Healthy Spring Dessert Recipes

From the EatingWell website - Healthy Spring Dessert Recipes. Recipes including; Meringue-Topped Strawberries & Rhubarb, Peach, Rhubarb & Ginger Crisp, and Strawberry Pandowdy. Find them all along with all the other delicious and healthy recipes at the EatingWell website. http://www.eatingwell.com/

Healthy Spring Dessert Recipes

Delicious dessert recipes to celebrate spring.
Celebrate the sweet flavors of spring with our healthy dessert recipes that are full of fresh fruit. We’ve lightened up traditional spring desserts, such as pies, crisps, cobblers, strudels and more, so you can end your meal on a high note with a sweet and satisfying dessert. Try Strawberry-Rhubarb Strudel to enjoy spring’s best combo or Peach, Rhubarb & Ginger Crisp for a lighter version of this classic fruit dessert.

Meringue-Topped Strawberries & Rhubarb
Poaching brings out the flavorful strawberry and rhubarb juices with minimal effort. An airy meringue on top of the poached fruit is a healthy (and gorgeous) stand-in for a heavier whipped-cream or ice cream topping......

Peach, Rhubarb & Ginger Crisp
In this fruit crisp, the crunchy oatmeal topping and the peach-rhubarb filling get a lively kick from finely chopped crystallized ginger. (If you’re not a ginger fan just leave it out.) The fruit filling is sweetened to match the peach-rhubarb combination—if you use other fruit that is very ripe and/or sweet, reduce the sugar in the filling to 3 tablespoons. The topping can be made ahead, so consider making a double batch and storing half in the freezer to have on hand for a quick dessert......

Strawberry Pandowdy
A truly old-fashioned dessert, “pandowdy” is said to refer to the cutting up of the flaky crust, or “dowdy-ing,” toward the end of the baking time. Once the crust is cut, the bubbly fruit cooks up around the crust. This dessert is good with whichever berries are ripe at the moment. In early summer go for strawberries. Serve with ice cream or frozen yogurt.....

Try our Polenta & Vegetable Bake for a comforting vegetarian casserole or Green Bean Casserole for a lighter, healthier version of this Thanksgiving classic vegetable casserole.

Polenta & Vegetable Bake
This healthful and comforting vegetarian casserole is perfect on a cool night or any time of year when you want to remember clear, brisk October evenings. Make It a Meal: Enjoy with a glass of Zinfandel and for dessert, biscotti dipped in a fresh-brewed cup of coffee.....

Layered Mashed Potato & Mushroom Casserole
Fancy up regular mashed potatoes with a layer of mushroom duxelle—a sauté of finely chopped mushrooms and shallots. We omitted the traditional butter in the duxelle and added chard for a nutritional boost. Serve this hearty side in place of mashed potatoes at any holiday feast or enjoy it as a vegetarian main dish......

Root Vegetable Gratin
The rich flavor of Gruyère cheese brings out the nutty flavor of the roots in this creamy gratin. Any combination of roots works in this recipe, but if you use red beets, they will streak the gratin with bright color. A delightful side dish for any roasted meat.......

Healthy Casserole Recipes to Freeze

From the EatingWell website it's Healthy Casserole Recipes to Freeze. Healthy and Freezer Friendly recipes that you thaw, heat, and serve! You can check the EatingWell website for all your healthy and delicious recipes.    http://www.eatingwell.com/

Healthy Casserole Recipes to Freeze

For busy nights, plan ahead and make a freezable, healthy casserole recipe.
Make a healthy, hearty dinner with one of our freezer-friendly, easy casserole recipes. Our Classic Lasagna and Baked Mac & Cheese are family favorites you can make ahead and freeze for a healthy weeknight dinner. Our chicken casserole recipes, potato casserole recipes and more healthy casserole recipes are recipes for the freezer that make putting a healthy dinner on the table even easier.

Broccoli, Beef & Potato Hotdish
This easy casserole, full of ground beef, roasted broccoli and topped with hash browns, was inspired by the classic Minnesota Tater Tot hotdish. Roasting the broccoli before adding it to the casserole gives the whole dish a much more complex and exciting flavor, but it’s by no means necessary. If you want to keep it simple, skip roasting the broccoli (Step 2) and use 6 cups frozen broccoli, thawed, in its place (omit 1 tablespoon oil, as well).....

Buffalo Chicken Casserole
We took the classic flavors of Buffalo wings—hot sauce, blue cheese, carrots and celery—and created a finger-licking-good casserole. Serve this dish during football season to a hungry crowd and it’s sure to be a hit. We don’t typically recommend ingredients by brand name, but in this case we make an exception for Frank’s RedHot Sauce. It has the perfect balance of spice and tang for this casserole. Texas Pete and Crystal hot sauces are suitable alternatives if you can’t find Frank’s.....

Classic Lasagna
Here's an old-fashioned meat-and-cheese lasagna made lighter. Whole-wheat lasagna noodles taste great in this recipe, plus they help boost the fiber to 9 grams, which is more than a third of the recommended daily intake and especially good news for a healthy heart......

EatingWell - Breakfasts That Fight Fat

Have a healthy Breakfast, all from the EatingWell web site.

Breakfasts That Fight Fat

Healthy recipes for breakfast that fight fat and keep you fuller longer.
Eating a breakfast made with “slow-release” carbohydrates, such as oatmeal or bran cereal, 3 hours before you exercise may help you burn more fat, suggests a recent study in the Journal of Nutrition. Here’s why: in the study eating “slow-release” carbohydrates didn't spike blood sugar as high as eating refined carbohydrates, such as white toast. In turn, insulin levels didn't spike as high and because insulin plays a role in signaling your body to store fat, having lower levels may help you burn fat. Not in the mood for oatmeal? Here are some delicious recipes to help you fight fat.

Scandinavian Muesli
Serve this Scandinavian cereal with low-fat yogurt or nonfat milk to start your day off with whole grains and some protein and calcium-rich dairy. You can substitute any combination of chopped dried or fresh fruit for the raisins—apricots, apples, figs, cherries or cranberries would all be delicious. Try walnuts or hazelnuts instead of the almonds if you like. Ground flax seeds stirred in at the end provide a boost of heart-healthy omega-3s.....

Savory Prosciutto Muffins
Chopped onion caramelized in butter gives these muffins a sweet and savory flavor. The prosciutto adds a hit of salt and richness. Serrano ham or other cured ham can be used in place of the prosciutto, if preferred....

7 Small But Powerful Diet Habits That Add Up to Major Weight-Loss Success

7 Small But Powerful Diet Habits That Add Up to Major Weight-Loss Success

These small and easy changes will help you eat healthier.
When it comes to weight loss, it’s the little things that can really add up to make a big difference. Think "diet" and you might assume it requires a radical revamp of your life or misery-inducing restrictions. But when it comes to lasting weight loss, research shows you’re better off making small, consistent changes rather than aiming for a major diet or lifestyle overhaul. The key is that the changes are practical and sustainable so that you can permanently adopt them into your everyday life. In one study, people who made tiny adjustments to their eating habits were able to stick to their new routines—and had more success slimming down compared to those who didn’t incorporate the tips. To help shed pounds, without making any huge changes, follow these 7 easy habits for weight-loss success.

1. Eat Breakfast Every Day
Research shows dieters are more successful at losing weight—and keeping it off—when they eat breakfast. If you don’t already eat breakfast, start. If you are already a breakfast eater, try eating the same breakfast multiple days each week. Repeating the same meals can help you shed pounds, according to research. One of my morning favorites: a whole-wheat English muffin topped with 1 tablespoon of peanut butter and ½ sliced banana. This meal delivers a modest 278 calories, along with filling fiber and protein. It’s also portable and ready in less than 5 minutes, so forget about using any "I don’t have time for breakfast" excuses...

2. Downsize Your Dish
Studies show that we eat less when we use smaller dinnerware. The theory is that our eyes get tricked into thinking we are eating more because our plate is full, making the food portions look bigger. The result: we are satisfied with less food. Try eating your meals on salad plates instead of larger dinner plates....

Healthy Mardi Gras Recipes and Menus

Celebrate Madi Gras the Healthy way with Eating Well's - Healthy Mardi Gras Recipes and Menus.

Healthy Mardi Gras Recipes and Menus

Sausage Gumbo
To keep it simple, we've opted for just the essential ingredients in this rendition of the hearty Creole favorite: sausage, okra, rice and a little spice.....

Blackened Salmon Sandwich
Blackened salmon is great in a sandwich with a spread of mashed avocado and low-fat mayonnaise plus peppery arugula leaves, cool tomato slices and zesty red onion. We grill our Cajun-style salmon so there is no need for any added cooking oil. Catfish makes an excellent stand-in for the salmon but you'll want to use a grill basket if you have one to keep the fish from breaking apart.......

Deep-Dish Apple-Blackberry Pie
With a traditional high-fat pie dough, it's easy to go wrong because the dough must be chilled and rolled out while the butter or shortening is still cold - a relatively small window of time (especially for beginners). Nuts and nut oil replace most of the butter in this pie crust, so the timing is less particular. The dough doesn't need to be refrigerated, which cuts down on preparation time, and because it is rolled out between sheets of plastic wrap, it won't stick to the countertop and it can be easily lifted.
