that they opened a new Super Kroger store to replace the smaller Kroger up the road from us. The other day when I was there I seen that they had the PERDUE® OVEN READY WHOLE SEASONED ROASTER. With the bigger store comes way more of selections of food! The prices are still high though which is why if I have time I go to Meijer or Walmart to do most of my shopping. Anyway it was great finding the Perdue Roaster again!

As I said it came frozen so I let it thaw overnight in the fridge. To prepare it is a breeze! It came
frozen and its in a cooking bag, ready for the oven! To start I first preheat the oven to 400°F. I Cut
open outer bag and removed Oven Ready Roaster, sealing in a cooking bag. Placed in a shallow roasting pan, breast side up. Cut a 1 inch slit in cooking bag over the breast to vent during cooking. The instructions said that the Cooking bag will expand during cooking and to allow enough room for the bag to expand without touching oven rack or walls. The instructions say the best way to prepare it is from fresh. Once oven had been pre-heated to 400°F, I lowered oven temperature to 350°F. Placed the pan with Oven Ready Roaster (still in cooking bag) on lower shelf of oven and roasted for approximately 2 hours 15 minutes until a meat thermometer registered an internal temperature of 180°F in the breast.

Removed it from the oven and let stand for 10 minutes. Cut open the cooking bag (use care to avoid hot steam and juices) and transfer Roaster to serving plate or cutting board. Removed the string from legs and carved. The Chicken came out perfect! Moist, juicy, and flat-out delicious! So glad I can find these again!

To go with the Chicken you can't go wrong with Mashed Potatoes! I prepared some Bob Evan’s
Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.

Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just
empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I also had come across a loaf the  RiverRoad Bake House Garlic Loaf Bread buried in the freezer. So I baked that. Still haven't found a place that carries it since Meijer no longer has it. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

PERDUE® OVEN READY WHOLE SEASONED ROASTER

Perfectly seasoned, juicy and convenient. Perdue's Oven Ready Roaster cooking bag saves time on
traditional roasting and makes cleanup a snap. Fresh, refrigerated.

COOKING and PREP

* OPEN: Preheat oven to 400°F. Cut open outer bag and remove Oven Ready Roaster, sealing in a cooking bag. Place in a shallow roasting pan or baking dish, breast side up.

* SLIT: Cut a 1 inch slit in cooking bag over the breast to vent during cooking. Note: Cooking bag will expand during cooking; allow enough room for the bag to expand without touching oven rack or walls.

* COOK: From FRESH (Preferred Method): Once oven has been pre-heated to 400°F, lower oven temperature to 350°F. Place pan or baking dish with Oven Ready Roaster (still in cooking bag) on lower shelf of oven and roast for approximately 2 hours 10 minutes (130 minutes) until a meat thermometer registers an internal temperature of 180°F in the breast.

* COOK: From FROZEN: Once oven has been pre-heated to 400°F, lower oven temperature to 350°F. Place pan or baking dish with Oven Ready Roaster (still in cooking bag) on lower shelf of oven and roast for approximately 4 hours until a meat thermometer registers an internal temperature of 180°F in the breast.

* SERVE: Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer Roaster to serving plate or cutting board. Remove string from legs before carving. Remaining juices in bag can be used for delicious gravy.

Roasted Applewood Smoked Turkey Breast Tenderloin w/ Sliced New Potatoes and Cut Italian Green Beans

Dinner Tonight: Roasted Applewood Smoked Turkey Breast Tenderloin w/ Sliced New Potatoes and Cut Italian Green Beans

For Breakfast this morning I made a Poached Egg and served it on a toasted slice of Aunt Millie's Light Whole Grain Bread. Not quite as cold this morning! 40 degrees. Sunny and 52 degrees for the day. After Lunch I got the Cart out of the shed and went over and borrowed my neighbor's Shrub Trimmer. Trimmed down 4 Shrubs around the house for the upcoming Winter. Then got the leaf blower out and cleaned off the deck and driveway areas. For Dinner Tonight, Comfort Food! I prepared a Roasted Applewood Smoked Turkey Breast Tenderloin w/ Sliced New Potatoes, Cut Italian Green Beans, and Baked Garlic Loaf Bread.

I had purchased the Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin from Meijer and had it in the freezer. Sat it in fridge to thaw overnight. Meijer is the only store that carries this and most of the other Jennie – O Turkey Products. The Turkey Tenderloin comes pre-seasoned and is 100 calories, 4 carbs, and 99% fat-free. Besides this beautiful Tenderloin all I’ll need to prepare it is some McCormick Grinders of Sea Salt and Peppercorn Medley, Blackberry Glaze, and Extra Light Olive Oil. To make the Blackberry Glaze I’ll need Smucker’s Sugarless Blackberry Jam, Red Wine Vinegar, Splenda Sugar, and Ground Cinnamon.

First I mixed my Blackberry Glaze and set it aside until ready to use. I left the recipe for this at the
end of the post. To prepare the Tenderloin I’ll be baking it. Preheat the oven to 350°F. Next sprayed a shallow baking pan with Pam Non Stick Cooking Spray and add a tablespoon of the Extra Light Olive Oil to it. Then place the Tenderloins in the baking pan. With about 10 minutes of cooking time left I Glazed on of the Tenderloins. Bake until meat thermometer inserted into thickest portion of the meat reaches 165°F, approximately 62 minutes. Remove from the oven, cover and let rest 5-10 minutes before slicing.

Started slicing it and it’s so very tender and moist. It has a fantastic taste. The Applewood Smoke and combination of Spices it was marinated in was perfect! Good job Jennie- O. For the added Blackberry Glaze , it was perfect! It went with the Turkey perfectly.

For one side I heated up a can of Del Monte Sliced New Potatoes. I use a lot of Del Monte Vegetable
Products, always delicious and store a lot longer than fresh Vegetables. To prepare them I emptied the can into a small sauce pan. Heated it on medium heat until heated through.

For another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty
the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! I could have Beans of any kind every day and never get tired of having them. Finally I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Dr. Pepper to drink.

Jennie – O Applewood Smoke Flavor Turkey Breast Tenderloin

JENNIE-O® Applewood Smoked Turkey Breast Tenderloin is a savory combination of flavor and
ease. It comes pre-seasoned so you don’t have to marinate. And it’s 99% fat-free and gluten free. Grill up a turkey breast tenderloin at your next barbeque!

Beef Cubed Steaks w/ Potato Pancakes and Cut Italian Green Beans

Dinner Tonight: Beef Cubed Steaks w/ Potato Pancakes, Cut Italian Green Beans, and Baked Garlic Loaf Bread

For Breakfast this morning I prepared a favorite of mine. I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of
Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. Outside cloudy and 52 degrees. So this afternoon did some light cleaning around the house and then cleaned and straightened the big freezer up, which it needed! For Dinner tonight I prepared a Beef Cubed Steaks w/ Potato Pancakes, Cut Italian Green Beans, and Baked Garlic Loaf Bread.

When I went to Meijer the day before I picked up a package of Meijer Beef Cubed Steak. They are the best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package. This is one of the few times I use Beef. Normally I use Buffalo but as far as I know no one makes Cubed Bison Steak, at least not yet!

To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy.

So for a side I prepared some Manischewitz Potato Pancake Mix, my favorite (Never made a cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and
makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes). The whole family love’s these Potato Pancakes! They turn out so good and easy to reheat the leftovers.

I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! We've been using this instead of the Multi Grain Bread of late. For Dessert/Snack later a bowl of Skinny Pop - Po Corn with a Diet Dr. Pepper to drink.

Cube Steak
Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a
meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.

Freshwater Shrimp and Seasoned Grouper w/ Artisan Seasoned Petite Potatoes, Cut Italian Green Beans......

Dinner Tonight: Freshwater Shrimp and Seasoned Grouper w/ Artisan Seasoned Petite Potatoes, Cut Italian Green Beans, and Baked Multi Grain Bread

For Breakfast this morning I Scrambled a couple of Eggs, fried 2 Johnsonville Turkey Breakfast Sausage Links, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and a cup of Bigelow
Decaf Green Tea. We ended up with around 3" of snow which should melt tomorrow, 49 degrees for a high. I wanted to prepare Dad a good meal tonight. Hospice is putting him in a rehab unit for 5 days to give us a bit of a break as it's a full time job taking care of him. And we do need the reset. Me and Mom are just beat! We'll be looking for full time placement in the upcoming days and weeks. So for Dinner tonight I prepared Freshwater Shrimp and Seasoned Grouper w/ Artisan Seasoned Petite Potatoes, Cut Italian Green Beans, and Baked Multi Grain Bread.

While at Kroger earlier I picked up some of the huge Freshwater Colossal Shrimp, I cleaned them and put them in the fridge until needed for Dinner tonight. To prepare these I’m using McCormick Golden Dipt Cracker Meal Seafood Fry Mix.

Poured about 1/4 inch of Extra Light Olive Oil into large skillet. Heated the oil to 350°F on medium heat. I then took a 1/2 cup of the Cracker Meal Mix in a Hefty Zip Lock Plastic Bag. Take the peeled shrimp, 3 at a time and place them in the bag and shake until Shrimp had a nice coating on them. Had all the Shrimp coated I then began to fry them. Frying them about 3 minutes the shrimp, a few pieces at a time, in the hot oil until light golden brown turning after 1 1/2 minutes. Drain on paper towel lined plate . Love using the McCormick Cracker Meal Mix, nice light crust and seasoning.

I love my Fish and Seafood, especially this Florida Gulf Coast Grouper that my friends bring me from Florida. They just dropped off a big bag of Fish caught in the Florida Gulf! I had a fillet of it in
the freezer, laid it in the fridge overnight to thaw. To prepare the fillets I first rinsed it off in cold water and patted dry with a paper towel. I then cut the fillet into 3 pieces.  Next I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got out the good ole Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. A perfect pairing for the Shrimp!

For one side I tried a new one, Private Selection Petite Potatoes Herbes De Provence in Artisan
Seasoning Blend. I seen these at Kroger a couple of days ago, and being a Potato Lover I had to try them! They are similar to the Little Potato Co. Potatoes that I prepare. It comes in a microwavable tray. Just heat in microwave for 5 and 1/2 minutes. Next add a 1 tablespoon of Extra Light Olive Oil and then the Seasoning Packet. Stir and serve! They turned out piping hot and delicious, really like the Seasoning provided.

Then I also heated up a can of Allens Cut Italian Green Beans. So to prepare them just empty the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea
Salt and it’s ready!  I had also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. Plus I love having Bread every meal and Crusty Bread with Pasta Dishes. For dessert later a bowl of Skinny Pop - Pop Corn with a Diet Dr. Pepper to drink.

Grouper – Firm texture, white meat with large flake and a mild flavor. Extra lean fish.

Crock Pot Pork Back Ribs w/ Savory Potatoes and Cut Italian Green Beans

Dinner Tonight: Crock Pot Pork Back Ribs w/ Savory Potatoes and Cut Italian Green Beans

To start my morning off I made my favorite Breakfast. I prepared some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, and made a cup of
Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off. It was 37 degrees this morning, above freezing to start the day! We had a high of 45 and it was partly cloudy. After Breakfast I started a load of laundry and then went to McDonald's to pick up Breakfast for Mom and Dad. Cleaned the house, dusted and vacuumed. Later on went up and had the car washed. The Car Wash was making a fortune, cars were lined up all over. Tonight its Crock Pot Pork Back Ribs w/ Savory Potatoes and Cut Italian Green Beans

I purchased the Ribs at Meijer Tuesday afternoon. Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it JB’s Fat Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon you can start smelling the aroma of the Ribs, Rib intoxicating!

After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole
without breaking them up! They’re that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes
come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

For another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty
the can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! Love all Beans! For Dessert later a Jello Suagr Free Dark Chocolate Pudding.

Pork Back Ribs – Pork ribs are a cut of pork popular in North American and Asian cuisines. The
ribcage of a domestic pig, meat and bones together, is cut into usable pieces, prepared by smoking, grilling, or baking – usually with a sauce, often barbecue – and then served.

Baby back ribs (also back ribs or loin ribs) are taken from the top of the rib cage between the spine and the spare ribs, below the loin muscle. They have meat between the bones and on top of the bones, and are shorter, curved, and sometimes meatier than spare ribs. The rack is shorter at one end, due to the natural tapering of a pig’s rib cage. The shortest bones are typically only about 3 in (7.6 cm) and the longest is usually about 6 in (15 cm), depending on the size of the hog. A pig side has 15 to 16 ribs (depending on the breed), but usually two or three are left on the shoulder when it is separated from the loin. So, a rack of back ribs contains a minimum of eight ribs (some may be trimmed if damaged), but can include up to 13 ribs, depending on how it has been prepared by the butcher. A typical commercial rack has 10–13 bones. If fewer than 10 bones are present, butchers call them “cheater racks”.

Fried Oysters w/ Mac and Cheese

Dinner Tonight: Fried Oysters w/ Mac and Cheese

For Breakfast on this Saturday Morning I prepared a Hash Brown Turkey Sausage Crumble Skillet with Toast and that morning cup of Bigelow Decaf Green Tea. And as cold as it is out there this morning that hot cup of Tea tastes pretty good! On to the skillet. I picked up a bag of Jimmy Dean Turkey Sausage Crumbles while at Kroger yesterday. I've used these before but it's been a while. I
first started by preparing some Simply Potatoes. If I ever stop eating the Simply Potato Products their stock value will drop like a rock! Halfway through the cooking time I added a 1/4 cup of the Turkey Crumbles. Stirred them into the Hashbrowns and continued cooking until both were heated through and ready to serve. Served them with a sprinkle of Sargento Reduced Fat Shredded Sharp Cheddar Cheese. Also had a toasted slice of Aunt Millie's Light Wheat Bread, and a cup of Bigelow Decaf Green Tea. Another cold start to the day at 20 degrees. Spent most of the day straightening up Mom's Junk closet for her, it was a mess! Did a few things around the house. For Dinner tonight I prepared Fried Oysters w/ Mac and Cheese.

To prepare my Fried Oysters I’ll need; 1 can Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, 1 tablespoon Flour, 1/4 cup Egg Beaters, 1 cup Shake and Bake Seasoned Panko Bread Crumbs, Sea Salt and Pepper (to taste), 2 to 3 tablespoons Extra Light Olive Oil. Hot sauce, Seafood Cocktail Sauce are all optional.

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

Next, heat Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite
hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. I don’t know why I don’t have these more often! They’re so delicious, golden brown, and with an incredible fresh flavor.

To go with the Oysters I prepared a Stouffer’s Classic Mac and Cheese Mac Cup, one of my favorites.Just microwave and serve. A great tasting Mac and Cheese in a single serving cup! Tastes great, excellent Cheesy Mac. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Pan-Fried Oysters Recipe:

Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Place shucked oysters in a colander to drain.

1 – Dip drained oysters in flour, then beaten eggs, shake off excess, and in panko crumbs seasoned with salt and pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. NOTE: An easy way to coat the oysters with the panko crumbs is to place the crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

2 – Heat canola oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot.

3 – Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately.

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

Dinner Tonight: Catfish Nuggets w/ Potato Pancakes and Cut Italian Green Beans

Started the day off with 1 Egg Sunnyside Up, fried a SayersBrook Bison Ranch Fillet Mignon,
toasted 2 slices of Healthy Life Whole Grain Bread, and my morning cup of Bigelow Decaf Green Tea. I love those Fillet Mignon! After I had my Breakfast I went to Meijer for a few items and to pick some Catfish Nuggets up for tonight’s Dinner. Mostly sunny and 52 degrees out today. For Dinner tonight I prepared Catfish Nuggets along with Potato Pancakes and Cut Italian Green Beans.

Picked up the Catfish Nuggets at Kroger earlier. To prepare them I rinsed the Catfish Nuggets off in
cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty. You can bake Catfish but for me you just can’t beat fried Catfish.

The whole family love’s Potato Pancakes! So for a side I prepared some Manischewitz Potato
Pancake Mix, my favorite (Never made a potato cake I didn’t like!). Just add 2 Egg Beater’s (1/2 Cup), 2 1/4 Cups Water, to the mix stir and fry! Easy and makes one good Potato Pancake and their only 80 calories and 18 carbs per serving (3 Potato Pancakes).

For one side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just empty the
can into a small sauce pan and simmer until heated. I love the taste of these, just season with a bit of Sea Salt and it’s ready! For Dessert later a bowl of Breyer’s Vanilla Carb Smart Ice Cream.
