Lasagna with Meat and Sauce w/ Texas Toast (Light)

Dinner Tonight: Lasagna with Meat and Sauce w/ Texas Toast (Light)

To start this morning off I prepared a SayersBrook 4 oz. Bison Fillet Mignon. These are so tender and delicious! Cooked it for a total of 5 minutes and done, a perfect medium rare. I also Poached an Egg and served it on a Thomas Light Multi Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Cloudy and 67 degrees out today. I had to have Mom at Dermatologist at 10:15 this morning. She didn't want to go but I'm forcing her. She has mole and it's been getting darker so she needed to go! On the way home we stopped by Meijer and stopped and grabbed Mom a Breakfast Sandwich from McDonald's. For Dinner tonight I prepared a Stouffer’s Lasagna with Meat and Sauce w/ Texas Toast (Light).

I had picked up a box of Stouffer’s Lasagna with Meat and Sauce at Meijer earlier and having it
tonight. I purchased the Large Size, about 2 1/2 servings. I’m also baking a few slices of the New York Bakery Texas Toast – Lite.

To prepare it s very easy. It comes frozen and to prepare it; Preheat the oven to 350°F. Leave the film on tray, but do not vent. Place the tray on a baking sheet on the center rack of the oven. Cook 56 Minutes. Remove baking sheet from oven. Let stand 1 Minute and Dinner is ready. I really enjoy this Lasagna! Plenty of Sauce and Meat and the Noodles are good size and tender. One easy way to have a Lasagna Dinner! The Lasagna is 260 calories and 25 net carbs per serving.

I also baked a slice of New York Bakery Lite Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Fried Oysters w/ Baked Potato and Texas Toast (Lite)

Dinner Tonight: Fried Oysters w/ Baked Potato and Texas Toast (Lite)

For Breakfast this morning I prepared French Toast using Aunt Millie's Light Whole Grain Bread. To
top the Toast I used Log Cabin Sugarless Maple Syrup and I Can't Believe It's Not Butter. I also had my morning cup of Bigelow Decaf Green Tea. Cloudy and 67 degrees out today. I had 8 bags of Dark Mulch delivered today from the local Boy Scouts. We buy Mulch from them every year. We also purchased a new grill, finally! Our old one conked out early last year and we didn't replace it, till now! Can't wait, it will be here next Thursday. i paid extra to have it assembled and delivered, well worth every cent. It's not a huge one but big enough for just 2 people. I'm ready to Grill! I had Fried Oysters just the other night but they were so good and I had another container left that needed fixed. So for Dinner tonight I prepared Fried Oysters w/ Baked Potato and Texas Toast (Lite).

I used Hilton’s Fresh Farm Raised Pacific Willapoint Oysters, my favorite. To prepare them; Place shucked oysters in a colander rinse in cold water and drain. Dredge drained oysters in the Flour, then Egg Beater’s, and then in Panko Crumbs seasoned with Sea Salt and Pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. An easy way to coat the oysters with the Panko Crumbs is to place the Crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

Next, heat the Oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot. Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately. Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce. I served mine with some Tarter Sauce with a side of my favorite hot sauce Frank’s Hot Sauce. They’re so delicious, golden brown, and with an incredible fresh flavor.

I had a Baked Potato yesterday and it was so good I'm having one tonight. I had a baked Russet
Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter.

Finally I baked a slice of New York Bakery Light Texas Toast. For Dessert later a Jello Sugar Free
Dark Chocolate Pudding.

Pan-Fried Oysters Recipe:
Ingredients:

12 large-medium Oysters, shucked
1 tablespoon Flour
1 Eggs, beaten or 1/4 cup egg Beater’s
1 cup Shake and Bake Seasoned Panko Bread Crumbs
Sea Salt and Pepper, to taste
2 to 3 tablespoons Extra Light Olive Oil
Lemon Wedges, optional
Hot sauce, optional
Seafood Cocktail Sauce, optional

Preparation:

Place shucked oysters in a colander to drain.

1 – Dip drained oysters in flour, then beaten eggs, shake off excess, and in panko crumbs seasoned with salt and pepper (coating each oyster thoroughly). Set aside to dry at least 1/2 hour. NOTE: An easy way to coat the oysters with the panko crumbs is to place the crumbs in a resealable plastic bag, add egg-dipped oysters, seal bag, and then shake.

2 – Heat canola oil in a frying pan (I like to use my cast-iron frying pan) to 370 degrees F. or until quite hot.

3 – Fry oysters until golden brown on one side, then turn over each oysters carefully to brown the other side, approximately 1 to 2 minutes on each side Fry oyster until golden brown and edges are curled. Do not overcook or overcrowd in frying pan. Remove from frying pan and serve immediately.

Serve with Lemons Wedges, Tartar Sauce, Cocktail Sauce and/or your favorite hot sauce.

Makes 2 servings.

Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light)

Dinner Tonight: Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light)

For Breakfast this morning it was French Toast and Turkey Sausage Links. I used Aunt Millie's Light Whole Grain Bread, Egg Beater's, Ground Nutmeg, Ground Cinnamon, and 2% Milk to make the French toast. For toppings I used log Cabin Sugar Free Maple Syrup and I Can't Believe It's Not Butter. For the Sausage I used Johnsonville Turkey Breakfast sausage Links. I also had my morning cup of Bigelow Decaf green Tea. It's a mostly cloudy day and 65 degrees outside today. Trees and flowers are heading to full blooms, its beautiful outside! Got the cart out and did some yard work and then later took a ride around the neighborhood. For Dinner tonight its Chopped Bison Sirloin and Sauteed Mushrooms w/ Baked Potato and Texas Toast (Light).

Mom loves these Chopped Bison Steaks from SayersBrook Bison Ranch! I had them in the freezer so I grabbed a bag of it and let it thaw in the fridge overnight. To start I preheated the oven on 400 degrees. To prepare it I’ll need McCormick Grinder Sea Salt and Peppercorn Medley, McCormick Crushed Rosemary, and McCormick Thyme Leaves. I got the Cast Iron Skillet out to prepare it. I first sprayed it with a very light coat of Pam Cooking Spray and then added a tablespoon of Extra Light Olive Oil. Heated it on medium heat. When the pan was heated I added the Chopped Steak. I cooked each side 2 minutes. Then finished it in the oven, at 400 degrees for 7 minutes. It cooked up beautifully, perfect medium rare! Had a nice little char on the outside and moist and juicy inside. These are so tender you could slice them with a spoon and have an excellent taste to them. Just another very good item from SayersBrook Ranch!

I topped the Chopped Steak with some A-1 Sauce Thick/Hardy. Also cooked up some Sauteed
Mushrooms.

I also prepared a Baked Potato. Seasoned that with the McCormick Grinder Sea Salt and Peppercorn
Medley, and topped with I Can’t Believe It’s Not Butter. I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Coke Zero to drink.

SayersBrook Ranch Bison Chopped Sirloin Steak

If you like the flavor of the sirloin, love the Bison Burger but want to take it up a notch, then the Chopped Sirloin Steak is for you! 4 lbs (4 packages each with 2-8oz chopped sirloin steaks).
Great flavor of the sirloin but also extremely tender and juicy.

Today’s Menu: Fried Oysters w/ Baked Potato and Texas Toast (Lite)

Dinner Tonight: Fried Oysters w/ Baked Potato and Texas Toast (Lite)

For Breakfast this morning I prepared some 2 Johnsonville Turkey Breakfast Sausage Links, toasted a Thomas Light Multi Grain English Muffin that I topped with Smucker’s Sugar Free Blackberry Jam, and had my morning cup of Bigelow Decaf Green Tea. A mix of rain and sun with a high of 70 degrees outside today. Not real active today. Woke up about 5:00 this morning with Phantom Pains again! The continued till about 2:00 this afternoon. So just relaxed most of the day. Then I also got back my test results from last week and it was not good. I was told I had severe Neuropathy. I go to my Family Doctor at 8:30 tomorrow morning to go over everything.

Not good news but I've been here before. All I can do is face it head on! I'll update tomorrow. For Dinner tonight Fried Oysters w/ Baked Potato and Texas Toast (Lite).I'm keeping my post a bit short tonight. I'm having trouble accepting the test results and I need a little downtime. Take care all, be back tomorrow!

Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Light)

Dinner Tonight: Crock Pot Pork Back Ribs w/ Mashed Potatoes, Green Beans, and Texas Toast (Light)

For Breakfast this morning I fried up a Sunny Side Egg, heated up a couple of Johnsonville Turkey
Sausage Links, toasted a couple of slices of Aunt Millie’s Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. Very hungry this morning. Cloudy and 69 degrees out today.  After Breakfast went McDonald’s to pick up Breakfast for Mom. I’m preparing Crock Pot Ribs for Dinner so I got those on early today. Then it house cleaning today. Dusted, Vacuum, and did 2 loads of laundry. Tonight its Crock Pot Pork Back Ribs w/ Mashed Potatoes, Cut Green Beans, and Texas Toast (Light).

Last night before I went to bed I put half racks in a Hefty Gallon Plastic Bag then seasoned it JB’s Fat
Boy All Purpose Rub and then covered it in JB’s Fat Boy Haug Waush BBQ Sauce to marinate all night in the fridge. Then this morning I got out the Crock Pot, lined it with a Reynold’s Crock Pot Plastic Liner, and sprayed that with Pam Non-Stick Spray and added a 1/4 cup of water. Got the Ribs out of the fridge, discarded the Hefty Bags, and put the racks in the Crock Pot where I let it cook and simmer, on low, for about 7 hours. Long up in the afternoon the aroma of the Ribs and BBQ Sauce start to fill the air!

After 7 hours the ribs are ready and now for the hard part of cooking them, getting them out whole
without breaking them up! They’re that tender, when eating them you need no knife, the bones just slide out. Tender, moist and just full of flavor! For us JB’s Fat Boy Sauces and Rubs can’t be beat. The Ribs were incredible! Plus I love using that Crock Pot, no mess and with the plastic liner in the Crock Pot little to no clean-up. Just wipe it down and store it for the next time. And as always I would like to send out a big thank who ever invented the Crock Pot Liners! I always use them when using the Crock Pot.

For a side dish I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better. Next I heated up a can of Del Monte Cut Green Beans. Then I also baked some slices of New York Bakery Light Texas Toast, It’s fewer calories, carbs, and fat than normal Texas Toast. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

Pork Back Ribs – Pork ribs are a cut of pork popular in North American and Asian cuisines. The ribcage of a domestic pig, meat and bones together, is cut into usable pieces, prepared by smoking, grilling, or baking – usually with a sauce, often barbecue – and then served.

Baby back ribs (also back ribs or loin ribs) are taken from the top of the rib cage between the spine
and the spare ribs, below the loin muscle. They have meat between the bones and on top of the bones, and are shorter, curved, and sometimes meatier than spare ribs. The rack is shorter at one end, due to the natural tapering of a pig’s rib cage. The shortest bones are typically only about 3 in (7.6 cm) and the longest is usually about 6 in (15 cm), depending on the size of the hog. A pig side has 15 to 16 ribs (depending on the breed), but usually two or three are left on the shoulder when it is separated from the loin. So, a rack of back ribs contains a minimum of eight ribs (some may be trimmed if damaged), but can include up to 13 ribs, depending on how it has been prepared by the butcher. A typical commercial rack has 10–13 bones. If fewer than 10 bones are present, butchers call them “cheater racks”.

For Breakfast this morning I prepared a Jimmy Dean Simple Scramble Cup - Crumbled Turkey Sausage, Egg Whites, Shredded Cheddar Cheese. Also had my morning cup of Bigelow Decaf Green Tea. 58 degrees and partly cloudy out today. After Breakfast I went to Kroger for a couple of items and stopped by McDonald's and picked up Breakfast for Mom. Spaghetti and Meatballs tonight, I love Spaghetti and Meatballs! And you can make it healthier by using Whole Wheat Spaghetti and Turkey Meatballs. The Honeysuckle White Turkey Meatballs are some of the best I’ve found, fantastic taste and they’re 190 calories and 6 carbs for 3 large Meatballs.

I’ll be cooking them in LaRosa’s Original Pasta Sauce, one of my favorites! The Sauce goes great on Pasta, Pizza, or as a Dipping sauce. I grabbed a small Sauce Pan, sprayed it Pam Cooking Spray, added the sauce to it, and heated on medium low heat. As the sauce started to heat up I added the Turkey Meatballs, stirred until covered with the Sauce. Cooked them for about 7 minutes and then reduced the heat to low until I was ready to use them.

I’m using Ronzoni Healthy Harvest Whole Grain Spaghetti. It’s my favorite and I use all the Ronzoni Healthy Harvest Pastas. The Spaghetti is 180 calories and 35 net carbs, which isn’t bad for Pasta. To prepare the Spaghetti; I cooked the Spaghetti as to the package instructions. I used a large Sauce Pan and filled it 1/2 way up with Water. Turned the burner on high and brought the water to a rapid boil. Added the Spaghetti and stirred, returning it to the rapid boil. Cooked it uncovered, stirring it occasionally. Cooked it for a total of 8 minutes and done! Love this Pasta so tender and tasty. As the Spaghetti was cooking I baked my New York Bakery Light Texas Toast.

To serve I used a bowl and made a bed with Spaghetti. added a little Morton’s Lite Salt and Kraft Reduced Fat Grated Parmesan Cheese. I then topped with Sauce and Meatballs. Wow this was so good, I’m very glad Kroger started stocking the Honeysuckle White Meatballs again. No Dessert or Snack tonight.

add the Diced Ham. Served it with a sprinkle of Sargeto Off the Block Aged Sharp Cheddar Cheese. Mostly sunny and 46 degrees outside today. After Breakfast I went to Walmart for a few items. Walmart finally has a large amount of new electric carts to use! Now I don't have to get there at 6:00 in the morning to grab a charged cart or find the one cart that works. Anyway I stopped by McDonald's to pick up Breakfast for Mom on the way home. Later in the day I went out to the shed and gathered up some things that we no longer need and sat them out for the garbage in the morning. Almost got the shed in shape. Dinner Tonight: Lasagna with Meat and Sauce w/ Texas Toast (Light)

To start this Monday morning off I prepared a Poached Egg and served it on a Thomas Light Multi Grain English Muffin. I also had a cup of Bigelow Decaf Green Tea. Mom had the same for a change, no McDonald's! Mostly sunny and 49 degrees out today. So after Breakfast I went to Kroger for a few items and back home. Then later, after Lunch, I took my car and had it washed and then to bank. Back home got the leaf blower out and cleaned off the deck and driveway areas. Buffalo Teres Major Fillet Steak w/ Baked Potato and Texas Toast

Dinner Tonight: Buffalo Teres Major Fillet Steak w/ Baked Potato and Texas Toast

To start my Friday morning off I prepared Skillet Potatoes and Ham for Breakfast. I used 1 package of Simply Potatoes Steakhouse Seasoned Diced Potatoes and a package of Meijer Diced Ham to prepare it. Just cook the  Potatoes according to the package instructions and with about 5 minutes of cooking time left add the Diced Ham. Topped it off with a Sunnyside Up Egg and also made that morning cup of Bigelow Decaf Green Tea. Cloudy and 47 degrees out today with heavy rain on the way for tomorrow. After Breakfast I went up to the local Kroger and picked up a couple of things for Mom and then stopped by McDonald's and picked up Breakfast for her. Later on I went to Home Depot, we needed a new snow shovel and I looked for some touch up paint for a wall. For Dinner tonight its a Buffalo Teres Major Fillet Steak along with a Baked Potato and Texas Toast.

I prepared one of my favorite cuts of Steak, the always tender Wild Idea Buffalo Teris Major Steak. I started by brushing it lightly with Extra Light Olive Oil and then Seasoning it with McCormick Grinder Sea Salt and Grinder Peppercorn Medley. I had the Buffalo Teres Major Fillet Steak w/ Baked Potato and Texas Toast

To prepare it I’m using a Cast iron Skillet that I sprayed with Pam Cooking Spray and added a 1/2
tablespoon of Extra Light Olive Oil. Heated the skillet on medium heat and also turned the oven on to 400 degrees. With the Steak Seasoned and Skillet heated i added the Steak to the Cast Iron. Cooked it about 1 1/2 minutes a side and then put into the oven to finish. That’s a reason I love using Cast Iron Skillets, from the stove to the oven! I want to get it to 145 degree internal temperature. Then I pulled it out of the oven and let it set for 5 minutes, to finish cooking and let that delicious juice return to the Steak. Came out a perfect medium rare, moist and delicious! These Wild Idea Buffalo Steaks are just so incredibly delicious! I also made some Sauteed Mushrooms to go with the Steak.

For one side I had a baked Russet Potato. Seasoned that with the McCormick Grinder Sea Salt and
Peppercorn Medley, and topped with I Can’t Believe It’s Not Butter. Perfect side for any Steak Dinner!

I also baked a slice of New York Bakery Lite Texas Toast. For Dessert/Snack later a bowl of Skinny
Pop - Pop Corn and a Diet Dr. Pepper to drink.

Wild Idea Buffalo 8 oz. Teres Major Fillet

The Teres Major, also known as the Shoulder Tender, is second most tender cut on the animal. Cut

from the blade of the shoulder within the primal chuck, it is considered to be of similar quality to the filet mignon with its mouth-watering flavor and tenderness.
