One of America's Favorites - Poached Egg

A poached egg is an egg that has been cooked, outside the shell, by poaching (or sometimes steaming), as opposed to simmering or boiling liquid.

This method of preparation is favored for eggs, as it can yield more delicately cooked eggs than cooking at higher temperatures such as with boiling water.





The egg is cracked into a cup or bowl of any size, and then gently slid into a pan of water at approximately 75 Celsius (167 °F) and cooked until the egg white has mostly solidified, but the yolk remains soft. The "perfect" poached egg has a runny yolk, with a hardening crust and no raw white remaining.

Broken into water at the poaching temperature, the white will cling to the yolk, resulting in cooked egg white and runny yolk.

Any given chicken egg contains some egg white that is prone to dispersing into the poaching liquid and cooking into an undesirable foam. To prevent this, the egg can be strained beforehand to remove the thinner component of the egg white. A small amount of vinegar may also be added to the water, as its acidic qualities accelerate the poaching process. Stirring the water vigorously to create a vortex may also reduce dispersion.

The term "poaching" is used for this method but is actually incorrect. The egg is placed in a cup and suspended over simmering water, using a special pan called an "egg-poacher". This is usually a wide-bottomed pan with an inner lid, with holes containing a number of circular cups that each hold one egg, with an additional lid over the top. To cook, the pan is filled with water and brought to a simmer, or a gentle boil. The outer lid holds in the steam, ensuring that the heat surrounds the egg completely. The cups are often lubricated with butter in order to effect easy removal of the cooked egg, although non-stick egg poachers are also available.

The result is very similar to the traditional coddled egg, although these steamed eggs are often cooked for longer, and hence are firmer. Eggs so prepared are often served on buttered toast.

Poached eggs are the basis for many dishes in Louisiana Creole cuisine, such as Eggs Sardou, Eggs Portuguese, Eggs Hussarde and Eggs St. Charles. Creole poached egg dishes are typically served for brunches.

Several cuisines include eggs poached in soup or broth and served in the soup. In parts of central Colombia, for instance, a popular breakfast item is eggs poached in a scallion/coriander broth with milk, known as changua or simply caldo de huevo ("egg soup").

The North African dish shakshouka consists of eggs poached in a spicy tomato sauce.

In Italy poached eggs are typically seasoned with grated parmigiano reggiano and butter (or olive oil).

In Korean cuisine, poached eggs are known as suran (수란) and is topped with variety of garnishes such as chili threads, rock tripe threads, and scallion threads.

Turkish dish çılbır consists of poached eggs, yogurt sauce with garlic and butter with red peppers.

In India, fried eggs are most commonly called "poached," but are sometimes also known as bullseyes, as a reference to "bullseye" targets, or "half-boil" in Southern India, indicating that they are partly cooked. These eggs are "poached" in name only and so do not share the same preparation method as poached eggs in other countries.

Some notable people have professed an affinity with the dish, such as Duncan Hines and Henry Puyi. Similar dishes include bacon and eggs, Spanish eggs, the Denver omelette and Eggs Benedict.

The term "ham and eggs" and some variations of it have been used in various cultural contexts. It has been used as a slang term in the United States, and has also been used to refer to various entities and events in the United States.


Ham and eggs is a popular dish often served as a breakfast meal in the United States. It is also consumed as a dinner or supper dish, for example in parts of the Southern United States, and is sometimes served as a lunch dish. Eggs served with the dish can be fried, scrambled or poached.

Additional ingredients such as tomatoes and seasonings, such as Herbes de Provence, are sometimes used. The dish can be prepared on a stovetop in a skillet or frying pan, and also baked or broiled in an oven.

The pan juices or gravy from the ham is sometimes drizzled atop the eggs to add flavor. The dish's quality can be enhanced by using high-quality ham and cooking the ingredients over low heat, which prevents overcooking. A recipe for country-style ham and eggs includes reducing cream in the pan after the ham and eggs have been cooked, and then dolloping it atop the dish. Ham and eggs can be accompanied with side dishes such as toast and hash browns, among others.

Bacon and eggs is a similar dish, as is Eggs Benedict, which is prepared using bacon, Canadian bacon or ham and poached eggs as main ingredients. Spanish eggs consists of ham and eggs served atop heavily seasoned boiled rice. Ham and eggs are two of the main ingredients in the Denver omelette.

One of America's Favorites - Milk Toast

Milk toast is a breakfast food consisting of toasted bread in warm milk, typically with sugar and butter. Salt, pepper, paprika, cinnamon, cocoa, raisins and other ingredients may be added. In the New England region of the US, milk toast refers to toast that has been dipped in a milk-based white sauce. Milk toast was a popular food throughout the late 19th and early 20th centuries, especially for young children and for the convalescent, for whom the food was thought to be soothing and easy to digest. Although not as popular in the 2000s, milk toast is still considered a comfort food.



The food writer M. F. K. Fisher (1908–1992) called milk toast a "warm, mild, soothing thing, full of innocent strength", and wrote, of eating milk toast in a famed restaurant with a convalescent friend, that the food was "a small modern miracle of gastronomy". She notes that her homeliest kitchen manuals even list it under Feeding The Sick or Invalid Recipes, arguing that milk toast was "an instinctive palliative, something like boiled water". Fisher also notes that for true comfort, a ritual may be necessary, and for Milk Toast people, the dish used may be foolishly important. Her favorite version of milk toast has the milk mixed 50/50 with Campbell's condensed cream of tomato soup in a wide-lipped pitcher called a boccalino in Italian Switzerland where she got it.

In New Mexican cuisine, milk toast is referred to as leche cocida, meaning cooked milk. Toasted bread is torn into chunks and placed in a bowl. Milk is cooked with a small amount of butter, salt and pepper and is poured over the bread. It is a meal associated with using up excess milk, perhaps from the days of milk man service, in this region.






Milk toast's soft blandness served as inspiration for the name of the timid and ineffectual comic strip character Caspar Milquetoast, drawn by H. T. Webster from 1924 to 1952. Thus, the term "milquetoast" entered the language as the label for a timid, shrinking, apologetic person. Milk toast also appeared in Disney's Follow Me Boys as an undesirable breakfast for the aging main character Lem Siddons.

Buffalo Steak, Scrambled Eggs, and Hash Browns

Dinner Tonight: Buffalo Steak, Scrambled Eggs, and Hash Browns








For Breakfast this morning I made a bowl of Kroger Brand Instant Grits (Butter Flavor) and toasted a couple of slices of Healthy Life Whole Grain Bread, buttered with I Can't Believe It's Not Butter.
Also had that every morning cup of Bigelow Decaf Green Tea and also a glass of Kroger Brand Carb Master Chocolate Milk. Sunny, 88 degrees, and low humidity outside today.After Breakfast, as I do every Tuesday morning, I go around 4 of neighbors and take their trash bins from the street back up to their house for them. It's not a lot but its a little something I can do for my neighbors that are always there when I need help with things. Being in a wheelchair its a lot off your mind when you can rely on neighbors to help you from time to time to get things done around the house. Got a couple of things done around the house and then got the cart out for a while and rode around the neighborhood. For dinner tonight its Breakfast! I prepared Buffalo Steak, Scrambled Eggs,Hash Browns, and Toast.



I was going to have this yesterday but I wanted to try the Swift Premium Boneless Ribs, which I
loved. For this Breakfast/Dinner I'll be using; Wild Idea Buffalo – 5 oz. Petite Top Sirloin Steak, 2 medium size Eggs, Simply Potatoes Shredded Hash Browns, Healthy Life Whole Grain Bread, Sargento Reduced Fat Shredded Sharp Cheddar Cheese, and A-1 Sauce Thick and Hearty.







As I said I’ll be using the Wild Idea Buffalo Petite Top Sirloin Steak (5 oz.). To prepare the Steak; I rubbed the Steak with a 1/2 teaspoon of Extra Virgin Olive Oil. Then seasoned it with McCormick’s Grinder Sea Salt and Peppercorn Medley. I then preheated a Cast Iron Skillet on medium heat. When the skillet was heated I added my Buffalo Sirloin, cooked it 4 minutes per side to a beautiful Medium Rare! The Wild Idea Buffalo Steaks are just incredible. So tender, juicy, and the best flavor of any Steak. I topped the Steak with a bit of A-1 Sauce Thick and Hearty.






As the Steak was cooking I heated up another skillet for my Hash Browns. Sprayed the skillet with Pam Cooking Spray and added a tablespoon of Olive Oil, I use Berolli Extra Light Olive Oil. With the skillet heated I fried up the Simply Potatoes Hash Browns. Seasoned them with Sea Salt and Ground Black Pepper. I love all the Simply Potatoes products! I topped these with a sprinkle of Sargeto Reduced Fat Shredded Sharp Cheddar Cheese.




As both the Steak and Hash Browns were finishing I then made the Scrambled Eggs. As soon as the
Hash Browns were done I removed them from the skillet and used this skillet for my Eggs. I used 2 Medium Size Eggs; also Sargento Reduced Fat Shredded Sharp Cheddar Cheese, Sea Salt, and Ground Black Pepper. To prepare them In a small bowl, whisked the Eggs and add just a splash of water. Added the Eggs, to the all ready heated skillet and cooked. Flipped the Eggs a couple of times and turned the heat off and finished the Eggs. When done I sprinkled the Scramble with some of the Sargento Cheese.





Finally just as the Scrambled Eggs were finishing I toasted 2 slices of Healthy Life Whole Grain Bread. I buttered the slices with I Can't Believe It's Not Butter. I had a glass of the carb Master Chocolate Milk to drink. I've been having the Carb Master Chocolate Drink for a while now. Tastes incredible and its only 80 calories, 7 net carbs, and 11 grams of protein. For Dessert later a bowl of Dole Sliced Peaches. Nothing like a good Breakfast, for Dinner!

One of America's Favorites - Scrambled Eggs


Scrambled eggs is a dish made from whites and yolks of eggs (usually chicken eggs) stirred or beaten

together, typically with salt and butter and variable other ingredients, and then gently heated in a pan while being stirred.








Only eggs are necessary to make scrambled eggs, but nearly always salt is used, and very often other ingredients such as water, milk, butter, cream or in some cases creme fraiche or grated cheese may be added. The eggs are cracked into a bowl; with some salt, and the mixture is stirred or whisked. More consistent and far quicker results are obtained if a small amount of thickener such as cornstarch, potato starch or flour is added; this enables much quicker cooking with reduced risk of overcooking, even when less butter is used.

The mixture can be poured into a hot pan containing melted butter or oil, where it starts coagulating. The heat is turned down and the eggs are stirred as they cook. This creates small, soft curds of egg. Unlike pancake or omelette scrambled egg is virtually never browned.

Once the liquid has mostly set, additional ingredients such as ham, herbs, cheese or cream may be folded in over low heat, just until incorporated. The eggs are usually slightly undercooked when removed from heat, since the eggs will continue to set. If any liquid is seeping from the eggs (syneresis), this is a sign of undercooking, overcooking or adding undercooked high-moisture vegetables.

* Scrambled eggs can also be cooked in a Microwave oven.

One of America's Favorites - Egg in the Basket

Egg in the basket—also known by many other names— is an egg fried in a hole of a slice of bread. A waffle or bagel (with a large enough hole) can also be substituted for the slice of bread.









Variant names for the dish include "toad in the hole", "gashouse eggs", "a hole in one", "spit in the ocean", and "popeye eggs".

The dish can be seen being prepared onscreen by actor Guy Kibbee in the 1935 Warner Bros film, Mary Jane's Pa, leading them to sometimes be known as "Guy Kibbee Eggs". They are sometimes called "Betty Grable Eggs", stemming from the preparation of the dish in the actress's 1941 film Moon Over Miami, although the script refers to them as "gashouse eggs". The name "Gashouse Special" is used in the 1975 book The Kids' Kitchen Takeover by Sarah Stein, attributing the name as her husband's idea.

The dish is prepared in the 1987 film Moonstruck (by Olympia Dukakis' character). It is also prepared in a 1996 episode of the sitcom Friends, by the character Joey Tribbiani, who refers to it as "Eggs with the bread with the hole in the middle, a la me!" It is called "Eggy in the Basket" by Stephen Fry's character in the 2005 film V for Vendetta.



The dish is typically bread with an egg in the center and then cooked with a little butter or oil.

It is commonly prepared by cutting a circular or square hole in the center of a piece of bread. The bread, sometimes buttered prior to cooking, is fried in a pan with butter, margarine, cooking oil, or other fat. When browned, the bread is flipped, and the egg is cracked into the "basket" cut into the toast. Alternatively, the egg may be dropped into the bread before the bread is browned. The time the egg is placed in the bread is dependent on desired consistency.

The dish is often either covered or flipped while cooking to obtain even cooking, and requires a degree of skill and temperature control to prevent burning either the egg or bread while the entire dish is cooked to the desired consistency.

Toasted Ham, Turkey, and Muenster Cheese Sandwich w/ Tomato Soup

Dinner Tonight: Toasted Ham, Turkey, and Muenster Cheese Sandwich w/ Tomato Soup





While at Kroger the other day I was at the Deli buying some Kahn's Bologna. When I seen the Boar's Head Meats, and it was looking real good. So I purchased some Boar's Head Black Forest Ham and Honey Roasted Turkey, sliced nice and thin! I love Boar's Head Meats, always tastes fresh and lower in calories and sodium than most other cold cuts.





To make my Sandwich I'll be using the Boar's Head Black Forest Ham and Honey Roasted Turkey, Private Selection Sliced Muenster Cheese, Private Selection Sweet Hot Stone Ground Mustard, Kraft Reduced Fat Mayo w/ Olive Oil, and Klosterman Wheat Bread. I preheated the oven on 400 degrees. I toasted the Bread, spread the Mustard on the bottom slice of the Bread, layered the Ham, then the Turkey, Spread the Mayo on top of the Turkey, a slice of Muenster Cheese, and topped it with the other slice of Bread. Then I put my Sandwich on a small baking pan, and heated it for about 5 minutes, and served. Just describing this makes me want another Sandwich! The Ham and Turkey combo works great together, along with Muenster Cheese, and the Mustard and Mayo are perfect toppings.





To go with my Sandwich I heated up some Campbell’s Creamy Tomato Soup. It comes in a microwavable container, just heat for 1 minute and 30 seconds and serve. For dessert later a So Delicious Vanilla Mini Ice Cream sandwich (Made with Coconut Milk).

I Have Spammed!


I tried Spam for the first time this morning! I know your probably thinking, "Wow he must have led a sheltered life". You have to know I was a very, and I mean very picky eater up until about 5 or 6 years ago. I was so picky that when I was young my Mom took me to the doctor because I would hardly eat or try anything, besides Hot Dogs of course! The doctor told her then not to worry he'd never seen a growing boy who starved himself. Then I was diagnosed with Diabetes 2. When I found that out I started eating healthier and trying foods I would have never ate, and now Spam being one of them this morning.





I used Spam Light, which has less Fat, less Sodium, and less Calories than normal Spam. I see on the Spam web site that there is a Spam Turkey. I'll have to see if I can find that one and try that one also. For Breakfast I prepared an Egg, Cheese, and Fried Spam Sandwich. I fried the egg Sunnyside Up and used a slice of Sargento Ultra Thin Colby Longhorn Cheese. Then for  the  Spam I  sliced it and pan fried it in a 1/2 tablespoon of Extra Virgin Olive Oil. i fried it till both sides had browned, turning it over one time. It fried up very easy to a perfect golden brown. From there I made my sandwich, using Klosterman Wheat Bread. I toasted the bread and topped it with Spam, Cheese and cooked Egg. Makes one delicious Breakfast sandwich! I am now a Spam convert! Looking forward to trying the different Spams and Spam recipes! And yes I have Spammed!
