Southern Sweet Potato Soup
This creamy spiced sweet potato soup, with a touch of peanut butter, is the perfect starter to a fall or winter holiday meal.

Recipe Ingredients:
2 tablespoons butter or margarine
1 medium onion, chopped
1 celery rib, chopped
1 garlic clove, minced
2 cups chicken broth
1 large sweet potato, peeled and sliced
1 1/2 tablespoons peanut butter
1 (1 1/4-inch) cinnamon stick
1 1/2 cups whipping cream*
1/4 teaspoon salt
1/4 cup whipping cream
2 teaspoons molasses
Pinch of salt
Pinch of ground nutmeg
Suggested Garnishes: chopped dry-roasted peanuts, fresh thyme sprigs

Cooking Directions:
1 - Melt butter in a large saucepan over medium heat; add onion and celery, and sauté 10 minutes or until tender. Add garlic, and sauté 1 minute.
2 - Stir in broth and next 3 ingredients. Bring to a boil; reduce heat, and simmer 15 to 20 minutes or until potato is tender. Remove and discard cinnamon stick. Process sweet potato mixture in a blender or food processor until smooth. (Caution! Hot liquids create steam which will blow the top off the blender! Be sure to securely hold blender lid down!)
3 - Return mixture to Dutch oven; stir in 1 1/2 cups whipping cream and 1/4 teaspoon salt. Cook over medium heat, stirring constantly, until thoroughly heated.
4 - Beat 1/4 cup whipping cream, molasses, pinch of salt, and nutmeg until soft peaks form. Serve with soup, and garnish, if desired.
Makes 4 servings.

*1 1/2 cups half-and-half (light cream) may be substituted for 1 1/2 cups whipping cream.

One of America's Favorites - Fool's Gold Loaf

Fool's Gold Loaf is a sandwich made by the Colorado Mine Company, a restaurant in Denver, Colorado. The sandwich consists of a single warmed, hollowed-out loaf of bread filled with the contents of one jar of creamy peanut butter, one jar of grape jelly, and a pound of bacon. The sandwich's connection to Elvis Presley is the source of its legend and prolonged interest. According to The Life and Cuisine of Elvis Presley, it was the focus of a midnight sandwich run by Elvis Presley and his friends. Taking his private jet from Graceland, Presley and his friends purchased 22 of the sandwiches and spent two hours eating them and drinking Perrier and champagne before flying home. The story became legend and the sandwich became the subject of continued media interest and part of numerous cookbooks, typically focused around Presley's love of food.

There are two accounts on the origin of Fool's Gold Loaf. According to Graeme Wood, the Fool's Gold Loaf was created by Cindy and Buck Scott, owners of the Colorado Mine Company restaurant. Wood writes that Elvis obtained the recipe from the Scotts, so his personal chef could make it, but noted that "the Fool's Gold Loaf never made a recorded encore".

According to Nick Andurlakis, he helped create the sandwich while he was working at the Colorado Mine Company as a chef and suggested the Fool's Gold Loaf to Elvis. Andurlakis claims that he personally delivered the sandwiches to Elvis on the famous night.

The sandwich was named to fit the mining motif of the restaurant. At the time of Elvis's famous outing, the Fool's Gold Loaf cost $49.95 (equivalent to $215 in 2017).

The recipe has been repeated by numerous sources, including The Life and Cuisine of Elvis Presley and Andurlakis, a chef at the Colorado Mine Company.

The Fool's Gold Loaf begins with a loaf of French white bread that is covered in two tablespoons of margarine and baked in the oven at 350F/180C until brown. One pound of sliced bacon is fried in oil until crispy and drained. The loaf is sliced lengthwise, hollowed out, and filled with peanut butter, grape jelly and bacon.

According to Andurlakis, he personally served Elvis the Fool's Gold Loaf with bacon, peanut butter, and blueberry preserves on a loaf of French bread. The specific type of preserves was allegedly Dickinson's blueberry preserves.

David Adler's book contains a detailed account of the event that made the Fool's Gold Loaf sandwich famous. On the night of February 1, 1976, Elvis Presley was at his home at Graceland in Memphis, entertaining Capt. Jerry Kennedy of the Denver, Colorado police force, and Ron Pietrafeso of Colorado's Strike Force Against Crime. The three men began discussing the sandwich, and Presley decided he wanted one right then. Presley had been to the restaurant before, while in Denver. Kennedy and Pietrafeso were friends of the owners and hung out there often, so they were driven to the Memphis airport and boarded Presley's private jet, the Lisa Marie, and flew the two hours to Denver. When they arrived at Stapleton International Airport at 1:40 AM, the plane taxied to a special hangar where the passengers were greeted by Buck Scott, the owner of the Colorado Mine Company, and his wife Cindy who had brought 22 fresh Fool's Gold Loaves for the men. They spent two hours in the hangar eating the sandwiches, washing them down with Perrier and champagne. Presley invited the pilots of the plane, Milo High and Elwood Davis, to join them. When they were done, they flew back to Memphis without ever having left the Denver airport.

Kitchen Hint of the Day!

Saving the gravy............

To help prevent lumpy gravy, add a pinch of salt to the flour before using any liquid. If lumps persist, use your blender to smooth it out. If your gravy burns, just stir in a teaspoon of peanut butter to cover up the burnt flavor without altering the meaty flavor.

It's even smelling a lot like Christmas!

The aroma of Chocolate is in the house today as Mom is making her anual Christmas Candy. She made Peanut Butter Fudge, Walnut Fudge, her should be world famous Buckeyes Candy, and the Christmas Chex Mix. I guess now would be the time to turn the scales back 5 lbs. or more! Below I've left the recipes for the Walnut Fudge and Buckeyes. Enjoy and Merry Christmas!

The Old Family Buckeye Recipe
It’s that time of year when the requests start coming in for my Mom’s Buckeyes. Back when I was working I was everyones favorite person when I would bring in a batch of my Mom’s Buckeyes. It’s been 14 years since I lost my leg to melanoma cancer and unable to work but to this day I still get request’s from fellow past workers for my Mom’s Buckeyes. It seems that everyone that has had them all say the same thing “The best Buckeyes I’ve ever had!” I think it’s the Rice Krispies that sets them apart from other Buckeye Candies. When you make a batch of these and try them I’m sure you’ll agree, let me know! These are not diabetes friendly but they are delicious. We tried making them by using reduced fat Peanut Butter and Sugar Free Chocolate but they just didn’t come out the same.
Buckeyes
Ingredients:

Recipe will make about 60 balls

1 – Stick Butter, Blue Bonnet Light Stick Butter
1 – Box (1 LB) Confectioner Sugar
2 – Cups Jiff Smooth Peanut Butter
3 – Cups Rice Krispies
1 – 12 oz. Package Chocolate Chips
1 – Small Bar Hershey’s Milk Chocolate
1/2 Bar Paraffin Wax
Directions:

* In a large bowl mix Butter, Sugar, Peanut Butter, and Rice Krispies (With Hands)
* Chill the mixture for at least 2 hours.
* Then take the mixture and roll into individual balls. The size can vary no set size.
* Melt all the Chocolate and Paraffin Wax in a double broiler or in a sauce pan on low heat stirring until smooth.
* With one or two forks dip each of the balls into the Chocolate/Wax. Drain excess off the balls and place on a sheet pan covered with wax paper and refrigerate for several hours until Chocolate has hardened into a shell covering the balls.
* Now enjoy them!

Walnut Fudge

Ingredients:

3     Cups Sugar or Splenda Equivalent
3/4 Cup  Margarine
2/3 Cup Evaporated Milk
7 oz. Jar of Marshmallow Cream
1     12 oz. bag Toll House Chocolate Chips
1     Cup Chopped Walnuts (More if wanted, to taste)
1     Teaspoon Vanilla Extract

Instructions:

Combine Sugar, Margarine, and Evap. Milk in a large pot and heat to a boil for 5 minutes, stirring frequently. Remove from heat and add Chocolate Chips, Marshmallow Cream, Nuts, and Vanilla stirring till well mixed. Pour mixture into a greased 13×9 pan. Refrigerate until firm. Cut into desired size pieces.

* You may be tempted to leave the heat on while stirring the chips. While this would normally be ok, you really shouldn’t do that in this recipe. If the mixture stays at a boiling temperature, you may be in for a nasty surprise when you add the vanilla. Bottom line: it’s safer for you and better for the fudge if the mixture cools down just a tad before the vanilla goes in. As long as you keep stirring, the chips will melt just fine.

Mom had the flu for quite a while but she's finally feeling good again, and making Buckeyes! Everyone that has these are of the same opinion, the best they've ever had! The thing that sets these apart from other Buckeye Candies is the Rice Krispies she adds. So if your looking for a Buckeye Candy Recipe, look no further.

The Old Family Buckeye Recipe

It’s that time of year when the requests start coming in for my Mom’s Buckeyes. Back when I was working I was everyones favorite person when I would bring in a batch of my Mom's Buckeyes. It’s been 13 years since I lost my leg to melanoma cancer and unable to work but to this day but I still get request’s from fellow past workers for my Mom’s Buckeyes.

* Now enjoy them!
