Wild Idea Buffalo Recipe of the Week - Why Wild Idea Buffalo? WEDNESDAY

Hey everyone, usually on Wednesday's I have a recipe from Wild Idea Buffalo to share with all of you. But today instead of a recipe I'm going to pass along some info and back ground on Wild Idea Buffalo. I've been ordering my Buffalo from Wild Idea for a few years now. I've tried other Buffalo or Bison but none can really compare to best tasting Buffalo there is that I have found! So here's a little history and info on Wild Idea Buffalo! Enjoy and Make 2019 a Healthy One!

MISSION
"I have dedicated my life to preserving and restoring the Great Plains grasslands. These same principles are the foundation of Wild Idea Buffalo Company. By returning the bison to their native homeland, we're not only re-wilding a threatened ecosystem, we are keeping prairies intact, with carbon stored safely underground, and producing the healthiest red meat on the planet."

Dan O'Brien
Buffalo Rancher / Carbon Cowboy

BEYOND ORGANIC
Raising buffalo humanely has allowed us to supply conscientious consumers with the delicious, healthy, 100% grass-fed meat they demand. We have left no stone unturned in our effort to “go beyond organic.” We treat our buffalo and their prairie ecosystem with the respect and care that both deserve. Our buffalo are 100% grass-fed/grass-finished, 100% antibiotic, hormone & pesticide free, and 100% humanely harvested. Our model of raising buffalo leads to a superior source of protein that’s good for you, the environment, and the animals.

SUSTAINABLY RAISED
Our bison roam over large landscapes like their ancestors did, eating nothing but the grass beneath their feet. Their grazing patterns naturally regenerate the prairie, enhancing the level of biodiversity. The nutrient-dense prairie grasses they eat are loaded with omega-3 fatty acids, producing a delicious, healthy red meat that that the body needs for optimum health. Unlike most buffalo on the market today, Wild Idea Buffalo are never feedlot confined or finished on GMO grains.

MEET OUR FOUNDERS
Dan & Jill O’Brien created Wild Idea Buffalo Company in 1997 with the mission of preserving the Great Plains by returning buffalo to their native habitat. Many years have passed since their original “wild idea” that began the company, and today Wild Idea Buffalo Company, LLC continues to grow through our customers’ conscientious decisions about the quality and stewardship of the food they purchase.

 BEST TASTING MEAT
The incredible flavor of Wild Idea Buffalo meat is the result of the animals’ lives being lived more naturally and without unnecessary human interference. Its clean, rich, slightly sweet taste has subtle notes of grass, sage, and we swear – sunshine. Our humane prairie harvests ensure that our buffalo are not exposed to any undue stress that would spoil the flavor of this natural meat. Our buffalo are given respect, dignity, and care throughout their lives. Our buffalo tastes better because they are raised better!

THE BEST MEAT FOR YOU
Wild Idea meat is lower in calories, fat and cholesterol than chicken or fish. It’s higher in protein than beef. Our 100% native grass-fed meat delivers 3.5x more antioxidant omega-3 fatty acids than grain-fed buffalo. Try the red meat that’s good for you!

BUFFALO RESTORE THE PRAIRIE
Prairie restoration is vital to our mission. Our land and animal management practices are as close to nature's intentions as possible. By giving the buffalo room to roam, the Great Plains prairie is brought back to health. Grasses, forbs, and flowers flourish, providing a sustainable ecosystem for all life. Our vision of sweeping landscapes where the buffalo roam continues to grow, and we are now affiliated with other like-minded ranchers, including Native American ranchers and Nature Conservancy herds, positively impacting over 150,000 acres of grasslands.

Kitchen Hint of the Day!

Let it rest, twice.........

Cold steaks don’t cook evenly. Placing a chilled piece of meat in a pan or on the grill makes it difficult for the heat to reach the center. Let the steaks rest out on the counter at least 30 minutes before cooking. After cooking, it’s just as important to let the steaks rest again for 5–10 minutes, so the juices redistribute and the fibers relax. Cutting into a steak the moment it comes off the heat will result in a tough dry steak.

Kitchen Hint of the Day! FRIDAY

Reducing the fat.......

Grill or roast meat on a rack so the fat drips away.

Kitchen Hint of the Day!

If you're grilling a steak on a closed barbecue, here's a neat trick to try next time. Open a can of Beer and place it on the hottest part of the grill. It will boil and keep the meat moist, while adding flavor also.

Friday, March 30, 2018

Kitchen Hint of the Day!

Do Not Touch.......

When grilling - To start always oil your grill grate up. Then start your grill and let it heat up 15-20 minutes before adding the meat. Then once you put food on the grill, do your best not to disturb it. Meats — especially burgers, steaks and chops — are meant to be flipped just once. After placing something on the grill, let it sit for a few minutes to get a good sear. Once it’s been cooking for a bit, use your tongs to test and see it if pulls away from the grates. The meat will then either stick or release when it’s cooked long enough. If there’s any resistance, it needs to be left alone a few moments longer. Enjoy that grilling!

Kitchen Hint of the Day!

Don't stab that meat........

When preparing any meat; Never stab the meat with a fork or knife to flip it over. These punctures allow juices to escape and can lead to drying of the meat and less-flavorful protein.  Always use a spatula and/or tongs when you need to turn your meats.

Wild Idea Buffalo Recipe of the Week – Seared Flat Iron Steaks with Bagna Cauda

This week’s Wild Idea Buffalo Recipe of the Week is a Seared Flat Iron Steaks with Bagna Cauda. This one uses the Wild Idea Buffalo 8 oz. Flat Iron Steak. It comes with a recipe for Bagna Cauda, which is an Italian dipping sauce, is terrific on meat or with grilled or blanched veggies, and crusty bread. Sound good, you can not only find this recipe on the Wild Idea Buffalo website but you can also purchase the Wild Idea Buffalo 8 oz. Flat Iron Steak on line also! So check the site out soon for recipes, Buffalo cooking tips, and to purchase all the delicious and healthy cuts of the Wild Idea Buffalo Meat. Enjoy! http://wildideabuffalo.com/

Seared Flat Iron Steaks with Bagna Cauda

A good Flat Iron steak can be a hit or miss experience. This is based on two general principles, first is the quality of the meat, which if bad, you cannot fix, and second is the care that went into cutting the steak. Wild Idea’s Flat Iron steaks are the best quality and they are cut with specific care, giving you assured success. The recipe below for Bagna Cauda, which is an Italian dipping sauce, is terrific on meat or with grilled or blanched veggies, and crusty bread. An assortment of all makes a great party tray when entertaining. (Makes 2 entrée portions, or 6 hors d’oeuvres portions)

Steak Ingredients:

1 – 8 oz. Flat Iron Steak
1 – tablespoon olive oil
1 – teaspoon lemon juice
1 – teaspoon black pepper
½ – teaspoon sea salt +

Preparation:

1) Rinse steak and pat dry with paper towels.Seared Flat Iron Steaks with Bagna Cauda2

2) Mix the rest of the ingredients together and rub into the steak. Cover and allow to rest at room temperature for two hours before cooking.

3) On stove top over high heat, heat a *seasoned (*a pan that has been rubbed with oil and allowed to absorb into the pan)cast iron or heavy clad pan. Insure your exhaust fan is on high, as you will have a little smoke.

4) Shake off any excess of the seasoned oil and place steak in hot pan. Sear one and a half minutes on the first side, then turn and sear for an additional minute. Remove pan from heat and remove the steak from pan. Transfer the steak to a plate or cutting board and cover with foil. Allow steak to rest for 5 minutes before cutting.

5) Slice, plate, and drizzle or serve with Bagna Cauda.

Creamy Bagna Cauda (makes about 1 cup)

This sauce can be made with a combination of butter & olive oil or one or the other. The garlic-flavored milk can be omitted if you do not want a creamy texture. I prefer a combination of both butter & oil, and do add a little of the milk as it helps to keep the dipping sauce from separating, which is normal.

Ingredients:

1/3 – cup milk
4 – good sized garlic cloves, peeled
½ – cup cilantro or parsley
5 – anchovy fillets
4 – tablespoons each, hot melted butter & hot olive oil
1½ – tablespoons fresh squeezed lemon juice
1 – teaspoon black pepper

Preparation:

1) In a double broiler over medium high heat, bring milk and garlic cloves to a gentle boil. Reduce heat to a simmer, cover and allow to steep for half an hour. Shut heat off and leave the garlic in the milk for two hours.

2) Remove the garlic cloves from the milk and place in a blender or food processor, along with the herbs, anchovy fillets, butter, oil, and lemon juice. Pulse puree to incorporate. Add 2 tablespoons of the garlic milk and pulse puree a second time.

3) Season to taste and reheat.

Kitchen Hint of the Day!

Where's the wax paper......

When freezing hamburgers, chops, or steaks, which tend to stick together when frozen, separate them with pieces of waxed paper or freezer wrap. You will then be able to remove the amount needed without thawing the whole batch.

Kitchen Hint of the Day!

When preparing Bison.....

Bison meat is lower in fat and higher in moisture than its cousin beef. This means bison will cook more quickly than beef.Since bison muscle has no marbling, do not cook steaks & roasts past medium done stage. So keep a close eye on your Bison!
