Dinner Tonight: Lean Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges
What a beautiful Morning Sky this morning! Bright Red, Orange, and Pink just filled the East
Horizon. Started my day off with a new Breakfast Item, Eggo Bacon, Cheese, and Egg Sandwich. Just microwave for 1 minute and it's ready. Nice tasting Breakfast Sandwich. It's 210 calories and 21 net carbs, so not too bad. My Mom has a strain of Pineys (Flower) that were from my Grandmothers Flowers. So every Spring when they are in full bloom it brings back memories of my Grandmother. She always had a green thumb with anything she grew. Got the cordless leaf blower working, makes it a lot easier than sweeping around the outside. For dinner tonight I prepared a Lean Turkey Pastrami Sandwich w/ Baked Fingerling Potato Wedges.
To make my Sandwich I’ll need; Jennie – O Extra Lean Turkey Pastrami, Klosterman Wheat Bread,
Simple Life Muenster Cheese, and Litehouse Lite Thousand Island Dressing. I’ll be using my Flat Griddle Pan to prepare it. To start I got the griddle out, put a pat of Blue Bonnet Light Butter on it, and heated it up on medium heat. To prepare it; on one bread slice I layered the Cheese, Turkey Pastrami,and Dressing. Cover with remaining bread slice. Place Sandwich on the Griddle. Cook 4 to 6 minutes or until the bread was toasted and golden brown, turning once. Wow, One delicious Sandwich! The Muenster Cheese and Litehouse Lite Thousand Island Dressing works perfect with the Pastrami.
For a side to go with the Sandwich I prepared some fresh-cut Fingerling Wedges. I sliced the
Potatoes into wedges and seasoned them with a light coat of Extra Virgin Olive Oil, Garlic Powder, Dried Thyme, and McCormick Grinder Sea Salt and Black Peppercorn. Spread them out on a small Cookie Sheet and baked at 400 degrees until fork tender, about 20 minutes. Put a light sprinkle of fresh shredded Sargento Asiago Cheese over top and served. I wonder why Fingerling Potatoes are so hard to find? Jungle Jim’s International Market is the only one to carry them around here, at least the only one that I have found. For dessert/snack later tonight some fresh sliced Smoked Mozzarella Cheese, Hormel Turkey Pepperoni Slices, on top of Ritz Wheat Crackers.
