Dinner Tonight: Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread





For Breakfast I made my Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just
cooked the Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. I topped it with Sargento Reduced Fat Shredded Sharp Cheddar Cheese and a Fried Egg Sunnyside Up. And Breakfast is served! Had my morning cup of Bigelow Decaf Green Tea. After Breakfast I went to McDonald's to get Breakfast for Mom and Dad and I also stopped at Dunkin Donuts and picked up Donuts for them. Lot of rain the last day or so and a lot more on it's way. The news says rain every day next week, and heavy at times. Come on Sunshine! Back home did a couple of loads of laundry and then after Lunch did some house cleaning. For Dinner tonight Catfish Nuggets w/ Baked Scalloped Potatoes and Baked Multi Grain Bread.





I had purchased some Catfish Nuggets from Meijer a while back. So I grabbed a package out of the freezer and let it thaw overnight in the fridge. To prepare them I rinsed the Catfish Nuggets off in
cold water and patted dry with a paper towel. Seasoned them with Sea Salt. Then put them in a Hefty Plastic Storage Bag and added Zatarain’s Crispy Southern Fish Fri Breading Mix, shook the bag until all the Nuggets were coated. Then pan fried them in a medium size skillet in Extra Light Olive Oil. Fried each side about 3 1/2 minutes, until a golden brown. The Zatarain’s Crispy Southern Fish Fri is perfect for the Catfish, great flavor and the Nuggets were good size and meaty.





For a side dish I prepared some Bob Evan’s Oven Baked Scalloped Potatoes. I hadn’t had these in quite a while so I picked up a package while at Meijer. It comes in a microwave package, just heat for 6 minutes and serve, or you can bake it which is how I prepared it. Comes out with plenty of Potatoes with an excellent Cheese Sauce and seasoning. Easy way to have Scalloped Potatoes with no clean up! I also baked a loaf of River Road Bakehouse Multi Grain Bread. I've been buying this from Meijer the last few months and it's our favorite Baked Bread. Mom's a big Bread eater like me! For Dessert later a Dole No Sugar Added Diced Peach Cup.

Remove board overwrap and film. 2. Microwave on High power for 5 to 6 minutes until bubbly around edges. 3. Let stand 1 to 2 minutes prior to serving. Conventional Oven (time and temperature settings may vary due to differences in your particular microwave oven. Always cook this product to 160 degrees F prior to serving): 1. Preheat oven to 350 degrees F. 2. Remove board overwrap and film. 3. Place container on baking tray and heat in oven for 10 to 12 minutes or until bubbly around edges. 4. Let stand 1 to 2 minutes prior to serving.
