Jennie - O Turkey Recipe of the Week - Turkey Chili Verde

Turkey Chili Verde

Denver’s famous green chili gets a makeover in this delicious recipe featuring lean ground turkey. With under 300 calories per serving, this hearty chili is a must-try recipe.

INGREDIENTS

1½ pounds tomatillos, husks removed and halved
2 poblano peppers, seeded and halved
2 jalapeño peppers, seeded, if desired
1 teaspoon kosher salt
2 tablespoons olive oil
1 large yellow onion, chopped
4 garlic cloves, chopped
1 (16-ounce) package JENNIE-O® Ground Turkey
2 teaspoons ground cumin
1 teaspoon ground coriander
4 cups low-sodium chicken broth
1 cup chopped fresh cilantro leaves



DIRECTIONS

1) Place tomatillos, poblano peppers, and jalapeños cut side down on jelly-roll pan. Broil 3 inches from heat source 3 to 5 minutes or until skins are charred. Place peppers in plastic zip-top bag and seal. Let stand 10 minutes. Remove and discard skins. Place tomatillos and peppers in food processor and process until smooth. Stir in salt.
2) In large Dutch oven, heat oil over medium-high heat. Add turkey. Cook turkey as specified on the package. Always cook to well done, 165°F as measured by a meat thermometer. Add onion and garlic and cook 5 minutes or until tender. Add cumin and coriander. Stir in tomatillo mixture and broth. Bring mixture to a boil. Reduce heat to medium-low and simmer 20 minutes. Stir in cilantro leaves.

* Always cook to an internal temperature of 165°F.

Mediterranean Turkey Meatballs

Mediterranean Turkey Meatballs

These quick and easy turkey meatballs bring Mediterranean flavors to your weeknight dinner with fresh rosemary, basil and lemon peel. Kid-friendly and under 300 calories per serving!

INGREDIENTS

1 (16-ounce) package JENNIE-O® Ground Turkey
1 tablespoon fresh chopped rosemary leaves
1 tablespoon fresh chopped basil leaves
1 tablespoon fresh chopped dill leaves
1 tablespoon grated lemon peel
¾ teaspoon kosher salt
¼ teaspoon freshly ground pepper
1 egg, lightly beaten
⅓ cup feta cheese crumbles
DIRECTIONS

1) Combine ground turkey and rosemary, basil, lemon peel, dill, salt, pepper and egg in a large bowl. Do not over-mix. Shape into 24 1-inch balls and place on greased jelly-roll pan.
2) Bake 25 to 30 minutes or until a meat thermometer inserted in center reaches 165°F
Always cook to an internal temperature of 165°F.

Slow Cooker Turkey Cheese Dip

Ingredients
1 (16-ounce) package JENNIE-O® Ground Turkey
1 (19.5-ounce) package JENNIE-O® Lean Hot Italian Turkey Sausage, chopped
1 (8-ounce) package cream cheese, cubed
1 (8-ounce) can diced tomatoes, drained
1 (8-ounce) container sour cream
1 (8-ounce) container cottage cheese
8 ounces Cheddar cheese, cubed
1 medium onion, diced
1 (11-ounce) can sliced jalapeño peppers, drained
1 (1-pound) package processed cheese, cubed
3 cloves garlic, minced
crackers or corn chips, if desired
Directions
1 - Cook ground turkey and sausage as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer; drain. Transfer to slow cooker.

2 - Add cream cheese, tomatoes, sour cream, cottage cheese, Cheddar cheese, onion, jalapeño peppers, processed cheese and garlic to slow cooker. Cover and cook on HIGH 1½ to 2 hours or until cheese is melted. Serve with crackers or corn chips, if desired
* Always cook to an internal temperature of 165°F.

Jennie - O Turkey Recipe of the Week - Chinatown Turkey Stuffed Mushrooms

Chinatown Turkey Stuffed Mushrooms

Ingredients
24 large fresh mushrooms, cleaned and stems trimmed
½ (20-ounce) package JENNIE-O® Ground Turkey
1 clove garlic, finely chopped
¼ cup fine dry breadcrumbs
¼ cup thinly sliced green onions
3 tablespoons reduced-sodium soy sauce, divided
1 teaspoon minced ginger root
1 egg white, lightly beaten
⅛ teaspoon crushed red pepper flakes, if desired
Directions
Heat broiler. Line broiler pan with aluminum foil. Place rack in broiler pan.

Remove stems from mushrooms; finely chop enough stems to make 1 cup. In medium skillet, cook turkey, chopped mushroom stems and garlic over medium-high heat, cook the turkey as specified on the package. Always cook to well-done, 165°F. as measured by a meat thermometer.

Stir breadcrumbs, onions, 2 tablespoons soy sauce, ginger root, egg white and red pepper flakes into skillet; mix well.

Brush mushroom caps lightly on all sides with remaining 1 tablespoon soy sauce; spoon about 2 teaspoons stuffing into each mushroom cap. Place stuffed mushrooms on rack in broiler pan. Broil 4 to 5 inches from heat source 5 to 6 minutes or until hot.

Slow Cooker Turkey Cheese Dip

Ingredients
1 (20-ounce) package JENNIE-O® Ground Turkey
