Today's Menu: Pineapple and Soy Sauce Turkey Burger w/ Harvest Vegetables
Turkey Burgers, Pineapple Ring, Seasoning, and Teriyaki Sauce = One heck of a good Burger! I wanted something light and healthy so I went with a Pineapple and Teriyaki SauceTurkey Burger on Whole Grain Bun w/ Harvest Vegetables.
I used Jennie -O Savory Turkey Burgers. Easy to fix and a nice size pattie and it's 200 calories and only 10 carbs! Fried on medium heat and seasoned with McCormick Grinder's Sea Salt and Black Peppercorn. I also seasoned it with Kikkoman Less Sodium Teriyaki Sauce. After flipping the Burger I added my Pineapple Ring to the pan to slightly warm it up also. i topped the Burger with the Pineapple Ring, some Hellman's Low Fat Mayo, a splash more of the Teriyaki Sauce, a slice of Smoked Gouda Cheese, and Lettuce. Served on a Healthy Life Whole Grain Bun. For a side I had PictSweet Steam'ables Lightly Sauced Harvest Vegetables. Love these, they come frozen in a microwavable bag. Just nuke it 4-6 minutes and serve! Only 90 calories and 17 carbs. The light sauce on the Vegetables is fantastic, a very good tasting dish. For dessert later a Smart Ones Chocolate Brownie Fudge Sundae.

Baked Turkey Tenderloin and Pineapple Rings w/ Asparagus,...
Dinner Tonight: Baked Turkey Tenderloin and Pineapple Rings w/ Asparagus, Uncle Ben's Long Grain and Wild Rice and Whole Grain Bread
I used a Jennie-OTurkey Tenderloin that I seasoned with Parsley, Ground Pepper, Sea Salt, and Smoked Ground Cumin. I then marinated the Turkey Tenderloins with JB’s Fat Boy Chipotle BBQ Sauce for about 3 hours in the frige before baking. After marinating I baked it in a pan covering with foil at 350 degrees for 30 minutes and then I took it out basted it with the Fat Boy BBQ Sauce and placed 2 Pineapple Slices, plus about teaspoon of the Pineapple juice, on top of the Tenderloin returned the tenderloin to the oven uncovered and baked another 20 minutes.
As sides I had Grilled Asparagus Spears, Uncle Ben's Long Grain and Wild Rice, and Healthy Life Whole Grain Bread. For dessert/snack later Ritz Whole Grain Crackers with a wedge of Laughing Cow Garlic and Herb Cheese Spread.

Today's Menu: Baked Turkey Tenderloin w/ Fresh Asparagus and Penne Rigate Pasta
I used a Jennie-OTurkey Tenderloin that I seasoned with Parsley, Ground Pepper, Sea Salt, and Smoked Ground Cumin. I then marinated the Turkey Tenderloins with JB’s Fat Boy Chipotle BBQ Sauce for about 3 hours in the frige before baking. Moist and flavorful! I made a little extra Pasta and had about half the Tenderloin left, which will make my lunch tomorrow. As sides I had Frsh Asparagus and Dreamfields Penne Rigate Pasta. I cut the Asparagus seasoned it with Garlic Salt and Ground Pepper and then lightly fried it in Extra Virgin Olive Oil, I Can't Believe It's Not Butter, and added Sliced Almonds and Crumbled Turkey Bacon. I also used Dreamfields Penne Rigate Pasta. I usually use Ronzoni Pasta, cheaper price wise, but I found the Dreamfields on sale so I picked up a couple of boxes. After boiling the Pasta I seasoned it with McCormick Grinder Italian Seasoning, just a couple of shakes of Sea Salt , and a teaspoon of Extra Virgin Olive Oil. For a snack/dessert I'll have a bag of Jolly Time 100 Calorie Mini Bag of Popcorn.

Yesterday's (Tuesday) Dinner: Baked Turkey Tenderloins w/ Grilled Pineapple Rings and Long Grain and Wild Rice.
Just now posting Tuesday's dinner. My computer had been down for about a day and half due to the storms that hit the area Tuesday evening. Anyway had baked Jennie - O Turkey Tenderloins that were seasoned with Parsley, Ground Pepper, Sea Salt, and a bit of Ground Cumin. I then marinated the Turkey Tenderloins with JB's Fat Boy Chipotle BBQ Sauce for about 3 hours in the frige before baking. After marinating I baked them in a pan covering with foil at 350 degrees for 30 minutes and then I took them out basted them with the Fat Boy BBQ Sauce and returned them in the oven uncovered for another 20 minutes. As sides I had long Grain and Wild Rice and Grilled Pineapple. I made a bed with the Rice and served the Tenderloins on top of the Rice. i used a Cast Iron Grill Pan Skillet to grill the Pineapple Rings.
