Creamy Tomato Soup w/ Grilled Cheese Sandwich

Dinner Tonight: Creamy Tomato Soup w/ Grilled Cheese Sandwich




For Breakfast this morning I Scrambled a couple of Eggs and topped them with a sprinkle of
Sargento Off the Block Cheddar Cheese and Ortega Smoked Chipotle Taco Sauce. I also toasted a couple of slices of Aunt Millie's Light Whole Grain Bread and had a cup of Bigelow Decaf Green Tea. Cloudy and 47 degrees out on this St. Patrick's Day Morning. After Breakfast I went and picked up Breakfast for Mom at McDonald's and stopped and got gas for her car. Mom went on to Church. She's feeling a lot better today. I did a load of laundry and it was house cleaning today. Had everything done and watched College Basketball for the afternoon. Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.


I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go!









Then for my Grilled Cheese I’ll be using; Kraft Sliced Sharp Cheddar Cheese, Blue Bonnet Light
Butter, and Healthy Life Whole Grain Bread. I started by buttering the outside half of a slice of bread. Layered 2 slices of the Sharp Cheddar on top. Added my top half of the sliced bread, buttering the outside of the slice. I then got out a skillet, heated it up on medium heat and lightly coated it with a 1/2 pat of Butter. When the Butter was melted I added my sandwich. Grilled it on both sides until it was golden brown and the Cheese melted. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Peach Snapple to drink.

To start my day off I Scrambled an Egg, toasted 2 slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. 46 degrees and mostly sunny out today. I got the leaf blower out and cleaned off the deck and driveway areas, lot of leaves again. Then back inside I cleaned the house today and then helped Mom out the rest of day with some Thanksgiving dishes. For Dinner tonight another one of those Comfort Foods Dinner, Creamy Tomato Soup w/ Grilled Cheese Sandwich.






For my Soup I heated up a can of Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using for quite some time now. So creamy with a fantastic flavor and it’s 110 calories and 19 carbs. Just empty the contents into a small sauce pan and heat on medium, stirring often, until heated. And it’s ready to go!

Kitchen Hint of the Day!

Sneaking in the vegetables......


Looking for a way to sneak more vegetables into your children's diets, try this one! Make your own Tomato Soup or Tomato Sauce. Then take some carrots, mushrooms, scallions, or zucchini and put them into a food processor. Chop them or puree them all together then add it to the Soup or Sauce as its cooking.

Soup Special of the Day! - Tasty Turkey Tomato Soup

This week's Soup Special of the Day is Tasty Turkey Tomato Soup. This one is from the Jennie - O website. It's made with one of my favorite Jennie - O products, JENNIE-O® Extra Lean Ground Turkey Breast. I always use this for my Turkey Chili, Burgers, and such. Tasty Turkey Tomato Soup

Biggest Loser® Approved.
Talk about comfort food — a savory tomato soup simmered with rice, bell peppers, celery, garlic and lean turkey breast, seasoned with fresh sage and thyme. Plus, it’s low in fat and ready in under 60 minutes!


Ingredients
1 (16-ounce) package JENNIE-O® Extra Lean Ground Turkey Breast
3 tablespoons minced fresh thyme, divided
2½ teaspoons minced fresh sage, divided
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon course ground pepper
1½ teaspoons olive oil
¾ cup chopped red onion
1¾ cups chopped green bell pepper
¾ cup coarsely chopped celery
3 tablespoons minced garlic
2 (10¾-ounce) cans reduced-sodium tomato soup
1½ cups brown rice
2 cups water


Directions
STEP 1: Cook turkey as specified on the package. Always cook to well-done, 165°F as measured by a meat thermometer.

STEP 2: In large bowl mix turkey breast together with 1½ tablespoons thyme, 1¼ teaspoons sage, garlic powder, salt and pepper.

STEP 3: Heat oil in large, non-stick soup pot over medium heat. Add onion, bell pepper, celery and garlic. Cook, stirring occasionally, for five to seven minutes or until onion is softened. Increase heat to medium-high. Add turkey mixture, tomato soup, rice, water and remaining thyme and sage. Stir to combine. Bring to boil. Reduce heat to medium-low. Simmer, covered, stirring occasionally, for 20 minutes or until hot.
Always cook to an internal temperature of 165°F.

Kitchen Hint of the Day!

Making your own Cream of Tomato Soup, here's a tip from Elsie to help out!



Cream of Tomato Soup can be tricky to make from scratch. To keep it from curdling, add the ingredients in the right order: Pour the tomato base into the milk instead of the milk into the tomato base. Stirring a small amount of flour into the milk also helps.

Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup

Dinner Tonight: Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup








I had to go back to my Family Doctor Today. My allergies or sinus was driving me crazy, wrote me a prescription. Later had the car washed and the inside swept out. Another hot and humid day out again, not much of an appetite in this weather. For dinner I prepared a Baked Ham and Swiss Mini Sub w/ Creamy Tomato Soup.








I used Kroger Brand Private Selection Off- the Bone Smoked Ham. One of my favorite packaged sliced Hams. It has a really great taste to it and only 70 calories per serving. I also used Sargento Ultra Thin Swiss Cheese which is only 40 calories per slice. Topped it with Kraft Reduced Fat Mayo w/ Olive Oil. To help the bun brown a bit I brushed the top with Extra Virgin Olive Oil. I had already preheated the oven to 400 degrees, I then laid the Sub on a small baking sheet and baked it for about 12 minutes. Took it out and the Sub was a light golden brown and the Cheese was melted. Love these Subs!








Then I also heated up some Amy’s Organic Creamy Tomato Soup. My favorite Tomato Soup by far. I’ve been using this a couple of years now. Creamy with a fantastic flavor and it’s 110 calories and 19 carbs. I also had a Diet Dr. Pepper to drink. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Yogurt.

A beautiful and sunny day out but, A cold breeze and a high of 18 degrees. Tomorrow it's supposed to hit 40 degrees, another one day heat wave! Then again they're saying more snow Friday morning and then again Saturday night and Sunday morning, be glad when this pattern of snow and cold stops. Then there are signs of Spring is on its way, some of the Major League Pitchers and Catchers have reported to Spring Training! Ran an errand for my Mom and that was about it. For dinner tonight, Ham and Turkey Breast Baked Mini Sub w/ Creamy Tomato Soup.








I used Kroger Private Selection Smoked Off the Bone Sliced Ham and Boar's Head Honey Smoked Turkey Breast for my Baked Mini Sub. I had picked the Turkey up while at Jungle Jim's Market yesterday with this Sandwich in mind. Then I used a Meijer Wheat Mini Sub Bun. Layered the Meats on the Bun and topped it with some Kraft Reduced Fat Mayo w/ Olive Oil and a thin slice of Murray's Muenster Cheese. I brushed some Extra Virgin Olive Oil on the top bun, which makes it brown up better. I baked it in a shallow baking pan at 400 degrees until the Cheese started to melt and the Meats were heated. I love using these Meijer Wheat Mini Sub Buns, their just the right size and they toast up fantastic!  I heated a can of Amy's Low Fat Cream of Tomato Soup. Amy's Organic Soups used to be hard to find, at least in this area, and now Kroger, Meijer, and Walmart all sell it. A Baked Sub with Tomato Soup for a cold Winter's Day! For dessert later a Healthy Choice Vanilla Swirl Frozen Yogurt.






Boar's Head HONEY SMOKED TURKEY BREAST
An all white turkey breast, lightly smoked and dipped in golden honey for a smoky, sweet flavor that is sure to be a favorite. Wonderful on Sourdough bread with lettuce, tomato, and our Vermont Cheddar Cheese for a lunchtime treat.

Ham and Cheese Crescent Roll-Ups and Creamy Tomato Soup

Today's Menu: Ham and Cheese Crescent Roll-Ups and Creamy Tomato Soup



It's been a really cold and blustery day out so I wanted something hot and healthy. So I made some Ham and Cheese Crescent Roll-Ups along with some Creamy Tomato Soup. I used Pillsbury Reduced Fat Crescent Rolls, Sara Lee Thin Sliced Baked Ham, and Sargento's 2% Reduced Fat Colby/Jack Sliced Cheese. The recipe is at the end of the post. I used Campbell's Creamy Tomato Soup. For dessert later I made another batch of the Frozen Chocolate Dipped Mini Bananas, I used Hershy's Sugarless Dark Chocolate to dip them in and rolled them in crushed Walnuts.
  


Ham and Cheese Crescent Roll-Ups

INGREDIENTS:
1 Can (8 oz) Pillsbury® refrigerated Reduced Fat Crescent Dinner Rolls
8 Thin slices Cooked Ham (8 oz), Sara Lee Thin Slice
4 Thin slices Cheddar cheese (4 oz), each cut into 4 strips. Sargento 2% Reduced Fat Colby/Jack

DIRECTIONS:

    Heat oven to 350°F. Separate dough into 8 triangles. Place 1 piece of ham on each triangle; place 2 strips of cheese down center of ham. Fold in edges of ham to match shape of dough triangle.
    Roll up each crescent, ending at tip of triangle. Place with tips down on ungreased cookie sheet.
    Bake 15 to 19 minutes or until golden brown. Immediately remove from cookie sheet. Serve warm.

Dinner Tonight: Smoked Pork Chop Sandwich w/ Creamy Tomato Soup

Another quick and easy dinner tonight. Took a Smithson Smoked Pork Chop and served it on a Healthy Life Sandwich Bun, added some French's Brown Mustard for a topping. Then as a side had a bowl of Campbell's Creamy Tomato Soup. For a dessert/snack later tonight it will be Jolly Time 100 Calorie Bag of Popcorn.
