Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

Dinner Tonight: Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Green Beans

The day didn't start off so good for me. About 6:00 this morning as I started to get out of bed my walker tipped over as I was getting up. I didn't fall but as I braced myself to prevent falling my left
arm got caught in the walker and twisted it. At first I thought it broke. After examing it I could tell it wasn't broke but I was in a lot of pain. So I went on to the Emergency Room at a local Hospital. They took X-Rays, which all came back negative. They said my arm was twisted a bit with some inflammation and to just take it easy on my exercise for a day or so and it should be fine. With Dad's Funeral coming Tuesday the last thing I needed was something serious happening. We are waiting till Tuesday for Dad's Funeral. We waited so some family could get into town. I don't know if it's sunk in yet that Dad is gone. So for Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes and Gravy, Cut Green Beans, and Baked Texas Toast.

I love the Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that  easy to prepare meal! I had not had these in a about a month or so. I switched over to Perdue Chicken Strips
for a while so I wanted to change it back to Pilgrim’s. Preheat the oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the Chicken Strip . And Chicken is served! It’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of Hidden Valley Ranch Buffalo Dressing.

To go with the Chicken I reheated the leftover Bob Evan’s Mashed Potatoes. Just heated it up in the microwave for 1:30 minutes and serve, always just as good as homemade. Next I made a packet of the Pioneer Peppered White Gravy to top the Mashed Potatoes.

Then I reheated up the leftover Del Monte Cut Green Beans. Just reheated those leftovers in the
microwave also. For Dessert/Snack later a bowl of Skinny Pop - Pop Corn with a Coke Zero to drink.

For Breakfast; Poached an Egg, fried up a couple of Jennie – O Turkey Breakfast Sausage Patties,

Baked Chicken Breast Strips w/ Mashed Potatoes and Golden Hominy

Dinner Tonight: Baked Chicken Breast Strips w/ Mashed Potatoes and Golden Hominy

Scrambled an Egg, fried up a couple of Jennie – O Turkey Breakfast Sausage Links, toasted a slice of Aunt Millie’s Whole Grain English Muffin (lightly buttered), and a cup of Bigelow Decaf Green Tea. One cold morning out there, 18 degrees. Plus a cold wind blowing out there this morning. Gave Mom a hand doing a couple of loads of laundry. Later on cleaned the house, vacuum and dusted. For Dinner tonight its Baked Chicken Breast Strips w/ Mashed Potatoes, Golden Hominy, and Baked Texas Toast.

For another side I opened up a can of one of my favorite side dishes, Kroger Brand Golden Hominy. For those that has never had or heard of Hominy; Hominy is a food made from kernels of corn which
are soaked in an alkali solution of either lime or lye. The corrosive nature of the solution removes the hull and germ of the corn and causes the grain itself to puff up to about twice its normal size. There is White and Golden Hominy, my favorite is the Golden Hominy. If you’ve never tried it do, makes a delicious side dish! I also baked a slice of New York Bakery Lite Texas Toast, One delicious meal tonight. For Dessert/Snack later a bowl of Skinny Pop – Pop Corn and a Diet Dr. Pepper to drink.

For Breakfast had a Healthy Life Whole Grain English Muffin topped with Smucker's Sugarless Blackberry Jam. After Breakfast drove Mom to Kroger, we both needed a few items. Back home it was house cleaning day, vacuum and dusting. For dinner tonight it's Leftovers, I reheated the Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Italian Green Beans.

Sunday Dinner is Monday's Leftovers! Last night's dinner was not only easy to prepare but was delicious! So why not have it again! For dinner all I did was reheat all 3 items from last night's dinner; Baked Chicken Breast Strips w/ Mashed Potatoes and Cut Italian Green Beans. I have left the original post from last night for the details about prep. Love those Leftovers!!

One of those days where I didn't feel like putting a whole lot of effort into preparing my dinner. So
there's nothing easier and more delicious Pilgrim Chicken Strips than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. Bake, uncovered, for 25-30 minutes, to an internal temperature of 165° F as measured by use of a food thermometer placed in the thickest part of the chicken breast fritter. And Chicken is served! As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

For one side I made some of my favorite Mashed Potatoes, Bob Evans Mashed Potatoes. Just
microwave for 6 minutes and serve. Just as good as homemade, if not better. Then I also prepared a can of Allens Cut Italian Green Beans. To prepare them just empty the can into a small sauce pan and simmer until heated. Just season with a bit of Sea Salt and it’s ready! I could have these Beans every day and never get tired of having them.

Finally I baked a loaf of Pillsbury French Bread, family’s favorite baked bread. For dessert later a
Skinny Cow Chocolate Truffle Ice Cream Bar.

Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes,...

Dinner Tonight: Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes and Cut Green Beans

After a light Breakfast I headed out to my Dermatologist to have cyst checked out. With my past
history of Melanoma I was worried about it, it came up very quickly. After an exam he told me there is nothing to worry about! All clear. Quite a relief off my mind. After leaving the Doctors  I stopped by McDonald's and let Mom pick up Breakfast for her and Dad. Back at home nothing going on today, all caught up on everything. I had some Shows recorded I've been wanting to watch so I caught up on them. For dinner tonight I prepared Baked Chicken Breast Strips w/ Loaded Peppered Bacon and Cheddar Mashed Potatoes and Cut Green Beans.

I wanted something easy to prepare for dinner tonight, easy but still delicious! Nothing easier and
more delicious than Pilgrim’s Southern Style Breast Strips, it’s always a great go to when you want that easy to prepare meal! It’s the best Frozen Chicken that I’ve found by far. Very easy to prepare; Preheat oven to 350° F. Arrange frozen chicken breast strips in a single layer on an ungreased baking sheet. As I said it’s some of the best frozen Chicken you can find! Excellent seasoned breading and very meaty, and easy to prepare. Served it with a side of JB’s Fat Boy Sticky Stuff BBQ Sauce.

Then for a side dish I tried a new one, Idahoan Fully Loaded Peppered Bacon and Cheddar. I had seen this the other day at Kroger and had to grab a package to try it out! Easy to prepare; Just add 2 cups of water to a medium sized sauce pan and heat water on high to a boil. Remove boiling water from heat and immediately stir in entire pouch of potatoes. Mix thoroughly using a fork to moisten all potatoes and let stand 1 minute. Stir well and serve. as I said easy to prepare and it makes one delicious side dish! The Potatoes have great flavor, really enjoyed them. I'll keep an extra bag or 2 in the pantry.

I also heated up a small can of Del Monte Cut Green Beans with Sea Salt. I could have Green Beans every day, love them! Then I had 1 slice of Aunt Millie's Whole Grain Bread topped with I Can't Believe It's Not Butter. For dessert later a Healthy Choice Dark Fudge Swirl Frozen Greek Yogurt.
