Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy

Dinner Tonight: Cumin Spiced Pork Tenderloin w/Roasted Butternut Squash and Golden Hominy








To start my morning off I prepared Turkey Goetta, Hash Browns, and Toast. For the Turkey Goetta I
used Glier's Turkey Goetta, best by far! I just sliced a few slices off and lightly fried them in Extra Light Olive Oil. Then I also prepared some Simply Potatoes Shredded Hash Browns. I also toasted a slice of Aunt Millie's Light Whole Grain Bread that I topped with some Smucker's Sugar Free Blackberry Jam. I also had a cup of Bigelow Decaf Green Tea. After Breakfast I did a couple of loads of laundry. Then after Lunch I took my car up and had it washed and I vacuumed the inside. Then went to the ATM and then dropped off a few letters at the Post Office. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.

I purchased the Simple Truth Pork Tenderloin from Kroger yesterday, just over 1 1/2 lbs. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the Ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!

Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.



To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, add the Walnut Pieces, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash. I really love Butternut Squash!



For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy, and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke zero to drink.

Fried Red Snapper w/ Hash Browns and Golden Hominy

Dinner Tonight: Fried Red Snapper w/ Hash Browns and Golden Hominy





Skipped Breakfast this morning, not really hungry. I did  just have a cup of Bigelow Decaf Green Tea though. Went to Meijer for a few items and back home. Later went over to a Lawn and Garden Center and took a look at few plants and bushes. Back home I planted a couple of bushes I bought in the backyard. Not feeling up to par today so I kicked back the rest of the afternoon. We are watching my cousin's 2 girls tonight for about 4 hours or so. For Dinner tonight it’s Red Snapper! I prepared a Fried Red Snapper w/ Hash Browns and Golden Hominy.



I had purchased the Red Snapper at the Kroger Seafood Department last week. I had it in the freezer so I laid the fillet in the fridge to thaw overnight. To prepare the the fillet, I first rinsed the Snapper off in cold water and patted dry with a paper towel. I seasoned it with McCormick Grinder Sea Salt. Then put the fillets in a Hefty Zip Plastic Bag and added Zatarain’s Lemon Pepper Breading Fish Fri. Then shook the bag until the fillets were well covered, removed from the bag shaking off the excess. I then pan fried it in a Cast Iron Skillet, that I had preheated, in Canola Oil. I fried it skin side down for 4 minutes and then flipped it over to the flesh side and fried it another 3 minutes. Golden brown and nothing but delicious! The fresh taste of the Snapper combined with the Zatarain’s Lemon Pepper Breading Fish Fri is a perfect pairing.


For one side I prepared some Simply Potatoes Hash Browns, I always use Simply Potatoes Hash Browns. Fried them in Extra Virgin Olive Oil and seasoned them with Sea Salt, Ground Pepper, and Parsley.










For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden
Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! For a Snack later some Honeycrisp Apple Slices.

Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans

To start my morning off toasted a couple Nutri Grain Eggos and had a cup of Bigelow Decaf Green Tea. 60 degrees and cloudy out today. Did some light cleaning around the house and then a load of laundry. Later on got the Hand-Vac out vacuumed my car insides and the got Mom's car for her and cleaned the windows inside and out on both cars. That was about it for the day. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin Fillet w/ Golden Hominy and Cut Green Beans.




I had no clue what to have for Dinner so I did some digging into the freezer. I came across a Meijer Pork Tenderloin Fillet  and I had my Dinner, Cumin Spiced Pork Tenderloin. I sat it in the fridge to thaw overnight.To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1
tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. heat until heated through. I just love Green Beans, all Beans! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn along with a Diet Peach Snapple to drink.

For Breakfast this morning I toasted a couple of Nuti Grain Eggos and heated up a couple of
Johnsonville Turkey Sausage Links. I also made a cup of the Bigelow Decaf Green Tea. Outside its showers and thunderstorms with a high of 68 degrees. Cleaned the house today, dusted and ran the vacuum. That was about it for the day. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.





On my last visit to Meijer I picked up a couple of huge Bone – In Pork Loin Chops and had them in
the freezer. I grabbed 1 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!


I love the trio of a Pork Chop, Golden Hominy, and Green Beans/ Potatoes. I have these 2 sides quite
often when having Pork Chops. For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. My favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!


Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. As everything was cooking I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

For Breakfast on this Wintery Sunday Morning I toasted a couple of Nuti Grain Eggos and heated up
a couple of Johnsonville Turkey Sausage Links. I also made a cup of the Bigelow Decaf Green Tea. Outside we've had a rain, sleet, snow, back to rain and had a high of 33 degrees. Good day to stay in. Cleaned the house then in the kitchen I cleaned the fridge and then the oven. Watched some shows I had recorded later. So for dinner tonight I prepared Cumin Spiced Pork Chops w/ Golden Hominy and Cut Green Beans and Potatoes.

Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy

For Breakfast this morning I made a Breakfast Sandwich. I heated an al fresco Chicken Sausage Patty. Then toasted a Thomas 100 Calorie Multi Grain English Muffin and used a 1/2 of slice Boar's
Head Vermont Yellow Cheese. Excellent Breakfast Sandwich! I also had a cup of Bigelow Decaf Green Tea. The heavy rains have returned! Rain and Thunderstorms most of the day, a high of 57 degrees. All this rain is going to cause more flooding. I took Mom to get her hair done and after dropping her off I went over to see a friend of mine. He's been home bound with a broken leg. He's doing good, but has a bad case of the Cabin Fever! Back home not a lot going on, just did a few things around the house. For Dinner tonight its Cumin Spiced Pork Loin Chops w/ Savory Herb Potatoes and Golden Hominy.


I had bought a package of Center Cut Pork Loin Chops from Meijer a week or so ago and had broke the package down and had the individual Chops in plastic bags, in the freezer. I grabbed a couple of the bags and laid them in the fridge overnight to thaw. So to prepare my Chops I’ll need; The Cumin
Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. I always have some of the Rub made up in a large Spice Jar I have To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.


For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good item to have in the pantry! So easy to prepare and no clean up.

Microwave
In three easy steps, you have perfectly steamed and seasoned potatoes!

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.
2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.
3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Serve and enjoy!

For Breakfast to start the morning off I fried up a couple of Jimmy Dean Turkey Sausage Patties, first time having these in a while. Love Jimmy Dean Turkey Products! Then I prepared some Simply
Potatoes Garlic and Herb Hash Browns. Seasoned them with Salt and Pepper and served them sprinkled with Sargento Reduced Fat Shredded Sharp Cheddar. I also toasted a slice of Aunt Millie's Light Whole Grain Bread and had my morning cup of Bigelow Decaf Green Tea. Great Breakfast to start the day. Gave the house a quick cleaning then I had to go to the Post Office to get some Christmas Cards out. Then it was baking the rest of the afternoon. I baked Mini Loaves of Cinnamon Swirl and Chocolate Chip of Quick Bread. I baked them to give to 6 of my neighbors for Christmas. I'll deliver them tomorrow. For Dinner tonight I prepared Cumin Spiced Butterfly Pork Chop w/ Savory Potatoes and Golden Hominy.


I hadn't had Butterfly Pork Chops in a while and these looked great. I purchased them from Meijer, 2
to a package. I'm preparing them with my Cumin Spiced Rub that I use for most of my Pork Dishes.

For one side dish I prepared the Little Potato Co. Savory Herb Potatoes. We love these! The Potatoes

Microwave
In three easy steps, you have perfectly steamed and seasoned potatoes!

1. Simply remove the cardboard sleeve and seasoning pack. The plastic film stays on to aid in steaming the potatoes.
2. Place the convenience tray in the microwave. Cook on high for 5 minutes*.
3. Let the tray rest for 2 minutes then carefully remove plastic film and stir in seasoning pack. Caution – the contents will be very hot. If desired, add 1 tbsp. of butter or olive oil.

Serve and enjoy!

Dinner Tonight: Cumin Spiced Pork Tenderloin w/Roasted Butternut Squash and Golden Hominy





To start my morning off I prepared French Toast and Sausage. For the French Toast I used Aunt
Millie's Light Whole Grain Bread, Egg Beater's, Ground Nutmeg, and Ground Cinnamon. For the Sausage I used Johnsonville Turkey Sausage Links. I also had my morning cup of Bigelow Decaf Green Tea. From 62 degrees yesterday to today's high oh 37 degrees. Snow flurries early turning to rain showers later. Only a high of 29 degrees tomorrow they say. Spent the day replacing wood trim around the base of the walls here in the house. My Hoveround tears it up at times if I run into it. For Dinner tonight I prepared a Cumin Spiced Pork Tenderloin w/ Roasted Butternut Squash and Golden Hominy.


I purchased the Simple Truth Pork Tenderloin from Kroger the other day, a small one at just over 1 lb. To make the dish I’ll need; 1 tablespoon Extra Virgin Olive Oil, 1 pork Tenderloin, 1 tbsp Roasted
Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 350°. Combine all the ingredients; rub it all over the pork. Let stand 20 minutes. Heat the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning on all sides. From the stove to the oven; Bake at 400° for 10 minutes or until a thermometer registers 155° (slightly pink), turning after 7 minutes. Remove from the skillet into a platter or dish and let stand 10 minutes before slicing. Then get ready to enjoy one delicious Pork Tenderloin! Fantastic combo of Spices, which makes one incredible Crust on the Pork with the inside being tender and moist! This is my favorite Pork Recipe by far!



Then for one side I prepared some Roasted Butternut Squash, easy recipe for some delicious
Butternut Squash! I purchased 1 small package of Diced Butternut Squash at Kroger. They sell packages of it that they dice up. This is a lot easier than peeling and seeding one yourself, especially if you don’t have a good knife to cut it. I’ll need; 1 package of Diced Butternut Squash, Walnut Pieces, 1 tablespoons Extra Light Olive Oil, 1 1/2 teaspoons McCormick Grinder Sea Salt, and 1 teaspoon McCormick Grinder Peppercorn Medley.




To prepare it; Preheat the oven to 400 degrees F. Place the Squash on a sheet pan and drizzle with the
Olive Oil, Salt, and Peppercorn and toss well. Arrange the squash in one layer and roast for 25 to 30 minutes, until the Squash is tender, turning once with a spatula. And done, very easy to prepare. With the small amount of Seasoning and Olive Oil, it really brings out the flavor of Butternut Squash! The Walnuts work perfect with the Squash.






For another side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden

I just had a cup of Bigelow Decaf Green Tea for Breakfast. Mostly Sunny and 95 degrees outside today. Still suffering through these allergies! And from what the local news said, everyone is fighting them. I did go out for a bit and got the leaf blower out of the shed. I cleaned off the deck and driveway areas. Then trimmed up the vines along the driveway. After that time to get back inside! Anyway for dinner tonight I prepared Cumin Spiced Pork Chop w/ Golden Hominy and Cut Green Beans and Potatoes.





On my last visit to Meijer I picked up a couple of huge Bone - In Pork Loin Chops and had them in the freezer. I grabbed 1 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork!



For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy.

Then I also heated up a can of Del Monte Cut Green Beans and Potatoes. As everything was cooking I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.
