Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans
Dinner Tonight: Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans

Snow Flurries outside this morning. Cleared up by late afternoon, still a cold day out though. Had a Simple Truth Breakfast Sandwich for Breakfast. I had to go back to Kroger, I had forgot a couple of items for Mom. Back home not a lot going on, just did a couple things around the house and then kicked back and did some reading. For dinner tonight I prepared a Tender Spareribs Recipe w/ Mashed Potatoes and Cut Italian Beans.
Tried a new recipe for dinner tonight, Tender Spareribs Recipe. I came across this recipe on a Taste Of Home recipe email. I love the recipes on the Taste of Home website, ( http://www.tasteofhome.com/). I can always find any recipe I need. Anyway back to the recipe, I'll
need the following to prepare the dish; 4 pounds pork spareribs (cut into serving-size pieces), 1/4 cup Low sodium soy sauce, 1/4 cup prepared mustard, 1/4 cup molasses, 3 tablespoons cider vinegar, 2 tablespoons Worcestershire sauce, and 1 to 2 teaspoons hot pepper sauce. That's a fantastic combination of ingredients for the sauce! As I try to do with all recipes I used reduced calorie or low sodium ingredients when I can; La Choy Low Sodium Soy Sauce. I used the Kikkoman Low Sodium Soy Sauce, French's Yellow Mustard, GrandMa's Molasses, Heinz Cider Vinegar, Worcestershire Sauce, and Frank's Hot sauce. The original recipe and web link are at the end of the post.
To prepare the dish I started by cutting the Spare Ribs into serving size pieces. I purchased the Spare Ribs at Meijer yesterday. I then lined my Crock Pot with a liner. I always use a liner anytime I use my Crock Pot. I then placed ribs into the Crock Pot . I combined the remaining ingredients; poured over ribs. Cover and cooked on low for 6 hours. By 1:00 this afternoon the aroma of the Spare Ribs was incredible!
At the end of 6 hours I pulled the Ribs out of the Crock Pot and they were so tender they were falling apart. The Sauce gave the Ribs incredible flavor, this combination of ingredients would go great with any of your Pork Dishes! * Near the end of the cooking time the Crock Pot passed away. I had to finish cooking the Ribs in an oven at 425 degrees.
For one side dish I prepared some Bob Evan’s Mashed Potatoes, which I just microwaved and serve. Just can't beat these Mashed Potatoes. Then I also opened up a can of Allens Cut Italian Beans. I guess this our new favorite Bean. I love Green Beans but these Beans are hard to beat! I also reheated some leftover Pillsbury Italian loaf Bread . One fantastic dinner tonight! For dessert later a small cup of Del Monte No Sugar Peach Chunks.

Kielbasa Skillet w/ Baked Rustic French Bread
Dinner Tonight: Kielbasa Skillet w/ Baked Rustic French Bread
Started my morning off with a Healthy Life Whole Grain English Muffin and on that I fried up some Boar's Head Honey Smoked Ham. Topped that with a slice of Sargento Ultra Thin Swiss Cheese and I was set. Also had my morning brew of Bigelow Decaf Green Tea. They released my Dad from the hospital, he's feeling better but he's still awfully weak. Went to Kroger early this morning to pick up a few items for me and Mom. I needed a package of Healthy Life Whole Grain English Muffins. They had 2 packages left on the rack and both had mold on them, not real good publicity for Kroger! Sad part is it's not the first time. Anyway for dinner tonight another new recipe, Kielbasa Skillet. I prepared Kielbasa Skillet w/ Baked Rustic French Bread.
Wasn't real sure of what to have for dinner tonight. Then while at Kroger earlier today I came across some Butterball Every Day Polska Kielbasa Turkey Sausage, I found dinner! I use the Butterball Hardwood Smoked Turkey Sausage all the time, it had been a while since I had the Kielbasa. Next was finding the right recipe. Which I did on the Taste of Home website, which I use all the time for finding recipes. So a new recipe tonight, Kielbasa Skillet.

I doubled the recipe so I needed the following; 1 pound Polska Kielbasa Turkey Sausage (sliced), 2 cups Del Monte Cut Green Beans, 1 cup sliced fresh Mushrooms, 2 tablespoons Kikkoman Less Sodium Soy Sauce, and 2 cups Uncle Ben's White Rice. I used Cut Green Beans instead of French - Style Green Beans, I just prefer the Cut over French. The original recipe is at the end of the post.
To prepare it; In a large skillet coated with cooking spray, saute Kielbasa until browned. Add the Beans, Mushrooms and Soy Sauce; saute 4-5 minutes longer or until vegetables are tender. Serve with Rice and get ready to enjoy one delicious skillet meal! Everything works in this recipe. The Sausage is delicious and packed with flavor and the Beans and Mushrooms go great with the Sausage. And the Soy Sauce provides the great flavor. Very good recipe and great recipe to keep! I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a bowl of Breyer Carb Smart Vanilla Bean Ice Cream.

Slow-Cooked Sunday Chicken w/ Whole Grain Bread
Dinner Tonight: Slow-Cooked Sunday Chicken w/ Whole Grain Bread
These beautiful Fall Days are spoiling us! Cool mornings followed by sunny crisp days, it's hard to beat this weather! Unfortunately I did,t get a chance to go out and enjoy much of it as I suffered with a Sinus Headache through most of it. Thank goodness I had already planned for a Crock Pot Dinner tonight. I prepared Slow-Cooked Sunday Chicken w/ Whole Grain Bread.
This is a new recipe, I came across it on a Taste of Home email and thought I would give it a try, and glad I did!. It has Chicken, Carrots, Onion, Celery, Green Beans, Red Potatoes, Turkey Bacon, Milk, and Spices all in a Crock Pot! It was very easy to prepare, just layer in everything and then add your Milk and Water and Spices in your Crock Pot. Put the lid on it and heat on low for 6 - 8 hours, and then we have our complete meal. Chicken served with Green Beans, Carrots, and Red Potatoes. Excellent recipe, everything combines great and seasoned just right! The recipe called for Bone - in Skinless Chicken Breasts but I used Boneless Skinless Chicken Breasts, all I had in the freezer. Next time I prepare this I would maybe add some Hugarian Paprika, nothing major. Another one of those keeper recipes! Just right for two people or one with a dinner leftover. I also had a couple of slices of Klosterman Whole Grain Wheat Bread, first time I tried this also. They were out of my normal brand so I gave this a try and it works! it was very fresh, same calories and carbs, with a bit of nutty taste to it (and it comes in half loaves). For dessert later a Del Monte No Sugar Added Mango Chunks Cup.
Slow-Cooked Sunday Chicken Recipe
Ingredients
2 small carrots, cut into 2-inch pieces
1/2 medium onion, chopped
1/2 celery rib, cut into 2-inch pieces
1 cup cut fresh green beans (2-inch pieces)
2 small red potatoes, halved
2 bone-in chicken breast halves (7 ounces each), skin removed
2 bacon strips, cooked and crumbled
3/4 cup hot water
1 teaspoon chicken bouillon granules
1/4 teaspoon salt
1/4 teaspoon dried thyme
1/4 teaspoon dried basil
Pinch pepper
Directions
In a 3-qt. slow cooker, layer the first seven ingredients in the order listed. Combine the water, bouillon, salt, thyme, basil and pepper; pour over the top. Do not stir. Cover and cook on low for 6-8 hours or until vegetables are tender and meat thermometer reads 170°. Remove chicken and vegetables. Thicken cooking juices for gravy if desired. Yield: 2 servings.
Nutritional Facts
1 serving equals 304 calories, 7 g fat (2 g saturated fat), 94 mg cholesterol, 927 mg sodium, 21 g carbohydrate, 5 g fiber, 37 g protein.

Breaded Pork Chops w/ Sour Cream Potatoes,Green Beans, and...
Dinner Tonight: Breaded Pork Chops w/ Sour Cream Potatoes,Green Beans, and Whole Grain Bread
A beautiful, sunny, perfect day out today! The sun has been out since dawn and it's about 40 degrees. So nice I took my Hoveround out and went around the block, felt great getting out. For dinner tonight I came across a couple of new recipes; Breaded Pork Chops and Sour Cream Potatoes. So for dinner tonight I prepared Breaded Pork Chops w/ Sour Cream Potatoes,Green Beans, and Whole Grain Bread.
The Breaded Pork Chops and Sour Cream Potatoes came from a current issue of Taste of Home/ Simple and Delicious. I love the Taste of Home various magazines. Their always full of great ideas and recipes.
To make the Breaded Chops I'll need 1/4 cup Egg Beater's, 1/4 cup 2% milk, 1/2 cup crushed low fat saltine crackers, 2 boneless pork loin chops (1-inch thick and 4 ounces each), and 1 tablespoon canola oil. Then to prepare them is quite easy; in a shallow bowl, combine Egg Beater's and milk. Place cracker crumbs in another shallow bowl. Dip each pork chop in egg mixture, then coat with cracker crumbs, patting to make a thick coating. In a large skillet, cook chops in oil for 4-5 minutes on each side or until a thermometer reads 145°. Let meat stand for 5 minutes before serving. The Chops came out moist and delicious and the saltines made a great crust for the Chops. I've left the original recipe, which makes 6 Chops, and the link to the Taste of Home web site at the end of the post.
Then for the Sour Cream Potatoes I'll need 10 medium red potatoes, peeled and quartered, 1 package (4 ounces) low fat cream cheese (cubed), 1/2 cup (8 ounces) reduced fat sour cream, 1/4 cup 2% milk, 2 tablespoons butter, Blue Bonnet Light Stick Butter (divided), 1 tablespoon dried parsley flakes, 1-1/4 teaspoons garlic salt, and 1/4 teaspoon paprika. Then to prepare it In a shallow bowl, combine egg and milk. To cut back on calories and carbs I only used half the amount of sour cream and cream cheese that the original recipe calls for, and it came out fine. Another winning recipe from Taste of Home! The Mashed potatoes came out rich and creamy with just a hint of heat. I've left this recipe also at the end of the post.
I also heated up a single serving can of Del Monte Cut Green Beans and had Aunt Millie's Light Whole Grain Bread. For dessert later a Healthy Choice Chocolate Swirl Frozen Yogurt.
Breaded Pork Chops Recipe
Ingredients
1 egg, lightly beaten
1/2 cup 2% milk
