Dinner Tonight: Turkey Meatballs and Rotini Pasta w/ Baked French Bread
For Breakfast I had a bowl of Cheerios's along with a cup of Bigelow Decaf Green Tea. Cold morning out at 19 degrees. Sunny and 34 degrees for the afternoon. After Breakfast I went and picked
up Breakfast for Mom at McDonald's. Later I went Walmart to pick up the last couple of Gift Cards I needed for Christmas Gifts and a few Christmas Cards. Stopped by the ATM and got gas before heading home. Did a few things around the house and later went outside and got the leaf blower out and cleaned the deck and driveway areas, so many leaves still! For Dinner tonight its Turkey Meatballs and Rotini Pasta w/ Baked French Bread.
You can make any Meal healthier by using healthier ingredients. That includes Meatballs and Pasta! I’ll be using Honeysuckle White Turkey Meatballs Kroger finally started having these back in stock!
The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs. For the Sauce I’m using LaRosa’s Original Pasta Sauce. Then for the Rotini Pasta I’ll be using Ronzoni Healthy Harvest Whole Grain Rotini. For the added Cheese topping I’m using Sargento Off the Block Mozzarella Cheese and Kraft Reduced Fat Grated Parmesan Cheese.
As I said, for the Meatballs I’m using my favorite, Honeysuckle White Turkey Meatballs. Kroger
finally started having these back in stock! The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs.
I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on
Pasta, Pizza, or as a Dipping sauce. I grabbed a Sauce Pan, sprayed it Pam Cooking Spray, added the Sauce to it, and heated on medium low heat. As the Sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Reduced the heat to low and let the Meatballs simmer in that Sauce until ready to use.
For the Rotini Pasta I’m using my favorite, Ronzoni Healthy Harvest Whole Grain Rotini. Easy to
prepare; I used a large sauce pan and added 1 1/2 quarts of water and Salt and brought it to a rapid boil. Added the Pasta and brought it back to a boil. Cooked uncovered for 10 minutes, stirring often. Drained the Pasta and put it into the Baking Dish. Then Seasoned the Rotini with 2 teaspoons of Extra Light Olive Oil, some McCormick Grinder Italian Seasoning, and Kraft Grated Reduced Fat Parmesan Cheese.
I made a bed of the Rotini Pasta in a bowl. I topped it with the Turkey Meatballs that slow cooked in the LaRosa's Sauce and Sargento Off the Block Mozzarella Cheese. The Meatballs and Rotini came
out incredible! The Turkey Meatballs, Rotini Pasta, Cheese, and Sauce combined to make one delicious Dish! I also baked a loaf of Pillsbury French Bread. One delicious Dinner! For Dessert later a bowl of Breyer's Carb Smart Vanilla Ice Cream topped with Smucker's Sugar Free Chocolate Hot Fudge Topping.

Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans
Dinner Tonight: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans
Started the morning off by Scrambling 2 Eggs, toasted a Healthy Life Whole Grain English Muffin (lightly buttered), and a cup of Bigelow Decaf Green Tea. A little under the weather still, fighting a Sinus Infection. So I took it easy today and didn't do a whole lot. I don't think its anything that some sunny and warm days won't be able to cure! For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans.
One of those days where I didn’t feel like putting a whole lot of effort into preparing my dinner. So there’s nothing easier than baking some Pilgrim Chicken Strips. Pilgrim’s Southern Style Breast
Strips, it’s always a great go to when you want that easy to prepare meal! I had not had these in a while. I switched over to Perdue Chicken Strips so I wanted to change it over to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.
To go with the Chicken I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.
Then I also heated up a large can of Del Monte Cut Green Beans. Just empty the can into a sauce pan and heat until heated through. I also baked a loaf of Pillsbury French Bread, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Multi Grain Bread
Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and Baked Muti Grain Bread
I picked the Chop up at Meijer earlier today. I really love the Meijer selection and quality of all their meats, and all their products and produce.
So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.
Pork Facts….
One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart, Lung and
Blood Institute. An image of the portion size is important because a thick pork chop can be twice that size and without realizing it you can eat double the calories. You’ll get 137 calories and 4 grams of fat from a 3-ounce pork chop. Pork is similar to chicken, with 3 ounces of chicken breast containing 140 calories and 3 grams of fat. A pork chop has 65 milligrams of cholesterol, compared to 72 grams in chicken breast, but they both have just 1 gram of saturated fat.

Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
:Dinner Tonight: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
For Breakfast I didn't have anything. I had to fast over night for my Family Doctor checkup of my Sugar, Cholesterol, and such. I should have the results back later this week, hopefully all good. I made a cup of Bigelow Decaf Green Tea when I got back from the Doctor. Well Dad finally made it back home! Hopefully he can remain here. But Dad isn't in very good health, we'll just have to pray and hope he can remain here. Thunderstorms and a high of 81 degrees, and humid! Not a lot going on today I just helped Mom getting Dad settled in, he's been gone for a while. For Dinner tonight I prepared Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread.
I’m having the Banquet Homestyle Bakes – Lasagna Complete Meal Kit. I love these Banquet Homestyle Bakes so easy to make and delicious! As it says, it’s a Complete Meal Kit. All I added was a 1/2 cup of Water, a little Sea Salt for taste, Sargento Shredded Mozzarella, and some Kraft Reduced Fat Grated Parmesan Cheese.
To prepare it you can bake it in the oven or cook it in a skillet on the stove top. I’m baking mine. Start by preheating the oven to 425 degrees F. Stir together both cans of sauce and 1/2 cup water in 8″ x 8″ baking dish. Stir in the pasta until well coated. Cover with foil and bake for 40 minutes, until pasta is tender. Carefully uncover. Stir until well blended. Let stand 5 minutes; sauce will thicken. Ready to serve!
Came out hot and delicious. Nothing fancy, just good and hearty Dinner. I topped it with some Kraft Reduced Fat Grated Parmesan Cheese. I also reheated the leftover Pillsbury French Bread, which is perfect with Pasta Dishes. For Dessert later a Weight Water’s Cookies and Cream Ice Cream Bar.

Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and French Bread
Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and French Bread
So to start off my morning off I had a bowl of Kroger Brand Bran Flakes also had a cup of Bigelow Decaf Green Tea. After Breakfast went to the local Kroger for a couple of items for Mom and stopped at McDonald’s to pick Breakfast for Mom. Did some laundry for and cleaned up a bit inside and outside. After Lunch I went up to see Dad for the rest of the afternoon. So for Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Green Beans, and French Bread.
On my last visit to Meijer I picked up a large Center Cut Pork Chops from the Meijer Meat Department. I really love the Meijer selection and quality of all their meats, and all their products and produce.
So to prepare my Chops I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1
tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper.
For one side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.
For a second side I made a kettle of the fresh Green Beans we left. I love Beans, especially Fresh
Green Beans! Then I also baked a loaf of Pillsbury French Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

One serving of pork is 3 ounces, or about the size of a deck of cards, according to the National Heart,
Lung and Blood Institute.

Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
Dinner Tonight: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
For Breakfast I fried a couple of al fresco Chicken Breakfast Sausage Patties and toasted 2 Slices of
Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Mostly sunny out today with a of sunshine, had a high of 81 degrees. I went to the Kroger up the road to pick up a couple of items and stopped by McDonald's to pick up Breakfast for Mom and Dad. Got the cart out and trimmed a couple of bushes at the side of the house. I had planted a couple of Tomato Plants on side of the shed and they've really grown. I'm not a huge fan of raw tomatoes but Mom and Dad love them. Everything has really grown good this year, the herb plants, flowers, and a bush that I planted all this year. For Dinner tonight its Baked Lasagna and Baked French Bread.

Start
by preheating the oven to 425 degrees F.

I topped it with some Kraft
Reduced Fat Grated Parmesan Cheese. I also reheated the leftover Pillsbury French Bread, which is perfect with Pasta Dishes. For Dessert later a Weight Water’s Cookies and Cream Ice Cream Bar.

Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
Dinner Tonight: Banquet Homestyle Bakes – Baked Lasagna and Baked French Bread
For Breakfast I Poached an Egg and toasted 2 Slices of Healthy Life Whole Grain Bread, lightly buttered with I Can’t Believe It’s Not Butter. Also had my morning cup of Bigelow Decaf Green Tea. Mostly cloudy out today with passing showers and it hit about 75 degrees. Our electric was turned off today from 1:00 - 5:00. It was actually after 5:00 before it came back on. They were replacing electrical boxes throughout the neighborhood today. So after the power went out I stopped by some friends house to catch up with them and then headed over to see Dad for the rest of the afternoon. Back home for Dinner tonight its Baked Lasagna and Baked French Bread.

Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread
Dinner Tonight: Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread
Chilly morning out there today, about 44 degrees with a cold wind blowing. So to start this Chilly morning off I had a bowl of Kroger Brand Bran Flakes also had that morning cup of Bigelow decaf Green Tea. After Breakfast went to the local Kroger for a couple of items and stopped at McDonald's to pick Breakfast for Mom. Did some laundry for Mom and cleaned up a bit inside and outside. Hard to do anything outside because it's so windy. I was bringing in the neighbors trash cans for them and had to chase one of them blowing down the street. So for Dinner tonight I prepared a Cumin Spiced Pork Chop w/ Mashed Potatoes, Golden Hominy, and French Bread.

For a side dish I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy,
and its been a while since I’ve any. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish!

For another side I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and
serve, just as good as homemade, if not better. Then I baked a loaf of Pillsbury French Bread. For Dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.
