Dinner Tonight: Leftover - Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Leftover - Shrimp and Smoked Turkey Sausage Gumbo

For Breakfast this morning I made some Simply Potatoes Shredded Hash Browns, Heated up some Meijer Diced Ham, fried an Egg Sunnyside Up, made a cup of Bigelow Decaf Green Tea. I made a bed of the Hashbrowns in a bow and sprinkled some Sargento Reduced Fat Sharp Cheddar Cheese.
Next I put the Diced Ham over top the Hash Browns then put the Sunnyside Up Egg on to top it off! One delicious Breakfast! We were fogged in this morning! Heavy fog until about 11:00 this morning. But then it turned sunny and a high of 46 degrees. The snow is melting! After Breakfast I went to Meijer to do some grocery shopping. I was at the Kroger up the road from us yesterday but their prices are so much higher than Meijer or Walmart! So after Meijer I stopped and got gas and then to McDonald's to pick up Breakfast for Mom. Later on went outside and cleaned up around the driveway and deck. Then kicked back the rest of the afternoon. For Dinner tonight Leftover: Shrimp and Smoked Turkey Sausage Gumbo. I wasn't going to let these leftovers go to waste! I've left the original post from yesterday for details of the dish, Enjoy!

One of my favorite meals tonight, Shrimp and Smoked Turkey Sausage Gumbo! To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 1/2 Butterball Hardwood Smoked Turkey Sausages (sliced into bite size slices), a bag of Meijer Brand Jumbo Shrimp and Frank’s Red Hot Sauce. I precooked the Sausage and Shrimp, according to the package instructions, before adding it to the Gumbo.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. It’s very easy to prepare, takes about 25-30 minutes. To start; I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added the Shrimp and simmered another 2-3 minutes. And the Gumbo is ready to serve and It turns out fantastic! Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! Then for Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo

Just a cup of Bigelow Decaf Green Tea for Breakfast, not much of an appetite this morning. We just got the snow off the driveway and roads and it snowed again! This area is just used to this Winter weather for as long as its been now. We got about 2 inches I guess overnight and into the morning. So I cleared what I could from the driveway and then my neighbor came over and cleared the rest for me. It wouldn't be so if I driveway wasn't a hill! And then having to deal with it in a wheelchair makes it even harder. But you just to do what you can. I finally was able to get out and go check out the new Kroger they opened yesterday. It's double the size of the old Kroger, which they really needed the space. The store is huge! They really did a great job with it. Many more selections and new items. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo.

Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Garlic Loaf Bread

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Garlic Loaf Bread

For Breakfast I toasted a Healthy Life Multi Grain English Muffin topped with I Can't Believe It's
Not Butter and a cup of Bigelow Decaf Green Tea. Mostly sunny and 84 degrees out today. Took Mom's car up to the Car Wash and had it cleaned and then a little later took my car up and had it washed. Went by the ATM and then by the Post Office and mailed a couple of letters before heading home. It's going on 2 months since my Dad passed away and I'm really missing him. But the only good thing is that he's not suffering anymore. His vision was almost gone along with his hearing, couldn't breath, and was so weak he couldn't even raise up from bed. So I'm so glad he's suffering no more but we all miss him very much. For Dinner tonight I prepared a personnel favorite, Shrimp and Smoked Turkey Sausage Gumbo w/ .Baked Garlic Loaf Bread.

Kitchen Hint of the Day!

Slow Cookers.........

Avoid overcrowding when using your slow cooker. For the best results, fill a slow cooker between one-half and two-thirds full. Go ahead and cook big roasts and whole chickens; just make sure you use a large crock and that the lid fits snugly on top. Set it and forget it!

Nice flavor, incredible tasting stock, meaty Shrimp and Sausage, and plenty of Pasta, makes one easily prepared hearty and delicious dish. Plus enough leftovers for a couple of lunches too! I also baked a loaf of Pillsbury French Bread. For dessert later a Weight Watchers Cookies and Cream Ice Cream Bar.

One of America's Favorites - Gumbo

Gumbo is a stew that originated in southern Louisiana during the 18th century. It consists primarily of
A bowl of shrimp, chicken and bacon gumbo, served over rice
a strongly-flavored stock, meat or shellfish, a thickener, and what Louisianians call the "Holy Trinity" of vegetables, namely celery, bell peppers, and onions. Gumbo is often categorized by the type of thickener used, the vegetable okra, the Choctaw spice filé powder (dried and ground sassafras leaves), or roux, the French base made of flour and fat. The dish likely derived its name from either a word from a Bantu language for okra (ki ngombo) or the Choctaw word for filé (kombo).

Several different varieties exist. Creole gumbo generally contains shellfish, tomatoes, and a dark roux, file, or both. Cajun gumbo is generally based on a dark roux and is made with shellfish or fowl. Sausage or ham is often added to gumbos of either variety. After the base is prepared, vegetables are cooked down, and then meat is added. The dish simmers for a minimum of three hours, with shellfish and some spices added near the end. If desired, filé powder is added after the pot is removed from heat. Gumbo is traditionally served over rice. A third, lesser-known variety, the meatless gumbo z'herbes, is essentially a gumbo of slow-cooked greens sometimes thickened with roux, with rice served on the side.

The dish combines ingredients and culinary practices of several cultures, including French, Spanish, German, West African, and Choctaw. Gumbo may have been based on traditional West African or native dishes, or may be a derivation of the French dish bouillabaisse. It was first described in 1802, and was listed in various cookbooks in the latter half of the 19th century. The dish gained more widespread popularity in the 1970s, after the United States Senate cafeteria added it to the menu in honor of Louisiana Senator Allen Ellender. The popularity of chef Paul Prudhomme in the 1980s spurred further interest in gumbo. The dish is the official cuisine of the state of Louisiana.

Gumbo is a heavily seasoned soup or stew that combines several varieties of meat or seafood with a sauce or gravy. Any combination of meat or seafood can be used. Meat-based gumbo may consist of chicken, duck, squirrel, or rabbit, with oysters occasionally added. Seafood-based gumbo generally has shrimp, crabmeat, and sometimes oysters. Andouille sausage is often added to both meat and seafood gumbos to provide "piquancy, substance, and an additional layer of flavor" to the dish. With the exception of sausage and ham, beef and pork are almost never used. Most varieties of gumbo are seasoned with onions, parsley, bell pepper, and celery. Tomatoes are sometimes used in seafood gumbo, but traditionally few other vegetables are included.

Thickeners
Gumbo broth or gravy derives from three primary thickeners: okra, filé powder, and roux.
Okra pods
Traditionally, okra and filé powder are not used in the same dish, although this rule is sometimes broken. Roux can be used alone or in conjunction with either of the other thickeners.

Okra is more often used as a thickener in seafood gumbos than those with meat. This mucilaginous vegetable is usually cooked first, and other ingredients added once the desired consistency is reached. According to The Oxford Companion to Food, okra-based gumbos are becoming less popular, as changing tastes have made the okra texture less palatable.

Ground sassafras leaf, known as filé, is generally not added to the gravy until after the vegetables and meats or seafood have finished cooking and have been removed from the heat source. If added during the boiling process, filé makes the gumbo too ropey; when added at the end, the gumbo gains a slightly stringy texture.

Roux has become the most popular thickener, made from cooking together a roughly equal proportion of flour and fat (traditionally hog lard, although increasingly made with butter since the mid-20th century. The length of cooking time determines the final flavor and texture, since the longer the roux is cooked before being added to the gumbo, the darker it becomes and the less thickening power it retains. A very dark roux provides a much thinner sauce with a more intense flavor than a light roux.

Cajun vs. Creole gumbo
Gumbo is typically divided into two varieties. Combinations traditionally common in New Orleans
Creole seafood gumbo
and southeastern Louisiana are known as "Creole" after the Louisiana Creole people, descendants of French and Spanish settlers, who lived in those areas. "Cajun" combinations were common in southwestern Louisiana, which was populated primarily by Cajuns, descendants of the French-speaking settlers expelled from Acadia (located within the modern-day Canadian provinces of Quebec, Nova Scotia, New Brunswick and Prince Edward Island) in the mid-18th century.

Gumbo is usually identified by its dark roux, cooked until it is a color "a few shades from burning". The roux is used with okra or filé powder. Seafood is popular in gumbo the closer to the water the people are, but the southwestern areas of Louisiana often use fowl, such as chicken or duck, and sausage.[8][9] The fowl is generally not deboned, and onions, celery, and bell pepper are not strained out of the dish. Cajun gumbo is usually topped with parsley and green onions.

Creole gumbo most often consists of seafood, tomatoes, and a thickener. Before the latter half of the 20th century, celery was rarely used in Creole gumbo.

Gumbo is cooked for a minimum of three hours, and often simmers all day. Meat (but not seafood) is
Cajun seafood gumbo
often browned beforehand and removed from the heat. Okra and roux are cooked before other vegetables and seafood. Okra is removed from heat when it reaches the desired consistency, while roux remains in the pot. Seasoning vegetables are then added to the sauce. When these have turned to mush (more commonly called cooked down), the meat and okra are added to the pot along with water and/or stock, then boiled uncovered until the desired tenderness of the meat is reached. Seasonings, including red, black, and white pepper, bay leaves, thyme, hot sauce, and salt, are added to taste. According to Nobles, "proper seasoning of gumbo is essential, and in Louisiana adding just the right zing is considered an art". Because seafood cooks fairly quickly, it is not added to the pot until the end of the process. As the gumbo finishes cooking, green onions and parsley are sometimes sprinkled on it. When desired, filé powder is added last.

Creole and Cajun gumbos are served over hot rice, which helps the dish to feed a larger number of people. Gumbo z'herbes is served with rice on the side. Gumbo is almost always served directly from the pot on the stove, although in wealthier or fancier homes the dish might be transferred to a tureen on the table. Often, gumbo and bread are the sole courses in a meal, although many Cajun families provide a side dish of potato salad. Occasionally, gumbo is served as part of a larger menu.

Soniat gives examples of the main types of creole gumbos, along with descriptions of family traditions about them.

Kitchen Hints of the Day!

When making Gumbo, Okra is a key ingredient. Here's some keeper hints on Okra.....

* Okra is in season all year, best supplies from May – October

* When buying okra, you want to look for bright green okra with the skin unblemished. The okra should feel firm but not hard.

* There are several varieties of okra - some grow long while others grow short. Some are purple and others green. The guide remains the same when selecting okra.

* Okra can be stored in the refrigerator in paper bags in the vegetable compartment. When you are ready to prepare the okra for cooking, remove it from the fridge and bring it up to room temperature first. Pat the okra dry before cutting/slicing. By bringing the okra to room temperature before cooking aids in less moisture yielding when cooked.

Shrimp and Smoked Turkey Sausage Gumbo

Dinner Tonight:Shrimp and Smoked Turkey Sausage Gumbo w/ Baked Rustic French Bread

Had a light Breakfast this morning and then on to my morning workout. Another beautiful Fall Day
out again. I was all caught up on everything so I had the cart out early riding around. About noon went over to see dad at the rehab center, he's doing so much better and eager to come home. He'll be released Friday! For dinner tonight a personal comfort food for me. I prepared Shrimp and Smoked Turkey Sausage Gumbo with Baked Rustic French Bread.

I have a lot of favorite meals but this one is near or at the top, love the combo of Shrimp and Smoked Turkey Sausage. To make it I used a box of Zatarain’s Gumbo Pasta Dinner Mix for the Gumbo base, 1 Butterball Hardwood Smoked Turkey Sausage (sliced into bite size slices), a  bag of Kroger Brand Jumbo Shrimp (that I precooked before adding to the Gumbo), and Frank’s Red Hot Sauce.

The Zatarain’s Gumbo Pasta Dinner Mix uses Pasta instead of Rice. Very easy to prepare, takes
about 25-30 minutes. I just boil the stock that’s in the packet, add the sliced the Turkey Sausage to
the stock along with a few shakes of Frank’s Red Hot Sauce and continued to cook for 10-15 minutes. Then I added Extra Large Shrimp and simmered another 3-6 minutes. I also baked a half loaf of Pillsbury Rustic French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Shrimp and Smoked Turkey Sausage Gumbo

Today’s Menu:Shrimp and Smoked Turkey Sausage Gumbo

Lot of rain overnight again and more late afternoon or early evening on the way. Very humid out
there today. Went to Walmart and Meijer early this morning. Walmart is starting to be a waste of time! All their electric carts are in bad shape and more and more name brand items are being replaced with Walmart brand items. They no longer carry any Ronzoni Healthy Harvest Pastas and found out today they no longer carry any Jennie - O Turkey Products. So it's Meijer and Kroger from now on. Back at home did the usual, tidy up the house inside and out. Too humid by noon to do much of anything outside. For dinner tonight a personal favorite, Shrimp and Smoked Turkey Sausage Gumbo.

I have a lot of favorite meals but this one is near or at the top. To make it I used a box of Zatarain’s

Herb and Spice of the Week - Filé powder

* Now here's one I had never heard of,  Filé powder.

Filé powder

Filé powder, also called gumbo filé, is a spicy herb made from the dried and ground leaves of the sassafras tree (Sassafras albidum), native to eastern North America. Choctaw Indians of the American South (Florida, Mississippi, Alabama, Louisiana) were the first to use dried, ground sassafras leaves as a seasoning, what is now called filé, or gumbo filé, used in Creole cooking. It is used in the making of some types of gumbo, a Creole and Cajun soup/stew often served over rice; other versions of gumbo use okra or a roux as a thickener instead. Sprinkled sparingly over gumbo as a seasoning and a thickening agent, it adds a distinctive, earthy flavor and texture. Filé can provide thickening when okra is not in season. Filé translates to "string", suggestive of the powder's thickening ability. "Filé gumbo" is famously mentioned in the classic country song by Hank Williams Sr., Jambalaya (On The Bayou), as it is considered a staple of Cajun cuisine.

Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears

Dinner Tonight: Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears

Oh another bout of snow and another bout of the Phantom Pains throughout the night, I'd rather deal with the snow instead of Phantom Pains! We got another 2-3 inches over the night, this one was a powdery snow unlike the last one which was a wet and heavier snow. Dealt with the phantom pains throughout the night again last night, not real bad ones just enough to annoy me! One of the neighbors had brought my morning paper up and laid it by the door for me, thank you! Brewed a cup of hot Green Tea, Bigelow Decaf Green Tea. I had some Turkey Chili leftover from dinner the other night and made a Chili and Cheese Omelet with some toast for breakfast, and a good start to the day! For dinner tonight it was Shrimp and Smoked Turkey Sausage Gumbo with Rice w/ Cornbread Ears.

I used a box of Zatarain's Gumbo Mix with Rice for the Gumbo base. I think I had used this once before. Very easy to prepare, takes about 25-30 minutes. I just boiled the stock that was in the packet, Jalapeno Slices, sliced Butterball Hardwood Smoked Turkey Sausage, and a few shakes of the Frank's Red Hot Sauce for 15 minutes. Then I added the Extra Large Shrimp and simmered another 10 minutes. Said and done the Gumbo is ready! It turned out fantastic! Nice flavor and plenty of Rice, makes a nice hearty dinner. I also made some Cornbread Ears. It's normal baked Cornbread but in a cast iron baking mold in the shape of Ears of Corn. I used Martha White Corn Meal Mix. For dessert later a Jello Sugar Free Chocolate Pudding.

Zatarain's Gumbo Mix with Rice
Gumbo is a savory Cajun or Creole stew served with or over rice. Just add one pound of seafood (shrimp, crabs, or craw fish) or meat (chicken and sausage are very popular) for nine cups of delicious gumbo in about 30 minutes with one pot preparation.

Directions
Easy Stove Top: Gumbo can be prepared with your choice of 1 pound of chicken (pre-cooked), smoked sausage or seafood cut into bite-size pieces. 1. In a 3 quart saucepan, combine 6 cups water, meat and Zatarain's Gumbo Mix. Stir and bring to a boil. 2. Stir, reduce heat, cover and simmer over Low heat for 25 minutes. For Seafood Gumbo: Combine 6 cups water and Zatarain's Gumbo Mix, bring to a boil. Add seafood after 10 minutes of cooking time, return to boil and cook 15 minutes.

Microwave: 1. In a 3 quart microwave-safe bowl, combine 6 cups of cold water and Zatarain's Gumbo Mix. 2. For Chicken or Sausage Gumbo: Add 1 pound meat, cover and cook on High for 30 minutes (cook time may differ on the power of the microwave oven.), stirring occasionally. For Seafood Gumbo: Cover and cook on High for 20 minutes (cook time may differ on the power of the microwave oven.). 3. Let stand covered for 5 minutes before serving. Serving Suggestions: Sausage and chicken make an excellent, popular gumbo. Seafood gumbo is best with shrimp, oysters and crab. Okra, corn or celery make excellent vegetable additions.
