Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf

Dinner Tonight: Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf




To start my morning off I toasted a Thomas Light 100 Calorie Multigrain English Muffin that I topped with Smucker's Sugarfree Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Big change in the weather again. It's been in the 50's and 60's and it was 29 degrees this morning and a high of 37 degrees, mostly cloudy. After Breakfast I headed out to Meijer to do some grocery shopping. On the way back home I stopped and got gas and then by McDonald's to pick up Breakfast for Mom. Later on grabbed a broom and the leaf blower and cleaned off the deck and driveway areas. For Dinner tonight I prepared a Baked Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Italian Cut Beans, and Baked Garlic Bread Loaf.


I had posted a while back that they opened a new Super Kroger store to replace the smaller Kroger up the road from us. The other day when I was there I seen that they had the PERDUE® OVEN READY WHOLE SEASONED ROASTER. With the bigger store comes way more of selections of food! The prices are still high though which is why if I have time I go to Meijer or Walmart to do most of my shopping. Anyway it was great finding the Perdue Roaster again!






As I said it came frozen so I let it thaw overnight in the fridge. To prepare it is a breeze! It came
frozen and its in a cooking bag, ready for the oven! To start I first preheat the oven to 400°F. I Cut
open outer bag and removed Oven Ready Roaster, sealing in a cooking bag. Placed in a shallow roasting pan, breast side up. Cut a 1 inch slit in cooking bag over the breast to vent during cooking. The instructions said that the Cooking bag will expand during cooking and to allow enough room for the bag to expand without touching oven rack or walls. The instructions say the best way to prepare it is from fresh. Once oven had been pre-heated to 400°F, I lowered oven temperature to 350°F. Placed the pan with Oven Ready Roaster (still in cooking bag) on lower shelf of oven and roasted for approximately 2 hours 15 minutes until a meat thermometer registered an internal temperature of 180°F in the breast.


Removed it from the oven and let stand for 10 minutes. Cut open the cooking bag (use care to avoid hot steam and juices) and transfer Roaster to serving plate or cutting board. Removed the string from legs and carved. The Chicken came out perfect! Moist, juicy, and flat-out delicious! So glad I can find these again!









To go with the Chicken you can't go wrong with Mashed Potatoes! I prepared some Bob Evan’s
Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.











Then for another side dish I heated a can of Allens Cut Italian Green Beans. To prepare them just
empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I also had come across a loaf the  RiverRoad Bake House Garlic Loaf Bread buried in the freezer. So I baked that. Still haven't found a place that carries it since Meijer no longer has it. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

* COOK: From FROZEN: Once oven has been pre-heated to 400°F, lower oven temperature to 350°F. Place pan or baking dish with Oven Ready Roaster (still in cooking bag) on lower shelf of oven and roast for approximately 4 hours until a meat thermometer registers an internal temperature of 180°F in the breast.

* SERVE: Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer Roaster to serving plate or cutting board. Remove string from legs before carving. Remaining juices in bag can be used for delicious gravy.

Leftovers - Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread

For Breakfast I just made a cup of Bigelow Decaf Green Tea. Partly cloudy and 84 degrees out today,
also more humid. After my Tea I headed out to do some grocery shopping at Meijer. Also stopped by McDonald's to pick up Breakfast for Mom. I didn't do a whole lot today I've been having some back problems. So with not much to do I got some rest with a heating pad this afternoon. For Dinner tonight Leftovers - Shrimp w/ Pasta Roni. I've left the original post from yesterday for the dish preparation and description.




So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. This is my frozen Shrimp of
choice, best I've found. I had them in the freezer so I let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.



I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons
of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! For Dessert/Snack later a bowl of Skinny Pop – Pop Corn with a Diet Mango Snapple to drink.

Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread

Dinner Tonight: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread





For Breakfast I just made a cup of Bigelow Decaf Green Tea. After my Tea I went to the Walmart
Lawn and Garden Center, they had a few things on sale I wanted to check out. Bought a wall mount for our Garden Hose, a couple of Mums in pots, and a few other things inside Walmart. Stopped and picked up Breakfast for Mom at McDonald's also. Partly cloudy with a rain shower in the afternoon, high around 82 degrees. Not a whole lot going on today. For Dinner tonight a favorite of mine,Shrimp w/ Pasta Roni.

Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges

Dinner Tonight: Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges






For Breakfast on this rainy Thursday Morning I prepared a Scrambled Egg, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I drove Mom back to Jungle Jim's. She wanted another bag of the Green Beans and picked up some Beets. Back home it was back to canning the rest of the Green Beans. Then Mom canned the Beets she had bought. Another busy day of canning. For Dinner Tonight I prepared Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges.







While at Jungle Jim's International Market I just had to go to their Seafood Department! I picked
some Haddock, they just got the Haddock in and I to wait a bit until they had it ready. Then I also picked up a an Orange Roughy Fillet, New Zealand caught. I love their Seafood Department, in fact I love the whole store! I'm having the Haddock tonight!







 To prepare it I rinsed the fillet off in cold water and patted dry with a paper towel. Next I sliced it in
half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.



For a side I cooked up some of the fresh Green Beans we bought at Jungle Jim's. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! And we 14 quarts of canned Beans now!










Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large
bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s! I also baked a loaf of RiverRoad Bake House The family’s favorite Baked Bread. And Meijer is the only store that sells this around here. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Crunchy Pop Corn Shrimp and Baked a Loaf of Garlic Loaf Bread

Dinner Tonight: Crunchy Pop Corn Shrimp and Baked a Loaf of Garlic Loaf Bread






Another long night dealing with the painful Phantom Pains. Very little sleep last night. These having been occurring too often lately to me! I keep a journal of habits and everything I eat, and activities to see if there is something that triggers the Phantom Pains. But there is just nothing there. They come and go as they please. Not much I can do except to go on. Anyway just a cup of Bigelow Decaf Green Tea for Breakfast. Most of the day I just rested and caught up on sleep after the Phantom Pains quit around 11:00 this morning. For Dinner tonight I prepared Crunchy Pop Corn Shrimp and Baked a Loaf of Garlic Loaf Bread.





Being very tired I wanted a hot meal but something easy to prepare. I had a box of Kroger Wild Caught Crunchy Pop Corn Shrimp in the freezer. Shrimp sounded good so that's what I'm having tonight. Very easy to prepare and a hot meal.








I preheated the oven on 425 degrees. Next I got a small baking sheet and lined it with foil. I gave it a light spray of Pam Non Stick Cooking Spray and lined the Shrimp up on the sheet. I gave the top of the Shrimp a light spray of Pam also. I'm baking them 11 minutes, flipping them over after 5 minutes to finish baking. Very tasty Shrimp, I've these for Lunch a few times, really enjoy them. Makes a good meal when you don't have a big appetite. Served it with a side of Heinz Cocktail Sauce.






I also Baked a Loaf of Garlic Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Peach Diet Snapple to drink.

Just a cup of Bigelow Decaf Green Tea for Breakfast this morning. Had another bout with Phantom Pains. It made for a sleepless and very long night! The Phantom Pains finally let up around 11:00 this
morning. Oh how I wish there was a cure for these. Here's a little on Phantom Pains - Phantom pain is pain that feels like it's coming from a body part that's no longer there. Doctors once believed this post-amputation phenomenon was a psychological problem, but experts now recognize that these real sensations originate in the spinal cord and brain. And I can tell you the pain is as if my left leg was really there, very painful. So anyway I didn't do much of anything today. Outside its showers and thunderstorms on and off through out the day and 88 degrees. Good day to catch up on some rest and sleep, and that was my day. For Dinner tonight Chef Boyardee Cheese Ravioli in Tomato Sauce w/ Baked Garlic Oval Loaf Bread.


I wanted a hot meal but one that was easy to prepare. The Chef Boyardee Cheese Ravioli doesn't get
much easier and at the same time a very tasty meal. It comes in a can and to prepare it; just empty contents into medium saucepan. Heat over medium heat, stirring occasionally until hot. And it’s done! Doesn’t get much easier than that. Delicious, easy to prepare, and 1 sauce pan to clean. Nice size Ravioli, good tasting Tomato and Cheese Sauce, and love the Cheese that’s in the Ravioli. Makes a good hot meal. And it’s only 180 calories and 28 net carbs per serving. I topped it with a sprinkle of Basil and Shaved Parmesan Cheese. It's 210 calories and 36 net carbs per serving.





I also heated up some of the RiverRoad Bake House Garlic Oval Loaf Bread I had yesterday for Dinner. Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.

Can't Believe It's Not Butter and had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to Home Depot to check out the Grills. They had a few on sale I wanted to check out. Didn't purchase a Grill but picked up Mom a couple of Hanging Baskets of Flowers for outside. Not much else going on today! For Dinner tonight I prepared a Cast Iron Skillet Buffalo Hanging Steak w/ Baked Potato and Green Beans.





Wild Idea Buffalo had their 16 oz. Hanging Tender Steaks on sale a weeks ago and I ordered a couple
of them. I had prepared 1 of them a few weeks ago and I’m having the other one for Dinner tonight. I had it in the freezer so I laid it in the fridge overnight to thaw. To season it I’ll need; McCormick Grinder Sea Salt and Grinder Peppercorn Medley, Dried Rosemary, and Extra Light Olive Oil.







For the Steak; I rinsed the Hanger Steak and pat it dry. Then I grabbed a sharp fillet knife and ran the
knife along one side of the sinew that runs down the center, creating two fillets. Remove the sinew from fillet that it remains attached to half of the fillet with knife. When I first found this recipe I didn’t know what the word “sinew” meant. I looked it up and the definition is; sinew – a piece of tough fibrous tissue uniting muscle to bone or bone to bone; a tendon or ligament. Learned something new! Which is why I enjoy cooking so much, you’re always learning something! To continue, next I rubbed the steaks with the Olive Oil, Sea Salt, Pepper, and Rosemary . Cover and allow it to rest at room temperature for 2 hours. I cut the other half of the Steak in half again and I’ll be having them for a couple of Steak and Eggs Breakfasts with them.



To start I got out a Cast Iron Skillet out. Sprayed it with Pam Cooking Spray and added a 1/2
tablespoon of Extra Light Olive Oil. Heated the Skillet on medium heat. Next I preheated the oven to 400 degrees. Then to start I pan fried it, on medium heat about 2 minutes per side. Starting out cooking it on the stove gave it a nice sear to start. Then I put the Skillet in the oven and roasted it until it had internal temperature of 145 degrees for a medium rare, and it came out perfect, love using Cast Iron Skillets; from the stove to the oven! After removing it from the oven I put the Steak on a plate and lest it rest for 5 minutes before serving. These Steaks are so moist and tender and have that distinct Wild idea Buffalo flavor. The juices off the Steak was just incredible! I also prepared some sauteed Mushrooms to go with Steak.



For a side I prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.












Then for another side I prepared some fresh, just picked Green Beans. Mom's Cousin, who used to
bring me the Lake Okeechobee Crappie, called and said their Green Beans were in and come out and pick some up. We love fresh Green Beans! She gave us 2 large gallon plastic bags full. So we cooked them up for Dinner tonight. Nothing like fresh Green Beans! Then for Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread

Dinner Tonight: Shrimp w/ Pasta Roni – Angel Hair Pasta with Herbs and Garlic Oval Loaf Bread




For Breakfast I made some Simply Potatoes Shredded Hash Browns, heated up some Meijer Diced
Ham,and made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bowl and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese. Next I put the Diced Ham over top the Hash Browns and served. Love this Breakfast to start my day! We have an excessive heat warning out for the 2nd straight day. 94 degrees out but the heat index is at 108 degrees. After Breakfast I went grocery shopping at Meijer. On the way back I picked up Breakfast at McDonald's for Mom. Back home I painted a couple of shelves out in the shed. I've got 3 more to paint but it got too hot in the shed to finish, I'll finish tomorrow. For Dinner tonight a favorite of mine,Shrimp w/ Pasta Roni.


So for the Shrimp part of the dish I used Meijer Brand Jumbo Shrimp. I had them in the freezer so I
let them thaw overnight in the fridge. I love Shrimp and all Seafood. For the Shrimp; I started by rinsing the Shrimp off in cold water and letting it dry in a colander. Using a medium size skillet, that I sprayed with Pam Cooking Spray and a 1 tablespoon of Extra Virgin Olive Oil, that I heated on medium heat. I seasoned them with Old Bay Seasoning and a sprinkle of Morton’s Lite Salt and added the Shrimp to the skillet. Cooked them 2 minutes per side, turning the Shrimp once. And as the Shrimp was cooking I started to prepare the Pasta.





I love having Shrimp with the Pasta Roni – Angel Hair Pasta with Herbs. It comes with the Pasta
Special Seasonings Packet and I added; 1 1/3 cups of water, 2/3 cups of 2% milk, and 2 tablespoons of Blue Bonnet Light Butter. Then to prepare it; In a medium saucepan bring water, milk, margarine or butter to a boil. Then slowly stir in pasta and Special Seasonings. Separate pasta with a fork, if needed. Return to a boil. Reduce heat to medium. Boil uncovered, 4-5 min. or until pasta is just tender, stirring frequently. Sauce will be thin. Let stand 3-5 min. to thicken. There’s 2 servings per box. Nice seasoning and the Parmesan Sauce is very flavorful. I topped the Pasta with some Kraft Reduced Fat Grated Parmesan Cheese and the Shrimp. Too good, this makes one delicious Shrimp and Pasta Dish! I also baked a loaf of RiverRoad Bake House Garlic Oval Loaf Bread. Love this Bread! For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Diet Green Tea Snapple to drink.





Pasta Roni Angel Hair Pasta with Herbs

Seasoned Gulf Coast Grouper w/ Roasted Asparagus and Smashed Red Potatoes

Dinner Tonight: Seasoned Gulf Coast Grouper w/ Roasted Asparagus, Smashed Red Potatoes, and Baked Garlic Bread Loaf




I made a Big Breakfast for me and Mom this morning. I fried up some Thin Cut Breakfast Chops, prepared some Simply Potatoes Garlic and Herb Potatoes, Scrambled Eggs, and toasted slices of
Aunt Millie's Light Whole Grain Bread. Also had a cup of Bigelow Decaf Green Tea. Needless to say I skipped Lunch after this Breakfast! Outside it's mostly cloudy and 83 degrees. After Breakfast I went to Walmart and had to get a new water hose for outside. The old one was leaking where the connector threads weer worn out. Back home got the leaf blower out and cleaned off the deck, driveway, and shed. I think I'm going to buy some wood and make some shelves for the shed. Since we cleaned and straightened it up we have all kinds of space now. For Dinner tonight I prepared Seasoned Gulf Coast Grouper w/ Roasted Asparagus, Smashed Red Potatoes, and Baked Garlic Bread Loaf.


I love my Fish and Seafood, especially this Florida Gulf Coast Grouper. My good friend just got back
from his Florida Home and brought several fresh fillets of Grouper! These were just caught a couple of days ago and briefly frozen.  So I  laid a couple of the fillets in the fridge overnight to thaw. To prepare the fillets I seasoned them with just a bit of Sea Salt and put the fillets in a Hefty Zip Plastic Bag where I then added the Zatarain’s Seafood Breading Mix Seasoning. Shook until the fillets were well coated. Shook off the excess. Then got the Cast Iron Skillet out, sprayed it with a light coat of Pam Cooking Spray and added a tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat. When the skillet was ready I added the Grouper Fillets, frying about 3 1/2 minutes per side until golden brown. Grouper is so meaty and flavorful. And these fillets tasted so fresh, thank you Jim for bringing these to me!


For one side dish I prepared Roasted Asparagus for one side. To prepare the Asparagus I just needed Extra Virgin Olive Oil, Cloves Roasted Asparagus Garlic (minced), Sea Salt, Freshly grated Black
Pepper, Lemon Juice, and  Shredded Parmesan Cheese. Rinse clean the asparagus. Break the tough ends off of the asparagus and discard. Lay the asparagus spears out in a single layer in a baking dish or a foil-covered roasting pan. Drizzle olive oil over the spears, roll the asparagus back and forth until they are all covered with a thin layer of olive oil. (Alternatively you can put the asparagus and oil in a plastic bag, and rub the bag so that the oil gets evenly distributed.) Sprinkle with minced garlic, salt, and pepper. Rub over the asparagus so that they are evenly seasoned. Place pan in oven and cook for approximately 8-10 minutes, depending on how thick your asparagus spears are, until tender when pierced with a fork. Drizzle with a little fresh lemon juice and Grated Parmesan Cheese before serving.


For another side I made some Smashed Red Potatoes. I grabbed a Cast Iron Skillet and sprayed it with a light coat of Pam Non Stick Cooking Spray and added a tablespoon of the Extra Light Olive Oil. Preheated the Skillet on medium heat. Next I quartered the Red Potatoes, putting them in a large bowl. Seasoned them with the Garlic salt, Dried Parsley, Grinder Sea Salt and Peppercorn Medley, Bacon Pieces, and 1 tablespoon of the Extra Light Olive Oil. Mixed them with the Seasoning until the Potatoes were Seasoned on all sides. I then added them to the preheated Cast Iron Skillet.



When the Red potatoes were ready, fork tender, I removed them from the skillet and put them into a large bowl. Added 2 pats of Blue Bonnet Light Butter and got out the hand Potato Masher. I stirred the Potatoes , mixing them with the Butter. I then Smashed them a couple of times withe Masher. I just Smashed them enough to break them up but leaving chunks of the Potatoes in it. Served by Seasoning it with some McCormick Grinders of Sea Salt and Peppercorn Medley along with some of the Blue Bonnet Light Butter. These turned out great! I also baked a loaf of RiverRoad Bake House Multi Grain Oval Loaf Bread. This has become the family’s favorite Baked Bread. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.






Grouper – Firm texture, white meat with large flake and a mild flavor. Extra lean fish.
