Kitchen Hint of the Day!

Sugar Burns........

Sugar burns at 265 degrees F (130 degrees C). If you are cooking foods with sauces or rubs that contain sugar you need to keep your grilling temperature below this temperature or your food will burn and blacken. Or don't add those sauces until the end of the cooking time.

Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans

Dinner Tonight: Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans

For Breakfast this morning I Scrambled a couple of medium sized Eggs, made some Simply Potatoes
Hash Browns, fried a couple of Jennie - O Turkey Breakfast Sausage Links, and a slice of toasted Healthy Life Whole Grain Bread. A full size Breakfast for a huge appetite this morning! This way more than I usually have for Breakfast. So after Breakfast I did a load of laundry. As that was going I swept and cleaned outside. I wanted to get that done before it was too humid to do anything! Heat index of about 100 degrees today and the humidity was real bad. Finished up laundry and did some house cleaning. Dusted and vacuumed then straightened up the pantry. Full day today! For Dinner tonight i prepared a Cumin Spiced Pork Loin Chop w/ Mashed Potatoes and Cut Italian Green Beans.

I grabbed a Pork Chop from the freezer, that I had purchased from Meijer, and let it thaw overnight in
the fridge.

Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of; 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2
teaspoons Dried Oregano, and 1/2 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combine all the ingredients; rub it all over the pork chop. Let stand 20 minutes. Start by heating the Extra Virgin Olive oil in a Cast Iron Skillet over medium-high heat. Add Chops to pan; cook 3 minutes, browning both sides. From the stove to the oven and bake at 400° for 15 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 5 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork.

For one side dish I prepared my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Easy to fix and delicious. To prepare it just heat it up in the microwave for 6 minutes and it’s ready.

Then I also heated up a can of Allens Cut Italian Green Beans. I also reheated a couple of Breadsticks
leftover from last night's Dinner. For Dessert later a bowl of Del Monte Sliced Peaches.

Cumin Spiced Pork Chops w/ Savory Herb Potatoes and Cut Green Beans

Dinner Tonight: Cumin Spiced Pork Chops w/ Savory Herb Potatoes and Cut Green Beans

Wow what a beautiful full moon last night and a total lunar eclipse on top of it! We were able to watch the whole thing as the clouds cleared up about an hour before it started. Started my day off with a Healthy Life Whole Grain English Muffin topped with 2 servings of Egg Beater's Egg Whites. Good little sandwich, also had a cup of Bigelow Decaf Green Tea to get me started. Didn't get a chance to go see Dad at rehab today but he's doing a lot better, hopefully back home before long. Stayed home and got caught up on some house cleaning and yard work. Had to get the 4 wheel mobility cart out and the leaf blower and do a little yard work. For dinner tonight, Cumin Spiced Pork Chops w/ Savory Herb Potatoes and (Fresh) Cut Green Beans.

On my last visit to Costco I picked up a huge package of Pork Chops and had them in the freezer. I
got 2 of the Chops from the freezer and let it thaw overnight in the fridge. Then to prepare my Chop I’ll need; The Cumin Spiced Rub which consists of 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. From the stove to the oven and bake at 400° for 20 minutes until the thermometer registered 150° (slightly pink), turning after 5 minutes. Let stand 10 minutes before slicing. Fantastic combo of Spices, which makes one incredible Crust on the Chop with the inside being tender and moist! Love this seasoning on Pork. Hard to beat these Costco Pork Chops, always top quality.

While at Jungle Jim's I was going through the their huge Produce Department and came across a new Potato Product, the Little Potato Company Savory Herb Potatoes. I also picked a up package of the Italian seasoned Potatoes. I prepared the Savory Herb Potatoes tonight. The Potatoes come in a microwavable tray. Just pop the tray in the microwave for five minutes and mix in the seasoning pack and you have a nutritious and tasty Potato Dish. These are definitely a good to have in the pantry! So easy to prepare and no clean up.

Then for another side I also picked up a beautiful mess of Green Beans while at Jungle Jim's. This afternoon Mom and myself
broke the Beans up and then I prepared them. Just use a large kettle or sauce pan. Fill it with water add the Beans, add Sea Salt and 2 tablespoons of Extra Virgin Olive Oil (cover), and heat on high until a boil. Then turn the heat to medium and cook until tender. A really delicious mess of Green Beans! Canned Green Beans are great but nothing beats the fresh Green Beans! I also baked a loaf of Pillsbury Rustic French Bread. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.

Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing

Dinner Tonight: Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing

Our morning started off sunny and humid but as the morning went on the clouds started rolling in and we had rain coming in for the day. Layed back day, not a lot going on. After Breakfast and the morning workout I went outside and did some cleaning and sweeping. Then back inside pulled everything out of the fridge and gave it a good cleaning and straightened up a couple of storage cabinets for my day. For dinner tonight a favorite of mine, Cumin Spiced Boneless Pork Loin Roast w/ Cut Green Beans & Potatoes and Savory Herb Stuffing.

I’ve been using the Cumin Spice Rub for a while now, my favorite Rub for Pork. I had come across
the recipe a while back on-line, and use it all the time now. It gives the Pork a fantastic crust and great seasoning. I purchased the Pork Tenderloin Boneless Roast from Kroger yesterday. To prepare it I’ll need; 1 Pork Tenderloin Roast, 1 tbsp Roasted Cumin, 1 tsp Garlic Powder, 1 tsp Chili Powder, 1 teaspoon Sea Salt, 1/2 teaspoon Hungarian Paprika, 2 teaspoons Dried Oregano, and 1/4 teaspoon Black Pepper. To prepare it preheat oven to 400°. Combined all the ingredients; rub it all over the Pork. Let stand 20 minutes. To Roast it I used a mall Broiler Pan with a Wire Rack in it. Sprayed the Rack with Pam Cooking Spray and put the Pork on it. I baked it for about 1 hour, until my thermometer registered 145° (slightly pink) Let stand 10 minutes before slicing. Then got ready to enjoy one delicious Pork Tenderloin Roast! Fantastic combo of Spices, which made one incredible Crust on the Pork with the inside being so tender and moist!

For one side I heated up a can of Del Monte Cut Green Beans and Potatoes. A combination of two of my favorite Vegetables all in one can! Then for another side I prepared a box of Stove Top Savory Herbs Stuffing. So easy to make and love the Stuffing. For dessert later a bowl of Del Monte Sliced Peaches.

Crockpot BBQ Pork Shoulder w/ Boiled Baby Carrots and Roasted Yukon Potatoes with Rosemary

Dinner Tonight: Crockpot BBQ Pork Shoulder w/ Boiled Baby Carrots and Roasted Yukon Potatoes with Rosemary

It's a typical Ohio Summer Day outside today! Hot and Humid, but not overly bad. Had a light
Breakfast and then my morning workout. I got my Pork Shoulder going in the Crock Pot and then gave the Kitchen and Fridge a good cleaning. Ran the vacuum and dusted, and cleaning was done for the day! Not much else going on so it was the sofa and remote for me. For dinner tonight I prepared a Crockpot BBQ Pork Shoulder w/ Boiled Baby Carrots and Roasted Yukon Potatoes with Rosemary.

I had been wanting some Pork Shoulder for a while. So while I was at Kroger yesterday I picked one up. I used a real easily prepared recipe for it. Using one of my favorite cooking vessels, the Crock Pot. To make this I'll need the following; Pork Shoulder or Boston Butt (about 4 to 7 pounds, bone-in or boneless), 1/4 cup of Water, JB's Fat Boy Premium All-Purpose Rub, and JB's Fat Boy HaugWaush BBQ Sauce.

The night before I applied the Rub all over Pork Shoulder and sealed it in a plastic bag. Refrigerate
until ready to use the next day. Pulled the Pork Shoulder from the fridge, shaking off any excess Rub. Then to prepare it I lined my Crock Pot with a Reynolds Crock Pot Plastic Bag Liner and sprayed that with Pam Cooking Spray w/ Olive Oil. Turned the Crock Pot on High. Placed the Meat in the slow cooker with Water. Covered and cooked on High for 1 hour. Turned it to Low and cooked 7 to 9 hours longer, until very tender. Removed the Roast and discarded the fat and juices. Shredded the Pork; returned it to slow cooker. Mixing a little BBQ Sauce into the Meat for more flavor. Cover and cooked on Low  for about 1 hour longer, until hot. Served on a Aunt Millie's Reduced Calorie Sandwich Bun. With Coleslaw (Optional) and extra BBQ Sauce on the side. Nothing but a winning Pork Shoulder Dish! So tender and seasoned just right with Rub and BBQ Sauce. A lot of leftovers for some delicious Sandwiches!

For one side dish I prepared Boiled Baby Carrots. I used a can of Kroger Baby Carrots, just heat in a
sauce pan in it's own juices and serve. I use these all the time, just as good as fresh and easier to prepare.

Then for the other side I prepared Roasted Yukon Potatoes with Rosemary. I'll need; Yukon Gold
Potatoes (cut in wedges), 1 tablespoon Dried Rosemary, 1 tablespoons Extra-Virgin Olive Oil, and McCormick Grinder Sea Salt and Peppercorn Medley. To prepare I preheated the oven to 425 degrees F. Tossed the Potatoes, Dried Rosemary, Olive Oil, and Sea Salt and Pepper. Then on a foil lined baking sheet arrange the Potatoes cut side down and roast until fork tender,  about 20 to 25 minutes. Potatoes and Carrots and Pork, a perfect trio combo for dinner. For dessert later a Jello Sugar Free Dark Chocolate Pudding topped with Cool Whip Free.

Crockpot BBQ Pork Shoulder

INGREDIENTS
Pork Shoulder or Boston Butt, about 4 to 7 pounds, bone-in or boneless
1/4 cup of Water
JB's Fat Boy Premium All-Purpose Rub
JB's Fat Boy HaugWaush BBQ Sauce

1 - The night before apply the Rub all over Pork Shoulder and seal in a plastic bag. Refrigerate until ready to use the next day.

2 - Place the meat in the slow cooker with water.

3 - Cover and cook on HIGH for 1 hour. Turn to LOW and cook 7 to 9 hours longer, until very tender. Remove roast and discard fat and juices. Chop or shred the pork; return to slow cooker. 4 - Serve on sandwich buns with coleslaw (Optional) and extra barbecue sauce on the side.

Kitchen Hint of the Day!

Applying a rub is a common method of seasoning the surface of meats and poultry. A dry rub is simply a blend of various herbs and spices that doesn't penetrate the meat. The rub provides a tasty coating, which usually forms a brown crust of concentrated flavor. Rub on the seasoning before you begin to grill the meat, and let it sit for a while for the coating to take hold.
