Diabetic Dish of the Week - Turkey-Apple Sausage Patties

For this week's Diabetic Dish of the Week I have Turkey-Apple Sausage Patties. Breakfast, Lunch, or Dinner this one will fit right in!


Prep; 15 minutes
Broil: 10 minutes
Makes: 4 servings
Ingredients

 1/2 cup shredded, peeled apple
 1/4 cup finely chopped almonds or pecans
 1 1/2 teaspoons snipped fresh sage or 1/2 teaspoon dried sage, crushed
 1/4 teaspoon black pepper
 1/8 teaspoon salt
 1/8 teaspoon paprika
 1/8 teaspoon cayenne pepper
 Dash ground nutmeg
 8 ounces uncooked ground turkey breast (Jennie - O Turkey)
 Pam Nonstick Cooking Spray

Directions

 1 - In a large bowl combine shredded apple, nuts, sage, black pepper, salt, paprika, cayenne pepper, and nutmeg. Add ground turkey; mix well. Shape mixture into four 1/2-inch-thick patties.
 2 - Lightly coat the unheated rack of a broiler pan with nonstick cooking spray. Arrange patties on rack. Broil 4 to 5 inches from the heat about 10 minutes or until no longer pink (165 degrees F),* turning once halfway through broiling time. (Or coat an unheated large skillet with nonstick cooking spray. Preheat over medium heat. Add patties to hot skillet. Cook for 8 to 10 minutes or until no longer pink [165 degrees F],* turning once halfway through cooking time. If patties brown too quickly, reduce heat.) Makes 4 servings.
* Note

 The internal color of a turkey patty is not a reliable doneness indicator. A turkey patty cooked to 165 degrees F is safe, regardless of color. To measure the doneness of a patty, insert an instant-read thermometer through the side of the patty to a depth of 2 to 3 inches.
