Dinner Tonight: Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Cut Green Beans, and Whole Wheat Bread







This part of Ohio just cracks me up, people will never change! All it takes is one weather news cast to mention snow and the panic is on! They're calling on anywhere from an 1" to a dusting of snow overnight and flurries Tuesday. And as usual people flock to the store buying anything and everything, I'm not exaggerating! I had to go the store this morning and went to a local Walmart. I guess I got there around 8:30 and by the time I left it was getting crowded. Going through the checkout line, the woman before me was telling the cashier how "she wanted to get out and stock up before the snowstorm hit!" SNOWSTORM, 1" at the most that their calling for and it's, quote unquote a SNOWSTORM! This area is funny when it comes to weather! Anyway life is pretty normal for me and for dinner tonight I prepared a Whole Seasoned Roaster Chicken w/ Mashed Potatoes, Cut Green Beans, and Whole Wheat Bread.






We had the Perdue Oven Ready Whole Seasoned Roaster Chicken about 2 weeks ago and couldn't wait to have one again. Kroger was the only one that I had found that carries them, until now and Walmart now has them! And by no great surprise at a cheaper price. These are great, a real easy way to prepare a Whole Roasted Chicken. To prepare it preheat the oven to 400ºF. Cut open the outer bag and remove roaster, sealed in cooking bag. Place it in a shallow roasting pan, breast side up.Cut open outer bag and remove roaster, sealed in cooking bag. Place it in a shallow roasting pan, breast side up. Cut one small 1″ slit in cooking bag over the breast to vent during cooking. Place pan with roaster (still in cooking bag) on lower shelf of oven and roast for approximately 90-115 minutes, until internal temperature of the breast reaches 180ºF. Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer roaster to serving plate or cutting board. Remove string from legs before carving. Remaining juices in bag can be used for a delicious seasoned gravy. The full instructions are at the end of the post. It can’t get much easier! Little mess to clean up and one mouth – watering delicious Roasted Chicken! Tender, moist, well seasoned, and browns up perfect. Huge Chicken (see the picture), plenty of great leftovers for lunch and some more of the Buffalo Chicken Nachos.






For sides I heated up a can of Del Monte Low Sodium Cut Green Beans. I also prepared some Stove Top Chicken Stuffing and Bob Evan's Mashed Potatoes, just microwave and serve the Potatoes! Then for dessert later tonight I picked up a package of Pillsbury Real Apple Turnovers. Baked them and served them with a scoop of Breyer's Low Carb Vanilla Ice Cream. I'll post tomorrow if we survive the "White Death" storm! (lol)

PRODUCT HANDLING
Keep refrigerated or frozen. Thaw in refrigerator or microwave. Cook thoroughly. If breast temperature is below 180ºF, return to oven and continue cooking, checking the temperature every 10 minutes until the temperature reaches 180ºF.
COOKING AND PREP

• To Cook from Frozen: Place pan with roaster (still in cooking bag) on lower shelf of oven and roast for approximately 2 3/4 – 3 hours until internal temperature of the breast reaches 180ºF.
• Remove from oven and let stand for 10 minutes. Cut open cooking bag (use care to avoid hot steam and juices) and transfer roaster to serving plate or cutting board. Remove string from legs before carving. Remaining juices in bag can be used for a delicious seasoned gravy.
