Walleye Fillet w/ Parmesan Risotto, Sliced New Potatoes, and...

Dinner Tonight: Walleye Fillet w/ Parmesan Risotto, Sliced New Potatoes, and Whole Grain Bread

I had another of my catches from Meijer tonight, Walleye Fillet. Seasoned it with Sea Salt and Ground Black Pepper. I rolled the fillet in a Whole Grain Flour and Italian Bread Crumb mix and pan fried it in Extra Virgin Olive Oil. Walleye is one of my favorites, great tasting and very meaty.

As sides I had Lundberg  Creamy Parmesan Risotto, great tasting and takes about 25 minutes to make. Topped it with about half a handful of shredded Parmesan. Plus it’s only 140 calories and 29 carbs per serving. I also had Sliced New Potatoes that were leftover from last night's dinner along with Healthy Life Whole Grain Bread. For dessert later a Yoplait 100 Calorie Delight Chocolate Eclair Parfait.

Top Sirloin w/ Sauteed Mushrooms, Sliced New Potatoes, and...

Today's Menu: Top Sirloin w/ Sauteed Mushrooms, Sliced New Potatoes, and Whole Grain Bread

When I have a Steak it's usually a Bison Sirloin Steak and when it's not it's usually a (Beef) Top Sirloin. I had a nice looking Top Sirloin that I seasoned with McCormick Grinder Sea Salt and Grinder Black Peppercorn. I pan fried it in Extra Virgin Olive Oil about 4 minutes per side. It came out a juicy and beautiful medium rare. For sides I had sauteed Mushrooms, Sliced New Potatoes, and Healthy Life Whole Grain Bread. I lightly sauteed the Mini Portabella Mushrooms in Extra Virgin Olive Oil and seasoned them with Ground Thyme, Smoked Cumin, Parsley Flakes, and Sea Salt. I boiled the New Potato slices. For desert later a Jello 60 Calorie Sugarless Chocolate Pudding.

Dinner Tonight:  Grilled Chicken Breast w/ Sliced New Potatoes, Cut Green Beans & Dry Shelled Beans, and Rustic French Bread

I grilled Miller Amish Boneless Chicken Breast with a Heinz 57 Sauce/Honey Glaze.  Grilled the Breasts about 30 minutes and after flipping the Breasts after 15 minutes brushed the Glaze on with about 10 minutes left. The Glaze recipe is just two ingredients, Honey and Heinz 57 Sauce (the recipe is at the nd of the post). As sides I had sliced New Potatoes that boiled and a can of  Cut Green Beans & Dry Shelled Beans along with a slice of Pillsbury Rustic French Bread. For a dessert/snack later some Breyer's Carb Smart Vanilla Ice Cream topped with Del Monte No Sugar Added Sliced Peaches.

Love those grill marks!
Dinner Tonight: Marinated Grilled Chicken Breast w/ Sliced New Potatoes, Cut Green Beans & Dry Shelled Beans, and Whole Grain Bread

Finally got around in cleaning the grill and replacing the old grates with new ones so you know we had to fire it up! I used Miller's Amish Chicken Breasts and marinated them in JB's Fat Boy Sticky Stuff (Poultry BBQ Sauce). I let them marinate for 3 hours in the frige. Seasoned them with Sea salt and Ground Pepper and grilled. I had Bleu Cheese dipping sauce and Sticky Stuff Sauce on the side for the Chicken. The breast's came three to a package and I saved one of them for a Chicken dish for later this week. As sides I had sliced New Potatoes that boiled and a can of  Cut Green Beans & Dry Shelled Beans along with a slice of Healthy Life Whole Grain Bread. For a dessert/snack later some Pop Chips w/ Breakstone Ranch Dip.

I had my fix of ribs today! I used Lloyd’s St. Louis Style Ribs. A breeze to make with no mess! Just heat the oven on 375 degrees and bake for 25 – 30 minutes, done and great tasting! For me the sauce is perfect. Only had the suggested serving size of the Ribs along with Boiled Sliced New Potatoes, frsh Asparagus, and healthy Life Whole grain Bread. I seasoned the Potatoes with Thyme, Parsley, Sea Salt and Ground Pepper. For the Asparagus I cut the stalks into 3 pieces and ligtly fried them in Extra Virgin Olive Oil and I Can't Believe It's Not Butter. Grilled BBQ Chicken Breast w/ Chili Beans and Boiled Sliced New Potatoes

Dinner Tonight: Grilled BBQ Chicken Breast w/ Chili Beans and Boiled Sliced New Potatoes

A little one day break in the weather so I fired the grill up, still hot but less humid today. I purchased three beautiful Chicken Breasts earlier this morning and I knew I had to get the grill going! While at Kroger I got a bottle of JB's Fat Boy Sticky Stuff Poultry BBQ Sauce. You have to try JB'S Fat Boy BBQ Sauces and Rub these are just too good!
Anyway I lightly Salt and Peppered the breasts and started grilling them. I turned them 3 times and basted them each time I flipped them over. You can't beat the taste of any meat when you grill it. Grill marks and a little bit of a char, can't beat it! With the Chicken I had sides of some Kicked Up Chili Beans and Boiled Sliced New Potatoes. For the Beans I used Joan of Arc Spicy Chili Beans and added Jack Daniel’s BBQ Sauce, Crumbled Turkey Bacon Bits, and a few dashes of Frank’s Red Hot Sauce. The Potatoes were leftover from yesterday so I just warmed them up and they were ready. For dessert/snack later tonight I'm going to have Chips in Rice Chips with some Kroger Brand Organic Black Bean and Corn Salsa.
