It was a Simple, healthy, and tasty dinner tonight. I had a Bison Ground Sirloin Burger that I seasoned with McCormick Steakhouse Seasoning and fried in Extra Virgin Olive Oil for about 7 minutes, flipping over once. I topped it with Sauteed Baby Bella Mushrooms. I seasoned those with Sea Salt, Ground Black Pepper, Ground Smoked Cumin, and Parsly. I also topped it with a slice of Smoked Gouda and served on a Healthy Life Whole Grain Bun.

Dinner Tonight: Walleye Fillet w/ Parmesan Risotto, Sliced New Potatoes, and Whole Grain Bread

I had another of my catches from Meijer tonight, Walleye Fillet. Seasoned it with Sea Salt and Ground Black Pepper. I rolled the fillet in a Whole Grain Flour and Italian Bread Crumb mix and pan fried it in Extra Virgin Olive Oil. Walleye is one of my favorites, great tasting and very meaty.

As sides I had Lundberg  Creamy Parmesan Risotto, great tasting and takes about 25 minutes to make. Topped it with about half a handful of shredded Parmesan. Plus it’s only 140 calories and 29 carbs per serving. I also had Sliced New Potatoes that were leftover from last night's dinner along with Healthy Life Whole Grain Bread. For dessert later a Yoplait 100 Calorie Delight Chocolate Eclair Parfait.

Dinner Tonight: Baked Catfish Tenders & Remoulade Dipping Sauce w/ Potato Pancakes and Creamy Parmesan Risotto

Mom and Dad wanted Fish tonight so that's what I had to make. I used a Kroger brand Catfish Tenders. Baked at 425 degrees for 25 minutes, they come out perfect! I made a Remoulade Dipping Sauce for them also. This Sauce is fantastic and goes well with almost all Fish. I'll leave the recipe at the end of the post for the Sauce.
As sides I made one my Mom's favorites Potato Pancakes. I use Manischewitz Potato Pancke Mix. Not only are these delicious but their only 80 calories and 18 carbs per serving, 3 pancakes! I also had Lundberg Creamy Parmesan Risotto it takes about 25 - 30 minutes to whip this up. Really a quick and very good tasting Risotto. For dessert later a Yoplait Delight Chocolate Eclair Parfait.

Salmon and Risotto, what a fantastic and delicious pairing! You could pair anything with the great tasting Copper River Salmon but the Risotto is a perfect match. Fried in Extra Virgin Olive Oil about 6 1/2 minutes. As sides I had Lundberg  Creamy Parmesan Risotto, great tasting and takes about 25 minutes to make. Topped it with about half a handful of shredded Parmesan. I also had a small can of Del Monte Asparagus Bits and Healthy Life Whole Grain Bread. I had a pan fried Lake Perch Fillet, rolled in Whole Wheat Flour and Bread Crumb mixture and seasoned with Sea Salt and Grinder Black Pepper. As sides had Lundberg Alfredo Parmesan Risotto and Green Giant Asparagus seasoned with Garlic Salt. The Lundberg Risotto is one of my favorites, always great tasting and tender.
