Turkey Sausage & Sourdough Kabobs
Ingredients
¼ cup sherry wine vinegar
2 teaspoons Dijon mustard
2 garlic cloves, minced
1 tablespoon chopped minced fresh rosemary
½ cup olive oil
1½ cups chopped bell peppers
1 (14-ounce) package JENNIE-O® Fully Cooked Hardwood Smoked Turkey Sausage, cut into 1-inch pieces
1 red onion, cut into 1-inch pieces
1½ cups cubed sourdough bread
baby kale leaves, if desired
Directions
1 - In small bowl whisk vinegar, mustard, garlic, rosemary and oil. On skewers alternately thread bell pepper, sausage, onion and bread cubes. Brush each skewers with 1 tablespoon dressing. Grill 12 minutes, turning often, or until lightly charred.
2 - In large bowl, toss greens with enough remaining dressing to coat. Divide among 4 plates. Top with skewers. Brush skewers with more dressing, if desired
