Dinner Tonight: Baked Chicken Breast Strips w/ Mashed Potatoes and Fresh Green Beans






For Breakfast this morning I toasted a Thomas Light 100% Whole Grain English Muffin and topped
it with Smucker's Sugar Free Blackberry Jam. Also had my morning cup of Bigelow Decaf Green Tea. Outside, NO RAIN! We are having a day with no rain finally1 Mostly sunny, lower humidity, and a high of 78 degrees. i got the cart out and did some yard work and then later took a ride around the neighborhood. Went down by the lake for a while. For Dinner tonight I prepared Baked Chicken Breast Strips w/ Mashed Potatoes and Fresh Green Beans.




I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to
prepare meal! I had not had these in a about a month or so. I switched over to Perdue Chicken Strips for a while so I wanted to change it back to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.




For one side I heated up the leftover Bob Evan’s Mashed Potatoes from last night. Just microwave for 1 1/2 minutes and serve, just as good as homemade, if not better. I could make a meal out of just Mashed Potatoes. I also some leftover Pioneer Peppered White Gravy to top the Mashed Potatoes with.











For a side I cooked up another pot of the fresh Green Beans we bought at Jungle Jim’s. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert later a Jello Sugarless Dark Chocolate Pudding. I have to fast after 11:00 tonight. I have to be at the Family Doc's at 8:00 in the morning for my 4 month check up.

Cooking Instructions:

Bake, uncovered, for 25-30 minutes until no pink remains or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Fryer: Heat oil to 350° F. Fry frozen chicken breast fritters for 6 minutes or an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter.

Due to variations in equipment, heating times and/or temperature may require adjustment. DO NOT MICROWAVE.

Dinner Tonight: Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges






For Breakfast on this rainy Thursday Morning I prepared a Scrambled Egg, toasted 2 slices of Aunt Millie's Light Whole Grain Bread, and had a cup of Bigelow Decaf Green Tea. After Breakfast I drove Mom back to Jungle Jim's. She wanted another bag of the Green Beans and picked up some Beets. Back home it was back to canning the rest of the Green Beans. Then Mom canned the Beets she had bought. Another busy day of canning. For Dinner Tonight I prepared Seasoned Haddock w/ Fresh Green Beans and Baked Fingerling Potato Wedges.







While at Jungle Jim's International Market I just had to go to their Seafood Department! I picked
some Haddock, they just got the Haddock in and I to wait a bit until they had it ready. Then I also picked up a an Orange Roughy Fillet, New Zealand caught. I love their Seafood Department, in fact I love the whole store! I'm having the Haddock tonight!







 To prepare it I rinsed the fillet off in cold water and patted dry with a paper towel. Next I sliced it in
half. So to prepare it I seasoned it with just a bit of Sea Salt and put the pieces in a Hefty Zip Plastic Bag where I then added Zatarain’s Lemon Pepper Breading Mix. Shook until both pieces were well coated. Shook off the excess and pan fried them in Extra Light Olive Oil, frying them about 3 minutes per side until golden brown. Haddock and Zatarain’s Lemon Pepper Mix, the perfect combo. The Zatarain’s Breading and Seasonings are my favorites. I love Haddock it cooks up so nicely and I love the flavor and how meaty it is.



For a side I cooked up some of the fresh Green Beans we bought at Jungle Jim's. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! And we 14 quarts of canned Beans now!










Then for another side I prepared some Roasted Fingerling Potatoes. Started by washing the Potatoes off in cold water. I then cut the Fingerling Potatoes in half, lengthwise. Put the Potatoes in a large
bowl seasoned them with; Extra Virgin Olive Oil, Garlic Powder, Sea Salt, Pepper, Chili Powder, and Kraft Reduced Fat Parmesan Grated Cheese to top the Potatoes with. Using a cookie sheet lined with foil I spread the Potatoes out on the sheet . Then Roasted them at 400 degrees until they were fork tender, about 20 minutes. Still can’t figure out why it’s so hard to find Fingerling Potatoes in this area. Still only 1 store around here locally that sells them, so thank you Jungle Jim’s! I also baked a loaf of RiverRoad Bake House The family’s favorite Baked Bread. And Meijer is the only store that sells this around here. For Dessert later a Jello Sugar Free Dark Chocolate Pudding.

Beef Cubed Steak w/ Mashed Potatoes, and Fresh Green Beans

Dinner Tonight: Beef Cubed Steak w/ Mashed Potatoes, and Fresh Green Beans






To start my day off I toasted a Healthy Life Multi Grain English Muffin. I then lightly fried 3 slices of Boar's Head Sweet Slice Ham. As the Ham was almost done I piled it up in the skillet and topped it with a slice of Sargento Ultra Thin Swiss Cheese. Put the ham on 1/2 the Muffin and added a little of Kraft Mayo to the top 1/2 of the Muffin and I had my Breakfast Sandwich! Partly cloudy, humid, and 84 degrees out today. Laid back day today so I got caught up on some little things that needed done. For Dinner tonight its a Beef Cubed Steak w/ Mashed Potatoes, and Fresh Green Beans




When I went to Meijer the day before and I picked up a package of Meijer Beef Cubed Steak. These
are the best Cubed Steak I have ever found by far. They’re good size patties so I’m able to cut them in half and get 2 meals out of 1 patty. They come 2 to a package. This is one of the few times I use Beef.










To prepare the Cubed Steak I seasoned them with Sea Salt and Ground Black Pepper and I then
dusted them in flour that I had mixed with a bit of Hungarian Paprika. Shook off the excess flour and pan fried them in Extra Light Olive Oil, about 4 minutes per side. They came out delicious! Excellent flavor and very tender, especially for Cubed Steak which sometimes can be somewhat tough and stringy.







To go with the Cubed Steak you always have to have Mashed Potatoes! I prepared some Bob Evan’s Mashed Potatoes. Just microwave for 6 minutes and serve, just as good as homemade, if not better.












Next I cooked some more of the fresh Green Beans. Mom’s Cousin dropped some more of them off to us that they had grown. Had to string them and break them up. Then boiled them with a piece of Fatback Pork in the kettle. Love these fresh Green Beans! For Dessert/Snacks I had a bowl of Skinny Pop – Pop Corn and a Diet Mango Snapple to drink.











Cube Steak

Cube steak is a cut of beef, usually top round or top sirloin, tenderized by fierce pounding with a
meat tenderizer, or use of an electric tenderizer. The name refers to the shape of the indentations left by that process (called “cubing”). Many professional cooks insist that regular tenderizing mallets cause too much mashing to produce a proper cube steak, and insist on either using specialized cube steak machines, or manually applying a set of sharp-pointed rods to pierce the meat in every direction. This is the most common cut of meat used for chicken fried steak.

In Canada as well as in some parts of the United States, cube steak may be called a minute steak, because it can be cooked quickly.
Others distinguish minute steak as:
* simply referring to the cut, which is not necessarily tenderized;
* thinner than cube steak (hence does not need tenderizing);
* cut from sirloin or round, while cube steak cut is from chuck or round.
The term “minute steak” is also used in the United Kingdom, where the term “cube steak” is little known.
