Cumin Spiced Monster Pork Chop / Potato Pancakes and Sugar Snap Peas

Today's Menu: Cumin Spiced Monster Pork Chop / Potato Pancakes and Sugar Snap Peas





Cloudy and rain on and off all day, here today. Still trying to figure out how to correct a drainage problem we're having by our driveway. Tried a couple of ways but working on a new one, hopefully this will take care of it. Besides that not much going on around the old homestead today. For dinner tonight it's a Cumin Spiced Monster Pork Chop / Potato Pancakes and Sugar Snap Peas.








It's been a while since I've had one of these Monster Pork Chops but They had them on sale at Kroger and just looked too good to pass up. A good thing about the Chops is they're so big that there's plenty leftover for Breakfast the next morning! To prepare my Chop I’ll need; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. I had to increase the cooking time due to the size of the Chop. Start by heating the oil in a Cast Iron Skillet over medium-high heat. Add pork to pan; cook 4 minutes, browning both sides. From the stove to the oven and bake at 400° for 17 minutes until the thermometer registered 155° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! This by far is my favorite Pork recipe, it's great on Tenderloins, Roasts, or Chops. I think I'm going to try it on some Chicken sometime.








For one side I had some leftover Potato Pancakes I had leftover from last night's dinner that i reheated. I also heated up a bag of Walmart Marketside Sugar Snap Peas, just microwave in the steamable bag for 2 minutes and done! Also had a slice of Klosterman Wheat Bread topped with I Can't believe It's Not Butter. For dessert later a bowl of Breyer's Vanilla Carb Smart Ice Cream.
