Dinner Tonight: Panko Crusted Orange Roughy Fillet w/ Whole Grain Rotini and Cheese




It's been a cool, cloudy, and rainy day out today. Did some laundry early this morning and then had a doctor's appointment late afternoon. The paper work for my new Hovaround was filled out incorrectly, so now I have to go again so they can verify I'm still an amputee! I'll be quiet, I don't want to get started on this. For dinner tonight, Panko Crusted Orange Roughy Fillet w/ Kraft Whole Grain Rotini and Cheese.







I used the other half of the Orange Roughy from last nights dinner for my dinner tonight. To prepare the Fillet, I rinsed the fillet and pat dry and then seasoned it with Sea Salt and Pepper. Combine flour and Hungarian Sweet Paprika mix well, then press both sides of fillet into flour for a light dusting , shaking off any excess flour. Dip floured fillets into Egg Beater’s, allowing excess to drip off. Then roll the fillets in the Shake and Bake Seasoned Panko. Meanwhile, heated a tablespoon of Extra Virgin Olive Oil in skillet and place the fillet in the oil and fry 4 minutes each side. It comes out a beautiful golden brown on the outside and a moist flavorful fillet on the inside! Fantastic recipe for Fish.






Then to go with my fillet I made some Kraft/Velveeta Whole Grain Rotini and Cheese. Love Mac and Cheese but just don’t eat too often anymore due to a higher calorie and carb count than most sides I eat anymore. But every now and then is ok. So I used a box of the Kraft/Velveeta Whole Grain Rotini and Cheese, first time I’ve used this one in quite a while. To prepare it; Boil 6 cups water. Stir in shell pasta. Cook 8-10 min., Stirring occasionally. Note: don’t overcook pasta. Drain pasta, don’t rinse. Return it to pan. Add cheese sauce; stir. This makes some of the best Pasta and Cheese you'll have. The sauce is thick and cheesy, just add Sea Salt and Pepper to taste. Fish with Mac and Cheese is just a natural combo! For dessert later a Del Monte No Sugar Added Peach Chunks.

Directions
