Cornmeal-Fried Oysters With Chipotle Mayonnaise

If this tastes as good as it looks and sounds dinner will be great tonight!

Cornmeal-Fried Oysters With Chipotle Mayonnaise

Ingredients

      Fried Oysters
          o 1/2 cup cornmeal
          o 1/2 cup all-purpose flour
          o 1 teaspoon paprika
          o 1 teaspoon dried thyme
          o salt & freshly ground black pepper
          o 12 shucked oysters
          o vegetable oil ( for frying)
      Chipotle Mayonnaise
          o 1/2 cup mayonnaise
          o 1 teaspoon chopped chipotle chiles
          o 1 teaspoon adobo sauce
          o salt
          o 2 tablespoons chopped coriander

Directions

   1. Fried Oysters:.
   2. Combine cornmeal, flour, paprika, thyme, salt and pepper in a dish. Toss oysters in cornmeal mixture.
   3. Heat enough oil to film base of skillet on high heat. When oil is very hot, add oysters, but do not crowd pan. Sauté for about 1 to 2 minutes or until coating is browned. Remove immediately to serving dish. Add more oil as needed to fry remainder. Serve with Chipotle Mayonnaise (recipe follows).


   4. Chipotle Mayonnaise:.
   5. Combine mayonnaise, chipotle peppers and adobe sauce. Season with salt and stir in coriander.
